Florida Mahi with Fried Capers and Lemons
Ingredients for the tacos:
• 1 ½ pounds Florida mahi-mahi, cut into 4-ounce pieces
• 1 large Florida tomato, diced small
• ½ Florida lemon, juiced
• 1 tablespoon Florida seafood seasoning blend
• 2 tablespoons fresh herbs (parsley, basil, thyme, rosemary), chopped
• 1 tablespoon fresh garlic, chopped fine
• 2 tablespoons Parmesan cheese, grated
• 3 tablespoons olive oil
• 3½-ounce jar capers, drained
• Sea salt and fresh ground pepper, to taste
Fried Florida Lemons
• 2 whole Florida lemons, sliced thin and seeds removed
• ¼ cup olive oil
• 1 teaspoon Florida seafood seasoning blend
Preparation:
Preheat a medium-sized sauté pan over medium-high heat. Drain capers and pat dry. Add 1 tablespoon olive oil and sauté capers for about 5 minutes, or until crispy. Transfer to a paper towel-lined plate.
In a small bowl, combine tomatoes, garlic, 1 tablespoon chopped herbs, Parmesan, lemon juice and 1 tablespoon olive oil. Season with salt and pepper, to taste. Cover and set aside.
Preheat a charcoal grill or grill pan to medium-high. Season fillets with 1 teaspoon of seasoning blend and drizzle with 1 teaspoon of olive oil. Carefully place onto the grill and cook for 2 to 3 minutes per side, or until cooked through. Transfer to a platter and garnish with the tomato mixture, fried capers, 1 tablespoon herbs and Fried Florida Lemons.
Fried Florida Lemons:
Preheat a medium-sized sauté pan over medium-high heat. Heat the olive oil in the pan. Add the lemon slices, one at a time. Cook for about 2 minutes on each side, or until crispy. Drain on a paper towel-lined plate. Season with seasoning blend. Use as garnish.

How to Take a Great Photo on a Boat
Taking photos on a boat offers unparalleled access to dynamic seascapes, unique coastline angles, and candid moments of joy. Still, the combination of open water, sun glare, and constant motion makes it a challenging photography environment. Whether you are using a DSLR or a smartphone, success means protecting your gear while maximizing shutter speed to freeze action. In this comprehensive guide, we’ll provide easy-to-follow tips for mastering boat photography.
How Can You Take Great Boating Photos?
1. Protect Your Gear: The “Dry First” Rule Water, salt spray, and sand are the enemies of photography equipment. Before leaving the dock, prepare for the environment.
• Dry Bags and Housings: Always store cameras in a dry bag when not in use. If you are on a small, fast, or wet boat, consider a waterproof housing or a rain cover for your camera.
• The Strap Rule: Never shoot without a neck or wrist strap. A sudden bump from a wave can easily send your camera overboard.
• Lens Protection: Use a UV or protective filter on your lens to shield it from salt spray. Salt spray can be difficult to clean and may damage lens coatings over time.
• Cleaning Kit: Bring multiple microfiber cloths. You will need to wipe your lens often.
2. Camera Settings for a Moving Platform A boat is a constantly moving, vibrating platform. You are often aiming at fast-moving subjects, such as wildlife, other boats, or water-skiers. Set your camera up to capture movement.
• Fast Shutter Speed: Freeze both the subject’s motion and the boat’s vibration by setting your shutter speed to at least 1/500th of a second—preferably 1/1000s or faster.
• Aperture and ISO: Use a slightly higher ISO (e.g., 400 or 800) to allow for fast shutter speeds, even on a sunny day. If using Aperture Priority mode, keep your aperture low (e.g., f/4–f/5.6).
• Burst Mode: Set your camera to high-speed burst mode to increase the chances of capturing a sharp image.
• Autofocus: Use continuous autofocus (AF-C or Servo) to track subjects while the boat moves.
3. Mastering Composition on the Water
A simple, flat shot from a standing position often looks boring. Get creative with your perspective.
• Get Low: Shoot from deck level or lower (safely) to make the wake look more dramatic and immersive.
• Frame the Shot: Use elements like railings, the bow, or sail rigging to frame your subject and add depth.
• Keep the Horizon Level: A crooked horizon is a common mistake. Use gridlines or your camera’s level feature to keep it straight.

• Polarizing Filter: A circular polarizer reduces glare, deepens sky color, and enhances water clarity.

• Three Points of Contact: Maintain stability by keeping two feet and one hand, or two hands and one foot, on the boat.
• Shoot Sitting: Sitting or kneeling lowers your center of gravity and improves stability.
• Respect Safety Rules: Avoid risky positions, especially in rough water or at high speeds.
7. Telling a Story
Don’t just take one photo—capture a full experience.
• Details: Photograph elements like the helm, anchor, food, or wake.
• Wide and Tight Shots: Combine wide scenic shots with close-ups of people, wildlife, or action.

Fly Fishing Forecast
This is a great month for snook on shallow flats. Reds and trout will also be more active as the water warms and baitfish become more plentiful. You might find Spanish mackerel, blues and pompano in passes or on deep grass flats. You should also find Spanish mackerel along with false albacore (little tunny), cobia and tripletail, in the coastal gulf this month. Tarpon should also make an appearance in bay or back country areas or along beaches by later in the month.
Tarpon will become more plentiful as resident fish make their way out of rivers and creeks and early arriving migratory fish begin to show along beaches, particularly by the end of the month. Water temperature in the gulf is a key factor with 80 degrees being an optimum temperature. As the water warms towards that, fish will become more plentiful. Resident fish may be rolling on deep grass flats in some of the same places that you find trout, laid up on edges of shallow grass flats or along sand bars. Fly anglers might connect with a black Deceiver, Tarpon bunny or EP fly fished on an 11 or 12-weight fly rod with a floating or clear sink tip fly line depending on depth. I always have tarpon tackle, rigged and ready, on the boat this time of year.
Snook should be staging on flats, around sand and oyster bars, on points of islands and around docks and bridges close to passes in the ICW. Fish the edges of bars and potholes when the tide is low and mangrove shorelines or points of islands when the tide is high. I like wide profile flies, such as Lefty’s Deceiver, my Grassett Flats Bunny or EP flies, for snook on the flats.
You’ll also find snook around docks and bridges in the ICW. Night snook fishing should be productive with small white flies, like my Grassett Snook Minnow fly, shrimp patterns or Shrimp Gurglers. Fish peak tidal flows for the best action.
Reds will spend more time feeding on shallow flats due to more plentiful
bait. Look for them in potholes, the edges of bars and around docks when the tide is low. You should find them higher on flats over shallow grass or around mangrove shorelines when the tide is high. My Grassett Flats Minnow is my “go to” fly for reds. It fishes well in shallow water and its bend back design makes it very weedless. You may also find big trout in skinny water in many of the same places that you find reds. The same flies and techniques used to find and catch reds will also work for big trout.
Trout should be plentiful on deep grass flats. I like to drift and cast ahead of my drift. Look for trout on deep grass flats with a good tidal flow and a mixture of grass and sand. Fly anglers should score with weighted flies on sink tip fly lines. Trout regulations have changed in southwest Florida to a 3 fish per person, bag limit and a 6 fish boat limit. Trout must be from 15”-19” with one allowed per vessel over 19”. In my opinion it’s important to protect larger trout, which are usually female breeders.

Species are legal inshore and offshore fish. Registration starts at $95 per angler, $55/teens plus optional charter fishing. Early registration is recommended due to limited charter boat slots. You might also find blues, Spanish mackerel, pompano or flounder mixed with trout on deep grass flats. The same flies and techniques that you use to find trout on deep grass will work for these species, too. You’ll need to tip your leader with wire or heavy fluorocarbon when blues and mackerel are around. I prefer heavy fluorocarbon and flies tied on long shank hooks, since that usually won’t affect the trout bite. I tie Clousers with Ultra Hair on long shank hooks so that they are durable and will hold up to toothy and rough mouth fish. Blues and mackerel usually don’t feed on the surface in the bay like they do in the open gulf, but you may see bait showering or boils indicating fast moving fish, feeding just below the surface. Pompano may “skip” when you run or drift past them giving their location away. When that happens, circle back upwind and drift the area. Flounder are often found in potholes, on the edges
There should be good action in the coastal gulf this month with Spanish mackerel, false albacore (little tunny), cobia and tripletail. Look for Spanish mackerel or albies feeding on the surface. You might find tripletail or cobia around crab trap floats. Your tarpon fly tackle can do double duty for cobia and an 8 or 9-weight fly rod will cover everything else. Artificial reefs or natural areas of hard bottom may hold any of these species. When fishing over bottom structure you will need to get your fly down in the water column to the level where fish are located, so in addition to a floating line you may need a sinking line to cover more of the water column. April is one of my favorite months. There should be good action in the bay on both shallow and deep grass flats, in the coastal gulf for mackerel, albies, cobia and tripletail and with tarpon by the end of the month. Our natural resources are under constant pressure from red tides fueled by industrial, agricultural and residential runoff, toxic spills and discharges, freezes, increasing fishing pressure and habitat loss and degradation, please limit your kill, don’t kill your limit!

Spring Lake Toho Bass Fishing Report
Spring has sprung and so has the bite on Orlando’s Lake Toho. With the cold fronts out of the way, the temps are becoming more steady and the fish are gorging themselves now after the spawn. The bass are beginning to school and chase bait to the surface in certain areas and 20-30 fish days are becoming common!
The best bite on our charters has been on shiners, especially if you’re looking for bigger bass. But artificials have been productive also. Flukes, jerkbaits, senkos, speedworms, and topwaters in the areas the bass have been schooling have all been working well.
As we move to the summer the bass have mostly all moved offshore in submerged grass flats. Good flats of hydrilla,
peppergrass, and eel grass cover the lake. Once you’re over top of one of these grass flats, just get to fishing. Nearly all of these areas throughout Toho are holding bass right now, and keep your eyes peeled, as bass have been coming up schooling occasionally throughout the lake also.

Fishing over the past week remained solid, with a good mix of species and steady opportunities on the water. Blackfin Tuna action stayed consistent, giving anglers reliable bites, especially when conditions lined up right.
We also had some Sailfish around for those willing to put in the time fishing live bait, with opportunities still there for anglers staying patient and dialed in. A few Mahi Mahi were caught as well, as they’ve started to migrate through the area—always a great sign as we move further into spring.

The full moon brought in a few Wahoo, but as expected, fishing over the past few days slowed down slightly, which is common during this moon phase. Even so, there were still opportunities to connect with quality fish.
Strong east winds over the past few days pushed in a fair amount of sea grass, which made trolling more challenging at times. Despite that, we were still able to stay productive and catch some good fish on the troll.
We’re also starting to see King Mackerel showing up again, another great sign that seasonal patterns are shifting in the right direction.
April is shaping up to be a great month for fishing, with more species continuing to move into the area. For those looking to battle a sea monster, shark fishing should start heating up, with more fish expected to show up in good numbers.

FLORIDA BOATERS CAN NOW TAKE FREE STATE-APPROVED BOATING SAFETY COURSE - At-home learning helps Florida boaters prepare for the water easily and conveniently. The BoatUS Foundation for Boating Safety and Clean Water has launched the only free interactive boating safety course for Florida recreational boaters. The course, which is approved by the Florida Fish and Wildlife Conservation Commission and meets state boating safety education requirements, can be taken at the student’s own pace. After passing the exam, they can print their own certificate of completion for immediate use and will receive a lifetime card from the Florida Fish and Wildlife Conservation Commission.The course provides video demonstrations and sample common boating situations for students to interact with to better understand how to evaluate real-world instances. The learning experience includes storylines where the student “boats” to various places and includes interactive learning tools like flashcards and drag-and-drop features to enhance learning and retention. Course-takers will be able to design and name the virtual boat that takes them through the course and map how far they’ve “traveled” within it. In the state of Florida, anyone born on or after January 1, 1988, who operates a vessel powered by 10 horsepower or more must pass an approved boating safety course and have in his/her possession photographic identification and proof of boating safety education completion issued by the Florida Fish and Wildlife Conservation Commission. The online BoatUS Foundation boating safety course and exam are approved by the National Association of State Boating Law Administrators (NASBLA) and recognized by the U.S. Coast Guard as exceeding the minimum requirements for the National Recreational Boating Safety Program. “NASBLA approval of our Florida Boating Safety Course is a meaningful investment in boater safety, said Lynne O’Hearn, Program Manager at BoatUS Foundation. “Boater education is one of the most effective ways to prevent accidents, and this course gives Florida boaters the opportunity to build their skills to better enjoy Florida waterways safely.”

UNITED STATES COAST GUARD FLOTILLA 7-16 OFFERS SAFE BOATING CLASSES IN GULFPORT, FL, MEETS THE THIRD WEDNESDAY OF EACH MONTH. These classes qualify the attendee for the FWC Safe Boating Card. This card is required for most people born after January 1, 1988 to legally operate a power boat with greater than 10hp motor in Florida. The one-day class includes instruction on safety equipment, boat handling, rules of the road, navigation aids, communications, trailering, legal requirements and others. Power and sailboats are covered, as well as personal watercraft. Of course, besides making a boater in compliance, the main goal of the class is to create a safer boater. Flotilla 7-16 also performs free courtesy vessel safety inspections for power and sail boats, personal watercraft, and paddle craft. Despite numerous COVID-19 restrictions, more and more boaters are taking to the water to alleviate at-home boredom while taking advantage of the open-air benefits and more pandemic-free aspects of recreational boating. But if you haven’t been out boating in a while, are your vessel’s lights operating properly? Do you have a sufficient number of life jackets for the number of passengers aboard? Is your engine’s ventilation system up to par? To get you started on a new year boating adventure, now may be a perfect time to consider getting a 2025 Vessel Safety Check (VSC) offered by certified VSC examiners from the St. Lucie River Power Squadron, also known as America’s Boating Club of Martin County. These trained VSC examiners from the local squadron will point out safety features such as minimum requirements required by the U.S. Coast Guard, examine fundamental mechanical aspects of your vessel, and answer questions how you can have more fun safely on the water. These are just a few of the many discussion points covered in this voluntary examination. As an added plus, Vessel Safety Checks are free to boat owners. And if you don’t “pass muster” with the thorough examination, the summary report is yours and yours alone. BOATING CLASSES - A Vessel Safety Check is a complimentary check of your boat conducted by members of the Auxiliary, confirming that it meets both federal and state requirements for safety. No citations are issued, and the results of the safety check are not reported to any enforcement agency, but a decal is awarded to display when the vessel has passed the examination. The Vessel Safety Check (VSC) is performed at your boat, whether in a slip, at the launch ramp, or in your driveway, by a certified Vessel Examiner,
at a mutually-convenient time. It usually takes 20-45 minutes, depending on the size of your boat. After successful inspection you are awarded a vessel safety check sticker which is affixed to your vessel near your state registration sticker. FLORIDA BOATER’S ID CARD - Don’t forget that “Anyone born on or after January 1, 1988 is required to either have successfully completed a National Association of State Boating Law Administrators (NASBLA) approved boating education course or have passed a course equivalency or temporary certificate examination and have in their possession a boating education ID card and a photo identification card before operating a vessel with a motor of 10 HP or more in Florida.” Identification cards for persons completing the course or the equivalency exam are good for a lifetime. SARASOTA FLOTILLA 82 OF THE USCG AUXILIARY Florida law requires that any person born on or after Jan. 1, 1988, may not operate a vessel powered by a motor of 10 horsepower or greater unless such person has in his or her possession, aboard the vessel, photographic identification, a Florida boater safety identification card (or any other state’s boating card), and the registration for their vessel. Regarding the above law, which has been in effect for over a year, Flotilla 82 of the USCG Auxiliary, based in Sarasota, Florida (at Mote Marine) offers a 1-day course held on the last Saturday of each month. It starts at 9:00 am and completes at 5:00 pm. The course includes the USCG exam which, if passed, results in a Florida lifetime boating card/license.
