I don’t know about you, but for me, there’s nothing quite like a warm sunny day spent lounging by the water with a beverage in hand. My personal favorite is a Watermelon Jalapeño Margarita (I’m even sharing the recipe with you!) with EXTRA salt around the rim; in case you were wondering! LOL! Step up your at-home Happy Hour this season with my favourite Watermelon Jalapeño Margaritas and Vegan Nachos!

watermelon jalapeño margaritas INGREDIENTS
DIRECTIONS
Juice of 3 limes
1. Cut jalapeños in half and toss in olive oil, place them in your oven
3 cups cubed watermelon 3 jalapeños (sliced in half and roasted) 1 tbsp agave 4 oz tequila 1 cup ice A healthy pinch of Himalayan salt
on 350 degrees Fahrenheit on a baking sheet lined with parchment paper and roast until the jalapeños have softened and are slightly charred. Set aside and let cool. 2. Once your jalapeños are cooled, remove the seeds and the skin. 3. Add cubed watermelon, lime juice, agave, tequila, pinch of Himalayan salt and ice to blender and blend until fairly smooth. From here start adding in your roasted jalapeños. I would suggest start by adding one half to the blender, blend the margarita, taste test, and add more depending on how spicy you want it. 4. Once you’re happy with the flavour of the margarita, rim your glasses with Himalayan salt and pour margarita evenly into four glasses. Garnish with a slice of watermelon or lime and enjoy!

1. Chop and dice up all of the vegetables and toppings.

2. Place diced vegetables and toppings onto a wooden board or into individual bowls with a spoon. 3. Prep vegan ground “beef”, let cool and add to a bowl. 4. Prep any additional sauces or dips you would like to have with your nachos. We made the Fresh Salsa & Guacamole (page 118), Nacho Average Queso dip (page 117) and the Vegan Sour Cream (page 315) all from the Fraiche Food Full Hearts cookbook. 5. Place guacamole, fresh salsa, queso and vegan sour cream into individual bowls with serving utensils. Add chips to a tray or wooden board. J I L LY B OX .C O M | 7

Anthony Salituro I met Anthony Salituro a few years ago in Vancouver and I immediately fell in love with everything about him. From his beaming personality to his impeccable sense of style. Anthony is the owner of Jardines Domaine which is located in the heart of Kamloops, British Columbia. I am so honoured to not only call Anthony a friend but to have had the pleasure of working alongside him to create the stunning Jilly Road Trip Dress that is included within your Jilly Box! How did you get started? I started in the retail clothing industry in 2001. I was only 23 years old when I decided to become a young entrepreneur. I took out a line of credit to buy my inventory and I leased my first commercial retail space in downtown Kamloops.

What is your favourite item/product you make/sell? It changes with the season, but last year we developed our own private label called "nineteen44". I am the type of person that needs a creative outlet and I am so excited to focus my energy on this new addition to the business.
