Beacon at Home started during the pandemic when owner Ellie Aaro was looking for a way to keep her sta employed, doing what they do best. "We're accustomed to feeding and making people happy,” she says, “Beacon at Home is a weekly opportunity to serve people in their own homes.”

Lumberbeard Brewing
Working closely with local farms, Lumberbeard creates quality craft beers, pint and pint again
Opening in January 2020, Lumberbeard Brewing was almost immediately forced to navigate a series of unforeseen pandemic-related challenges. Now more than four years later, the brewery has responded with new endeavors.
Lumberbeard was founded by Bret and Hannah Gordon, who moved from Southern California to Spokane in 2018 “We wanted to be somewhere near family, which kind of narrowed down the options to California, Spokane and Denver,” he says. Soon Bret, who had obtained a Professional Certi cate in Brewing from the University of California San Diego and worked at a few breweries, decided to open up his own space.
“We decided on Spokane just because of the a ordability of housing and opportunity — Denver has a million breweries, so does California, and at the time, Spokane did not have nearly as many,” he says, “It’s kind of blown up in the years leading to and since we’ve opened.”
Lumberbeard brews various styles of beers, most notably their IPAs, as well as sours, lagers and barrel-aged options. Due to the pandemic, the company shifted to begin distributing to retailers throughout Spokane, as well as in Seattle and Idaho.
In October 2023, Lumberbeard opened a kitchen, serving a variety of scratch-made items, including wings, sandwiches and more. Since then, they open at 11:30am, just in time for lunch.
“We always prided ourselves on making really good beer, so we really wanted to have really good food to go along with that beer,” says Bret.
They frequently partner with other breweries in town to help foster a vibrant beer scene in Spokane. And Lumberbeard works with local farms, including LINC Malt, to supply the hops, malts and grains used in their beers.
“I think it’s made a di erence certainly in the quality of beer but also the story of our beer,” says Hannah of working with local farms. “We have an opportunity to make really good beer with local ingredients, which is what Bret’s really good at.”
East Pan Asian Cuisine
Diners
dive into culinary delights spanning the breadth of Asian traditions
at Northern Quest Resort & Casino
Prepare to be enticed as you peruse the menu at East Pan Asian Cuisine.
“We’re going for that fusion that hits all avor palates,” says Michael Smith, East’s restaurant manager, noting the menu represents cuisine hailing from China, Japan, Vietnam and India. “We wanted to build our identity into something that is unique to the area.”
The menu’s bestseller, the honey walnut shrimp, is found on the Larger Plates section of the multi-part menu. The dish’s crispy
shrimp are cooked traditionally and made fresh with each order, just as all of the dishes at East are. The new Dim Sum menu features delectables like potstickers, black bean steamed ribs, steamed edamame, and of course chicken feet. Smith says they hope diners will “try something a little out of your comfort zone” at the now two-year-old destination restaurant.
On the artisan cocktail list, you’ll see East’s popular gin-infused cucumber blossom cocktail right alongside the PNW’s beloved huckleberry avors. Four types of sake, ranging from the more traditional to the hard-to- nd higher-end, are available, along with some more familiar wines and beers.
In keeping with Northern Quest’s tradition of creating dramatic and engaging interiors, East’s physical space is striking. The open kitchen lets diners see chefs at work, but perhaps most fascinating is the entire wall of waving lucky cats, popular Japanese gures that are said to bring good luck. And what could be better than dining under the cheerful gaze of dozens of them?
“We are in the casino,” Smith says, “so we want to keep it fun!”

Market Street Pizza
Patience and a respect for traditions infuse specialty pies that keep customers coming back for more
Aaron Fiorini is serious when he says that love is the secret ingredient at Market Street Pizza. It’s present in the food, from pizza, wings and beer cheese fries to specials like the Sunday breakfast pizza, but also in the way they do things, Fiorini says.
“It’s a place that you feel comfortable to allow your kids to run around,” says Fiorini, a father of three who opened the original Market Street location with his wife, Angel, in 2019. In 2023, the couple added the Spokane Valley spot.
Market Street Pizza is inspired by an old school pizzeria Fiorini experienced growing up in Hillyard (where another Fiorini venue is in the works: Bison Bar).

As for food, Fiorini says old school is the best teacher there, too. Market Street makes its dough fresh daily from regionally sourced our and lets it ferment for at least two days for a rustic yet perfect combination of chew and crisp from the pizzeria’s old-school brick oven.
Like its dough, Market Street Pizza prepares fresh tomato sauce, then lets it rest a day to develop a hint of sweetness without adding sugar, Fiorini explains.
Market Street serves seven traditional pies from the uber-popular pepperoni to the tomato pie with mozzarella, basil and Parmigiano dubbed the “OG East Coast Italian Pie.” Specialty pizzas number two dozen, not including additional pop-up specials, all of which have been a hit with customers.
Purgatory Craft Beer and Whiskey Bar
Whet your whistle with one of a thousand whiskeys and enjoy a meal as well
There just wasn’t a good whiskey bar in Tracy, California, where Kevin Cox was working as a contractor.
“I had to create one,” he says. After opening a Purgatory in Tracy, the Colville native unveiled a second location in Spokane. The businesses are named for an area in Colorado where Cox has spent much of his time — outdoors, enjoying the company of friends and family, and of course drinking good whiskey. Purgatory Spokane is in its third year and thriving.
“We have pretty much every type of whiskey on our wall,” says Cox. That’s not an
overstatement, with all sorts of international and rare spirits including various iterations of whiskey hailing from Canada, Japan and Australia adorning Purgatory’s enormous lighted wall of spirits. Whiskey not your thing? No problem, as there are also agave-based spirits, a selection of craft beers, wines by the glass or by the bottle, and an expansive cocktail menu.
That kind of variety is what Cox thrives on. “I’ll have a favorite and something else will come in and be my next favorite,” he says.
But with so many options, it can be hard to choose. So why not try a ight? “Our sta is very knowledgeable,” Cox says, noting each bartender has created a namesake set of sips.
As for food, Purgatory’s menu o ers rotating selections featuring unique and creative o erings. The menu’s best-selling item is the elk burger with beer mustard and roasted garlic aioli. Sometimes whiskey meets meat, as in the case of the whiskey-crusted smoked pork ribs. Roasted goat cheese with blueberries is a splendid starter, while the honey-fried chicken tacos will have you licking your ngers. For dessert, it’s only tting to end with whiskey, so dive right into a slice of bourbon caramel sauce cheesecake.

Cash Butte Distillery
fruit is the key to creating the perfect spirits
After late-autumn sun has ripened the organic apples at Royal Blu Orchards — east of Vantage in Royal City, Washington — most of the fruit is bound for markets or cold storage. But slightly blemished “culled” apples travel just up the road to Cash Butte Distillery, where Ryan Armstrong transforms the imperfect fruits into smooth-sipping craft spirits.
Armstrong, an Air Force veteran who studied distillation through University of Kentucky, annually crushes about 200 thousand-pound-bins-worth of apples, adding yeast to create a hard apple cider that either becomes brandy or vodka. (Yes, vodka! From apples!)
Of course the process isn’t instant. “Our brandy goes into French and American oak barrels for a minimum of two years,” Armstrong explains. “Our vodka can be on the market in a couple months depending on how quickly everything has fermented. Everything is hand-bottled, labeled, packaged. We do it all here on site.”
Co-owner Julia Bringolf says that while some folks are initially skeptical about brandy and vodka made from apples, public response to the family-owned distillery’s spirits has been positive. “We’re getting feedback from whiskey drinkers that they’re very surprised by how much they like [the brandy],” she says.
Armstrong says his brandy “drinks like a whiskey and makes an incredible old fashioned” that tastes “like apple pie in a glass.” Each brandy bottle includes a recipe card, and apple vodka cocktail recipes are coming soon.
Positive public feedback isn’t the only approval that the spirits have earned: In February, Cash Butte Distillery’s brandy and vodka each won bronze in the 2024 American Craft Spirits Association competition in Denver.
Though Bringolf says apple-based vodka is trending on the East Coast, she knows of no other distillery on this side of the country that’s producing it. “The [apple] vodka does make a good martini, but only with a twist, not with olives,” Bringolf warns.
Cash Butte is also releasing a vodka made with merlot grapes from Royal Blu Orchard’s small vineyard. Armstrong assures drinkers that the grape vodka “comes across as an incredibly smooth-sipping, subtle vodka — one you can sip on ice without any additional additives.”
