By Ashlyn King THE HUTCHINSON COLLEGIAN For all you residence hall kids that are tired of eating the same microwavable foods over and over again, I’ve got something for you. There are many easy and yummy microwave recipes out there; the trick is just to find them. Here are a few ideas that would be good for testing in the residence halls. Many of these recipes you can make in a coffee mug and you don’t have to use microwavable bowls. Instant Mac & Cheese Your ingredients: -1/3 cup pasta -1/2 cup water -1/4 cup 1% milk -1/2 cup shredded cheddar cheese The directions: Combine the pasta and water in the large mug or even a glass bowl, microwave for two minutes on high, and repeat two to four times stirring every two minutes. Once the pasta is cooked add the milk and cheese and microwave for another minute, stir, and it’s done.

Cookie In A Cup Your ingredients: -1 tbsp. butter -1 tbsp. white sugar -1 tbsp. brown sugar -3 drops vanilla extract -Pinch of kosher salt -1 egg yolk -Just barely ¼ cup of flour -2 big tbsp. of chocolate chips The directions: Start by melting your butter in the microwave. Butter should just be melted, not boiling. Add sugars, vanilla and salt. Stir to combine. Separate your egg and add the yolk only to your cup. Stir to combine. Add flour, then stir again. Measure a scant, slightly less than full, ¼ cup of all-purpose flour. Add the chocolate chips, and give a final stir. Now your mixture will look like cookie dough. Cook in microwave 4060 seconds, start checking for doneness at 40 seconds. Mine takes 50 seconds. Do not cook past one minute. Just like a regular cookie, this will continue cooking as it cools. If the cookie is dry or cake-like, try less

time. Serve warm. Microwave Pancakes Your ingredients: -Pancake batter -Butter -Optional toppings (ham, syrup, cheese, or fruit, etc.) The directions: Just mix a regular pancake batter, pour about 3/4 cup onto a buttered dinner plate and zap for 45 seconds to 1 1/2 minutes. Steamed Veggies Your ingredients: -Vegetables of choice, but this works best with carrots, green beans, peas, bell peppers and broccoli The directions: Wash and dry vegetables and cut it into equal size pieces. Place them in one layer in a microwave safe glass bowl or a dish with sides. Add just enough water to the bowl that it comes 1/8 up the side of the vegetable piece. Cover the bowl with plastic wrap or a microwave safe cover, and microwave for 2 minutes. Test the vegetable for softness, and rotate or flip it if necessary. Cook again for four minutes. Continue alternating sides and cooking for one minute

per side until the vegetable can easily be pierced with a fork. Once your veggies are moist and tender, they are ready to serve! Meatloaf In A Mug Your ingredients: -1 slice white bread, torn into pieces -2 tbsp. milk -1/2 tsp. Worcestershire sauce -1/4 pound ground beef -1 green onion, thinly sliced -1/4 tsp. seasoned salt -1/8 tsp. pepper The directions: Place the torn bread into a small bowl, and pour in the milk and Worcestershire sauce; set aside for a few minutes for the bread to absorb the liquid. Add the ground beef, green onion, seasoned salt, and pepper to the bread; mix well and place into a 10 ounce, microwave-safe mug. Cook in the microwave at 70 percent power until the meatloaf is firm and no longer pink in the center, 4 to 5 1/2 minutes depending on the microwave. Remove the meatloaf from the microwave, and allow to stand 2 minutes before serving.
