By Ashlyn King THE HUTCHINSON COLLEGIAN Buttermilk, a popular drink before the days of refrigeration, is a fermented drink, meaning it will not curdle quickly. These days, buttermilk is consumed in foreign countries such as India, where yogurt drinks are still popular. As for the U.S., it is mainly a baking-oriented substance for muffins, cakes, bread, and pancakes. But some small companies now are making trendy ice cream and drinks with it, fresh from small, commercial butter churns. Like many foods and drinks, buttermilk has an aquired taste. When manufactured by big companies, it is produced with skim milk, and fortified with calcium, protein, and vitamin B2.
In a recent taste test at HCC, students and staff were offered the opportunity to compare the distinct flavors of manufactured buttermilk and that straight from a butter churn on an Amish dairy farm in western Reno County. The churn drink tasted rather sweet and tart. Cody Alststt, Marquette, did not have a preference. “Too sour for my taste; I can appreciate the concept though,” he said. M. L. Hinkle, from the college’s public relations department, picked the Amish buttermilk over the Kroger brand. “Tastes more like authentic fresh milk,” she said. “I grew up on a dairy farm, so you can taste the difference.” “The Amish milk tasted like pickles,” said Li Niehke, Hutchinson.
