Dieting Tips for Seniors
Fewer Calories/ More Protein
For Amy Campbell, a registered dietitian and diabetes educator, the DASH, TLC and Mediterranean diets stood out as smart choices for older adults, because they’re good for weight loss as well as controlling conditions such as diabetes and high blood pressure.
As with anyone, overweight and obesity can be issues for seniors, Campbell says. “People are living longer, so we’re seeing more of it in older adults.” And, she says, “As we get older, our calorie needs go down. People don’t need to eat as much as they did when they were 20 or 30.” Older women generally need anywhere from 1,600 to 2,200 calories per day, depending how active they are, Campbell says, while younger women need about 1,800 to 2,200 daily. For older men, the range is 2,000 to 2,800 calories per day, compared with 2,200 to 3,200 calories for younger men.
Frail elderly people face different issues. “One concern for older people is getting enough protein,” Campbell says. “We need more as we age.” A lack of protein puts people at risk for lower immune function and osteoporosis.
You don’t necessarily have to follow a specific diet, she says, “just a well-rounded diet with extra protein.” That means making the most of the calories you take in, she says, not just eating a bowl of cereal for dinner or making entire meals of toast and tea. “You don’t need animal protein in every meal,” says Campbell, who praises lentils, beans and chickpeas as great sources of inexpensive protein to round out meals.
Campbell says a very low-fat plan like the Ornish diet might be less appropriate and harder for seniors to follow. Similarly, she says, the Biggest Loser diet would not be
ideal, and the phases could be hard to comprehend.
“For diets in general, it’s best to try and make it easy and fit comfortably into a person’s life,” Campbell says. “Ones that promote good health but are as easy to follow as possible.”
Simplicity and Balance
Michael Davidson, director of preventive cardiology at the University of Chicago Medical Center and a Best Diets panelist, says Weight Watchers and diets with similar structures score well because of their simplicity. With Weight Watchers, for instance, foods are assigned different points, which you add up daily to stay at your personal target, which is based on your sex, weight, height and age. “You don’t have to do a lot of thinking about what type of balance of foods or menu plans,” Davidson says, which may be somewhat more challenging for seniors.
Long-term compliance was an important factor in ranking diets, Davidson says: “What can be a lifelong change instead of just a short-term fix for the patient?” Therefore, he says, “it’s really more about variety and food choices, as opposed to portion sizes, that are applicable to an elderly individual. So it’s the kind of diet I prefer for those patients.”
Davidson sometimes sees iron deficiency in frail older patients. “They don’t eat enough red meat; they don’t get enough iron in the diet,” he says. Although the paleo diet was lower-ranking among the Best Diets, he says “it could be a good diet. It’s had a little bit of a hype to it, but the principles are not far off, such as people eating more complex carbohydrates and more lean meats.” He points out that constipation can be an issue for seniors on low-carb, low-fiber diets.
When going after the goals you are most passionate about, you may think that these are just hopeful dreams that probably won’t actually happen. However, if you change the way you think about your passion, you may begin to see things differently. It all begins with your mindset.
As I pursue my passion, I now realize that the passion is not just some out of reach dream. My passion is actually attached to my purpose and my purpose is attached to what God has called me to do. When God created me, He gave me the passion to encourage, inspire and write. It is in me. Therefore, when I am doing these things, I am fulfilling my purpose. If I am fulfilling my purpose, then my passion is no longer just some hopeful dream, it is something that will become a reality because I am purposed to do it.
I realized one of my passions when a dream of being on the radio came true this past Saturday. I am now a blog radio host on the Everyday Folks Radio Blog Network and my show is called Journey into Passion with Anika S. I worked with Dr. Billy Jones who created this blog radio show and when presented with an opportunity, I didn’t shy away from it. I am using my God-given gifts and the messages that God has provided to me to reach others. This is a part of my purpose. My next show will be on June 11 th at 2 pm EST.
I encourage you to stop looking at the walk you are taking on the path towards your passion as just some unreachable dream. If you are going after something that God has called you to do, then as long as you remain on the path He has given you, it will come to fruition. The path may be tough and it may seem impossible, but God has already given you the tools you need when He gave you just the right gifts to use.
I will give you an example. You are a pastry chef whose pastries are loved by everyone. Your passion is to one day open a bakery. You have already discovered that you have the right gifting to begin walking this path because everyone loves your pastries. Now all you need to do is to research what is needed in order to take the next step towards realizing your ultimate passion of baking all of the time and owning your own bakery. God already gave you the tools, you just need to do the work and let Him open the doors.

It is not enough, to do a little here and a little there on what I like to call your “Passion Path”. Every step has to be a purposeful one. From the first step to the last, you need to do the following:
1. Do your research. It is important to know what is necessary to reach your ultimate goal.
2. Learn something new. In your research, discover new things. Growth is essential when you are on this important path. Never take new steps as the same person. You need to experience some form of growth before you continue to the next step.
3. Share what you have learned. Even if you have not reached the finish line yet, take some time to share what you have learned so far. Be the help that you wish you could have and watch the help that you currently need become one of your resources.
4. Always be prepared for opportunities. You never know when someone needs the very thing that you offer. When you feel you are ready to present yourself, have the business cards ready to hand out.
5. Do not wait one more minute to move. If you are ready, you are ready. Make the move!
6. Failures are just things that don’t work out. Learn from any mistakes that were made. If no mistakes were made, then it may be just something that was not meant to be. Lesson learned, keep it moving.
The path that leads to your passion is ultimately the path that leads towards your purpose. Own every step, grow with every step and prepare for the opportunities that God will present to you. If you have done your research and spent time listening to God’s directions then you will know when it’s the right time to make the next move. Then you will be on your way towards your ultimate destination on your purposeful walk.

City of Opa-locka Hosts Public Dedication and Street Naming Ceremony for Commissioner Barbara Jordan Way
Over one hundred public officials, community based organizations, and district one residents recently gathered with Miami-Dade County Mayor Daniella Cava, Miami-Dade County Commission Vice Chairman Oliver G. Gilbert, III, City of Opa-locka Mayor Matthew Pigatt, Commissioner Joseph L. Kelley, Vice-Mayor Veronica Williams, and the City of Opa-locka City Commission for the Public Dedication and Codesignation Ceremony for Commissioner Barbara Jordan Way.
The portion of NW 37th Avenue from NW 135th Street to NW 151st Street was ceremonially named Commissioner Barbara Jordan Way.
To show their support several of Jordan’s former colleagues on the commission in-
cluding Chairman Jose “Pepe” Diaz, Commissioner Eileen Higgins, and Commissioner Jean Monestime attended as well. Commissioner Kionne McGhee was also in attendance. Jordan is especially proud of Commissioner McGhee who was a teen participant, and later a Board Member in the Greater Miami Service Corps program created by Jordan. His trajectory as an attorney and elected official is a prime example of what a difference youth serving programs can make in the lives of young people. Elected officials present also included Jordan’s brother, Florida City Mayor Otis Wallace. Commissioner Jordan vowed to continue to be an advocate for her community.
Barbara J. Jordan has devoted 50 years of service to Miami-Dade County. From her early years as a Head Start teacher to her
retirement 34 years later as an Assistant County Manager, Jordan’s commitment never wavered. Her short lived retirement was interrupted by the urging of the outgoing Commissioner, Betty Ferguson, to seek elected office. This decision would result in an additional 16 years of public service and the opportunity to address great needs in the community.
Her love for her community is matched only by their love for her. The outpouring of support was a touching tribute to a job well done. Commissioner Barbara J. Jordan has been a champion to workers fighting for fair wages, job creation and quality working conditions. Her efforts to support a thriving workforce are second to none.
She sponsored legislation for prompt payment for small businesses working on
county related contracts. She also sponsored legislation supporting healthcare workers and other essential workers, such as bus drivers to be compensated with hazard pay during the COVID 19 pandemic.
With the establishment of the Greater Miami Service Corps, high school dropouts and young people with exposure to the criminal justice system are given the opportunity to turn their lives around. They receive training, educational opportunities, a stipend and work experience. This program is a game changer in the lives of those who are fortunate enough to participate.
A major accomplishment in the labor arena is reflected in Commissioner Jordan’s successful work in securing an Amazon distribution center in her district. This effort resulted in thousands of jobs and related business opportunities.
When the historic City of Opa locka, which is located in her district, faced enormous challenges Jordan stepped in to see how she could help. In recognition of her support the city, with the support of the county, named the street in her honor. The designated street, Commissioner Barbara Jordan Way, fronts the Amazon Distribution Center that Jordan helped to secure for the area.
Under Commissioner Jordan’s leadership
and focus, and with over 700 million dollars in development, the Opa locka Airport was transformed into a major entity that serves as a model for general aviation airports nationwide.
Workforce Housing is an area that Commissioner Jordan has been particularly concerned about. Teachers, firefighters, police officers and others in the workforce should be able to access housing at a reasonable cost. Her legislation has resulted in addressing those specific housing needs.
In securing 120 acres of land for the Carrie Meek Foundation, Commissioner Jordan positioned the organization for continued growth. With the Greater Miami Service Corps, her Internship program which connected students with job opportunities, and her support of Florida Memorial University and Head Start, Jordan’s impact will be realized for years to come.
With a major street and a health center named in her honor, and having received hundreds of awards over the years, Commissioner Jordan is most touched by the stories of those whose lives her work has positively impacted.
Jordan’s response when asked after the ceremony what her legacy might be:
“At the end of the day my legacy is not de-
termined by what I think it is. My legacy will be based on what the people think my impact has been. To children, students and young adults my legacy might be Head Start, Greater Miami Service Corp or my Internship program. To working families perhaps my legacy will be quality housing and decent wages. To those seeking employment my legacy might be securing Amazon as a major employer or the expansion of Opa locka Airport. Those seeking fairness and justice may feel that my legacy is the Independent Community Panel….. My work as a public servant will be defined by my direct impact on the people I have been fortunate enough to serve.”

The Community Action Agency Board Is Recruiting New Members
The Miami-Dade County Community Action and Human Services Department and its Community Action Agency Board (CAA) is interested in filling vacancies on its Board. The mission of the organization is “to empower economically disadvantaged individuals, families and communities through advocacy, education, resource mobilization and service delivery.” There are currently six (6) vacancies on the CAA Board in the Private and Public Groups and Interests sector of the CAA Board in the following categories: Industry; Business; and Law Enforcement. The term of office is two-years and CAA Board members serve without compensation. The CAA Board meets 10 times per year and members are encouraged to be involved in at least one committee on a regular basis. Committees include:
Executive, Finance, Advocacy, and Youth Initiatives.

There is something I find so fascinating when it comes to rainbows. They are constant reminders of God’s promises and seem to always appear just when I could use some of those blessed assurances from on high.
Just a few weeks ago as I had just arrived in the Carolinas, my dear friend said to me (as she pointed to the sky), “Look, there’s your sign”. She had spotted the timely and picturesque rainbow in its delightful array of colors. It was beautiful and just what I needed to see at that very moment. Right then I sighed with a resounding, “Yes!” I perceived the glimpse of that rainbow as an affirmed promise (and a thumbs-up from above) of peace and protection going forward.
As promises go, I am one of those individuals who take promises rather seriously. However, it seems as if some of society views promises as nothing more than a watered-down, casual agreement with little or no commitment attached. As kids back in the day, to keep a promise we connected our pinky-fingers with someone else’s and did the ‘pinky-promise’. As we got a little older we moved from calling it a promise to ‘making a pact’ and then we moved into ‘entering a covenant’. Unfortunately, the only thing some of us know about promises is that they are often broken.
I’m reminded of a song I heard many years ago, a very poignant song entitled Cats in the Cradle by Harry Chapin. It spoke of a father who told his son, from the time his son was an infant to the time he became a man that he (the father) would make time for his son. Over the years the father gave his son his word, practically promising him, that he would make time for him but he was always too busy and never got around to it. Later on in life the tables were turned. The father began wanting to spend time with his adult son and like his father, the son gave his word, perhaps even promised that he would make time for his dad but he was too busy and never got the chance to do so. This, another classic case of “broken promises”.
I am so grateful, that unlike the father in that story who never kept his word or his promise, we have a Father who always keeps his word and his promises. We may break promises we make to one another but God never has and never will. He is the creator of promises. In fact, the Bible is filled with countless promises God has made to us and as believers we can most certainly trust that God will keep each and every one of His promises.
When I think of the promises of God I feel so empowered. They give me a sense of genuine hope and peace. God’s promises are rich and so wonderful to behold. However, many believers don’t capitalize on these promises. God’s promises are like being given
a stack of very valuable gift cards. We know we have access to them yet we tuck them away and rarely take full advantage of them. On occasion, when we just happen to remember we have them, we either still put off using them or we only use a portion of their true value. Before we know it we completely forget about them and never use them at all. Essentially they are wasted. That is not how God intended for us to claim his magnificent promises.
I truly believe God expects us to stand firmly on his promises daily. He constantly reminds us in his word that when we embrace his promises he will lovingly respond to our needs. Check out what the Bible says about how God responds when we stand on his promises and take him at his word:
• John 14:13-14 - “And whatsoever ye shall ask in my name, that will I do, that the Father may be glorified in the Son. If ye shall ask any thing in my name, I will do it.”
• Matthew 21: 22 – “If you believe, you will receive whatever you ask for in prayer.”
• Jeremiah 33:3 - “Call to Me, and I will answer you, and show you great and mighty things, which you do not know.”
• Matthew 7:7 - Ask, and it shall be given you; seek, and ye shall find; knock, and it shall be opened unto you.” God promises us He will supply our every need and that His is grace is sufficient. He promises us victory over death and to never leave us or forsake us. Knowing God’s promises are faithful and true, daily I claim the promise found at Romans 8:31; “What then shall we say in response to these things? If God be for us, who can be against us.”
Whatever situations we find ourselves confronted with in life, as believers we have been granted the right and privilege to boldly claim God’s promises. Although rainbows are wonderful reminders of God’s awesome promises and we know gift cards come and go, worship songwriter Darlene Zschech got it absolutely right when she wrote the song Shout to The Lord, stating, “Nothing compares to the promise I have in you”. God is waiting and expecting us to make our requests known to him and claim the wonderful blessings found in His promises. Wouldn’t you agree that, “T’is so sweet to trust in Jesus…and to take Him at his word?”

Josephine Staggers Waterman was a woman of strength, dignity and respect and she exemplified those qualities every day of her life as a wife, mother, sister, aunt and friend.
She was born August 25, 1922, in Williamsburg, South Carolina, the third oldest child of Arthur Staggers, Sr. and Martha Frasier Staggers. Being one of the oldest, placed her in a leadership role in her family early in life, she had to assume responsibilities to help the family work the farm and look after her younger siblings. Josephine loved her family and she also loved school and basketball; she was dismayed when she had to leave school in the 9th grade to help out. But she had received enough education that she could read and write well.
Josephine matured as a young lady and one day caught the eye of an admirer, who courted her until she said, yes! In 1938 Josephine Staggers married Robert Waterman, Sr. To this union ten children were born, five boys and five girls.
Josephine and Robert worked hard on the farms owned by whites, but still didn’t see the rewards of their labor. Eager for a better life, she and Robert, along with her two brothers and their families moved to Florida City, Florida in 1956. They established themselves into the community where other relatives and friends from South Carolina had come.
Josephine initially worked in the agricultural fields; she quickly graduated to housework in the homes of affluent whites. The family had moved into an apartment; however, Josephine was eager to own a home as her family continued to grow. She knew she had to strive more for her children’s sake. She also wanted to learn more and began taking a nurse’s aide training course. Through her desire, to further her career, she became more and was employed by Homestead Air Force Base Hospital. Josephine’s dreams were coming true, she and her family moved into one of the first newly built homes in the community.
Josephine loved her children and passionately taught them values to live by. “Poonay” as we lovingly called her knew the Lord, she loved and relied on Him. Many nights she could be heard praying or humming a song on the front porch. She knew the power of prayer and through example she instilled this belief in her children. She was a lifelong member of St. Matthew Holiness Church under Bishop J.S. Davis and later under her brother Elder Arthur Staggers.
Josephine was a community activist; she campaigned for many issues of concern in her community. When a young man, she knew from a child returned from college and ran as the first black candidate for Mayor, she was on the campaign trail day and night. She helped him become elected as the first black Mayor of Florida City. She was
also one of the founders of the Morning Doves Gospel singing group. She served as President and booking agent as they traveled around the state performing at different spiritual events. One of her greatest joys was making ceramic pieces for her children, family and friends. She was featured in the local Homestead News leader newspaper for her creative pieces of art that still adorn the homes of her children and friends.
Our mother loved family holidays, where each of her children would take a turn hosting in their homes and everyone would bring a dish and fellowship together as a family. She witness every one of her children graduate from High School and the first to graduate from College and three sons serving in the military. She enjoyed the wedding of two daughters and the birth of five (5) grandchildren. She instilled every good thing her children are today. In 2001, the children of Josephine Staggers Waterman established in her honor and memory the Josephine Staggers Waterman Scholarship, Inc., To Learn More, To Strive More and To Be More. This is a legacy that we hope will extend us – her family and the community she loved!

Try These Three Essential Oils For Seasonal Allergy Relief
Have you ever thought about using oils for seasonal allergy relief?
Spring is among us, so that means we say hello to warmer weather. The beams of sunshine, blossoming flowers and breezy days are waiting for us. It’s that time of the year where we’re encouraged to let go of things we no longer need to start fresh with new beginnings.
With doing so, it can be a pretty promising season to manifest goals and other goodness – unless, you suffer from seasonal allergies, in which at that point, the spring season can be a nuisance.
Seasonal allergies are caused by the body’s inability to adapt to changes in the environment so while some people may thrive during the spring season, others may find it quite difficult to get through their normal daily activities due to the increased onset of itchy and watery eyes, sneezing, red irritated skin and so on.
If you’re one of those people that deal with seasonal allergies and find that over-the-counter medications aren’t doing the trick, try some of the following essential oils to help relieve some of the allergen symptoms you may ex-
perience while transitioning into different seasons.
Top Essential Oils for Seasonal Allergy:
Peppermint
This versatile oil is one of the best essential oils to use for soothing digestion, headaches, itching, inflammation of the skin, and quite a few other benefits.
To use, rub a drop or two of peppermint oil on the temples or over sinuses if you’re treating a headache or apply to the inflamed or itchy area of the skin that needs to be treated.
If you suffer from a cold, you can place a drop of peppermint oil on the tongue. You can also inhale peppermint through your nostrils to help relieve congestion.
Lavender
Much like peppermint oil, lavender oil is a multi-purpose essential oil that has many benefits.
Commonly known for its relaxing effects on the mind and body, lavender oil can help treat skin conditions as a result of seasonal allergies, such as ec-
zema or dermatitis.
I personally suffer from this myself around this time of the year. It happens to me in the fall season as well. I can attest to lavender helping heal my skin condition.
To help treat eczema, simply mix several drops of lavender oil with a carrier oil. You can use oils such as coconut oil or raw shea butter. Use topically on the skin condition.
Eucalyptus
This immune-boosting essential oil has several healing properties including anti-inflammatory, anti-bacterial, decongestant and so much more.
Eucalyptus oil can be used to treat respiratory issues associated with allergies, such as scratchy throats, blocked nasal passages or sinus infection.
Eucalyptus oil can be used to alleviate these allergy symptoms. Simply mix a few drop-offs the essential oil. You can use 2 – 3 tablespoons of pure olive oil, almond oil, or coconut oil. Rub the mixture onto your chest, throat, and temples to help relieve congestion. Be sure to cover yourself with a t-shirt after applying the oil mixture to your chest for even better results.
A man found a cocoon of a butterfly.
One day a small opening appeared. He sat and watched the butterfly for several hours as it struggled to force its body through that little hole.
Until it suddenly stopped making any progress and looked like it was stuck.
So the man decided to help the butterfly. He took a pair of scissors and snipped off the remaining bit of the cocoon. The butterfly then emerged easily, although it had a swollen body and small, shriveled wings.
The man didn’t think anything of it and sat there waiting for the wings to enlarge to support the butterfly. But that didn’t happen.
The butterfly spent the rest of its life unable to fly, crawling around with tiny wings and a swollen body.
Despite the kind heart of the man, he didn’t understand that the restricting cocoon and the struggle needed by the butterfly to get itself through the small opening; were God’s way of forcing fluid from the body of the butterfly into its wings. To prepare itself for flying once it was out of the cocoon.
Moral of the story:
Our struggles in life develop our strengths. Without struggles, we never grow and never get stronger, so it’s important for us to tackle challenges on our own, and not be relying on help from others.
What signs of breast cancer are there other than a lump?
A breast lump or mass is just one of the possible signs of breast cancer in men or women. Breast cancer can cause several additional changes to the skin on and around the breast. Anyone who notices any of these changes should see a doctor.
In some cases, breast cancer may not cause any symptoms, but a doctor will identify a mass on a mammogram. Screening for breast cancer as recommended by a doctor can help detect this condition in its earliest and most treatable stage.
It is important to be aware of some of the potential signs and symptoms of breast cancer that may occur without a noticeable lump in the breast. All of these symptoms can also have a noncancerous underlying cause. However, people with these symptoms should speak to their doctor in case tests are necessary to check for both noncancerous and cancerous conditions.
Symptoms to look out for: Changes to the skin’s texture, Nipple discharge, Dimpling of the skin, Lymph node changes, Breast or nipple pain, Nipple retraction or inversion, Redness and Swelling, and of course a Lump.
People should not panic or be fearful when they notice breast changes. Aging, changes in hormone levels, and other factors can lead to breast changes throughout a person’s lifetime. However, people should be proactive about their health and visit a doctor to determine the cause of any breast symptoms.
Each of the eight changes listed above can warrant a trip to the doctor, especially if these changes do not seem to relate to one of the following: - the menstrual cycle - injury - previous illness, such as a breast infection
A doctor can evaluate the symptoms, examine the affected breast or breasts, and recommend further studies if necessary. They may suggest a mammogram, ultrasound, other imaging tests, or bloodwork to rule out infection or other potential causes.
Breast cancer can cause signs and symptoms that include changes to the skin on and around the breast. While many conditions can potentially cause breast changes, including cysts, infections, eczema, and dermatitis, a person should not automatically rule out breast cancer.
Seeing a doctor for evaluation and diagnosis can help determine whether or not any breast changes are cause for concern.
