Time is flying by; a month has already come and gone. I hope everybody enjoyed our Valentineās Day event. Thank you all for coming out and participating in the Valentineās Day box competition. As the year goes on, we will have more activities and events, in our wish that more people will start to join us. We want our community to come together and be able to participate in events and activities & meet your neighbors & make new friends. Also, one important thing I want to talk to everybody about is keeping your yards cleaned up. We are going to be cracking down on everybody who does not keep the yards cleaned, so please join us in trying to keep our community a clean, safe Community to live in.

Important Plumbing Reminder
Please remember that only toilet paper should be flushed.
Flushable wipes are not actually flushable and have recently caused major damage within our community.
To help prevent plumbing issues and costly repairs, please do not flush wipes or any other items besides toilet paper.

Recipe of the Month
CROCKPOT CREAMY RANCH CHICKEN
Simple, filling, and perfect for busy days.
Ingredients
2 pounds boneless chicken breasts or thighs
1 packet ranch seasoning mix
1 can cream of chicken soup
Directions
Place chicken in the crockpot.
Sprinkle ranch seasoning evenly over the chicken. Pour cream of chicken soup on top.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Shred chicken and stir well before serving.
Serve over rice, mashed potatoes, or noodles.
Total Estimated Cost: $8ā11
Feeds approximately 4ā6 people.

Step 1: (Pre-Baked Pie Crust)
Recipe of the Month
The Best Lemon Meringue Pie
Makes 8 Servings
Prep and cook: 30-35 minutes
Bake: 15-20 minutes for the meringue
INGREDIENTS:
⢠1 partially pre-baked pie crust (see Step 1)
⢠4 medium lemons (13 oz / 370 grams)
⢠3 large eggs
⢠1 1/3 cups sugar (267 grams)
⢠¼ cup cornstarch (40 grams)
⢠¼ teaspoon salt
⢠Place a rack in the center of the oven, and preheat the oven to 375 degrees F
⢠Line a frozen or chilled pie crust with a square of parchment paper and pour in 1 cup of dried beans or pie weights
⢠Shake the pan gently to distribute the beans/weights around the pan
⢠Place in the oven, and bake until the edges start to brown, 15 minutes
⢠Remove the pie from the oven and carefully lift out the parchment paper (with beans/weights)
⢠Prick holes over the bottom crust with a fork and let cool before moving on
Step 2:
⢠Preheat the oven to 350 degrees F
⢠Wash and pat dry the lemons
⢠Zest 1 lemon finely to yield about 1 teaspoon, and place the zest in a medium bowl
⢠Using a serrated knife, remove the skin and pith from the same lemon. Section it, cutting into the membranes over the bowl to collect the juices, and letting the sections fall into the bowl
⢠Juice the remaining 3 lemons to yield about ½ cup lemon juice, and add to the bowl with the sections and zest
⢠½ cup cold water (4 oz)
⢠1 ¼ cups boiling water (10 oz)
⢠4 tablespoons unsalted butter (half a stick), cut into pieces
Meringue:
⢠3 reserved egg whites
⢠6 tablespoons sugar (about 1/3 cup)
⢠Separate the eggs, placing the whites in a large bowl and set aside
⢠Whisk the yolks into the bowl with the lemon juice and pulp mixture, and set aside
⢠Place the sugar, cornstarch, and salt in a heavy medium saucepan, and whisk to combine
⢠Whisk in the cold water to combine well, about 30 seconds. Add the egg and lemon mixture and whisk to combine well
⢠Meanwhile, let the water come to a boil, and whisk this hot water gradually into the saucepan, about 1-2 tablespoons every 10 seconds, until all water is added
⢠Place the pan over medium heat, and with a flat wooden spoon or spatula, stir until the mixture is thickened and comes to a low boil for 1 minute, about 10 minutes
⢠Remove the pan from the heat and continue to stir, adding pieces of butter, until the butter is incorporated. Pour the hot filling into the cooled crust and set aside
⢠For the meringue, beat the egg whites on high speed until foamy, about 1 minute
⢠While the machine is running, add the sugar gradually and beat until stiff peaks form, 2-3 minutes
⢠Dollop the meringue on top of the filling, and with a small spatula or spoon, swirl the meringue and spread it to the crust
⢠Place the pan into the oven and bake until the meringue is browned, 15-20 minutes, and let cool on a rack for 3 hours before slicing

On March 3rd, Loretta Milton was honored for her constant volunteering though Channel 5ās Pay It Forward Program. Here is a Poem that was submitted by the MBV Surprise Squad:
with neuropathy for years walked across the street to welcome us back. The amazing thing was, she walked over without her walker. I had never seen her without her walker. I asked her what she had done, and she walked back to her house and came back with a card for the doctor she had seen after we left last year. I gave his office a call to make an appointment, it was on a Thursday, his office was closed, but the doctor answered the phone. He explained he would like me to attend one of his free workshops before coming in, it would answer all questions and if I still wanted to come in, I could make an appointment then. His workshop was informative, he explained things unlike any doctor I had seen up to that time, how neuropathy started, what is done for most people, why he does what he does. I was mostly impressed that he was straight forward, told the pros and cons. Iāll bet 85 to 90 percent of the other patients I talked to in his office were getting good results, like I did. My pain decreased by at least 50% in the first 3 weeks. I would highly recommend anyone with peripheral neuropathy, go to this workshop, I know you will be glad you did."
