MANAGER’S CORNER

Hello everyone,

Let me introduce myself. I am Samantha Robinson. I am a native Arizonian, born and raised. I spent a decent amount of time on the East Coast, and let me say I do not miss it by any means. HAHA!

I was just recently promoted from a 55-and-over community to our lovely community here in Mesa. I am so excited to be working with you all on making the community better! I have an open-door policy, so please do not be afraid to come to me with ideas. Mrs. Olivia and I are working very hard to bring back some of the events you all have seen in the past, and we are working on adding some new events sponsored by Cobblestone.

I appreciate everyone who has come in and introduced themselves. We have felt such a warm welcome here, and we are so happy to be working within this community. You all are priority number one for me, and I will be working the best I can to bring the spirit of ā€œCommunityā€ back into Mesa Sunset! Thank you for taking the time, and I look forward to making this place better in the months to come!

DIRECTIONS

Step 1: (Pre-Baked Pie Crust)

Recipe of the Month

The Best Lemon Meringue Pie

Makes 8 Servings

Prep and cook: 30-35 minutes

Bake: 15-20 minutes for the meringue

INGREDIENTS:

• 1 partially pre-baked pie crust (see Step 1)

• 4 medium lemons (13 oz / 370 grams)

• 3 large eggs

• 1 1/3 cups sugar (267 grams)

• ¼ cup cornstarch (40 grams)

• ¼ teaspoon salt

• Place a rack in the center of the oven, and preheat the oven to 375 degrees F

• Line a frozen or chilled pie crust with a square of parchment paper and pour in 1 cup of dried beans or pie weights

• Shake the pan gently to distribute the beans/weights around the pan

• Place in the oven, and bake until the edges start to brown, 15 minutes

• Remove the pie from the oven and carefully lift out the parchment paper (with beans/weights)

• Prick holes over the bottom crust with a fork and let cool before moving on

Step 2:

• Preheat the oven to 350 degrees F

• Wash and pat dry the lemons

• Zest 1 lemon finely to yield about 1 teaspoon, and place the zest in a medium bowl

• Using a serrated knife, remove the skin and pith from the same lemon. Section it, cutting into the membranes over the bowl to collect the juices, and letting the sections fall into the bowl

• Juice the remaining 3 lemons to yield about ½ cup lemon juice, and add to the bowl with the sections and zest

• ½ cup cold water (4 oz)

• 1 ¼ cups boiling water (10 oz)

• 4 tablespoons unsalted butter (half a stick), cut into pieces

Meringue:

• 3 reserved egg whites

• 6 tablespoons sugar (about 1/3 cup)

• Separate the eggs, placing the whites in a large bowl and set aside

• Whisk the yolks into the bowl with the lemon juice and pulp mixture, and set aside

• Place the sugar, cornstarch, and salt in a heavy medium saucepan, and whisk to combine

• Whisk in the cold water to combine well, about 30 seconds. Add the egg and lemon mixture and whisk to combine well

• Meanwhile, let the water come to a boil, and whisk this hot water gradually into the saucepan, about 1-2 tablespoons every 10 seconds, until all water is added

• Place the pan over medium heat, and with a flat wooden spoon or spatula, stir until the mixture is thickened and comes to a low boil for 1 minute, about 10 minutes

• Remove the pan from the heat and continue to stir, adding pieces of butter, until the butter is incorporated. Pour the hot filling into the cooled crust and set aside

• For the meringue, beat the egg whites on high speed until foamy, about 1 minute

• While the machine is running, add the sugar gradually and beat until stiff peaks form, 2-3 minutes

• Dollop the meringue on top of the filling, and with a small spatula or spoon, swirl the meringue and spread it to the crust

• Place the pan into the oven and bake until the meringue is browned, 15-20 minutes, and let cool on a rack for 3 hours before slicing

My name is Olivia Fulda, and I’ll be your new Administrator/Activities Director. I’m very excited to meet all of you and to work with you to make sure that our future events have something for everyone to enjoy! UPCOMING MARCH

March 7th - Craft and Reading Day with Mrs. Olivia at the Clubhouse, 12pm. Bring the kids for a fun afternoon of crafts and books!

March 14th - National Pi Day at the Clubhouse, 12pm. Bring the family for an assortment of pies and refreshments! Come say hi!

March 14th - Open house from 2:00–4:00pm

March 21st - St. Patrick’s Day/ First Day of Spring Party! 4pm. This will be a party for all ages! Come enjoy some corned beef and cabbage with sweets of all kinds to celebrate Spring!

The community is going to have a few fixes coming up here.

1. The pool heater should be fixed by the end of the month.

2. The weeds will be cleaned up, and we will be starting fresh by the end of the month.

3. We have a new landscaper and a new pool company working with us.

4. We will be fixing the speed limit signs throughout the park.

5. If you want to reserve the Clubhouse for an event (birthday party, etc.) you can do so with us in the office. There is a $100 deposit for cleaning, which will be returned to you if the Clubhouse is left in the same condition it was in before your event.
