Hello Beach Cove Residents, May has arrived, bringing warm sunshine, blooming landscapes, and plenty of opportunities to enjoy our wonderful Florida lifestyle. We have lots of May events planned, including Cinco de Mayo and Mother’s Day so be sure to check out the calendar!
This month, I’d like to take a moment to reflect a bit more on Memorial Day. While it often marks the unofficial start of summer—with gatherings, barbecues, and time spent with friends and neighbors—it’s also a meaningful time to honor and remember the men and women who gave their lives in service to our country. It’s a day of gratitude, reflection, and appreciation for the freedoms we enjoy every day. As you spend the holiday weekend here in Beach Cove, or wherever you may be, I encourage everyone to take a quiet moment to remember the true meaning of the day, while also enjoying the sense of community that makes this place so special.
Around the community, we continue working to keep everything looking its best and running smoothly. Thank you for your continued pride in your homes and for being such an important part of what makes Beach Cove a warm and welcoming place to live.

As we enjoy the spring season, please take a moment to check your home and lot and remove any clutter or debris. If needed, please be sure to power wash your home, skirting, driveway and sidewalks. Your efforts help keep Beach Cove clean, safe, and beautiful.

Coffee & Donuts and Social Club Meeting
- Please join us for coffee and donuts during the social club meeting on May 6th at 11:30 am. We want everyone to bring their ideas and help create more fun events.
Bingo – Bingo will be held on May 1st starting at 3 pm with a second Bingo on May 15th! Be sure to bring your lucky charms and try to win a game or two!
Cinco de Mayo Costume Party – On May 5th starting a 5:30 pm come enjoy great company, festive music, a costume contest and great Cajun / Mexican food! Feel free to bring your favorite dish to share or just come ready, in your festive costumes, to have a good time with your neighbors.
Mother’s Day Brunch – Join your neighbors and friends on May 10th starting at 10:30 am for a delicious brunch in the clubhouse. The food and Mimosas will be provided! There will be a 50/50 drawing so bring your cash!
Pool Party – There will be a pool gathering on May 16th starting at 1 pm. Bring your own drinks and snacks and enjoy swimming or relaxing by the pool with your neighbors!
Memorial Day Bar-b-que – Enjoy a traditional holiday cook out with hamburgers and hotdogs on May 25th starting at 12 noon. There will be a 50/50 drawing so don’t forget your money!
Water Aerobics – Monday, Wednesday, & Fridays starting at 10 am. Have fun while keeping healthy!
Happy Hour at the Tiki – Every Friday beginning at 4 pm join your friends with your favorite beverage and snacks at our tiki hut!
Horseshoes – As always, the horseshoe players and spectators are out there every Sunday at 1 pm challenging their friends and neighbors to play a fun game! We have some talented players so stop by and cheer them on!

• Mission Trip to Uganda Fundraiser Golf Tournament (May 9, 2026): Scheduled at the City of Sebastian Golf Course.

• Coffee and Donut Hour were held in combination with the Social Club Meeting on April 1st at 11:30 am to plan this month’s upcoming events. Our next Coffee and Donut hour / Social Club Meeting will be on May 6th at 11:30 am. We want everyone to join in the activities and help create some new ideas with your input while enjoying a cup of coffee and donut!
• Bingo was held April 3rd and this month’s bingo will be on May 1st with a second Bingo on May 15th both starting at 3 pm. Congratulations to all the winners!
• Our Easter Dinner and Egg Hunt on April 5th was a great turnout with plenty of delicious food and great fun, especially during the Easter Egg Hunt! Congratulations to Debi Reach for finding the Golden Egg and winning a Publix $25 gift card! Special thanks to Ken, Silvia, Rick, Pam, Carol and Sharon for organizing, cooking and decorating and for all of you who brought a dish or desert! Not only was Jo Jo’s bunny cake adorable, it was also delicious!! Check out the pictures. ��
• The Welcome and Goodbye pizza party on April 17th was a great time meeting our new residents and saying goodbye to our snowbirds! The pizza was great too!















INSTRUCTIONS
• 1/2 (16 ounce) package spaghetti
• 2 tablespoons olive oil, divided
• 4 (5 ounce) skinless, boneless chicken breasts
• 1/4 cup basil pesto, or to taste
• 1 bunch asparagus, cut into 2-inch pieces
• 1/2 lemon, juiced
• 4 cloves garlic, chopped
• 1 teaspoon red pepper flakes
• 1 cup shredded Parmesan cheese
• salt and freshly ground black pepper to taste
STEP 1: Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain, reserving some pasta water.
STEP 2: Meanwhile, heat 1 tablespoon olive oil in a large nonstick skillet over mediumhigh heat. Add chicken; cook until browned, about 5 minutes. Flip; add 1 dollop pesto to each chicken breast. Continue to cook until no longer pink in centers, flipping as needed, 7 to 10 minutes more. An instant-read thermometer inserted into centers should read at least 165 degrees F (74 degrees C).
STEP 3: Heat remaining 1 tablespoon olive oil in a separate skillet over medium heat. Add asparagus; cook and stir for 1 to 3 minutes, depending how tender you like it. Add lemon juice, garlic, and pepper flakes; cook for 1 minute. Add cooked pasta, 1 dollop pesto, and Parmesan cheese; stir until cheese melts. Add 1 tablespoon reserved pasta water if cheese begins to stick to the skillet.
STEP 4: Chop chicken and place on top spaghetti; season with salt and black pepper.
