Ramen and raw fish restaurant opens in Hanalei
G
enerations of Japanese immigration to Hawaii has made the islands a hub for ramen, the Japanese noodle soup. The problem on Kauai, says local chef and restaurateur Jim Moffat, is that there aren’t all that many places left serving up these slurpable, belly-warming bowls of broth and noodles, apart from the few-and-far-between mom-and-pop shop. So, in September, Moffat and his business partner Jondy Malone launched Ama, a modern ramen and raw fish
restaurant in Hanalei. The new eatery’s name is the Hawaiian word for the outrigger of a Polynesian canoe. Cast in the shadow of Hanalei’s iconic, waterfall-drenched mountains, Ama is an Asian-inspired cevicheria with the feel of a Japanese whiskey bar. Apart from an indoor bar with bench seating, all the restaurant’s dining tables are outdoors. Like its decor of natural woods, Ama’s food menu is simple. vegetable broth that simmers for 24-hours before it is served. “In the big cities, ramen is killing it,” says Moffat, who also owns Bar Acuda, Hanalei’s reservation-only tapas and wine bar. “Our island is wonderfully behind the times by about seven or eight years, so we are just catching up to what the big cities like San Francisco and New York are doing.” The noodles are made in Honolulu by Sun Noodle, a ramen manufacturer founded by a second-generation noodle maker from Japan. Add-ons include soft eggs, pork belly, fried tofu and garlic chips. Finished with kombu seaweed, shaved bonito flakes and shiitake mushroom, Ama’s piping ramen bowls are best
described as umami, the so-called fifth flavor that informs a great deal of Japanese cooking. “It just gives you that savory, rich full-mouth feeling,” Moffat explains. In addition to ramen, Ama serves up raw fish, salad, kushiyaki-style skewers, beer-battered fish tacos and a spicy shrimp burger. Menu favorites include a Burmese salad brimming with flavor. Ginger, jalapenos and a fish sauce vinaigrette excite the tongue, while peanuts and sesame seeds provide a satisfying crunch. Hawaii fishers and farmers are the sources of many ingredients, including mahi-mahi, tuna, Bok choy and green onion. For dessert, the choice is simple because there’s only one: House-
made doughnuts with chocolate sauce and caramel ice cream. They pair best with a cappuccino or a spot of sake beneath a starry Hanalei night sky. Located in Hanalei Center, Ama provides guests with a relaxed, spruce atmosphere for an outdoor meal or late-night cocktail. There are large tables for party seating, as well as a fire pit and a grassy area that guests sometimes utilize for games of bocce. “After living here for 15 years, we’ve come to really recognize what our community needs and it needs more outside restaurants,” Moffat says. And what amazing formations appear once you begin to look! You feel smart just opening this book! Even at 58 pages,
this little book is truly packed with golden nuggets of eye-opening information and we were amazed at how much we learned. Along with each section are beautiful black and white illustrations that evoke the mystery and wonder that is being described. Did you know that some planets that orbit along side each other form patterns in the shapes of hearts? Or even five-sided stars? And many other truly wild and
intricate combinations of patterns! Even more interesting are some of the repeating numerical patterns in the solar system, be it by their orbits around the sun, or their distances from each other, or even their difference in sizes… all tend to be in factors of certain specific numbers! Who knew? (Well… author John Martineau did!) Since bringing this book regularly into the bookstore,
and the made-for-TV film, “The Loneliest Runner.” The co-writer, artistic director and actress, playing the role of Lady Ann Rockefeller, is Sophia Ross. The cast of Kauai residents this year include Pastor Bruce Baumgartner, Pastor Anwar Ali, Jennifer
Plunkett, Jason Hoyle, and Hannah Hoshide in their vocal lead roles. There will be five performances: Thursday, Nov. 30, Saturday, and Sunday; Friday, Dec. 8 and Saturday, Dec. 9. The evening begins at 7 p.m at Calvary Chapel Lihue, 3-3100 Kuhio Highway, across from the McDonald’s in Lihue. Refreshments will be available and there will be Christmas desserts provided afterward in the church’s youth center. Doors will open at 6:30, and the open seating is limited each night and sure to sell out quickly, so please secure your tickets as soon as
possible. Tickets are available for a donation of $7 and are available at the Word4word Resource Center, Bandwagon Music Studios, Scotty’s Music in Lihue, and Kauai Music & Sound in Kapaa, and all Lifeway Pharmacies. he Garden Island Federal Credit Union, the Kauai Teachers Credit Union, combined with the merchants at the Kukui Grove Center to present the 24th annual Kauai Christmas Parade before an audience of several hundred people who braved the blustery weather at the mall. Santa (in Paradise) had to dig out his biggest hat to keep it from blowing away in the wind and afternoon showers. The parade provided a break from the hectic weekend shopping for Black Friday deals and also an opportunity for the shopping center merchants to earn recognition for its Small Business Saturday. The parade also heralds the start of a calendar filled with holiday events which includes the launch of the holiday Lights Spectacular at 9 tonight near Longs Drugs.
