Firudo As I walked into this lovely restaurant on a sunny mid-afternoon in August, I noted two things immediately: the neat, delicately styled but comfortable Asian decor, and a heavenly scent of flowery-fruity-spicey something cooking in the kitchen that made my mouth water! Now, it’s true, the distinctive spices of Oriental cooking are usually evident in an Asian restaurant, but this time it truly smelled like a “bouquet.” That was why I was both surprised and amused when my hostess, Linda Tian — the owner and manager of the restaurant — greeted me with delicate glass pots of tea and tiny glass teacups, explaining that tea, much like wine, is enhanced each with its own aroma, which is part of the delight of sipping tea as a pick-me-up, or wind-me-down mid-afternoon. In fact, she encourages friends to stop by for an afternoon cup of tea and some of the delightful teacakes and biscuits that accompanied my tea, suggesting this midafternoon lull as a time when things are less hectic and quiet conversation is possible in the sunny, spotless interior. As I sipped my tea and waited for Tian to have a moment to sit with me, I became aware of a lovely but unexpected soundtrack lilting in the background: not the expected chimes and strings of Oriental music, but beginning with a classical piece, and followed by some new age piano and strings, I eventually found myself listening

ground, but a serene atmosphere and no sense of being rushed. Firudo has just had its grand opening here in Syracuse, but Tian’s story began in the United States in New York City. Following the 9/11 event, she moved her restaurant to Oswego, where she owned and operated a restaurant for more than a decade before finally deciding to relocate to Syracuse. Conveniently located on Erie Boulevard, and with ample parking and easy access, Tian has established herself in the International Community, and hopes to become a regular stop for both that community, and students, as well as the long-time Syracuse resident and diner. Her cuisine is, as she explains it, based on the Japanese cooking she learned as a child, but with her “picky” sense of taste and her interest in appealing to both the American palate and her own sense of what is good. Some foods, she explained, are prepared in the more simple and stark Japanese style — lightly grilled fish, for example, chosen for its perfection and the specific cut of the fish that best suits the dish — and then she might add a sauce more Chinese in its complexity of seasonings. Some foods, like their very popular stir fries, are more “mom” foods, or what we would deem “comfort “ foods: a little more hearty, a little differently seasoned, and a little more “American-Asian.” She began by serving me some exquisite fried calamari with a special sauce ($6.99). Now full confession: I am not typically a calamari girl. I have had bad luck with it being far too chewy and “fishy” tasting — so I was apprehensive. I shouldn’t have been! Crisped perfectly, the meat was tender and flavorful, and the sauce, which Tian explained to me was a blend of fruits in a creamy base, rendered this one of the most delicious foods I’ve ever eaten! This was brought to the table along with some delightful cold shrimp and vegetable dumplings in a thin wrapper to be dipped in soy sauce. I would have been perfectly content to just gobble these treats up and say “Wonderful!” But there was more. Open for lunch and dinner, the restaurant can also handle parties of up to about 30 in a private room, and does catering. They expect to open a full bar soon, and Tian told me her husband’s family has a winery in California, so not only will they be serving special wines from the family vineyard, but they will also enjoy her husband’s expertise in wines to help choose accompaniments to the unique flavors of her kitchen. Next came a sushi appetizer. By now Americans are acquainted with sushi, but I have to say that this was an unusual dish not only for the delicacy of its flavors, but for the mix of colors and, again, texture. Mixed into a tempting small heap of identically sized bites were yellow tail, white tuna, salmon, and avocado — all lightly

Several plates of fish were brought to us — each served enticingly on a bed of carefully prepared and presented vegetables, and each offering a signature flavor and texture. Tian told me that each type of fish was prepared according to not only its own characteristics, but also to a blend of cookery that is uniquely her own: she tastes things, and if they don’t taste right to her, she will work on the dish until it’s perfect. Just like the fish. She is fussy about her selections, and different portions of the fish are used for different dishes prepared at Firudo. I tried a Chilean Sea Bass ($10.99), which was as flaky and light as could be, lightly seasoned so as not to overpower its delicate white fish flavor and texture.

Firudo continued from pg 5 While I was pondering the flavors, Tian asked for a pot of Ramen soup to be brought out, as we had been discussing the many noodle dishes Asian cooking is famous for — and that the story of Marco Polo and spaghetti is, indeed, true! About this time, two of Tian’s little ones, a girl about 8 and a boy of perhaps 4 joined us at the table and shared our meal with huge smiles and explanations of what they liked best. This just served to reinforce Tian’s letting me know that the restaurant is not only family friendly, but offers foods that even your fussy little ones will enjoy! Now I have to pause and explain “ramen soup” to you, as an American. I admit to a guilty pleasure of eating Ramen soup from a package now and again. It’s filling and salty and generally tasty in a back-porch kind of way. The soup that Tian share with me was something else entirely. The stock, she told me, had been created from simmering beef and beef bones for hours, which was quite clear from the depth of flavor of the broth — you could taste the “health” and richness with each spoonful. It was hearty, complex, delicious, and, as Tian told me, she does pay attention to the healthfulness of her foods. She stresses freshness, flavor, variety, and if it can also be good for you — why not? Again, I would have contentedly stopped — but there were more delights in store! Out came two platters, one heaped with barbecued scallops, and an amazingly delicious Chili Red Snapper: grilled red snapper with a sweet chili sauce. This Tian deemed a comfort food — and I will confess of all the many wonderful flavors I experienced, this was perhaps my favorite.

As I nibbled on a bite of this and a forkful of that, Tian explained that she combines not only items and flavors, but methods of cooking to get her desired results: she will sear a piece of meat or fish to seal in the juices and the flavor of the meat or fish itself; then she will add a sauce or some spices, and, depending on the dish, cook it again to seal that flavor into the dish. A final sauce might be added to finalize the medley of tastes. Dave Hanlon’s Recipe For Success I caught Dave Hanlon’s Cookbook at the Dinosaur, for the first time, a few months ago after attending the Cheap Trick concert on Franklin Street, downtown. Cookbook has released 3 CD’s. “Dif In” in 1984; “Live from the Dinosaur BBQ” in 2004, and most recent CD, “Hot & Sweet,” released in November of 2010 Cookbook is known for their high energy live shows, driving people to the dance floor with their funky grooves, soulful energy and Gospel driven vocals of original member, Ava Andrews. Rounding out the band is the great talents of keyboardist Ed Vivenzio, guitarist Lee Tiffault, bassist Jimmie Spivey, and bandleader, drummer Dave Hanlon. And, with their busy schedule before them, Dave was kind enough to take a little time for this interview. So, here we go.
Chuck Schiele: Howdy Dave! Thanks for joining us. Dave Hanlon: Thanks, Chuck. CS: Looks like your cookbook keeps you busy in the kitchen. How did you get started? DH: My father was in a Marching Band, and as kid I remember playing his snare drum. I bought my TRY OUR NEW MENU! first set, right out of 8th grade, and have been playing since! Syracuse Jazz Fest, and this Fall at Homer Performing Arts Center. Apple Jazz Band has released 5 CDs. Most recently, Ron France and I put together a new band called Funky Jazz Band. It’s an all instrumental funk/jazz band. We have been playing Wednesdays at Greenwood Winery through the summer. I originally had an instrumental Fusion band with the same name in 1976 and we played at a club called the Spirit of “35, for 18 months. That was my first experience as a band leader. Funky Jazz Band consists of Ron France is on bass, Ed Vivenzio on keys, Jim O’Mahony on guitar and Brian Scherer is on reeds. We will return next summer to Greenwood and will be playing different venues throughout the Fall/Winter. Lastly, I have been involved in Filming & recording with producer Tom Emmi on his show entitled Studio Jams. We have taped many here in Syracuse at Subcat Studios, and last summer I taped a show with former student Jon Fishman of Phish, in Philadelphia. The exposure this show has given me is beyond my wildest dreams. I have had almost 1.5 million views of the songs I have performed on and there are songs yet to be released and more sessions in the future. CS: Very impressive. Sounds like a lot of fun. Who are the drummers you learn from, or are inspired by? DH: I get inspired by all good drummers. My early influences were; Sandy Nelson, Buddy Rich, Gene Krupa, and then I got hip to Elvin Jones, Joe Morello, Tony Williams, Billy Cobham, Louis Bellson etc. CS: Kit of Choice? DH: I typically play my Yamaha 5-piece oak set. I have 34-year-old Sonor set I practice on. I use a variety of Cymbals. CS: You’ve been at it long enough to have collected some memorable moments throughout your musical career.... DH: Well that covers 55 years, so there have been many, but a few that stand out are being a co-clinician with Louis Bellson in 1975 at Dick Grove School of Music in Los Angles to an audience of about 300 drummers. I was playing with a band in Alaska, when Louis asked me to join him. I couldn’t get on a plane fast enough!

Another was receiving my Sammy Hall of Fame Award in 2005. Jon Fishman gave it to me, and pulled out his 1st drum lesson manuscript paper I wrote for him! Another highlight came when I was included in the Zildjian Cymbal Set Up of Famous Drummers Catalog in 1981, due to my national exposure playing with Duke Jupiter and my consistent communications with Zildjian.

Most recently, another highlight came when I was nominated and won the 2015 International Studio Jams Most Inspirational Drummer Award. I never expected to be nominated, let alone win. Very rewarding & humbling too. Another Syracuse musician, Mark Nanni won same award in the keyboard category! 2 from the Cuse! CS: Wow. Outstanding. Congratulations. The hard work pays off. Any shareable funny war stories from your colorful days in gig land? DH: Well … many come to mind … Dove was booked for a week in Vermont. We got fired after our 1st night (which has never happened before or after) so we descended on some college campus’ and played for room & board! We had a ball & students loved it! Another war story: After two weeks in California in 1975, I joined a band, played a week in San Diego, and then the club owner and his muscle men told the band at end of week we weren’t getting paid! We left with all our limbs intact, but no pay! CS: Thank you for sharing. What are your thoughts on the CNY music scene? DH: CNY is filled with excellent bands and musicians! All styles too! Great venues with lots of excellent concerts. It’s a very healthy scene here. Like most cities, it’s very competitive and always fluid. Ask Ron Wray about our musical history, one filled with great bands and individual musicians throughout the years. Great young players are continuing that tradition here in CNY. CS: When you’re off, who do you go see around

here? DH: Symphoria, Loren Barriger, Emiden Rivera, Mark Doyle, Joe Whiting, Edgar Pagan, Ron Leigh, any Jazz or R&B band … many, many more. CS: When you’re not doing music, what do you like to do? DH: I have also had a career for 35 years in Real Estate. That’s how I put my children through college! It’s been a great blend of careers. My music is returning to be the more predominant one at this point in my life again. Playing in 3 bands and teaching drums privately takes up some time, plus the marketing, booking, practicing etc. When doing neither, I love the outdoors and walking and swimming and snowshoeing in the winter.

CS: Your best tips for longevity in the music biz? DH: Keep your health at the forefront. Practice your instrument, push yourself to be your best, network, be open minded, be nice to others. I have mellowed thru the years, and being a bandleader for over 40 years, I have learned from my mistakes. In order for a band to survive, you need gigs, respect of each other, enjoy each other, (most of the time!), love to play music, love your audiences, and love life. It all comes out in the music. Interacting with each other in a positive way, gets you the results you are trying to achieve that’s best for all. CS: What’s in the near future for your music? DH: Hopefully Cookbook continues to stay busy, and we find some time to work on originals and get back into the studio. Funky Jazz Band the same, more private teaching, and record/film more Studio Jams sessions here in Syracuse & Philadelphia. CS: How do we keep track of your musical action? Impossible.” Somewhere along Chapter 4 (each chapter has a title, which I have to admit I enjoy — it’s a carry-over from novels I read as a child, and I like the hint of what the chapter will contain), I stopped critiquing and found myself just riding along with the wave of the narrative. 2 Things Money Can’t Buy & You Can’t Teach Isn’t the Internet a fascinating intelligence? There are people I know whom I’ve never met, and books I’ve read that aren’t in print. There are shouting matches that are silent, and voyages around the world taken via cell phone. This book is one of these odd creatures: a self-published electronic book (or paperback, if you prefer), the author is an acquaintance I’ve never met face to face. Letting it be known that I’d edited a book or two, I was challenged to read this one, though it was too late to truly edit. As I dug in, I immediately started making line edits in my mind: “Aint needs an apostrophe. He’s changing tense from present to past and back to present — gotta fix that. The narrator is preposterously lucky and/or talented: he falls into a

Fall Is the Time to Add Some Style into Your Wardrobe September is a month for change. Plenty of us aren’t going back to school but that’s no excuse not to mix things up a little bit. If you’re anything like me, you just need to buy some new clothes and maybe a notebook and some pens this month even though I don’t need them. There are so many amazing deals at pretty much every store you can think of, so why not switch up your style a bit? Or at least refresh it with some new staple pieces. I can tell you I’ll be incorporating some new pieces into my look. I never could resist a deal, after all. Here’s what I’ll be buying:
Jeans
You may have noticed jeans getting looser and less structured. I swore I would never stop wearing my high-waisted skinny jeans (they fit me perfectly) but I’m finding myself drawn toward a more casual fit now. Jeans are a part of your wardrobe that you can wear all the time, so investing in a new pair is definitely a do this month. Look for something that still fits at your waist but gives your legs some room to breathe.

The turtleneck trend was huge last year, but I’m still not over it. Neither are a lot of designers. I love how polished a fitted turtleneck can look tucked into a skirt or under a lighter dress to make it appropriate for fall. It adds just a touch of sophistication. Layer some jewelry over it to make it more interesting or throw a fur jacket on top for a seriously chic ensemble.
I’ve worn flat sandals all summer long because they’re easy to walk in and match pretty much everything I own, but I’ve worn them to death by now and I’m ready for the chillier days of fall when I need a little more to my shoe than a sole and some straps. I’ve got my eye on some black leather loafers this season. They go with jeans and a top but they’re also perfect for work. Every time I see a pair, I’m immediately drooling. Welcome Back
Of all the summer blockbusters that were on the slate for 2016, I’m not sure that there were any as buzzy as SUICIDE SQUAD. Despite the lukewarm reception that met MAN OF STEEL and BATMAN V SUPERMAN: DAWN OF JUSTICE, SQUAD was poised to be the project that launched the DC Universe into the stratosphere. Taking the unique stance of having a group of ubervillains serving as the protagonists of the adventure, the initial trailers featured plenty of mayhem and sardonic humor. To top it off, Jared Leto’s take on the Joker was already emerging as the stuff that legends are made of. Taking method acting to a whole new level of crazy, he surprised Students! his co-workers with gifts of bullets and a pig carcasses. Some of his fellow cast members thought his

outlandish commitment was inspired insanity, while others admitted feeling uncomfortable with his twisted and outlandish behavior. These stories only helped garner more interest in the production, and the Joker became the focal point of the media barrage the reigned down upon the film. When word came out that writer/director David Ayers had begun a fair amount of reshoots ahead of the release of SUICIDE SQUAD, it certainly raised some eyebrows. It’s usually not a great sign when a major blockbuster must undergo these types of changes, but hope and anticipation remained high. To be perfectly honest, like BATMAN V SUPERMAN, I wanted to like SUICIDE SQUAD. I truly did. I figured that whatever shortcomings it may have, the good had to outweigh the bad, right? If only that were the case. SUICIDE SQUAD never establishes a tone, and it’s difficult to discern exactly what Ayers and Warner Brothers were going for. Suicide Squad don’t know the true nature of their mission, but Waller intends to have her ragtag group of villains to bring down Enchantress. As the squad follows the orders of Waller and Flagg, The Joker (Leto) has an agenda of his own. He has been separated from his beloved Harley Quinn, and will stop at nothing in order to be reunited with his psychopathic betrothed. Through a series of flashbacks, we see the disturbingly bizarre courtship that the two shared, and witness the lengths that the Joker will go to in order to get her back. By all accounts, this disturbing union was going to be a focal point of the film. Instead, it is touched in brief, far too fleeting glimpses. Because of this, their plot line feels jarringly disjointed, and far less satisfying than it could have been. This Call is easily one of the great travesties ahead for of SUICIDE SQUAD. Even so, Robbie Take-Out still has a great deal of screen time, and emerges as the standout in the SUICIDE SQUAD The latest entry into the DC Movie Universe took the film. however, that despite the deluge of twisted tales and on-set antics, in the theatrical release, Leto didn’t stand much of a chance. Surely the Joker will factor heavily in the expanding DC universe, but it remains to be seen if Leto will be along for the ride. At the time this review is going to print, the actor hasn’t even seen the final cut of the film, and has openly proclaimed that the project was not the gritty crime-drama he was initially lead to believe. The central conflict of SUICIDE SQUAD is muddled and under-developed, resulting in a movie that is far less impactful and memorable than it should have been. The villains, Enchantress and Incubus are hollow and dull, and feel more like foot-notes than full-fledged advisories. The action sequences are little more than uninspired footnotes, and not a single one holds a candle to even the tamest sequence in CAPTAIN AMERICA: CIVIL WAR. This aspect serves as yet another glaring disappointment, and belittles the performances in the production. Salt of the Earth Having written about cholesterol and saturated fats I now turn the Eye of Sauron towards another perennial topic which is sodium restriction. Excessive salt intake can raise your blood pressure and increase your risk for heart attack and stroke. So if salt (sodium chloride) is bad for you it should be restricted. Lower salt intake should result in less heart disease and stroke. Unfortunately this just isn’t the case. As you will read below, cutting down on your salt intake too much can be dangerous. You shouldn’t sprinkle salt on your food even before you taste it. Colleen understood how to find the most productive avenues for government to work with others to solve problems and strengthen our region. She worked diligently with business, manufacturers, not-for-profits, educational institutions and community groups on federal issues for elected officials. Colleen is untainted and would bring desperately needed common sense and good judgement to Washington D.C. Donald Trump has progressed into an American tragedy. His disturbing thinking is depriving the people of an issue oriented election. Trump lost me long before he even decided to run. When he called Rosie O’Donnell a Fat ass ugly pig it was clear to me that there was little “Manhood” attached to him or his success. In Trump’s case, he began with an unbelievable silver spoon, his Father’s money and contacts. Most of us could and would build an empire with this kind of silver spoon. But in any event, even if you choose to credit him with success, he would be among the twisted. Most importantly to know and understand is that he literally “can” be baited by a tweet. Our enemies would have a field day playing with his head. His sense of self, accompanied by a twisted dispassionate ease to degrade are beacons of serious threat. His candidacy is now an American absurdity. I have a handicapped son. You don’t have to be in this position to understand the absolute degraded mindset it takes to verbally insult and physically mock those with life shattering handicaps. His public condescending reference to Megyn Kelly’s menstrual cycle exposed thinking beyond low life crassness. His choice of degradation shows clearly what he thinks of women and of feminine judgment. He also was not aware Russia invaded Ukraine and cannot understand why nuclear weapons should not be used. Then casually saying on international television: “If she gets to pick her judges, nothing you can do, folks. Although the Second Amendment people, maybe there is, I don’t know” and denying the ramifications that went through the mind of every nut job on the planet is beyond acceptable absurdity. It is clear he has a barrier that restricts good sense. His indifference to potentially influencing assassination is beyond belief. I was around for the assassinations of John

This month I have a topic to discuss that I think will interest everyone. A lot of us get confused or don’t fully understand the difference between weight loss and fat loss. To many of us, if we see the numbers on the scale going down it’s a victory. I think this is a topic that leaves a lot of us (especially the ladies) perplexed, and it’s something that unfortunately, despite our best efforts, is a message that gets lost in translation, especially within the mainstream media. With this said, below is a conversation between yours truly and a client of mine. I would like to lose fifty pounds before the wedding. Do you have any suggestions for me? Me: Hey Christine. It’s great to hear from you and congrats on your upcoming wedding! I’m so excited to hear that you’re coming back. In regards to the weight loss question. You need to remember that there is a huge difference between weight loss and fat loss. Wouldn’t you rather lose twenty five pounds, look amazing in your dress and have a sculpted physique than lose fifty pounds and look the same? Far too often I have clients that focus too much on what the scale tells them instead of going by how their clothes fit or how they look in the mirror. Weight loss can be completely subjective, and the truth of the of matter is the scale really doesn’t tell the whole story. If I told you to not eat for eight hours, you would weigh less. If I told you to not drink water for a day, you would weigh less. If I told you to stop snacking after dinner, you would weigh less. In all three scenarios you would weigh less, but does that really mean you made any significant progress? Client: Um, no. Me: Sure, you weigh less, but you really haven’t accomplished anything. There’s no shape, form or contour to your body and as soon as you go back to your normal eating habits you will go right back to your original weight. Then what will you do? I think it’s not necessarily an education thing, but rather a behavioral issue that we need to address. It’s all about changing your behavior. You know that it’s not the best idea to ever forego a home cooked meal in lieu of hitting up a fast food restaurant on your way home from work. You know that eating a giant plate of pasta on a day you’re not hitting the gym probably isn’t the best idea. You know all of this. So why do you continue to do it? How most of us approach weight loss is wrong. We need to change our mindset. continued on pg 31

Past Perfect Tense The world and everything in it, ourselves included, consist of moving parts. An adult brain consumes twenty to thirty percent of that adult’s energy. An infant’s brain consumes 60%. Many of us are just starting to hear the news that, even while asleep, and infants sleep most of the day, our neural systems work to process daily sensory events and consolidate memory. Simplistically put, our environment and the people in it feed us energy and information that our bodies and brains then filter, storing what we need and eliminating the rest. This September, like every September, crowds of little children with growing bodies and brains the same size as the teacher’s brain will file into classrooms. Once seated behind their desks, the teachers will encourage them to sit still so they can pay attention, learn and compete for good evaluations at what are truly their first jobs. Earlier this summer, the CBS Nightly News reported that sitting six hours or more each day damages the heart. CBS featured footage of adults working at standing desks and adults exercising in gyms after work. Research links heart disease and diabetes to diet and sometimes heredity, but prolonged sitting that restricts one’s circulatory system certainly takes its toll. Long airplane rides have proven to be a health risk. Childhood diabetes and heart disease

Weight Loss Vs. Fat Loss continued from pg 29 We need to start thinking in terms of fat loss, not weight loss. Our ultimate goal should be to maintain as much muscle as possible (even better, build some muscle) and focus on reducing our body fat and changing our overall physique. Did you know that one pound of muscle weighs the EXACT same as one pound of fat? The difference, however, is that muscle is more dense than fat and takes up less space. In fact, one pound of fat takes up eighteen percent more space than one pound of muscle. I’m not necessarily saying that you should toss your scale into the trash, but what I am saying is that if you’ve been training your ass off and you step on the scale and see that it hasn’t changed, you shouldn’t let it upset you! Muscle is more dense than fat so those few pounds of muscle that you’ve gained will make you look better. I know you’ve heard this from me a thousand times, but when it comes to fat loss, almost always, nutrition is going to be the biggest determining factor. So, let me ask you this? How confident would you feel about eliminating fast food or soda from your daily regimen? If this doesn’t seem like an easy task for you to accomplish, we need to take a step back and figure out a better approach. When you are able to figure out a way to successfully accomplish a consistent behavior, you will really start to see a difference. Remember: YOU CANNOT OUTTRAIN A POOR DIET. I repeat. You. Can. Not. Out. Train. A. Poor. Diet. It’s just not going to happen. I can put you through a workout that will make you hate life, but it’s not going to matter if we don’t tackle the nutritional side of things. Let me throw another analogy at you. If we know that fat loss is mostly determined by calories in vs. calories out, which seems to be a more efficient use of our time: A) Spending an hour on the treadmill burning off approximately three hundred and fifty to five hundred calories Or B) Electing not to eat that bag of M&Ms before bed? From a time efficiency standpoint, and with fat loss as the goal, nutrition is going to trump exercise (in terms of better use of our time) no matter what.
In Conclusion
You should always be thinking ahead. What can you do each day to bring you one step closer to your goals? Find a place where you feel confident that you can be successful. If you are sincerely making an effort and putting in the work, you’re going to get results. Period. Focus less on weight loss and more on fat loss! Make the decision to exercise daily and lead a healtheir lifestyle. Be good to your body and your body will be good to you. Keep muscle, burn fat and lose inches. It’s simply a better way to lose weight. I have been a personal trainer for over seventeen years and I absolutely love what I do. I honestly feel

It found that the MORE sodium people ate, the less likely they were to die from heart disease.“ Don’t like that study? Too old to be relevant? How about a July 2011 meta-analysis of seven studies involving over six thousand people — published in the American Journal of Hypertension — this study “found no strong evidence that cutting salt intake reduces the risk for heart attacks, strokes or death in people with normal or high blood pressure. In Many European researchers publishing in the Journal of the American Medical Association reported that the less sodium that study subjects excreted in their urine — an excellent measure of prior consumption — the greater their risk was of dying from heart disease. These findings call into question the common wisdom that excess salt is bad for you, but the evidence linking salt to heart disease has always been tenuous.” Still not convinced? Want something more recent? The American Journal of Medicine November 2013 had this to say: “The American Heart Association recently strongly recommended a dietary sodium intake of <1500 mg/d for all Americans to achieve “Ideal Cardiovascular Health” by 2020. However, low sodium diets have not been shown to reduce cardiovascular events in normotensive individuals or in individuals with pre-hypertension or hypertension. Moreover, there is evidence that a low sodium diet may lead to a worse cardiovascular prognosis in patients with cardiometabolic risk and established cardiovascular disease. Low sodium diets may adversely affect insulin resistance, serum lipids, and neurohormonal pathways, leading to increases in the incidence of new cardiometabolic disease, the severity of existing cardiometabolic disease, and greater cardiovascular and all-cause mortality. Although a high sodium intake also may be deleterious, there is good reason to believe that sodium intake is regulated within such a tight physiologic range that there is little risk to leaving sodium intake to inherent biology as opposed to likely futile attempts at conscious control.” You have to wonder how the Heart Association can make such a drastic recom-

Talk with your doctor about potassium chloride instead of sodium chloride because there IS evidence that a higher potassium diet may actually lower blood pressure! And you don’t have to take potassium pills; you can find plenty of potassium in mushrooms, bananas, green veggies etc. That’s right, healthy eating can lower your blood pressure! Several years ago in this column I followed the adventures of the blonde semi-tech and her exploits with various technical challenges on her computers. For a while now, life has been quiet — humming along (though granted, rather loudly in the case of one computer, whose fan, unlike the ultra-quiet MacBook Air, seemed to run at about Mach 6 all the time) as it should. But not long ago, two, count them 2 external drives failed. Both are the same make/model — Western Digital My Passport. One of them I was able to recover. The jury (not to mention the data) are still out as I write this. What happened? In the case of one drive, I have no idea. I put it in the freezer and promptly forgot about it, so clearly none of the data was critical. Just recently, I went to put the second one in (I will explain shortly) and found the old one. I swapped them, and the one that had been in deep freeze for who knows how long started up and ran long enough for me to pull my data off of it. (The trick is that sometimes — SOMEtimes — a drive, internal or external — will start up again and give you enough time to extract your data if you cool it down sufficiently.) In the case of the other drive, I traveled with it, and I can only imagine that in tossing it around inside a tiny airplane cabin I somehow managed to make the drive unhappy and some internal mechanism is refusing to behave. Circling back on the freezer episode: a hard drive isn’t all that complex a mechanism: a power source, spinning plates, a data link. The difficult part is that the tolerances in a drive, particularly ones designed for laptops or for a small, portable drive, continued on pg 40

Prime Rib Roast With Miso Au Jus
Recipe by Jaden Hair, steamykitchen.com Ingredients: 1 (6-10 pound) standing rib roast Salt & freshly ground black pepper 1/3 cup miso past (or 1/2 cup Miso & Easy), divided 5 large carrots, halved 8 stalks celery, halved 2 onions, halved 1 cup red wine 2 cups good quality beef stock
Directions:
5 minutes. Transfer roast to cutting board, carefully untie the bones from roast. Cover loosely with tin foil. Rest for 20 minutes. While roast is resting, make the Miso Jus. Keep the vegetables in the roasting pan but discard all but 1 teaspoon of the fat. Place the roasting pan 2 burners set on high heat. Pour in the red wine and cook until wine is reduced by half. Use a wooden spoon to scrape up the bits. Whisk in the beef broth and 2 tablespoons of miso paste (or 3 tablespoons Miso & Easy). Turn heat to medium-low and simmer for 15 minutes. Add any juices accumulated from the rib roast on the cutting board. Turn off heat.
Heat the oven to 250F. Season the rib roast on all sides with salt and pepper. Rub just 2-3 tablespoons of the miso (keep the rest of the miso for the Au Strain the jus with mesh strainer, pressing Jus) on all sides of the rib roast. Place rib down with wooden spoon to extract out roast in a large roasting pan. Scatter the all the juice from the vegetables. Carve vegetables all around the roast. the roast, serve with the jus. Roast for 17-20 minutes PER POUND or Serves: 6-10 People until temperature of the middle of the Prep Time: 10 Min roast is 130F (medium-rare to medium). If an element in the drive is touching something it shouldn’t and gets a little too hot, the metal can expand and thus prevent the device from spinning up. Sometimes tapping it lightly can dislodge a particle that’s jamming up the works. Sometimes the connector/power cord can lose a tiny wire to wear and tear and not have enough power to supply the device. In other words, there are many reasons why very miniaturized devices with small, moving bits and pieces, can fail. That doesn’t mean, of course, that your data is “gone.” It can be oh so close, and oh so far away. So. when calamity strikes, here (in my particular order) is how you reach the point of “call a pro!” First try to unplug the device and plug it back in, in hopes that it was a poor connection and your computer will recognize the device. (If it makes a happy sound - so far so good!) Feel it to see if it’s spinning, or if you can feel a clicking or failing attempt to spin up. Gently shake or tap it — if something has gotten out of alignment or a small spec of something is jamming the plates, you might get lucky and shake it out. Try changing the cord, and the port you’re plugging into. Either could be bad, or failing. If you’re at the click but nothing more stage, you can try the freezer trick — wrapping the drive up good and tight and waterproof, stick it in the cold for an hour or so. Try again. You may just buy enough time to move the data off before it fails for good. If, at this point, nothing else works, there are further steps you can take (such as recovery software that may or may not work, and, if you’re so inclined, opening the drive itself to see if you can spot a problem. But this is where I call a pro — depending upon the importance of my data — and spend the money up to and including the time it would take me to replace my data and hope that, in skilled hands, my drive will give up the goods. I’ve got a call in now. I’ll let you know how it goes!

Attempts at humor fail miserably, the characters are shockingly onedimensional, and even the considerably talented cast by BRIAN MILLER members can do nothing to save this stinker. The scenery, which is meant to be a bewitching and magical mix of lush, lavish countrysides, and Elsa-inspired frozen wastelands, has already been seen To say that we are in an era of unnecessary sequels is almost as redundant as the dozens of times in various productions themselves. There are bound to be a few that find a way to succeed, of course. FINDING DORY, for example, easily ranks amongst the best films of 2016. For (and far superior) other every DORY, however, there is a head-scratcher that leaves audiences baffled and dis- productions. Slow-motion jumps, slightly steamy PGappointed. After fleeing the kingdom in an attempt to establish her own reign, she freezes the land around her and orders her minions to kidnap all of the children in every nearby village and town. She molds them into an army of ruthless savages who ravage the countryside, dropping crowns and orphans at her feet. Her two top pupils, Eric (Hemsworth) and Sarah (Chastain) grow into brutal and efficient killers. There are a handful of elaborate, effects-laden action sequences in THE HUNTSMAN: WINTER’S WAR, yet none of these provide even the slightest form of entertainment. Dull and uninspired, they are virtually the same ones you saw in the original HUNSTMAN, with a fair amount of Middle-Earth, MALIFICENT, and NARNIA tossed in for good measure. These scenes do little to enhance the production in any way, and are feeble and wholly unnecessary attempts build upon an already tedious runningtime.

I listened to Donald Trump’s speech in Detroit and to President Barack Obama’s speech to the Democratic National Convention. I took notes while Mr. Trump addressed the economy. When President Obama spoke of his Scots-Irish roots and the values he learned from his mother and his maternal grandparents who helped raise him, I took note. The elections of President Obama and candidacies of Donald Trump and Hillary Clinton reflect different aspects of incremental social change here and fear of changes taking place over there. Mr. Trump’s Detroit speech specifically referred to Upstate NY as a disaster implying that Japan’s economic rise, job loss in the US, Chinese trade, and Islamic extremism started affecting our nation in 2008. I have lived in CNY my entire life and, in the early 1990’s, studied Labor and Public Policy in a graduate program. My studies and observation inform me that economic horsepower started exiting our local industrial barn doors before NAFTA was a twinkle in its author’s eye. The preceding sentence, no humor intended, is an example of the past perfect tense, a bit of grammar I learned while trying hard to keep my moving parts immobile behind my elementary school desk so a “D” in “Deportment” wouldn’t overshadow my “A’s” and “B’s”. I for one do not feel nostalgic for the ear twisting, some of it ideological, that took place during the supposedly happier past. For many, the past was far from perfect and often tense, instilling, sometimes, smiling sedentary passivity. As adults, we can pick our own poison or not. AARP suggests senior citizens should study something new, socialize and walk. I’ve enjoyed walking and talking about current events, but I am starting not to. I remember teachers and classmates relating better to the class clowns than to the bookworm types who always raised their hands to try to give the right answers and for some, if the answers from the book you read at the library didn’t agree with answers in the book you read in class, you were graded deficient. We are grading each other deficient now. It takes time to review the multiple sides of any question. Rigid dogmatism always hampers egalitarianism but not vice versa.
