“It is really important to make sure the diet for these patients is truly gluten-free, so they do not develop negative symptoms,” saysMcDonald. “Also, because of the relatively long length of stay at our treatment centre (months to years) the diet needs to be good quality and have variety.”

• Offerasmuchvarietyaspossible. Getyour frontlinestaffonboard,helpthemtothink “outsidethebox”toadjustrecipes,ormake newitemstooffermoreandbettertasting gluten-freeproducts.Forexample,thicken soupwithmashedpotatoesratherthan usingwheatflourasathickener.
• Encouragetheuseofgluten-freeitems acrossasmanydietsaspossible.For example:usegluten-freesoupandgravy bases,gluten-freesoysauce,andgluten-free saladdressingsforeveryone.
