Steeped in the traditions of Québec, this rustic soup features split peas and ham slowsimmered with vegetables and herbs—echoing recipes passed down for generations. Originally crafted by settlers for its simplicity and sustenance, it continues to be a warming, flavourful dish that celebrates the province’s agricultural and cultural history.
• 1.5L Dry Split Peas
• 4L Water
• 500g Toupie Boneless Ham (Chopped Fine)
• 300g White Onion (Chopped)
• 250 Frozen Chopped Celery
• 70ml Margarine
• 30ml All Purpose Flour
• 3L Vegetable Broth (Prepared)
1. In a bowl, wash Peas and soak in water overnight. Drain water from Peas.
2. Add Peas and fresh water to a large pot. Bring to a boil and reduce to a simmer.
3. Add Onions, Celery and Ham pieces to cooked Peas.
4. In another pot, melt Margarine and add Flour to create a roux. Slowly add Vegetable Broth to the pot, stirring constantly until the soup beings to thicken.
5. Add thickened Broth to the pot with the Peas, Ham and Vegetable mixture. Simmer for 1-2 hours stirring occasionally until Peas are very soft; adding more water if needed.

• 2 kg Dry Navy Beans
• 125 ml Brown Sugar
• 5 ml Mustard Powder
• 20 ml White Vinegar
• 175 ml Molasses
• 450 ml Ketchup
• 65 ml Onion (Minced)
1. Wash Beans under cool, running water.
2. Place Beans in boiling water and take off heat. Let stand for 1 hr.
3. Cook in same water until tender, about 1hr.
4. Add Brown Sugar, Mustard Powder, White Vinegar. Molasses, Ketchup & Onions.
5. Pour into 12x20x2" baking pans.
6. Bake uncovered at 350F/176C for 4-5 hrs. Add more water if needed during baking.



• 4.5 kg Ground Beef
• 15 ml Paprika
• 15 ml Thyme
• 5 ml Salt (To Taste)
• 700g Corn, Whole Kernel Frozen (Thawed)
• 1.5 kg Mashed Potato Pearls
Yield: 50 Serving: 3x4"
1. Brown Meat in a non-stick skillet on medium heat and drain off fat.
2. Add Paprika, Thyme and Salt.
3. Pour Beef Mixture into a baking dish.
4. Evenly distribute Corn over the meat.
5. Prepare Potatoes according to package directions and spread evenly on Meat.
6. Bake at 350F/176C for 25 mins, or until bubbling and golden on top.

• 100 Slices Rye Bread
• 3 kg Smoked Meat Brisket (Sliced)
• 500 ml Mustard
• 50 Pickle Spears (To garnish, optional)
1. Prepare Meat as per package directions.
2. Spread 10 ml of Mustard on one sliced Bread.
3. Place 60g of Meat on 1 slide of Bread. Cover with second slide of Bread.
4. Cut Sandwich as desired. Keep warm and serve immediately.
5. Garnish with a Pickle Spear.
Serving: 1 Each








Poutine is a proudly Canadian creation that first appeared in rural Québec in the late 1950s, when cheese curds, hot fries, and gravy came together in perfect harmony.
Poutine is celebrated for its rich, indulgent flavour and endless adaptability. From pulled pork to spicy peppers or even butter chicken sauce, Canadians continue to reinvent this classic while staying true to its comforting roots.



Tourtière is a traditional French-Canadian meat pie with roots dating back to the 1600s in Québec, where it was served during réveillon late-night holiday feasts. Originally made with wild game or pork, tourtière is now a staple of festive gatherings and comfort food menus.

Wrapped in flaky pastry and seasoned with warming spices, this hearty dish is both nostalgic and deeply satisfying. Whether served as a main course or in miniature form for entertaining, tourtière is a timeless celebration of Québec’s culinary heritage.

• 1.3 L Heavy Whipping Cream
• 1.3 L Maple Syrup
• 500 ml Unsalted Butter
• 500 ml Granulated Sugar
• 6 Medium Eggs
• 5 ml Vanilla Extract
• 15 ml Baking Powder
• 5 ml Salt
• 1.2 L All-Purpose Flour
Serving: 2x3” Piece

1. For the Syrup: Combine Maple Syrup and Heavy Cream in a saucepan. Bring to a boil, then remove from heat and set aside.
2. For the Pudding: Cream Butter and Sugar together until smooth.
3. Whisk in Eggs and Vanilla and mix until combined.
4. Add Baking Powder, Salt, and Flour. Stir until combined.
5. Pour batter into greased baking dish and ladle the hot Syrup sauce over it.
6. Bake at 425F/220C for 30 mins, or until the pudding is golden brown.
