Why Food Textures Matter? What are Texture Modified Diets? Texture modified diet involves changing the texture of food and the consistency of fluids to make them safer for individuals with swallowing difficulties. This can include chopping, mincing, pureeing or softening foods.
What is Dysphagia? Some people have difficulty chewing or swallowing - a condition called dysphagia. Dysphagia can occur at any age but is more common in older adults. Common causes include stroke, spinal cord injury, Parkinson's disease, dementia and certain cancers among others.

IDDSI Textures & Fluids Easy to Chew: Foods that are tender, moist, and easy to chew such as soft casseroles, tender fish, mashed potatoes & moist cakes. Soft & Bite-Sized: Foods that are tender, moist and cut into bite sized pieces such as soft cooked and diced meats & vegetables, small sized pastas . Minced & Moist: Foods that are finely minced into small, moist pieces that can be easily mashed with the tongue like minced meats, minced cooked vegetables & egg salad. Pureed: Foods that are smooth with no lumps, not sticky or runny and hold their shape on a spoon such as pureed fruits, puddings & yogurt. Thickened Fluids: Drinks that are thickened using thickening agents to different consistencies (Mildly, Moderately & Extremely Thick) such as thickened juice, milk, coffee & smoothies.
