BrownItaliansausageinpan.Setaside.Cookbaconin amediumdutchovenovermediumheat,stirring occasionally,untilsomefathascookedoutandbacon isbrownedbutstillsoft.Usingaslottedspoon,transfer bacontoasmallbowl.Drainoffallbut3Tbsp.fatfrom pot.
Setpotoverhighandheatfatuntilveryhot.Thenadd onionsandshallots,allowingtochar(minimizestirring toachievecharring).Returnbacontopotandadd garlic,choppedchipotlechiles,adobosauce,paprika, basil,andreservedtomatoes.Mix.AddItaliansausage. Reduceheattomediumandcover,leavinglidslightly askew.Cook,stirringoccasionallytokeepsaucefrom stickingtobottomofpot,untilthickened,about2to2 1/2hours.Adjustheatasneededtomaintainagentle simmer.Oncecooked,seasonwith1/2tsp.koshersalt andpeppertotaste.
