Irrespectiveofourclientbeingseriouslyinjuredanda goodperson,thecasewasadmittedlyadifficultone andpresentedsomeliabilityandfactchallenges.It wasn'tacaraccident,18-wheeler,orslipandfallcase; thelawsurroundingthecasewasmorecomplicated andrequiredustojumpthroughmore"hoops"towin
However,ourclientwasseriouslyinjured,andwefeltthe defendantwasatleast50%atfault,ifnotcompletely.

Heirloom TomatoToast
2 oz. blue cheese (look for Stilton, Danish, or Maytag), room temperature
4 Tbsp. unsalted butter, room temperature
2 garlic cloves, finely chopped
4 thick slices of bread
3 heirloom tomatoes, sliced
Fresh dill, coarsely chopped
Fresh chives, coarsely chopped
Kosher salt
Flaky sea salt
Freshly ground pepper
Using a fork, mash together the blue cheese and butter in a small bowl. Add the garlic, a small pinch of kosher salt, and freshly ground pepper, and mix until combined
Toast the bread slices. Spread the blue cheese butter mixture over the toasted bread; then top with the tomato slices, dividing evenly among the toast. Season lightly with flaky sea salt and pepper and top generously with chopped dill and chives.
Blue cheese butter can be made ahead and stored in the refrigerator, covered, for one week.
