SUNCADIA RESORT WELCOMES CHEF MICAH WINDHAM AS NEW EXECUTIVE CHEF CLE ELUM, Wash. (Aug. 18, 2025) Suncadia Resort is proud to announce the appointment of Chef Micah Windham as its new Executive Chef, marking a pivotal moment in the resort’s culinary evolution. With the recent launch of The Source and ongoing growth and development initiatives, Windham’s arrival signals a bold step forward in redefining Suncadia’s food and beverage scene. Known for his innovative approach and deep appreciation for the Pacific Northwest’s natural bounty, Chef Windham will lead efforts to elevate dining experiences across the resort—fostering a culture of creativity, collaboration, and excellence that aligns with Suncadia’s vision for the future. Drawing on decades of experience in professional kitchens across the United States, Europe and Asia, Windham brings a background of classical cuisine, modern technique, wine service and herbalism. Windham’s culinary journey was inspired by early lessons with his mother from the “Betty Crocker Cookbook”. In high school, he landed a deli job that kick-started his professional experience in the world of culinary. His career developed through positions at Salish Lodge and Spa, Mona’s Bistro & Lounge and other notable restaurants in Florida. He has cooked at the James Beard House twice, in 2004 and 2008. He has also received honors and awards on multiple occasions, including Seattle’s Most Romantic Restaurant from AOL, Florida Trend’s Golden Spoon Award and the Health Department’s Silver Platter Award. He has collaborated with celebrated chefs including Roy Breiman, Maria Hines, Jonathan Wright and Bobby Moore. At Suncadia, Windham plans to expand partnerships with local food producers and incorporate nutritional elements such as adaptogens, probiotics and prebiotics into the menu. He will lead educational programs for his culinary team, emphasizing technique, sourcing and history. Upcoming announcements include new seasonal menus, foraging collaborations and guest chef events. Windham describes teaching and team building as central to his work: “The most important ingredient I’ve ever had the chance to develop is the people we share our time with at work.” In addition, Suncadia is celebrating its 25th anniversary, it proudly announces an ambitious, more than $40 million growth and development plan that will see an expansion of amenities and residential communities. Windham’s focus at Suncadia will strengthen connections with local farms, fisheries and ranches while building a culture of growth within his team. His leadership will elevate the future of the resort’s food and beverage program and create dining experiences that connect guests to the Pacific Northwest.
