When it comes to the perfect main course, fish is the flavour of choice. Serve steamed salmon from ZAG Seafood for a refreshing seasonal meal.

A treat every bunny loves

We all know how much the Easter Bunny loves carrots. The kids will be bubbling with excitement as they help create a special dish for their furry friend.

INGREDIENTS:

1 cup olive oil

1 1/2 cups caster sugar

3 eggs

2 cups flour

1 tsp baking soda

2 tsp cinnamon

1 tsp vanilla essence

1/2 tsp salt

1 cup chopped walnuts

3 cups shredded carrot

Icing:

1 tub cream cheese

3 tsp milk

1/4 cup butter, room temp

1 tsp vanilla essence

4 cups icing sugar

METHOD:

Preheat the oven to 180°C. Grease two 8-inch round baking pans.

Beat sugar, oil and eggs in a large bowl.

Add flour, cinnamon, vanilla, baking powder and salt. Stir in nuts and carrot, then pour into greased baking pans.

Bake for 45 mins and let cool.

Create the icing by beating cream cheese, butter, milk and vanilla, gradually adding the icing sugar a cup at a time until smooth.

Ice one layer, top with remaining layer, ice and serve. Serves 12

WHOLE BAKED SNAPPER:

Pick up a whole snapper pre-cleaned for you by the team in-store. Start by slicing through the top of the fish and let the mouth-watering flavours seep in. Season with oregano, garlic, extra-virgin olive oil, and salt and pepper – classic Greek ingredients. Place bay leaves in the crevasses and top with sliced lemon. Bake for 30-45 minutes depending on the size of the fish. This dish will serve 4-6 and is perfect your next big family gathering.

GARLIC PRAWN SOUVLAKI:

Load up on freshly-caught prawns and marinate them in fresh garlic, rock salt, pepper and lemon, and grill. This tasty Greek recipe is made even better with the addition of souvlaki sticks. Simply thread the juicy prawns along the sticks and serve for the ultimate party pleaser.

PACIFIC OYSTERS:

As simple as they are delicious, pacific oysters make for the perfect appetiser – just ask George! Grab some oysters and soak in balsamic vinegar and Himalayan salt. The salt will then set, resulting in flavour like never before.

HONEY SOY SALMON:

Turn tradition on its head with a modern take on this meal. First, buy a fillet of fresh salmon to grill – the brothers’ favourite fish. Combine honey and soy sauce in a bowl and baste the salmon while grilling. Finally, drizzle sesame seeds on top and serve with zesty Greek salad or rice.

If you’re in the mood for something finger-lickin’ good, Mira from Chicken Mart has tips for trying out the cut of the season – thigh fillet.

If you ask Vince and Frank to describe their signature product, the first thing they’ll do is stress the importance of seasonality.

But as shoppers, it can sometimes be hard to decipher which fruits and vegetables we should be eating during the seasons.

Hot Cross Bun ice-cream sandwiches

Serves 6

INGREDIENTS:

6 Bakers Delight Choc-Chip Buns

1 litre vanilla ice-cream

3 tbsp chocolate hazelnut spread

Salted caramel dessert sauce (for drizzling)

Crushed peanuts

METHOD:

Slice buns in half (lengthways).

Place on a sandwich press for 30 seconds to warm both sides of buns.

Smear chocolate hazelnut spread over bottom half of buns.

Place one scoop of ice-cream onto each bun.

Drizzle with caramel sauce and sprinkle with crushed peanuts.

Cover with top half of buns.

Cut and serve immediately
