We all know how much the Easter Bunny loves carrots. The kids will be bubbling with excitement as they help create a special dish for their furry friend.

1 cup olive oil
1 1/2 cups caster sugar
3 eggs
2 cups flour
1 tsp baking soda
2 tsp cinnamon
1 tsp vanilla essence
1/2 tsp salt
1 cup chopped walnuts
3 cups shredded carrot
Icing:
1 tub cream cheese
3 tsp milk
1/4 cup butter, room temp
1 tsp vanilla essence
4 cups icing sugar
METHOD:
Preheat the oven to 180°C. Grease two 8-inch round baking pans.
Beat sugar, oil and eggs in a large bowl.
Add flour, cinnamon, vanilla, baking powder and salt. Stir in nuts and carrot, then pour into greased baking pans.
Bake for 45 mins and let cool.
Create the icing by beating cream cheese, butter, milk and vanilla, gradually adding the icing sugar a cup at a time until smooth.
Ice one layer, top with remaining layer, ice and serve. Serves 12

6 Bakers Delight Choc-Chip Buns
1 litre vanilla ice-cream
3 tbsp chocolate hazelnut spread
Salted caramel dessert sauce (for drizzling)
Crushed peanuts
METHOD:
Slice buns in half (lengthways).
Place on a sandwich press for 30 seconds to warm both sides of buns.
Smear chocolate hazelnut spread over bottom half of buns.
Place one scoop of ice-cream onto each bun.
Drizzle with caramel sauce and sprinkle with crushed peanuts.
Cover with top half of buns.
Cut and serve immediately
