EcoSure Food Safety & Sanitation Program Pricing effective January 1st, 2025
The Food Safety Evaluation process via EcoSure that is required by Brand Standard 402.01 will be restarting on February 1st, 2025. The evaluation audit is based on the FDA Food Code and the Conference for Food Protection and focuses on the most important food safety issues that can contribute to food-borne illnesses. With increasing news publicity and public awareness targeting Food Safety, it is more important than ever to ensure that management and staff are dedicated to food safety and thoroughly knowledgeable about their responsibilities. Audit Procedure EcoSure will contact the GM via email at the generic GM email address prior to each audit to establish a specific inspection date and time. It is very important that a management representative accompanies them during the evaluation/audit to better facilitate the process and emphasize its importance to your team. Once your appointment is confirmed, if you need to reschedule, please contact the EcoSure specialist at least 48 hours in advance. If the cancellation takes place with less than 48 hours’ notice or when the specialist arrives on-site, your property will incur a refused entry fee equivalent to the cost of the audit. Each property will receive two (2) visits during calendar year 2025 to conduct an assessment of all kitchens and/or outlets on property operated by the hotel. • • •
Each kitchen and/or outlet will start each audit process with 100 points There is one evaluation for each kitchen and/or outlet in the hotel and scores will be calculated for each individual audit Each category of Food Safety Violation will carry a point value which will be deducted from your 100 point score (See valuation grid below) •

Scores below 83 will indicate that improved Food Safety practices are needed. The Food and Beverage Director and Executive Chef of the hotel should jointly complete the corrective actions report located on the EcoSure website and actively follow-up with team members to ensure food safety is a top priority. Completion of this report will be tracked by DBP and Sr. DBP Food and Beverage. Score of 83 or better are considered acceptable with the GM’s designee (F&B Dir or Executive Chef) required to complete the on-line EcoSure corrective action report within 7 days of receiving the audit detail covering those items noted (if any) on the report.
