The mum-of-three is preparing for a relaxing day alongside kids James, 10, Luke, 8, and Emma 5. “It will probably be a similar day to usual. I get coffee and breakfast made for me and brought to me in bed, and I won’t do any housework or house duties during the day,” Kat said. “We usually meet up with the grandmothers for brunch. Hundreds miss JobKeeper By Alesha Capone Hundreds of staf have been stood down by Western Leisure Services, because the organisation is ineligible for the JobKeeper program. Western Leisure Services (WLS) operates AquaPulse, Eagle Stadium and the Werribee Outdoor Pool. WLS chief executive Alison Dixon said 260 employees were stood down on April 27. Ms Dixon said she told staf about the stand-down with a “heavy heart”. “Western Leisure Services has continued to pay all employees, since the state government
ordered leisure facilities to close in March,” she said. “With no revenue coming in, this is no longer viable.” Ms Dixon said that WLS was ineligible to claim the JobKeeper subsidy on behalf of its employees, because it is a wholly-owned subsidiary of a local government authority, Wyndham council. “I would like to thank Wyndham City Council for its support in lobbying the state government for funding assistance and for looking for redeployment opportunities for our employees,” Ms Dixon said. “I very much look forward to the day when I can welcome all employees back into our
workplace so that together we can rebuild this wonderful business and continue to build healthy lives.” Under the federal government’s JobKeeper program, about six million Australian workers will receive a fortnightly payment of $1500 through their employer, during the COVID-19 pandemic. Lalor MP Joanne Ryan has written to Prime Minister Scott Morrison and Treasurer Josh Frydenberg, asking them to “reassess the limitations” on the JobKeeper program. “he workers at Wyndham Leisure Centre are like the millions of workers this government has forgotten during this crisis.
“hey pay their income taxes to Canberra just like any other worker who receives JobKeeper. Why are they exempt from this payment?” But federal assistant treasurer Michael Sukkar said that each state government was responsible for its own public sector workers, including local government employees. “I would … encourage Ms Ryan to focus her energy on convincing her Labor colleagues in the state government to support their employees at Wyndham Leisure Services,” he said. A state government spokesperson said: “We’re working with councils on the implications coronavirus is having on their operations.”

Staff redeployed in clean sweep Wyndham council has increased its cleaning regime in city centres and public places, redeploying some employees whose usual roles have been impacted by COVID-19. Wyndham mayor, Cr Josh Gilligan, last week said the council was ramping up eforts to clean surfaces that are frequently touched. It comes as the number of coronavirus cases in Wyndham rose to 35 on Monday. Across the state there were 22 new cases, 19 of which were linked to a Brooklyn meatworks.
“We know that COVID-19 is highly contagious and can be spread through surfaces that have been touched by infected individuals,” Cr Gilligan said. “hat’s why we are increasing our cleaning regime in public places, and ensuring public seats and benches, public phones, ATMS, bin handles and shop door handles are regularly disinfected and cleaned. Cr Gilligan said a key part of the council’s response to COVID-19 was to ensure that staf remained in employment. “he staf being redeployed to do this
important work are those who are unable to continue in their substantive roles as the delivery of this work has been impacted by the spread of the virus.” Wyndham director city operations, Stephen horpe said 10 staf from the conservation team and four from the parks management area have been redeployed to assist with the cleaning program. “his is just one example of the many ways we are reallocating our resources to areas that will most beneit the community.” Meanwhile, the state government last week
Rescued Astro soars to new heights Budgerigar Astro had a broken wing and was scared of people when he arrived at the RSPCA last year. Astro spent ive weeks under the care of veterinarians before Werribee’s Josie Ginty saw a photo of him online and “fell in love”. Ms Ginty, a inal year veterinary student at the University of Melbourne, adopted Astro last April. Under Ms Ginty’s care, Astro has blossomed into a “handsome boy” who loves treats, sunbaking and singing. Ms Ginty said she trained Astro, using positive reinforcement, to help him get used to being handled. “My goal was to associate good things with my presence, like treats, toys, and music to sing along with,” she said. “Astro was also healing from a broken wing when I irst got him, so he had to learn to climb up on my hand whenever he gets trapped somewhere and can’t ly away. “He’s still always a bit grumpy about needing help, but will accept it if he needs it.” Ms Ginty said she was passionate about encouraging people to adopt birds and other exotic pets from animal rescue organisations. “I think these kinds of pets can be very misunderstood,” she said. “Since you can buy them cheaply from places like Gumtree, people think these animals are disposable and the ‘it’s only worth $10’ mindset can be really detrimental to pet care. “I’m not saying those sellers are inherently bad, but it makes it really easy for someone to buy a pet on a whim, and not have the knowledge, inances or time to care for that pet. “Ultimately, compared to private sellers, rescue centres don’t have an ulterior motive – they don’t just want to sell that pet, they want the best home for it too.” Ms Ginty and Astro last year entered the annual Jetpets Companion Animal Rescue Awards, and were named a inalist in the People’s Rescue Story category. he awards, managed by Pets4Life, recognise achievements in the rescue, rehabilitation and

Residents and businesses located near the Werribee Street level crossing removal site have been told to expect some construction-related dust, noise and vibrations during May. A letter sent out by the Level Crossing Removal Project (LCRP) said residents might also notice an increase in truck and work vehicles moving through the area while the crossing removal team erects its main compound site on Cottrell Street. Smaller compounds will be installed along the rail line adjacent to the Princes Highway and Cottrell Street, to the south and north-west of the level crossing. he compounds will include site oices, staf car parking and equipment storage. he LRCP said it would take “every measure” to reduce impacts of construction on residents and businesses. During May, the level crossing removal team will also relocate underground services such as gas, electricity and water. Public car parking and the bus stop on the south side of Cottrell Street between Greaves and Werribee streets will be closed to make room for a temporary track for freight trains. General working hours will be Monday to Friday between 7am-6pm, and Saturday 7am-3pm. Residents and businesses will be notiied of works outside these hours. Temporary lane closures will be put in place between 9.30am to 3pm, near the Werribee Street level crossing, but access to homes and businesses will be maintained. Town centre plans for Truganina By Alesha Capone A planning application to build a $27 million town centre in Truganina has been submitted to Wyndham council. he proposal, for 50 Mainview Boulevard, includes three mixed-use buildings which will be used for retail, dining, medical and recreation purposes. he plan also includes 69 apartments in two buildings of up to four storeys, associated open space and carparking, townhouse dwellings and home oice dwellings, a 1600 square
metre supermarket and 12 shops including a pharmacy, in a mixed-use village centre. he planning application has been submitted by architecture irm ClarkeHopkinsClarke (CHC), on behalf of Empire Properties. CHC partner Dean Landy said Empire Properties was also behind the development of two existing Point Cook neighbourhood activity centres, Soho Village and Saltwater Coast’s Tribeca Village. He said the focus was to create “compact, walkable, urban villages” with a strong sense of place.
He said the Truganina town centre plans also included a gym, restaurants and a swim school. “Overall there are about 49 townhouses on the northern part of the site, and some home oices – Sohos, we call them – which are predominately two storeys,” he said. He said Empire Properties hoped the town centre would become a “real benchmark” in the Allura estate. “It’s creating a more walkable environment, it’s more people-friendly, with housing diversity and a good mix of uses, to make a true urban village,” he said. He said that being located near
schools, a childcare centre and a sports ield also meant that town centre residents would be able to walk to these locations. Mr Landy said that in Wyndham, mixed-use village centres tended to attract potential residents including irst-home buyers and owner-occupiers. “hey’re downsizers, who want to be near their children but do not want to live in a retirement village,” he said. Mr Landy said it was hoped the town centre could be delivered as one construction project. “hey’re (Empire Properties) ready to go as soon as we can get a permit,” he said.
Pictures of change “Changes could include empty shopping centres and carparks, people working from home, children learning from home, closed park, more people exercising, and even traic reduction, to name a few. “hese photographs are something that we can refer to and look back on in years to come.” Ms Cain said the centre has already had some images submitted to the Capturing Change project. “One that stood out was taken at Eagle Stadium which is usually a hive of activity – in this photograph that carpark is completely empty, depicting a sign of the times,” she said. he Grange Community Centre has launched a photography project to record how Wyndham has changed during the coronavirus pandemic. he Hoppers Crossing centre is asking residents to submit images for the Capturing Change initiative. he centre’s community development oicer Karen Cain said the photos would form part of a future art project, possibly an exhibition or photobook. “Our community has been very diferent during this period of isolation,” Ms Cain said. “People are working from home, children are being home-schooled, and we should only be leaving our homes for reasons approved by the government. “We wanted to capture this change and thought photographs would be a creative and simple way for people to become involved in capturing these changes. “We would like people to capture some of these changes through their own lens.

EFTPOS thieves target business By Alesha Capone Portable EFTPOS machines stolen from small businesses in the west are being used to transfer false refunds to bank accounts, according to police. Several thets have been reported across the past month by businesses in Point Cook, Wyndham Vale, Footscray and Seabrook. A Victoria Police spokesperson said the ofenders were entering stores in small groups, posing as customers. While store staf are distracted the ofenders steal the

businesses including takeaway food stores and community supermarkets. On one occasion, ofenders stole about $5000 from a small business. “Victoria Police is aware that many business owners and operators sufer signiicantly when thet occurs, having adverse implications economically but also emotionally,” the spokesperson said. “Victoria Police always encourages businesses to have measures in place to reduce the risk of crime. “here are a number of crime prevention strategies that businesses can adopt to prevent
damage to property, and prevent thet, including obtaining CCTV technology within the premises. “We are also encouraging businesses to secure their EFTPOS machines and keep (them) out of plain sight.” Police have also advised stores to remove labels featuring their EFTPOS machines PINs, and to cancel the SIM in an EFTPOS machine as soon as possible if they are a victim of thet. he spokesperson said the EPTPOS machine thets were being investigated and police were “exploring a number of avenues of enquiry”.
Friendships for life Werribee resident Amy-lee Banks says that being in the Australian Army Cadets has taught her about mateship and being a good person. Ms Banks joined the Werribee Secondary College unit of the Australian Army Cadets (AAC) in 2012. Upon inishing Year 12, she moved to the AAC’s Sunshine unit. Ater ageing out of cadets at 21, she became an admin oicer and then Commanding Oicer of 30 ACU Sunshine. Ms Banks said her role involved running the unit, which has more than 60 teenage cadets. “his position ofers a wide variety of tasks and it’s my responsibility to inspire the upcoming leaders of the organisation,” she said. “I enjoy being in a position where I get to see the quiet and shy kids come into the unit and see them grow over the years to become high ranking cadets that are conident and real
leaders.” Ms Banks has also represented the AAC in Greece and been a lag bearer during ANZAC Day parades in Melbourne. “he cadets has also given me many adventurous activities to partake in such as abseiling of the side of a clif, caving, cross country skiing and rile shooting (biathlon),” she said. Ms Banks said the AAC has “taught me how to be a good person in society” and about mateship. “No matter how far the distance, a friend you make in the AAC will stay a friend for life,” she said. Ms Banks is also completing a Bachelor of Youth Work at Victoria University while working part-time and has recently become a proud mother to two-month-old son Noah. Alesha Capone

A 15-year-old boy was attacked by a group of between 10 to 15 youths in Werribee on Monday, April 27. The victim was jogging around the grounds of a Greaves Street primary school about 4.15pm, when several youths assaulted him before leeing with his mobile phone and shoes. The boy was taken to hospital with serious but non life-threatening injuries.

A man jumped from the balcony of his Williams Landing residence to escape a group of men who broke in and attacked him with a machete. Victoria Police said the incident happened at an Ashwell Avenue property on April 27. Several men forced open a back door of the property about 1.30am. Hoppers Crossing Secondary College has been named the best performing government school in the west, in terms of VCE improvement across the past 10 years. Seven West Media has analysed the VCE results of all Victorian secondary schools, from the past decade, as part of the Schools that Excel Program. A best-performing government school and non-government school in Melbourne’s west, north, east and south were each selected from the data, based on their record of improvement. he top spot for a government school in the west was taken out by Hoppers Crossing Secondary, where the median study score increased from 26 to 28 (out of 50) between 2009 and 2019.
he college’s percentage of study scores above 40 also grew from one per cent to 4.9 per cent. Hoppers Crossing Secondary College principal Keith Halge said the Schools that Excel award was a “wonderful testament to the whole school focus on improvement”. Mr Halge said the school had introduced a program where the year 12 study experience was replicated for students in lower year levels, to help them feel less daunted by the prospect of their inal year of studies. Last year, the college recorded a 99 per cent VCE pass rate and had a student achieve an ATAR score of 98.95, the highest ever achieved by a pupil at the school.

Virus answers for kids Seabrook mother-of-three Charlie Golding has written a children’s book to help parents answer questions about the coronavirus. Ms Golding said she penned the book because her own children have been asking her a lot of questions about COVID-19. “On Easter Sunday, I was scribbling notes on a notepad while making a roast dinner,” she said. “he initial story was done before the roast was done.” Ms Golding works as a professional writer but described herself as “not a children’s author at all”. Her book, which is titled When the World Went Inside, features an eight-year-old boy named heo as the main character. Ms Golding said she named heo in
honour of her irst daughter, who died during pregnancy. “My promise to her was that I’d write a children’s book for her,” Ms Golding said. Ms Golding said she had included extra material at the end of the book, to help support parents talk to their children about the coronavirus. “he most important thing for me, at the end of the book, is that there is a sense of hope – yes, we’re in isolation now and having to stay at home, but it won’t be forever,” she said. Point Cook’s great tastes By Alesha Capone Point Cook has been named Melbourne’s top suburb for access to social utilities, such as cafes, supermarkets and milk bars. A new report from the People’s Choice credit union, which ranked more than 470 Victorian locations for afordability and liveability, has crowned Point Cook as having the “best access to social utilities”. While other suburbs in the west, including Burnside, Seabrook and Sydenham ranked in the overall top 10 for both afordability and liveability, Point Cook hit top spot for social utilities. People’s Choice spokesperson Stuart Symons said this was because Point Cook is home to 64 liquor licences, the highest number in the report’s top 100 suburbs. “hese licences don’t just represent pubs – they represent cafes, social clubs, sporting clubs, supermarkets, and the milk bars and other businesses that cluster around them,” he said. “Put simply: if you’re living in Point Cook, you don’t need to travel too far for shops to meet your needs.” he owner of Pizza Industri in Point Cook, Varun Goswami, said it was a great area to operate in. Mr Goswami said Point Cook was home to “an abundance of passionate operators and owners, as well as a market that desires a high standard”. “I love the connections I have been fortunate enough to make with the amazing people in our community all through the act of doing what I love, serving and cooking,” he said. Mr Goswami said that he felt grateful to have been able to keep his staf employed during the COVID-19 pandemic.

Celebrating our frontline ighters From nurses to cleaners, Western Health takes us inside Footscray and Sunshine hospitals to meet some of the staf on the frontline of the coronavirus pandemic. By Goya Dmytryshchak. Siphoi Tran

When COVID-19 irst broke out, there was a lot of confusion, says Siphoi Tran. he radiographer at Footscray Hospital, describes how the coronavirus crisis impacted her workplace. “When it irst started, I think there was a lot of confusion with staf because we were getting a lot of emails about COVID,” she said. “Because the situation was always changing, a lot of our staf were confused with the right things to do. “It induced a little bit of anxiety when it irst started. “I think now with the [staf] bulletins, and in medical imaging we also have a daily
Joyce Dalde “We are the soldiers in this war,” says Joyce Dalde. he nurse unit manager at Sunshine Hospital’s Ward 3F – the COVID-19 ward – heads up a team of 50. “his is the time where we have to work as a team, we have to look ater each other and at the same time we are trying to do this [job],” Ms Dalde said. “We have to vigilant, we have to be guided by the infection prevention and the respiratory physicians, as well as the infectious disease physicians.” he Maribyrnong resident urged members of the community to continue to follow directives to stay home.
“We are asking everyone to stay at home, but for us, we are leaving home to look ater our patients because we care so much for our community,” Ms Dalde said. “We are the soldiers in this war and we are in the battleield at this stage and need to look out for each other. “his is nursing – we are here to nurture. hey ask me how many kids I have and I say I’ve got 50 here … 50 staf members. “I am really really proud to be at Western Health. he amount of support they have given to staf plus the planning in preparation and how they make their staf feel safe to look ater COVID patients, that’s really important to me.”
bulletin, it has improved the communication. “At irst it was hectic but now that there are processes in place, it’s a lot better.” She said the hospital’s ‘wellness hubs’ and “a lot of encouraging words” for staf had helped with mental health. “It can be hard to be that perky happy self, especially when there are lot of things that you look forward to outside of work that have been taken away from you,” Ms Tran said. “We still encourage people to take annual leave – obviously it’s good for mental health purposes. “A lot of our staf have been generous in not taking leave and working to help each other out. “When it irst started we had a lot of shits that needed covering and people stepped up and helped each other out.” Her parents, with whom she lives in St Albans, were at irst a little nervous about her working in a hospital during COVID-19. “But over time they have come to accept it,” Ms Tran said. “hey know I come to work and get changed and then change to come home again and clean everything down at the end of the day. “To be honest, they haven’t said much – I think because of the curve lattening now it’s reduced the anxiety. “hey were more anxious about me getting it then me spreading it to them.” Some positives have emerged from the dire situation, Ms Tran said. “It has slowed everyone’s lives down a little bit,” she said. “I know for me, personally, I’ve had more time to slow down and have more of a routine. “Because of the shits in radiology, we have three distinct shits to reduce the overlap of the team and this has given us more routine.”
Michael Woods Melton’s Michael Woods is environmental services supervisor at Sunshine Hospital, responsible for keeping the place clean and sanitary. While his family harboured concerns for his wellbeing, Mr Woods said Western Health had been well prepared for COVID-19. “hey [my family] do have concerns for me because of my age,” the 63 year old said. “But I just told them that we put all the practices into place – the guidelines we’ve been given – and I feel safe. “I think they’ve [Western Health] done a wonderful job. “Everything seems to be under control. “We’ve got good leadership and, in environmental services here, we’re getting good back-up from our all our employees. It’s been very, very good I think.” Mr Woods said when the crisis was over, his team would be relieved. “I think at the end of it we’ll have a lot of joy and happiness,” he said. “Everyone will be relieved, and I think team spirit will be right up there when this is all done.”
Carmen Camilleri Altona North’s Carmen Camilleri hasn’t seen her grandchildren or children during COVID-19 because of her work in a hospital. he ward clerk in palliative care at Sunshine Hospital said her daughter was the most worried in her family. “My daughter was more concerned than anyone else because she’s got a 3-month-old baby,” Ms Camilleri said. “So, about ive weeks ago when all this started, we sort of stayed away from my grandchildren and my children. I don’t visit and they don’t visit.” She said the team spirit among her colleagues
had remained high. “We are a good team,” Ms Camilleri said. “I don’t think we’ve gone better or worse because we were always like that. We seem to support each other all the time. “he positive is we look out for each other. “he wellness hub is fantastic, I found, and you get that bit of time away from the ward. “We talk about normal everyday things – it’s not sort of in our faces all the time. “Because, you switch the TV on, and it’s in your face every minute of the day.” I think that the hub was a very good idea and I would recommend it to other staf members.”
Bronwyn King Sydenham’s Bronwyn King handles communications and the switchboard at Footscray Hospital. She said being in Australia, the health system had more time than some other countries. “I think we are really well prepared,” she said. “We are lucky as we live in Australia – we have had time to prepare.” She described the camaraderie among colleagues as “pretty good”. Initially, her family held concerns about her being at work, but had since come around. “hey are ine, really,” Ms King said. “hey are all at home. “At irst they were worried, but not really anymore.” She said a positive to emerge from the coronavirus was that people were reaching out to each other. “Everyone is communicating a lot more and talking to each other – it’s nice to see.” Western Health is running a COVID community campaign under #ItsUpToUs. As the world continues to battle COVID-19, the pandemic has been compared to the Spanish lu outbreak of more than 100 years ago. hat pandemic, which emerged at the end of the First World War in 1918, killed more than 50 million people worldwide. he virus spread around the world as WWI soldiers returned home. In Australia, despite quarantine measures, around 40 per cent of the population fell ill and around 15,000 people died. he irst case of the Spanish lu in Melbourne appeared in January 1919. In the western suburbs, the local newspapers of the time were illed with articles about community eforts to ight the illness and – sadly – many obituaries, as people died. On February 8, 1919, he Independent newspaper reported the Footscray Technical School in Nicholson Street would be used as a hospital. More than 150 beds were purchased and Red Cross workers supplied bedding and other requisites. he city’s health oicer, Dr J. Ramsay Webb, paid a “warm tribute” to Footscray residents for helping to set up the hospital. Another news story said entire families in the Footscray area had come down with the Spanish lu, and “without assistance from their friends and neighbours there is but little hope for them”.

he “ladies of Yarraville” were praised for helping stricken households. In nearby Williamstown, according to an article by he Royal Australian College of General Practitioners, “hotels were closed, trains were deserted and public entertainment cancelled”. On February 16, 1919, the Werribee Shire Banner reported that three cases of the Spanish lu had been recorded by the local health oicer. he Werribee Mechanics Institute was used as an isolation hospital and 400 residents were vaccinated within a week. he article said several events had been cancelled, such as the Werribee Farmers Picnic. he Banner said that church services were to be held outside, and if mass was held indoors due to inclement weather, parishioners were advised to wear facemasks. he Melton Express ran a story about the Shire of Bacchus Marsh’s medical health oicer, John Pollock, who warned that any household which did not report a case of inluenza to the council would face a ine of 20 pounds (£20). A well-known resident of the west who died of the Spanish lu was Lieutenant Louis Edwin Trawin, who lived in Footscray. At the age of 19, he enlisted for WWI and was allocated to the 7th Battalion. He served in Gallipoli and France, and was shot three times. Sadly, Lou died in the Spanish Flu epidemic in April 1919.

Mother’s Day recipes With Mother’s Day (May 10) fast approaching, we're sharing a selection of recipes from Australian Eggs, perfect for a Sunday brunch at home, to help show appreciation to that special Mum. he recipes are delicious and easy for kids to recreate at home. Raspberry and pear pancakes Cook & prep: 25 mins Serves: 5 (makes 10 pancakes)
Baked vanilla cheesecake with berry compote Prep: 30 mins (plus 30 minutes and overnight chilling) Cook: 1 hour Serves: 10-12 Ingredients 250g digestive biscuits 125g butter, melted 750g cream cheese, at room temperature 3 tsp vanilla essence 3 eggs ¾ cup caster sugar 300g sour cream 2 tbsp cornlour, sifted Edible lowers such as strawberry lowers, optional, to serve Berry Compote 1/3 cup caster sugar 250g strawberries, hulled and halved 125g raspberries 2 tbsp water Method 1. Release the base from a 23cm (base measurement) springform pan and invert. Secure the base back into the pan and line it with baking paper. 2. Place the biscuits in a food processor and process until inely crushed. Add the butter and process until combined. Transfer to the prepared pan and using the back of a spoon or a straight-sided glass, spread and press the biscuit mixture irmly over the base. Refrigerate
it for 30 minutes to set. 3. Meanwhile, preheat the oven to 170°C/150°C fan-forced. Using an electric mixer, beat the cream cheese, vanilla and sugar until the mixture is smooth. Beat in the sour cream and lour. Once combined, start to add the eggs one at a time. Continue to beat the mixture until all is combined. 4. Pour the cream cheese mixture into the prepared pan. Bake the cheesecake in the oven for 1 hour or until almost set in the centre and turn the oven off. Leave the cheesecake in the oven with the door slightly ajar until it has cooled as this will prevent the cake from cracking. Refrigerate it overnight. 5. To make the Berry Compote, place the caster sugar and 2 tablespoons of water in a frying pan and bring it to the boil while swirling the mixture occasionally. Continue this for 2-3 minutes or until the syrup thickens and reduces. Add the strawberries and gently stir to coat them in the syrup. Cook for 1-2 minutes or until the syrup turns pale pink and the strawberries are slightly warmed through (do not overcook). Remove the Berry Compote from the heat and stir in the raspberries. Set the mixture aside to cool. 6. To serve, remove the cheesecake from the pan and decorate the top with the berry compote and edible lowers.
Ingredients 1 1/2 cups (225 grams) wholemeal (whole wheat) plain lour 1 1/2 teaspoons baking powder 1 teaspoon cinnamon, ground 1/3 cup (60 grams) brown sugar pinch of salt 4 eggs, separated 3/4 cup (180 ml) milk 2 tsp vanilla bean paste (or extract) 1 cup (150 grams) fresh or frozen raspberries 1 pear, grated Butter (for frying) To serve Fresh raspberries Yoghurt Honey Method 1. Place the lour, baking powder, cinnamon, brown sugar, salt, egg yolks, milk and vanilla into a large bowl and whisk to combine. 2. Place the egg whites into a clean bowl of an electric mixer and beat until stiff peaks form. 3. In two batches, add the egg whites to the batter and gently fold to combine. 4. Gently fold through the raspberries and pear. 5. Heat a non-stick fry pan over low-medium heat and grease with a little butter. Ladle 1/4 cup measurements of the batter onto the fry pan. Cook for 2-3 minutes or until bubbles begin to appear
on the surface of the pancake. Carefully lip the pancakes and cook for another minute or two, or until the pancakes are golden and bounce back when touched. 6. Place the cooked pancakes onto a plate lined with kitchen paper and continue frying until no batter remains. 7. Serve pancakes with fresh raspberries, dollop of yoghurt and drizzle of honey. Tip: Pancakes are freezer friendly once cooled.
Sweet potato wafles with eggs and avocado Cook & prep: 35 mins Serves: 4 Ingredients 1 ½ cups irmly packed grated sweet potato 1 cup milk 1 ½ cups wholemeal self-raising lour 2 eggs, separated 50g fetta, crumbled 2 teaspoons extra virgin olive oil 4 extra eggs 1 cup baby spinach leaves 1 avocado ¼ cup toasted pepitas Harissa yoghurt ½ cup Greek yoghurt 1 tbsp lemon juice 2 teaspoons harissa paste Method 1. Place sweet potato and ½ cup of milk in a large microwave safe bowl. Cover tightly with plastic wrap and microwave on High for 6 minutes, or until soft. Roughly mash with a fork. Whisk in remaining milk and egg yolks. 2. Place lour into a large bowl. Stir in sweet potato mixture to a make a thick batter. Add the fetta and season to taste. 3. Mushroom souflé omelette Cook & prep: 30 mins Serves: 2
4. Working in batches, pour about 2/3 cups of batter (depending on size of wafle maker) onto a pre-heated non-stick round wafle maker. Cook until golden brown until wafle iron stops steaming, about 5 minutes. 5. Meanwhile, heat the olive oil in a large non-stick frying pan over medium high. Crack eggs one at a time into hot pan. Cook for 2-3 minutes, until whites set and are crispy around the edges, but yolk is still runny. 6. To make harissa yoghurt, stir yoghurt and lemon juice together and season to taste. Swirl in the harissa. 7. Top wafles with spinach leaves, sliced avocado and fried eggs. Dollop over the harissa yoghurt and sprinkle with pepitas.
Ingredients 1 tablespoon olive oil 400g Swiss brown mushrooms, sliced Salt and pepper 4 eggs 2 tablespoons milk ¼ teaspoon table salt 20g melted butter ¼ cup inely grated parmesan ¼ cup crème fraiche Finely grated parmesan, extra, to serve 2 tablespoons inely chopped chives Method 1. Heat oil in a large 25cm non-stick frying pan over medium-high heat. Add the mushrooms, season with salt and pepper and cook for 6-7 minutes or until golden. Remove, cover and keep warn. Wipe out the pan.
2. Separate eggs, placing egg yolks into a small bowl and egg whites into a large bowl. Add milk to egg yolks and whisk with a fork. Using a hand beater, whisk egg whites and the ¼ teaspoon salt until stiff peaks form. 3. Heat the frying pan over medium heat. Brush with butter to grease. Using a large metal spoon, gently fold the egg yolks into the egg whites. 4. Pour half the mixture into the pan and cook for 4-5 minutes, or until golden and the eggs are just set. Spoon over half the crème fraiche, parmesan and mushrooms and carefully fold the omelette in half. Cook for 1 minute or until almost set. 5. Transfer to a serving plate (omelette will continue cooking once removed from heat). Repeat using remaining eggs, crème fraiche, cheese and mushrooms. Sprinkle with chives, extra parmesan and pepper to serve.

By Laura Michell As you get into the routine of living in lockdown, spare a thought for your four-legged friend who might just be struggling with the changes to its world. With many people now working from home, children distance learning at home, and families opting to self-isolate, pets have suddenly found themselves with their owners 24/7. For many, this is a signiicant change to their routine and vets are urging pet parents to stop and think about how the coronavirus crisis might be afecting their furry family members. Second Chance Animal Rescue (SCAR) founder Marisa Debattista says it is not uncommon for cats and dogs to be feeling a little out of sorts at the moment. “Pets are going to be a little confused at the moment as their routine has changed,” she says. “A little bit of routine is very, very important. People need to ensure they are still walking their pets. “People should also be leaving and coming back at certain times so pets don’t have issues with separation anxiety [when lockdown is lited]. “Enrichment is also very important, especially for dogs. If you can’t walk your dog as much at the moment, make sure they are still getting stimulation in the backyard.” However, Debattista says the upside to owners spending more time at home with their pets is that they are making time to schedule vet check-ups and vaccinations. SCAR’s Craigieburn-based community animal hospital recently launched a kerbside vet service, allowing people to take their pet to the vet without having to leave their car. RSPCA Victoria chief veterinarian Emma Bronts says the health and wellbeing of pets is just as important as that of any other family member. She says minimising your pet’s contact with other animals is key. “Remember that pets need to practice social distancing like the rest of their family. Since our pets don’t know that, you need to help them keep their distance from other people and animals.” While Dr Bronts says there is “no evidence” pets can spread COVID-19, she is urging owners to ensure they maintain good hygiene. “As always, it is advisable to wash your hands with soap and water ater contact with pets. his protects you against various common

inquiries and requests for meet and greets with our animals with a view to adoption. “Last weekend, we received over 3000 phone and email inquiries for our adoptions team.” he RSPCA, which runs the Epping Animals Welfare Facility on behalf of Whittlesea, Moreland and Darebin councils, is also reporting a rise in pet adoptions. Like many shelters, the RSPCA has changed its adoption processes to appointment-only to ensure it can adhere to social distancing requirements. Meanwhile, some shelters and rescue groups are bracing for a surge in surrendered pets. PETstock Assist charity and events
co-ordinator Jess Guilfoyle says inancial hardships and uncertainty may force many pet owners to part ways with their furry friends. “With more animals in desperate need of emergency care, now is a great time to consider … becoming a foster carer,” she says. “Foster care provides a loving home environment for rescue pets while they wait for their forever home. MY WYNDHAM Point Cook artist Henk Eykman is known for his portraits of Australia’s Diggers. He chats with Star Weekly. When did you move to Point Cook, and why did you choose to move there? I have lived in the Point Cook area for many years. We moved here to bring up our kids due to lifestyle and afordability. We have moved a few times around the area. Our two girls are married with their own children now, and one of them has lived in Altona for quite some time. We decided recently to move to an apartment as we are older and don’t need as much room. Is there anything you really like about Point Cook? I joined the Altona RSL, as it’s a small club and they have many of my artworks on display to honour our veterans. Each year I sell Anzac and Remembrance badges or poppies to raise funds for veterans’ welfare and I sell them at Sanctuary Lakes shopping centre. I love living in Point Cook and the people. (We) can’t aford to buy a place in Altona, which also has wonderful people.
All my works are created to honour those in the Australian Defence Force (ADF), or are sold to raise funds for veterans and or their families. I had to retire some years ago so this is my way of giving back to the community. I run art therapy classes for the Altona RSL ACTIVE veterans and/or their families each week, to help them with mental relaxation and or if they have stress in their lives.

Wyndham council’s transition into a virtual business model for vital services has been almost seamless. Mayor Cr Josh Gilligan said many of the council’s services had equal, if not more, users this April compared to the same time last year – showing a continuity of excellent service through virtual platforms instead of face-to-face. “Even though the doors of our civic centre are closed temporarily, our staf have been working remotely to deliver high-quality customer service,” Cr Gilligan said. Cr Gilligan said more than 12,000 residents had called the council’s customer service team during April. here had been a 425 per cent increase in emails being received and a 404 per cent increase in people using the council’s webchat service to resolve their queries. “Some services are still being delivered face-to-face, such as delivered meals, which has seen an increase of 12 per cent from last April – with 2438 deliveries last month – and we were only down 12 patients for our vaccination program this year,” Cr Gilligan said. “Even though our maternal and child health service was delivered via telehealth this April, we still received a huge number of consultations, with 3320 residents using the service, just 242 less than last year when the regular service was operational.” “We have seen an expected spike in residents ordering hard waste collections while the refuse disposal facility was closed, with 4110 bookings for collections last month compared to 2658 for the same time last year.” “Our economic growth team has been a great source of information and support for many local businesses … he team has been in contact with more than 500 businesses and individuals during the month of April.”
