Anita’s global flavours Swiss-Australian chef, educator, and culinary storyteller, Anita Robin has spent her life blending global flavours, nutritional wisdom, and hands-on teaching into unforgettable food experiences. Living and working on the Fleurieu, Anita’s journey is as rich and inspiring as the dishes she creates. Born and brought up in the north-western part of Switzerland where both German and French is spoken, Anita took a gap year after completing school and went to live on a local farm, where she learned to prepare dishes with local fresh foods. That experience tilted Anita towards her passion for cooking and education, and she went on study at a specialist Home-Economics university in Europe. Anita then started teaching school-aged students cooking, nutrition and sport, before the opportunity came to travel to the African Kongo to mentor local teachers and cook with fresh and local products. While in Singapore teaching at the Swiss School, Anita had the opportunity to develop a small catering business. She bought those learnings with her to South Australia, when she took up study again, this time in catering and restaurant management at Le Cordon Bleu in Adelaide. Papaya Soup A bright, silky bowl with coconut, lime & chilli SERVES 6

INGREDIENTS 1 tbsp olive oil 3 spring onions, chopped 1 papaya, seeded, peeled and sliced ½ tsp ground coriander 1 tsp salt 1-2 chillies, chopped 400 ml coconut milk Water, if needed 1 lime

METHOD 1

Sauté the spring onions, papaya, coriander, chilli and salt in the olive oil. Add the coconut milk and simmer until the papaya is soft.

Blend until smooth. Add water if required, then gently reheat the soup.

Squeeze a little lime juice into each serving bowl and pour the soup over it.

Garnish with a slice of lime or fresh coriander. Serve with fresh bread.

Deliciously wild & tasty There’s one fish that South Australia does better than almost anywhere, and most of us have only ever met it as a slice of sashimi on a share plate. South Australian kingfish is worth a whole Sunday, and that’s exactly what is on offer in a collaboration between two of the state’s most exciting food aficionados. Fleurieu Food and Wine is presenting a kingfish cooking showcase with guest chef Nicholas Finn and native food expert Jackie Mazzocato for their ‘Deliciously Wild: Coast to Coals’ event on Sunday, October 25 in McLaren Vale. Experienced chef Nicholas Finn brings the fish and everything he knows about handling it, while Jackie Mazzocato from Fleurieu Food and Wine provides the native pantry that dresses it: Davidson plum, desert lime, finger lime, lemon myrtle and pickled pigface, the ingredients she has spent years

Nick is Head of Product Development and Innovation at Yumbah Aquaculture, and has cooked his way through kitchens in Adelaide, Melbourne, Madrid, Amsterdam, Vancouver and California. He’ll start the morning by breaking down a whole kingfish in

front of you, talking through the cuts, what each one is good for, and why the fish tastes the way tit does. It’s the sort of thing you usually only see if you work in a kitchen. Jackie Mazzocato, owner of Fleurieu Food and Wine - an award winning mobile cooking school and SA Tourism’s 2025 Gold for Excellence winner in Food Tourism. Jackie is already the author of cook books ‘Get Stuffed’ and ‘A Cut Above’, and will launch her new native Australian cookbook pairing native ingredients with Fleurieu produce called ‘Deliciously Wild’ at this special cooking class event. You’ll arrive to a glass in hand on the deck, looking out over the vineyard, and then you will get cooking. First the raw course, plated at your bench alongside Nick: kingfish crudo with pickled pigface, ribbon cucumber, finger lime and a

Davidson plum dressing. You’ll sit down and eat it while it’s at its best, with a glass of McLaren Vale white from Hastwell and Lightfoot. After that, its over to the hibachi grills where you’ll cook your own kingfish top loin over the coals and finish it with a desert lime and lemon myrtle compound butter, straight out of the ‘Deliciously Wild’ cookbook, melting into the fish. It comes to the table as lunch, with a baby leaf salad in a raspberry shallot vinaigrette, charred broccolini with whipped feta and pomegranate, and a glass of Grenache Tempranillo to go with it. Pickled Karkalla with Anise Myrtle and Pepperberry From Deliciously Wild by Jackie Mazzocato Karkalla, or pigface, blanched and quick-pickled with pepperberry and anise myrtle. It’s a dill pickle in everything but the dill, made entirely of things that grow on this coast. It goes under raw fish, beside anything off the coals, or on a cheese board.

Makes one 500ml jar · Prep 15 minutes, plus 48 hours in the fridge · Easy You’ll need • 150g karkalla (pigface) leaves, washed • 3 tsp ground pepperberry • 1 tsp Anise Myrtle Five Spice, or 1/2 tsp ground anise • 170ml apple cider vinegar myrtle • 80ml water • 3 strips lemon rind • 80g caster sugar • 2 tsp salt flakes, or 2 tsp fine salt What to do 1. Get a big pot of unsalted water to a rolling boil and put a bowl of iced water next to it. Blanch the karkalla for 20 to 30 seconds, then lift it straight into the ice. Work in batches. Crowd the pot and the temperature drops, and instead of blanching your leaves you’ve stewed them. 2. Drain well and pat properly dry. Any water still clinging to the leaves will water down the brine, and you’ll wonder why it tastes weak. 3. Pack the karkalla into a sterilised 500ml jar with the lemon rind. Pack it in firmly, it settles as it goes. 4. Put the vinegar, water, sugar, salt and pepperberry into a pot together and warm it gently, stirring, until the sugar dissolves. Take it past 80C and hold it there for a moment. That is the point where pepperberry lets go of its peppery heat and turns fruity and rustic, which is exactly what we want in the jar. Then take the pot off the heat, stir in the anise myrtle, and let it sit for 5 minutes while it cools. The anise myrtle goes in off the heat because its perfume lives in volatile oils, and boiling sends it up the kitchen ceiling instead of into the pickle. 5. Add your lemon rinds and pour the warm brine over to cover. Warm, not boiling, or you’ll cook the crunch right out of it. 6. Seal, into the fridge, and leave it alone for at least 48 hours. Three to five days is better again. Eat within three weeks.

Grow it or buy it. Karkalla is protected native vegetation and it’s illegal to take from the dunes. It’s a very easy thing to grow in a pot, and good native foods suppliers sell it. No karkalla? Spanish onions. This brine works just as well over 2 medium Spanish onions, sliced as thinly as you can manage, and you skip the blanching altogether. The blanch is only there for the karkalla. Pour the warm brine straight over the raw slices and they’ll turn a brilliant pink within the hour. Good the same day, better the next. Two natives, two treatments. Pepperberry wants heat. Take it past 80C and it trades its peppery bite for something fruitier and more rustic. Anise myrtle wants the opposite, in off the heat, or you lose the perfume you paid for. Same pot, five minutes apart. Go gently with the anise myrtle. It’s a big personality. Half a teaspoon of the straight spice in this much brine is plenty, and much more than that and the pickle starts tasting like a cough lolly. The Five Spice blend is gentler, which is why it goes in at a full teaspoon. Flakes or fine salt, not both. Flake salt is about half the weight of fine salt for the same spoonful, so 2 teaspoons of flakes and 1 teaspoon of fine salt put the same amount of salt in your jar. Use one or the other. Taste a leaf after blanching, not before. Karkalla stores salt in its leaves, and the unsalted blanching water pulls some of it out along with the chalkiness. The blanched leaf is the one the brine has to season. Forty-eight hours isn’t being precious. A succulent leaf is mostly water, and the brine has to shift all of it. Open the jar at twenty-four hours and you’ll have a vinegary leaf rather than a pickle. This one lives in the fridge. It’s a refrigerator pickle, not a preserve.

To serve Under kingfish crudo with finger lime and a Davidson plum dressing, which is exactly where it’s headed at her next class. Beside anything cooked over coals. On a cheese board with a sharp cheddar. Through a salad of coastal greens with good oil and not much else. Pour a McLaren Vale Vermentino or Fiano.

Coastal gardens By June Taylor For those of us living in the Fleurieu region, we can surely boast that we live in one of the most beautiful and picturesque spots in the entire country. With spectacular scenic views, stunning rugged coastlines, fresh produce right at our doorstep and internationally acclaimed wines – we certainly do have it all! However, living in coastal regions does come with some challenges such as maintaining the perfect garden. Gardening by the seaside can be filled with disappointment, and even failure, particularly if there is no forward planning. The closer we live to the ocean, the more difficult it may be growing the perfect patch, establishing an edible garden or even keeping plants alive throughout the long hot summers that are highlighted by strong winds and then of course, the frosty winters can also hamper your efforts to have a beautiful garden. Wind is a keen gardener’s worst enemy, as it can inhibit plant growth and stunt and deform the height and shape of trees, shrubs

Before embarking on planting a garden in a coastal spot, take a drive around the area and note what does grow well in your region. Plant selection is important but it is a must that you select a site that is well protected from nature’s most ferocious elements.

The first job is to select your site and immediately get started on planting a bushy, tall, windbreak around the perimeter of the area that you have selected for the main garden. This windbreak should include taller wind-tolerant trees and shrubs that you have identified and that grow well in the district.

Grevillea, sheoak, some eucalyptus species like the beautiful flowering ficifoli, melaleuca and banksia marginata all tend to grow particularly well within a windy, coastal spot. Within these ‘walls’ of your windbreak section, you can then add smaller tough plants like westringia, salvia, yucca, euphorbia, echium and germander. They are strong, hardy, drought resistant types that don’t require a lot of care other than perhaps a harsh cut back after they finish flowering each year. Within these confines, you can now add smaller succulents as well as herbs like rosemary, sage, lavender and thyme – they can all be included in your choice. Now you have created the perfect section protected from the wind and salt spray, plant your veggie patch with borders of chives, garlic, marigold, nasturtium, daisies and even smaller varieties of roses. Don’t try to create a lush tropical garden that you have seen in a magazine, create a garden that will grow in your climate and one that will survive and you will enjoy!

Insuring your home When you take out a building insurance policy, you’ll need to calculate the cost of rebuilding your property, which will help you decide your ‘building sum insured’. Your insurer will pay up to your sum insured. They may pay for repair or rebuild costs after building damage or loss due to an insured event, but if you’re insured for less than the replacement value, you might have to pay the difference out of your own pocket. If you insured for more than the replacement value, then you might only be paid up to the amount of your loss or your sum insured, whichever’s less. If you want to insure your belongings inside your home, you’ll also need to work out their replacement value for contents insurance. There are home contents calculators that can assist working out an estimate.

Building insurance covers the structures and fixtures that make up your home buildings, from the house itself, to your garage, fences, and built-in furniture. Guessing the replacement value may put you at risk of underinsurance, which is when you don’t have enough insurance cover to repair or replace your home after an insured event. There are a couple of ways to get a more accurate estimate. You can get a rebuild valuation from a professional surveyor, builder or architect. It will be at your own cost, but can help you decide on a more accurate ‘building sum insured’ for your home. This expert valuation is different to a valuation from a real estate agent, who would give you the sale price of your home compared to other homes around the area. The costs of building materials, fixtures and fittings, architects,

surveyors, and other professional fees can increase each year, so getting an updated valuation before renewing your building insurance policy can be worthwhile. It’s important to note that the replacement value of your building isn’t the same as your home’s market value. For insurance purposes, the value of your home depends on a number of factors: • Location and the likelihood of natural disasters, such as bushfires or floods as you may be subject to specific building requirements, • Home design, e.g. modern architecture, Federation, or Victorian, • The year it was built, • Construction details, including the type of building materials used, • Quality of your building’s construction, • Slope of your land your home

is built on, • Size, e.g. floor area, how many rooms, garage spaces, and balconies, • Any special features, e.g. solar power, pool house or granny flat. If you ever update or renovate your home, you may consider updating your insurance too. Rebuilding costs, such as materials, labour and architects’ fees, tend to rise over time so your home’s replacement value is also likely to increase. If you’ve made home improvements or completed a full renovation, your home may be more expensive to repair or replace. It’s important to make sure your sum insured accurately represents the value of your home building, or contents, or both. Ideally, you should check your home’s replacement value each year, before renewing your policy.

Other benefits of mulching plants include the increase of worm activity, the protection of surface soil erosion and wash aways, it improves soil fertility and soil quality, allows better drainage and it tends to keep the plants healthier and cleaner with a less

chance of fungal disease. The best time to mulch around your garden plants is certainly after a heavy rain as that moisture will stay deep in the soil for longer periods and in most cases mulched plants will survive an extended heatwave without heat damage as long as there is adequate moisture in the surface below the plant and around the roots.
