Festa to serve it up for patrons BY EMILY ROBINSON FOOD will take centre stage as the theme for February’s Pako Festa, according to organisers. Discover Food of the World will celebrate the various cuisines of Geelong’s many enthic communities at the festa on 25 February, Diversitat arts and events manager Luisa LaFornara says. “We hope to have an even greater diversity of food on offer,” she says. “One of the highlights of Pako Festa is the food – you walk along the street and you follow your nose.” The extravagant street parade at this year’s festa will feature around 90 floats and hundreds of performers representing 45 affiliated ethnic communities, Ms LaFornara says. Sixty other community groups and organisations will also play a part in the event, now in its 35th years. Diversitat, a not-for-profing organisation providing multicultural services in Geelong, stages the event on Pakington Street each year. Pako Festa has support from local government and State funding as well as “a lot of sponsors”, Ms LaFornara says. “You’ve got some people that have been involved from the very first event. There’s just so much history – that’s what gives it such strength.”
Organisers hope to serve an expanded menu of ethnic cuisine at February’s Pako Festa.
The colours, sounds, smells and flavours makes Australia’s biggest multicultural festival “a lot to take in in one day”, says Ms LaFornara. She considers Pako Festa different to other cultural events around Australia “It’s community owned and driven. I get the pleasure of working with over 30 different local communities, whether they be performing, have food stalls or are involved in the parade. Diversitat chief Michael Martinez says Pako Festa boasts the “best parade in Geelong”.
“It’s the biggest multicultural festival in Australia,” he says. “The fact it gets so many different cultural communities there is quite unique.” Mr Martinez likes the fact the event “hasn’t been overly commercialised”. “It’s a great event. Over the last few years it’s been almost spiritual – the atmosphere is so positive and you see very little bad behaviour. “It’s all about communities getting together and having fun.”

Crafted by hand IT WAS his wife and children that encouraged business owner John Liu to purchase Pako Fish and Grill this year. “I previously operated a furniture business where I made custom handmade furniture,” John says. “After many years of hard work, I decided to look for something new.” Now with just over four months of business at Pako Fish and Grill under his belt, John has already managed to achieve a five-star rating. “It all comes down to providing the best quality food and exceptional friendly service,” John explains. John offers service with a friendly smile and greets his regular customers by name. He also owns and operates a fish and chip shop on Sunset Strip in Ocean Grove, which he opened two years ago. But his two daughters, aged four and seven, are “always asking to come to Pako”. “Before I bought this shop, my daughters would come to Pako and each time they would ask me, ‘can we have this shop?’ “They talked me into buying it - they love ordering chips and chicken nuggets.” Asked what his favourite fish is, John doesn’t hesitate in answering, “the flake” with a smile.

wedge of lemon. “We also have a Family Pack, which is simular but serves four. This includes four flakes, four potato cakes, four dim sims, four calamari rings, medium chips, lemon wedges and a large tartar sauce.
“For a healthier and refreshing option on the warmer days, we serve a chargrilled calamari salad that our customers love. “Our difference is that customers can order healthy options and also use the menu

Freedom of movement BORN with a passion for movement and dance, a young Mikayla Thomas was never far from a ballet barre. Fast forward to now, and the newly opened 'Move & Be’ owner has opened Geelong’s first specialised barre studio in the heart of Pakington Street. “I don’t know why I started dancing so early, I must have just loved the feeling of moving and being in the studio,” Mikayla says. “Wearing the leotards and tutus was always fun,” she laughs. Originally dreaming of becoming a professional ballet dancer, she decided she would follow her passion and study dance at university - hoping to build on her developing dancing career. She completed a Bachelor of Contemporary Dance in New Zealand, while continuing her professional ballet training on the side. After relocating to Melbourne, Mikayla was drawn to teaching and further developed her love of movement through Pilates, yoga and barre. “Originally I wanted to be a dancer. I remember telling my grandma that I wanted to be a ballet teacher,” she reflects. Now shifting her attention to developing a fun and fresh approach to body conditioning, Mikayla offers a variety of

classes, all with their own unique differences. “Barre is a combination of the ballet barre, Pilates and yoga; it aims to target specific muscle groups to help create long, lean and defined muscles. “Classes vary in times, but are mostly an hour long. “We start with a yoga warm up and finish with yoga stretches,” she says. To launch Move & Be Barre
Studio, Mikayla offered a free class and “goodie bags” to the first lucky attendees. The class was so popular that she decided to open a second free launch class. “I wasn’t expecting all the spots to be booked, I was just hoping to get a few people come along,” she says. “Taking the classes will help people feel stronger and more energised.”
With polished timber floors, ballet barres and an area where people can “switch off and drink tea”, Mikayla has managed to create a space where people can escape their daily work environment. “It’s a place where people can chill out and have some of their own time.” For those starting out, Mikayla recommends taking one to two classes a week.
“It’s quite a challenging class. As you get stronger, I’d recommend doing three to four classes per week.” She encourages both men and women to pluck up the courage to try something different and to “give it a go”. Adding sparkle to the season CHRISTMAS and community engagement are passions for David Nolan. “It’s been burning in me over the years to do more within the community,” says the operator of Geelong West’s new Westminster Christmas store. “The shop has really provided an avenue to do that.” With a financial sector background, David was happy to make a change when he acquired Westminster Christmas. “In the financial sector you don’t get to engage with the community,” he says. David and his family’s goal for the Geelong store is to celebrate the festive season while giving back to the community, particularly its children. “I fundamentally love Christmas,” he declares. “We supplied a tree for Bethany Giving Tree Appeal for their own appeal. They set up Christmas trees every year in Geelong, where people can come along and put a gift under the tree for underprivileged children.” Westminster Christmas also sponsors Queenscliff ’s Cottage by the Sea over the Christmas period. “They’re one of the oldest registered charities in Australia. Both are great organisations to support.”
Volunteering to decorate the Children’s ward at the Geelong Hospital was another community “no-brainer” for David and the team at Westminster Christmas, he says. They now plan to expand their engagement with the community. “Christmas is a great time to support children unwell in
hospital or underprivileged,” David says. The Shannon Avenue store also delights children with Santa Claus in attendance from 10am to 2pm Saturdays until Christmas. “Families gather to see him. The excitement of Santa being here brings so much joy,” David says.
“It really is a fun business that brings happiness to kids.” With an existing store in the Melbourne suburb of Vermont, David considered Geelong a good fit for a new Westminister Christmas outlet. “In regards to making Geelong the capital of Christmas, former mayor Darrin Lyons did an amazing job,” he observes.
“There’s no specialised Christmas shop in Geelong, so it’s a good fit to put a shop here.” Westminister Christmas sells in-store and online but also has an arm focused on corporate decorating across Australia. “We actually travel with my team to the United States, Europe and Asia to source products directly from overseas suppliers and we hand-pick them,” David explains. “You won’t find our products anywhere else, like our large and unique specialty items and the best bits we find from high-end stores.” The range includes street lamps, life-size reindeers, decorations, festive lighting and Christmas trees in various styles and colours. “We choose the highest quality products we can and, because we source directly from overseas, it allows us to sell them at a competitive price,” David says. After recently completing their buying trip for 2017, David and the team are excited about expanding the Westminster Christmas product lines. The store closes at Christmas but re-opens in 2017 as a general specialist decorations business before resuming with Christmas specialities later in the year.

‘Evergreen’ icon proves a big hit GEELONG can boast having one of Australia’s oldest golf clubs still on its original site. Geelong Golf Club was established in 1892 as an 18-hole course, which remained a feature of the Ballarat Road site for 112 years. The club closed in 2004 but re-opened on the same land in North Geelong two years ago as a boutique nine-hole layout. The new course has been a hit with golfers, says general manager Paul Christie. “It’s been very exciting because our membership is growing. It’s been really positive and more people are playing golf on the course. “It’s unique what we have and what we offer. Anyone who hasn’t played before should come and see what it’s all about.” With a peaceful forest setting, Geelong Golf Club is ideal for players short on spare time. The nine holes can be completed in 90 minutes, which allows even before or after-work rounds during the week. “The course also features a stunning nine-hole format that suits all levels of golfers, all just three kilometres from the waterfront,” Paul says. The club is open seven days a week, with seven-day memberships just $11.52 weekly. Geelong Golf Club provides options for social, corporate groups and competitive golf. Lessons and clinics are available for juniors, beginners, ladies and even experienced golfers. The club specialises in packages for corporate days, functions and Christmas break-ups. A new beer garden is now open on the site for players and guests to socialise and relax. natural oysters and the chef ’s special oysters with raspberry and beetroot jelly which was delicious, we also ordered crusty
garlic panini bread. For our mains I ordered the Atlantic salmon, which was served with a mild red chilli jam, coconut kaffir lime and Asian herb peanut salad. The salmon was cooked so well that it literally feel apart when my fork hit it, and the meal itself is a very refreshing lunch option on a warmer day. Nathan ordered the pork belly special which was with pumpkin puree, potato gratin, honeyed carrots and jus. This was such an indulgent, hearty meal fit for a king, the pork belly was cooked to perfection even the skin was crispy which a lot of restaurants struggle to do. There is plenty of gluten-free and vegetarian options and they are happy to cater for dietary requirements. HELLO fellow foodies! How is this weather? We finally have had some sunshine and I’m feeling fantastic. Today we have spent the morning doing Run Geelong ... well Nathan (my husband) did and I sat there in support at the finish line. Then we hustled down to Pako for a little breakfast before heading home for a lunch time kip. We had to work up an appetite for our next foodie adventure. The telegraph hotel along Pako Street is a well-known establishment, initially starting out as a “regular pub“ has now changed into a well-established hotel serving restaurant quality food. The decor is simplistic with pops of colour throughout, it stills hold somewhat with tradition, with shades of brown and unique pieces of furniture and items. On this occasion we headed to the hotel on a Sunday arvo around 2pm. We were greeted by staff who walked us through the menu and chef specials - the staff were attentive and were happy to assist where possible. The menu consisted of a mixture of food, from a sharing

The true taste of Thai PAKO’S Panny Thai specialises in authentic cuisine, says co-owner Liam Uathao. “We make everything ourselves,” she says. “My auntie, Pan Heron, is a chef, a cook and I have another auntie working here too. “I help out at the front and back, waitressing and helping out with orders. “I enjoy meeting new people and talking to customers.” The family previously operated a restaurant at Ocean Grove before selling up and moving to Geelong West eight years ago. Their Pako restaurant is open for dinner but patrons can also order from its enticing takeaway menu, with delivery available.

“People usually order online with Menu Log and Eat Now and then they receive 20 per cent off their first order,” Liam says. The menu offers traditional Thai cuisine ranging from red, green and yellow curries through to stir fries, soups, rice and noodle dishes that can be prepared to
suit personal preference for mild, medium or hot flavours. Liam says the most popular dish is pad Thai, a noddle stir-fry with bean sprouts, sprinkled with crushed peanuts on top and with a sweet and sour flavour, all accompanied by lemon wedges. Also popular but taking the longest cooking time are steamed fish and seafood in red curry sauce, Liam says. “Spiciness and herbs, lime leaves, lemongrass and garlic” are just some of the flavours that feature at Panny Thai, she advises.
