Matt at work By Joelene Ogle HEAD chef Jeremiah Jones handed over the reins of the Wood Fire Grill kitchen to 2016 MasterChef runner-up Matt Sinclair for two nights this week, and the result was a fun and light-hearted event with a memorable menu. Matt created an exclusive four-course menu, which featured some of his famous dishes from the show, as well as some new creations in honour of his time in the Wood Fire Grill kitchen. Both nights were successful and a grand way to celebrate Matt’s first restaurant service after finishing up on MasterChef earlier this year; the nights also allowed diners to meet Matt and ask about his time on the top-rated cooking series. The menu featured beef tongue dumpling with chimi churri and crackle, Wood Fired Mooloolaba king prawn and confit duck leg. Finishing off the menu was a dessert Matt described as one of his best memories of the competition as it was the first time he felt comfortable creating a dessert. The boysenberry sorbet, port jelly, honey nougat and dark chocolate was a combination he had been playing with for some time, and his experimentation paid off with a dessert that was rich, sweet and full of depth. Anyone who missed dining at Wood Fire Grill during Matt’s work experience, can only hope he will be drawn back to create another menu and event with as much passion and creativity as we experienced over the two nights. Centre not going to plan AN APPLICATION for a new medical centre in Noosaville that is likely to be refused by council is a case of “bad timing”, according to councillor Jess Glasgow. An application to build a twostorey medical centre on land that is currently zoned as residential is before council, with staff recommending the refusal of the material change of use. According to a report presented to the Planning and Environment Committee on 9 August, the application to build on Goodchap Street and Val Crescent in Noosaville is “unplanned” and conflicts with the Noosa Plan. Cr Glasgow said he didn't support the medical centre development because, while it was opposite the Noosa Hospital, it was proposed for residential land, but he added it was a shame the application had come through now when council was in a legal battle over the Noosa Civic development. “Health is a huge industry that we should be capitalising on,” he said. “I’ll acknowledge we have a missed opportunity with this health development in Goodchap Street. “We have all these great ideas for office space and health in Noosa Civic, which is correctly zoned, and here we have a prime example of business, a developer and a commer-
The proposed medical centre for Goodchap Street, Noosaville. cial company knocking on our door, saying we want to be involved in this part of the world in Noosa.” Cr Glasgow said the Noosa Civic development would be perfectly suited to the proposed Goodchap Street medical centre, but poor timing meant the region might lose out on the benefits of the development. “This is a very simple situation of bad timing because we’re caught up in court with QAC,” he said. “I feel, as a council, we are completely ready for those kinds of developments and industry coming into Noosa. We have got an area that is
10 minutes from Hastings Street (at Noosa Civic) and we’re saying ‘go nuts’. We want this industry here, just don’t do it in residential zoning. You don’t want to splinter it.” Councillor Ingrid Jackson is also passionate about the medical centre development, urging Noosa Council to approve the application for a material change of use from residential zoning to allow for business development. Cr Jackson said she disagreed with the staff’s recommendation to refuse the application because she was in “favour of diversifying the Noosa economy” and she supported
the Noosa Plan’s intent for the Noosa Civic business centre “providing a range of business uses”. Cr Jackson said she believed there was a high demand for health services in the area and that will only grow; the application didn't significantly impact the local traffic and was ideally located to create a medical hub around the hospital. A decision on the application had not yet been made, with discussions on the application held over to the general committee meeting on Monday 15 August and then held over again at the ordinary meeting on Thursday 18 August.
Your say sought on bus route changes TRANSLINK is inviting the Noosa community to have their say on the proposed changes to bus services on Creek Road in Noosaville. TransLink spokesperson Miguel Holland said residents had previously shared concerns about the safety of route 628 (Noosa Parklands to Noosa Junction via Noosa Civic) buses travelling on Creek Road. “Even though an independent safety audit in 2013 confirmed it was sufficiently safe for buses to use Creek Road, there has still been some community debate on this,” Mr Holland said. “However, despite the findings of the independent audit, buses travelling along this route have continued to be the subject of much debate, so TransLink has agreed to Noosa Shire Council’s request to re-visit this issue.” Noosa Council has proposed the option of constructing a bus turnaround on Lake Weyba Drive to facilitate the potential removal of route 628 from Creek Road. “TransLink is always happy to
work with council to address community concerns, however we also need to hear from local residents, bus passengers and bus operators on the proposed changes before determining how to proceed,” Mr Holland said. “This will ensure TransLink can achieve the best, balanced outcome for the entire community.” Mr Holland said the removal of route 628 from Creek Road would require the construction of a bus turnaround on Lake Weyba Drive, and would also result in the removal of school bus routes 5822, 5824, 5828, 5829 and 5840 from Swan Street, Wylah Street and Creek Road and travel on Lake Weyba Drive only. It would also require the closure of the Swan Street bus stop (stop ID 302127), and a reduction in parkland parking on Lake Weyba Drive for the new bus turnaround. “These changes may also mean that school students and customers would need to walk up to an additional 400m to access their nearest

INBRIEF Council calls for good sports COUNCIL is calling for volunteers with a keen interest in community sport and recreation to help prepare a new sport and active recreation plan for the shire. Councillor Joe Jurisevic said Noosa was renowned for being an active and sports-minded community and the new Noosa Sport and Active Recreation Plan would set priorities for council and stakeholders to work toward. “We’re assembling the reference group to help develop the plan and determine priorities for sport and active recreation. Anyone interested should get in touch with council,” he said. The reference group will look at local sporting opportunities, facilities and the needs of Noosa’s 100-plus sports clubs, as well as the thousands of residents who take part in these activities each week. Watch for graffiti THE local police are calling for the community to be extra vigilant after a recent spike in graffiti on local sporting buildings. Noosa Heads officer-in-charge Senior Sergeant Steve McReight said two local sporting venues had recently been targeted with graffiti containing foul language. “We’re calling on the community to keep watch and call the police if they see anything,” he said. Last month a Marcus Beach man was charged with eight offences relating to graffiti on trains in Brisbane. The man, aged in his twenties, was fined $385.66 and was ordered to serve 40 hours of community service to be spent removing graffiti from public buildings. Sen Sgt McReight said a threeman squad of local officers had been assigned to monitor graffiti in the Noosa area to crack down on the visual eyesore.

Art skills create an opening THE three-day Noosa Open Studio event has been a huge success with hundreds of locals and visitors making the most of the chance to see where the region’s best art is created. The festival saw 40 artists and artisans in more than 30 studios across the Noosa region open their studios to the public for three days and organisers were overwhelmed with the response from both the local community and visitors to the region. Noosa Open Studios chairwoman Christine Pritchard said the event was a great success. “The studio bus tours were full with eager studio visitors and some of the tours could have been filled two or more times over,� she said. Ms Pritchard said she has received outstanding feedback from participants and artists who loved the inaugural event and are already looking forward to the next one. “We are delighted with such positive feedback for our inaugural Noosa Open Studios event,� she said. “It’s only been possible because of the outstanding support and engagement from Noosa Council and Tourism Noosa, our local sponsors, our committed volunteers and the amazingly high quality and works of our Noosa region artists and artisans. “Noosa deserves to be nationally acknowledged as a centre of excellence for visual and creative arts and the Noosa Open Studios event’s mission is to achieve that objective.� Ms Pritchard said any local artists who would like to participate in the 2017 event can email their interest to noosaopenstudios@gmail.com now. Pedalling awareness By Hollie Harris A FORMER coast local has passed through Noosa during his 16,000-kilometre bike ride to raise awareness for Beyond Blue. Shane ‘Snoopy’ McKay spent 1994 living his dream playing Aussie Rules on the Sunshine Coast and winning a flag for Maroochydore, but deep down the father of five was hiding a private battle with anxiety and depression. “On the outside everything seemed OK but deep down I suffered with anxiety which eventually tuned into severe bouts of depression which escalated around eight years ago when my father passed away. “Like most males, I avoided talking about it and fortunately my five children and four grandchildren kept me distracted from thinking too much about my problems,” Shane said. After three years of planning, including much procrastinating the 52-year-old put his Adelaide-based landscaping and paving business on hold to ride across Australia on his bike to raise awareness and funds for Beyondblue. “It’s definitely the hardest thing I have ever done both mentally and physically and I’ll be honest there’s been quite a few times along the trip that I have wanted to pack up and go home to see my kids and grandkids but I know I am doing something really positive

The journey has seen him ride 12,735km to date and by the time he rides down to Melbourne then across to his former hometown of Mt Gambier before arriving home to Adelaide he will likely top the 16,000-kilometre mark. While on the Sunshine
Coast Shane plans to catch up with two of his former coaches, including 1994 Maroochydore premiership coach Neil Bourke and former Noosa coach Wayne Fletcher who led the North Gambier Tigers to premierships with Shane back in 1987 and 1989. “I’m really looking forward to spending a few days on the Sunshine Coast, I really enjoyed living here back in 1994, I love the beaches and hinterland and the relaxed lifestyle,” Shane said. By Hollie Harris AT A meeting of the Peregian Beach Community Collective, Noosa Council was called on to permanently block access from the Scanlon development into Rufous Street. The collective requested Deputy Mayor Frank Wilkie to have the Noosa Council urgently take every possible step to have the southern end of Rufous Street adjacent to the kindergarten permanently closed to vehicular traffic. The urgency has arisen because the developer has been accessing the site from Rufous Street, despite council development conditions which stipulate access must be via Sandpiper Lane.
The concern is to reduce safety issues for the kindergarten, the tennis club, vegie village and pedestrians by the western end of the existing pedestrian lane way being restricted to one essential car park for the kindergarten and emergency vehicles only. Deputy Mayor Frank Wilkie said permanent road access to the site had long been ruled out. “Traffic access to the new supermarket was not an option because of safety concerns and to protect the amenity of this area with a kindergarten, tennis club, parkland and permaculture gardens,” Cr Wilkie said. Cr Wilkie said councilcommissioned design work
currently underway focused on walkways and people access only in that pocket. “While there’s been no application received as yet for the rest of the IGA site, the council-approved master plan for the Rufous Street precinct shows no road access from the north side. “The passage of Unity Water and contractor vehicles at times during construction has understandably concerned residents and both long and short-term solutions are currently being considered to help cement this as a pedestrian-only zone,” Cr Wilkie said. Property owner Tony Scanlon was contacted but no comment was provided at this stage.

The heat is on THE anti-science brigade are still in denial even after several years of global average temperatures shattering heat records. I did laugh when reading of Dr Ken Lynn’s
‘questionable understanding’ of the science. Dr Lynn is a well-respected physicist whose area of specialty is the ionosphere (look in up Mr Turner). He travels to climate conferences all over the world as a speaker who is an expert in his field. He can assure you that there are no speakers from the denialist camp attending said conferences. Their interaction with real science is confined to the pages of the newspaper. Steve Hall, like me, has spent many years, as a science teacher, educating students about the Greenhouse Effect, among other things. If sceptics are not ignorant about a subject upon which the science has long been in, a great motivator for denial of climate change is association with and/or sponsorship by fossil fuel companies. Senator Malcolm Roberts, whose strident denialist stance was shredded by the estimable
IT IS baffling as to why John (I-wish-I-understood-science) Turner still doesn’t understand the role of CO2 in global warming (Noosa Today, 18 August) and why he opposes transitioning from fossil fuels to renewable energy. These things have been explained in these pages before and the role of CO2 is made quite clear on the internet. Perhaps he is worried that too many jobs will be lost by backing away from fossil fuels. We have managed to largely divest ourselves from whaling, sealing, telephone operators, lumber jacks, asbestos, aldrin and dieldrin, germ and gas warfare, CFC and DDT, koala hunting, horse drawn carriages, cigarette smoking and sending letters by post. These have all gone at the temporary expense of jobs. Fossil fuels are the next commodity to go the way of vacuum tubes and we should all be pushing for an end to coal mining and gas and oil exploration as soon as possible. It is time for Case and Colin and John, among others, to embrace the inevitable and to stop holding us all up by proffering false arguments as reasons to remain dinosaurs. The new jobs in renewable energy are exciting and will pave the way for a better future if we don’t miss the boat. The boat is leaving the dock as we speak, so please get out of the way! THE Sunshine Coast needs a community hospice where people who are rapidly approaching the end of life can find relief from pain through excellent palliative care and where families, friends and carers are also supported through the bereavement. The setting should be uplifting as its purpose is to prepare the patient for death. Experience is that hospices assuage the fear of dying and evoke contentment. The buildings are of a human scale that enable people to enter unafraid and to find within them a sense of calm supportive order. The first, St Christopher’s Hospice in London, opened in 1967, the first in the USA opened in 1974 and in South Australia in 1988. The descriptor, hospice, is generally used in the facility’s name. The modern hospice movement argues that there is a place for a sensitively designed facility providing specialist palliative nursing care where the terminally ill can spend the last days of their lives with the attendance of family and friends. Acute hospitals may have specialist palliative care wards but hospitals are large impersonal institutions whose aim is to cure patients. Death is considered to be failure. Experience shows that an economically viable hospice would have six to eight in-patient beds in individual suites and cater for respite and out-patient care. As a community hospice it would embrace charity cases and would rely on volunteers to provide support in all areas of operation as well as seeking funding from many sources including from all levels of government, Department of Veterans Affairs and health insurance organisations primarily on a daily cost reimbursement basis. In order to be eligible for government, DVA and health insurance funding, a hospice has to meet the Queensland Health Department construction code for private hospitals which specifies the facility’s physical aspects such as the provision of clean and dirty utility rooms, etc. The hospice must also be certified to standards for patient care and facility management

The 12-man strong Riding Posties for Prostate team will arrive in Noosa on Tuesday 30 August on its way from Hobart to Cairns as it raises awareness of men's health issues.
Groups to get the message IT’S usually the postman riding a postie bike, but next week it will be 12 intrepid motorcyclists who will roll into town on the classic red bike. The motorcyclists are travelling more than 4700kms from Hobart to Cairns along the east coast of Australia and will stop regularly to speak to community groups about men’s health issues as well as raise funds along the way. The Rotary Noosa Daybreak club will host the 12 travellers at the Noosa Men’s Shed on Tuesday 30 August from 4pm with a barbecue.

Everyone is invited to come along and meet the Riding Posties for Prostate team which will help raise awareness of men’s health issues and much needed funds to dramatically improve specific medical outcomes for men. Prostate cancer survivor and Rotarian Malcolm McGinn has championed the fun-

Measuring up JOHN Turner (Noosa Today, 18 August) should be grateful for the Greenhouse Effect. In 1824 Joseph Fourier used thermodynamics to calculate the expected temperature of the earth and found it to be about -14 degrees Celsius. The disparity between this and the observed temperature of about + 14 degrees Celsius was attributed to the atmosphere and later became known as the Greenhouse Effect. It was later shown that this effect was due to gaseous water and carbon dioxide. The mechanism can be explained by the Bohr-Rutherford model of the atom. Best left alone WELL it’s that time of the year again. For us a celebration. For others a reminder of a terrible loss. On my grandson’s second birthday Princess Diana was killed in a car crash in Paris. We will be celebrating his 21st and the same old conspirators will be celebrating a new theory on how she died. Books will have been written by someone who has inside information that certain evidence wasn’t produced at the inquest and can prove she was intentionally killed. This evidence and similar about this time and every year in the last 19 years - nearly always points to one of the Royal Family being involved and, unfortunately, they have to sit back and cop it with no right of reply. That’s explained as being undercover MI5 and James Bond secrecy.
What makes it more tragic is Prince William and Prince Harry are made aware of these conspiracies and must obviously feel deep regret because of the loss of their mother. Losing someone in an accident is hard enough to bear but to be told it was not an accident but murder must be unbearable. Lost for words SPEAKING in Parliament gives MPs a chance to raise issues of concern for their community, their electors and some MPs take this part of their role very seriously. In the term of this Parliament, the Member for Noosa Glen Elmes has spoken on 19 occasions - the average across all members is 47 times. So he’s near the bottom of the class on speaking to issues in the Parliament and certainly avoided debating the issues with political rivals during the lead-up to the last state election. He’s around for the local events and photo shoot opportunities but what about state issues like tree clearing legislation and its impact on the reef (and ultimately tourism), local hospital and respite care funding, roads, etc. Tony Tilden, Noosa Heads.
Fishing tales ALL winter some people have persisted in writing rubbish about the mullet fishing on the Noosa North Shore. There is everything from claims they had machine guns to using photos of snub nose dart caught in 2010. I for one haven’t seen any fly fishermen targeting these fish in the past six years. I guess the writers have some agenda, whether it’s to do with property or their businesses I’m unsure but what they are doing is inciting hatred towards a group of fishers making a living in a sustainable fishery. Qld fisheries resources 2012 DAFF This year there was one NSW fisher in the group and he leased a K8 licence. The others were from Tewantin, Tin Can and Rainbow Beach. All in the K8 zone. The NSW fisher rented a house on the North Shore, therefore they had toilet facilities. He and his wife also bought all their groceries, etc, locally as would any other visitor. People may have assumed there were more NSW fishers as the buyer was from Tweed River and at times had three or more vehicles all with NSW regos on the beach. There were also large eskies of ice stored on private land. Mullet comprised more than 99 per cent of their entire catch and all of the fish is used - the fillets for human consumption, the roe as a valuable export earner for Australia and even the gut and frames for bait. Mullet don’t spawn in the river, as one detractor said, but go to sea to spawn. They travel north up the east coast starting in southern NSW. Plenty of schools are missed for many reasons including rough weather and live to breed. As little as 40 years ago you hardly saw a 4WD on the North Shore, now there are thousands of vehicles. This is where the increased pressure is coming from - the beach is being loved to death. Years ago locals used to bring drinking water home from the ‘Bubbler’ when their tanks were low, now the Bubbler has gone and any water up there is too contaminated with sewage to be usable. Perhaps our environmental levy should be used for cleaning this up. Pam Burton, Tewantin.
On the agenda THE agendas for Noosa Council’s recent August committee meetings provide interesting reading. The planning and environment committee had to confirm the defence of two court appeals in Noosaville, one concerning signage and the other involved a medical centre car park. Considering staff reports for this council
meeting have recommended to refuse additional conditions for a restaurant in Noosaville and a relocation application for a well-known radiology company, it’s likely there’ll be two more additions to the appeals list. The meeting’s last agenda item was a confidential session to discuss its ongoing court appeal for a Cooroy service centre. The services and organisation committee meeting contained a recommendation by the CEO to refuse ratepayer funding for a proposed cultural centre and also reviewed proposals for significant changes to waste management services. The aquatic centre, Noosa Leisure Centre and the ’J’ continue to operate at a loss, while confirmation their capital works program for the financial year finished more than two months behind schedule should have disappointed all concerned. Driven batty I MUST say I get frustrated when those who do not live with bats invading their homes denigrate the rights of those who complain about their home life being destroyed by the constant smell, noise and the deposits they leave on houses as they come and go. It is one thing to be an animal lover who cares about their welfare but to just whinge about those who really have the problem is mean-spirited at best. No, Mark Presling, it has already been established that a vast number of people who live in Wallace Park area did not buy cheap after the bats arrived, they pay their rates and it is natural for them to seek council help - the local member has shown no interest, nor the State Government. As for their complaining “talking down” their properties’ resale value is stupid considering as anyone viewing their properties would be immediately put off by the noise and smell. Case Study: 30 years of Depression explained. Within weeks she felt happy, motivated and amazed to get her life back. A patient in her early 30’s attended the clinic having suffered symptoms of depression for most of her adult life and anxiety throughout her childhood. Suffering with symptoms of poor motivation, sadness, anxiety and insomnia, exhaustion, anger and irritability. She had responded to an ad about depression and wanted to learn what the underlying reasons could be, to finally address them thoroughly. No emotional events or trauma had occurred during her life to cause her condition, so biochemical factors were reviewed extensively. After taking a full history and pathology to investigate inflammation, genetic conditions, infection, digestion, nutrients, hormone’s and brain chemical levels, the causes became clear. She had travelled extensively, and lived in various countries throughout her childhood, so contracting bacteria in water overseas was a potential problem, having the capacity to cause symptoms of depression. We also found she was moody, with bouts of sleepiness, and fogginess throughout the day, usually indicating a relationship with food. Blood tests also confirmed two genetic conditions that did not allow her to produce brain chemicals adequately without supplementation of certain nutrients, very simple to treat, though if undetected creates further health problems. This problem alone if untreated lowers the immune system, allowing a lifetime of susceptibility to infections, and poor digestion with allergies becoming common. Food reactions cause symptoms of depression, anxiety, irritability, insomnia and low thyroid function. The liver detoxifies the offending food, by using enzymes which are also involved in making serotonin in the brain resulting in low moods. One of these enzymes is responsible for producing melatonin for sleep, so insomnia follows. The thyroid function drops during a food reaction, reducing progesterone, creating oestrogen dominance, PMS, menopausal symptoms, mood swings and more. After treatment, starting a diet tailored to her test results, raising serotonin, melatonin, and dopamine naturally, and treating her genetic conditions, she began to feel happier than she’d ever felt.

Riding the trails MORE than 80 horses and their owners converged on Kin Kin last weekend to take part in the 13th annual Kin Kin Horse Ride that saw riders travel over 25kms through some of Noosa’s best trails. The annual event is a family-friendly ride that encourages people to use the sometimes under-utilised tracks and trails throughout the Noosa Hinterland.
Event co-ordinator Julie-Ann Flynn said she believes the simple joy of riding and a love for horses attracts people to the ride each year. “This year there were lots of people who have never done the ride before, so that was great to see,” she said. “I always make new friends when I take part in the ride. I may only see them once a year, but it’s a real sense
of community and friendship.” The event started 13 years ago when organisers were forced to stop the Great Horse Race for insurance reasons, but that hasn’t stopped hundreds of horse riding enthusiasts from getting behind this great local event. All funds raised from the Kin Kin Horse Ride will go back into the community.
THE Noosa Country Show is celebrating 107 years of family fun this year with a show that is set to be bigger and better than ever. The traditional-style country show will feature a variety of competition sections that aim to celebrate the diversity of people and their talents. The main animal sections on show for spectators include the equestrian, stud beef, dairy cattle and show dogs, which is always a popular event. Arts and craft, cookery horticulture and the region’s best fruit and vegetables are also back in the pavilion, and the show will also host the Showman’s Guild again, which supplies the rides and amusement arcade with fun for the whole family. The animal nursery is back and kids can catch an animal workshop at 11am and 2pm, enjoy an interactive farm feeding display with the baby animals at 9am and
6pm or grab a photo with a Minion and Dora the Explorer. The Noosa Country Show is hosted by the Noosa Show Society and is held at the Pomona Showgrounds on the corner of Exhibition Street and Pavilion Street, Pomona. There will also be live music throughout the show including performances by the local musician and former X Factor contestant Jimmy Davis and the Radiators. The show runs from Friday 9 September to Saturday 10 September. It will come down to last race of the year to decide the Australian Champions and it has been a close call so far in previous rounds so this should one exciting event. There were record breaking entries into the women’s divisions this year with 30 riders. The Coolum Pines MX track on Quanda Road will play host to the best of the best hammering it out for the win in a competition series which has been running since April. Three of the riders, Kirk Gibbs, Dean Ferris and Jed Beaton have been chosen to represent Australia at The Motorcross of Nations in September. Saturday will be the practice and qualifying events and Sunday will be the 450 Pro Championship, the 250 Pro Championship and the under-19’s Championship starting from 8.30am. The MX Nationals, Australian Motocross Championship, is the leading motocross series in Australia. The series is promoted and operated by Williams Event Management (WEM) which is a Victorian-based event management company whose goal is to raise awareness of the sport nationwide. The series is sanctioned by Motorcycling Australia (MA), the premier professional motorcycle racing organisation in Australia. Tickets are sold at the gate with gates open from 8am till 4pm. Kids under 15 are free with a paying adult and there are tickets starting from $20 so get online and check out the events you want to see.

It would have to be the famous graffiti artist/political activist and film director ‘Banksy’. His satirical street art and subversive epigrams combine dark humour with graffiti executed in a distinctive stenciling technique. His works of political and social commentary have been featured on streets, walls, and bridges of cities throughout the world. My favourite is his graffiti titled ‘There is Always Hope’ which is a girl painted in black grasping for a red heart balloon. It can symbolise your childhood, loss, giving up on dreams or any wish that seems far away from becoming a reality. Yet the writing makes it clear that there is hope.
9. You are hosting a dinner party and can invite six guests, dead or alive. Who would they be? Jackie Kennedy for her style and grace, Lorna Jane Clarkson who I think has changed the way Australian women look at fitness, Stephen King to delve into his unbelievable imagination, Pablo Picasso for his artwork, Vera Wang for her design tips, and my mother.
10. What has been your most embarrassing moment to date? While working as a new homes sales agent we had our Christmas party in a beautiful five-star hotel in Dublin. While making my great entrance I fell head first down a full flight of stairs on front of 30 work colleagues and of course the owner of the company! All I could do was stand up, smile and try to pretend it never happened.
8. If you could witness any event, past, present or future, what would it be? I would have loved to be present during the 1916 Easter Rising in Ireland when a group of Irish Republicans rose up to end British Rule and establish an independent Irish Republic.

IT’S hard to believe bacon could possibly taste any better, but one local producer has mastered the art of turning pork belly into quite possibly the most delicious bacon in the country. George Francisco from Voodoo Bacon has taken the humble, but much-loved, breakfast meat and turned it into an artisanal delight that will make mouths water. George hails from the home of “bacon love”, Mississippi, deep in the southern states of the US and at the tender age of 15 he started his chef apprenticeship. It was on an excursion to a bacon producer that kick started his love with Southern-style dry
cured, smoked bacon that he now offers to Noosa through Belmondos Organic Market. “I marvelled at how a simple combination of sugar, salt, spices and smoke could turn an ordinary pork belly into an extraordinary delicious slab of bacon,” he said. “The smell of all that bacon smoking still lingers as one of the best of my food memories. I made my own bacon from that day forward.” After moving to Australia in 2001 and working in some of the region’s best restaurants, George said he loved creating dishes with the new, exciting ingredients, but there was just one thing he missed.
“As I talked to Australians it seemed unanimous that the one thing North Americans had that Australians didn’t was this different and extremely different bacon,” George said. “That was how the concept of Voodoo Bacon was born; deep in the heart of a man from the deep south. “Some people say there must be some voodoo on this bacon. How can pork belly taste this good? It’s because Voodoo Bacon contains the magic of the South.” George and his range of Voodoo Bacon are the newest additions to the iconic Belmondos Organic Market in Noosaville where
locals can finally taste the magic that is Voodoo Bacon. Passers-by have seen the sign and the mystery has been growing surrounding the arrival of MOTO in Noosa Junction and owners Kristy Weller and Dave Cruces can’t wait to show you what they have in store. They have been working long days and nights to finish getting MOTO ready and Kristy said she hopes everyone is enjoying being a part of the ride and watching the progress. “We are so excited to open in Noosa Junction and create an epic place to hang out, whether you’re into motorbikes, great coffee, craft beer, tasty food or all of the above, “We want to support local businesses and will be producing food made from local produce and will have local beer on tap,” Kristy said. The cafe and bar has a very unique twist which you will have go in and see it to believe it. A showcase of vintage and new motorbikes will be on display and will blur the lines between art, industry and dining. “Dave is all about the motorbikes - it’s his passion. “We really wanted to bring something different to the Junction and we think we’ve done it,” Kristy said. MOTO will be serving food and coffee for now with a unique bar opening very soon. “I think we could possibly be the first place on the Sunshine Coast to have a shipping container as a bar,” she said. Kristy is hoping to secure local artists to work on the bikes to create some truly unique bikes to go on show at MOTO. All the bikes will be for sale and will promise to give customers a whole new appreciation for motorbikes.

MY Facebook page keeps reminding me that exactly four years ago I was deeply involved in the London Olympics, working ridiculous hours at the broadcast centre for Foxtel, grabbing a stadium ticket whenever it was offered and whenever I could fit it in between shifts. It was in this capacity that I was only a few rows back, watching Oscar Pistorius’s heroic relay leg, tears streaming down my face as the crowd erupted at the power of human will as those blades took him down the straight at full speed. Well, we all saw how that worked out. Hero to zero inside 12 months. It’s not often that an Olympic hero turns into a cold-blooded murderer, but it is quite normal for them to chalk up a few blemishes before they go, whether it’s stealing a flag (naughty Dawnie), doctoring passes to get into events or getting plastered and staying up all night. We tend to forgive them their trespasses pretty quickly, particularly when there’s a swag of gold involved, but I’m not so sure the Rio mob earned the right to behave like idiots. However, let he who has never been a drunken fool cast the first stone. I managed to miss most of these Games, having slipped into a won-
Jeff Hakman and the author, Cornwall, UK, 1997. derfully primitive zone of virtually no communications, but arrived home in time for the usual end of Games gnashing of teeth and calls for royal commissions into the uselessness and bad attitude of our athletes, etc etc. But it’s all a furphy. With the exception of Beijing, where we had a medal feast, our tally in Rio is pretty much where it always is, and as far as the attitude and behavioural issues are concerned, the swim team was under the gun in London just as much, and the critics and commentators have been going off half-cocked about this stuff ever since Our Dawnie nicked the flag in Tokyo more than half a century ago. And speaking of Tokyo, only 1460 days to go before surfing becomes an Olympic sport and John

ing well at attracting a nice school jew. With the onset of spring we will start to get those spring storms, this is a great time to start targeting mangrove jacks. Jacks seem to get fired up went the weather get a bit ugly, look for that rough ground, structure or snaggy areas to tangle with a red devil. Offshore it is still about the outer reefs with places like The Hards and The Barwon Banks fishing well at the moment, snapper, pearlies, tuskies and cobia are all on the menu. There are a few tuna in the bay feeding on frog-mouthed pilchards, small pilchard baits and fast moving
slugs have had some good results. Jew Shoal and Little Halls have been fishing well for quality squire, sweetlip and maori cod. Burley is the key at the moment so if you can get a burly pot to the bottom this will put the burley right where you are fishing. Noosa Northshore has been a hive of activity lately with reports of good size tailor being caught up the top end of double island point. Jewfish are still around with reports of a few being caught in the deeper gutters and around the headland. Whiting are also coming on

THE Noosa River has been going off with a great range of fish to be caught right throughout the system, there have been some great report of trevally with cale cale, diamond, big eye, golden and giant trevally all falling victim to anglers. Some of the prime spots have been Woods Bays Munna Point and the back of the Noosa Sound, the area out the front of the Tewantin boat harbour is another favourite with anglers. Soft plastic in prawn profile has
to be the most popular with anglers when chasing trevally in the river, with the Zerek prawns a particular favourite. There are still heaps of great sized bream throughout the system with fish over the 30cm mark not uncommon. The Frying Pan is again the place to be to catch a feed of whiting with the windy weather there is a lot more activity. The fish feel safer feeding on the flats when there is more surface ripple from the wind. Up-river the jew are still plentiful with nice sized fish holding in the deeper holes, plastic vibes like the Samaki Vibelicious have been work-

The Rococos bistro and bar Noosa Tigers are out of the Aflq north premiership race after losing a tight first semifinal to Caloundra in slippery conditions last Saturday. Again it was the much improved panthers who started the better and certainly were handling the rain affected conditions better. Infact there skill level and discipline structure with ball in hand has been a highlight in 2016 and a constant headache especially for the Noosa boys over the past month. In saying that however the game was forever in the balance and as usual the tigers didn’t leave anything out there as they continually applied finals like pressure trying to answer anything the opposition threw at them. Even to the point whereby at three quarter time Noosa held an eight point advantage and looked set to move deeper into the 2016 finals series. However with the aid of a two or three goal breeze and kicking with what seemed to be the scoring end the entire day the home team ran out the game supremely to record a stirring three goal win and eliminating a gallant and depleted Noosa outfit who have clearly been effected by top tier injuries and retirements in very recent times. Whilst a drizzling rain was a constant early this particular writer could still see that Caloundra’s height and overall size across the ground was going to be evident. They hurt the tigers out wide
on their spacious home turf and thoroughly deserve their spot in the Aflq north preliminary against arch rivals Maroochydore this Saturday at Fishermans Road. As mentioned earlier the Noosa boys were more than gallant with co-captain and two time premiership player Tommy McKittrick outstanding in defence the entire game. In a year, not unlike last, where Tommy’s injuries have plagued him, he still endeavoured to get his tiger troops over the line with skill and poise. He was aided by the efforts of fellow defenders Jack Tickner (who has had a terrific year in the seniors) and champion journeyman Bushy Copeland whose effort and attack on the contest is second to none. Nick Hill, co-skipper and now
favourite to go back to back in Noosa’s best and fairest was again prevalent with Nick Sutton and coach Sammy Faure among the tigers best also. Certainly not what the tiger faithful were hoping for but Noosa’s consistency throughout 2016, in particular coming into the final six weeks sees the side end up in their deserved predicament. In a year where the top four are so even we just found ourselves particularly late in the season not able to get across the line in winnable games just like the final played before us last Saturday. Bad luck boys and hold your heads high as your efforts and courage week in and week out have not gone un-noticed. Really important now to stick tight and cheer on
Danny O’Brien’s ressies who sensationally defeated the previously unbeaten Maroochydore in the second semi-final to advance to a second grand final in as many years. Also a massive congrats to our under 19 colts who under tinman Carroll won their second elimination final in as many weeks to advance to a preliminary final this Saturday at Mount Gravatt. Still heaps of footy left at Weyba Road in a year that hasn’t delivered what we wanted but still some serious trophies up for grabs. was great but the five points were opportunities quite easily missed. The score line should have reflected a much larger lead. The game had many stand out contributors and it’s very hard to pick our best players. The aim was to have fun fun and fix our mistakes and my guys delivered and delivered
in a big way. In the second half we made bad decisions going forward which almost cost us the win but we just hung on in the end to come out victorious. Our journey so far this season has been one of fun, mateship and plenty of laughter and most
importantly honesty. We can’t wait for our next match. A review of our game tape will take place Tuesday with pizza, plenty of laughs and a huge amount of belief. If we improve on a few things in the next two weeks we just might get the win. Danny

Amateur boxing fights underway By Ron Lane THE National Golden Gloves, Australia’s biggest amateur boxing championships will get underway this weekend at the Acacia Ridge Tavern Brisbane. This year's tournament looks like being the biggest ever and Noosa Shire will be well represented by both fighters and their support groups. President of Queensland Amateur Boxing Mark Evans of Cooroy said, "With nominations totalling 420, and fighters coming from New Zealand and New Caledonia, this year's Golden Gloves looks the biggest ever. Another pleasing aspect is the number of Sunshine Coast boxers who have nominated for the tournament. I wish each and every one of them good luck.’’ In preparation for the Golden Gloves, last Saturday morning six amateur boxing clubs from neighboring districts had fighters assemble for sparring sessions at Israel Kani Noosa Box Office Gymnasium. These sparring sessions were their last big hit outs before the championships. With two rings available, all fighters were able to make the best of the

As two fighters sparred, four others were geared up waiting in the corners of the ring for the coaches to call on them to spar. Among the many coaches and fighters in attendance were two in particular, who, were worthy of attention. One was a coach, the other was a 16-year-old fighter and apart
from having the common denominator of being in the fighting game, both were, believe it or not, female. First there was Natalie Jenkinson a coach at the Hit House Boxing Club at Bli Bli. Just turning 40, this lady has a very interesting sporting background. "I come from a family of boxers, grandfather, father and brothers all boxed. However, to start, I broke the mold. At 11 years of age, I started in
the sport of judo.’’ After many years of training, which saw her working out under some of the best coaches in the home of judo, Japan, Natalie made the Australian Judo team for the 2000 Olympics. "Following this I retired and then went onto amateur boxing, having about 15 fights, and in the process winning four Australian Titles. Now,
I am coaching and love every minute of it.” With some of her team contesting the Golden Gloves we wish her well. The other young lady of note was 16-year-old Michelle Booth, a student at the Sunshine Beach State High School. Like Natalie, Michelle’s back ground is martial arts, having spent some eight years in karate training at the Budokan club in Noosaville. While there, she qualified for the coveted black belt and in the competitive side she won a national title. When asked why she shifted to amateur boxing she said, “I just needed a change, I just got tired of the karate training.” After only five fights having won all, she is starting to make critics sit up and take note. Her style and her movements are well beyond what is to be expected from someone with such limited experience; but the way in which she puts her combinations together has to be seen to be believed. With both her mum and dad giving total support, and under the very careful and watchful eye of coach Mark Evans, this pretty young lady is definitely someone to watch. Fins ‘mongrel’ blitz on Caloundra Jeanette and Debbie By Lucy Whitehall NOOSA DOLPHINS UNDER 8 NOOSA Fins defeated Caloundra Gold 65-10 Rugby Union Football is often described as a yobbo’s game played by gentlemen and this week our merry band met with a true example of gentlemanly sportsmanship in the wasp-like guise of the Caloundra side. What a great bunch of lads, exceptionally schooled by the gentle giant Bruce. Unfortunately for Caloundra, Noosa Fins' Friday night training session was all about ‘bringing out the mongrel’ led by the well-known mongrel coach Sam ‘the Mongo’ Anderson - and bring it out he did with the lads producing a 65 to 10 win. Harry Marlow made what had to be the tackle of the season with a full headon cruncher which sent the ball runner five paces backwards and gave the crowd an excuse to let rip a chorus of primeval roars in complete admiration. Phoenix Erickson also lit the fires this week with some strong drives in the loose also enthusing the crowd with a huge bullocking run, ripping a hole in the Caloundra defences to set Rory McIntyre off for his fifth spectacular try. It was a mixed bag of results for the Dolphins this week, but all players gave their top effort. with some gnashing of teeth and cold stares. George White had yet another great game with an excellent work rate and five tries to match his mucker Rory’s tally, while Gus Anderson continued his late-season ascension to major player, with some huge clean outs and some lovely running. Mr Crow played in his normal courageous fearless manner tackling like a demon and scoring a pearler in the first half. Player of the match was Harry Marlow. UNDER 10 Noosa Fins defeated by Flinders Rugby 40-7 The Fins played hard all game and stopped the traditional first five-minute onslaught from Flinders. From there, although never giving up, the Fins lost
most battles to the breakdown allowing Flinders to get the ball to the backs who passed through the hands to score. This had us going to the half-time break 24 to nil. Well done Fins with only one try the difference in the second half, tough stuff with plenty of heart and courage. Reds defeated University 45-17 It what was a slick display from the Reds, who ran in 7 tries to 3. Scorers were Jack and Tom with doubles and one each to Smith, Josh and Flynn. Solid displays from Daniel, Toby, Pearl, Hunter, Oskar, Tex and Dylan laid the platform for the backs to run riot. Player of the Match was Dylan Wilson. UNDER 11 Caloundra d Under 11 Reds 19-15 The boys should feel really proud of their efforts this week. Caloundra games are always a rough and tumble affair and this match was no different. From the first breakdown our boys showed consistency and courage, refusing to give up. Our boys fought to the end of the match, desperately trying to level the score, but unfortunately, it was not to be. Under 11 Fins d Grammar 42-0 This undefeated team is just going from strength to strength! Each week they show determination and diligence. This week the match against Grammar was one the boys had been looking forward to, and they certainly showed up for a big win.
Track and field stars of the future NOOSA’S athletes are set to return to the track for the start of the new season of Little Athletics Noosa at the Girraween Sports Complex. All young and aspiring athletes aged between 5 and 16 are invited to register at one of two sign-on days for Little Athletics Noosa. Newly-elected centre manager Kirin Hagicostas said the success of Australia’s track and field athletes at the Olympic Games in Rio is likely to encourage young ones to sign-up to Little Athletics. “Adding to this, three of our own athletes, Nick Hooper, Ben Mander noosatoday.com.au

Nail-biting game for Eagles By Jules Rosenkranz NOOSA JUNIOR SOCCER IT'S now close to the end of the season and many of the younger Noosa Eagles Soccer teams participated in their respective Roo Ball Carnivals to finish up the year. There were wins, losses and draws, but most important of all, the kids all had a great day. The Under 11 Noosa Gold played their semi-final against Caloundra Green at Pacific Lutheran College at Birtanya. There were so many supporters, which made the atmosphere fantastic and the game was phenomenal. It was neck to neck all the way and at full time the score was 3-3.
So extra time was played and after a nail-biting extra time the end result was still 3-3. Something new for our Under 11s, next there was a penalty shoot-out that unfortunately resulted in Noosa going down 3-4. Both teams were pushed to their limits but this was one of Noosa’s best games that they have ever played. No matter what the result, the effort by each player was something that they should all be very proud of. The great news for Noosa is they still have another chance against Currimundi next Saturday. Good luck to the team and to their parents on the sidelines who have supported the kids all season.
