Burger masters are the boss THE waiting lines continue to stretch all the way to Nando’s and The Red Poppy florist. But it comes as no surprise to the boys behind the burgers at Boss Burger Co. Business owner Tim Harrison, along with his three mates, brothers Jamie and Jerry Kolovos and John Katos from Launch Espresso and Kitchen launched Boss Burger six months ago. After spending months sampling the perfect meat pattie, the boys knew they had created the “ideal burger” - a burger Geelong had never seen before. Tim, who also owns Breakwater Panels, discovered his passion for burgers when “burgers were going crazy a couple of years ago”. “I was flat out always eating burgers,” the panel beater laughs. “I was always travelling to Melbourne and following food bloggers on Instagram.” Not long after, Tim created the @ burgers_of_geelong Instagram page which gave him a platform to review and critique burger joints around Melbourne and Geelong. “I decided to create a burger and put it on the menu at Launch. “It had everything in it; pulled pork, beef, onion rings, cheese - heaps of stuff,” Tim says. And the result? “People kept coming in saying they wanted it - so we decided we would hold a burger night in Geelong,” Tim says. After completely selling out of burgers, Tim suggested to Jamie they do it as a “permanent thing”. “And that’s where Boss Burger came from,” Tim beams. “People wait in the line longer than what they wait for the food - we get it out really quick. “It’s a credit to our kitchen staff,” Tim says. But the business name didn’t come so easy. “We had so many names that didn’t make the cut. Right up to the last second we had different names. “But when we said Boss Burger Co., we just knew that was it,” Tim says. Asked if the majority of patrons are burger-loving boys, Tim laughs and reveals the girls are also ordering “big burgers”. “The girls are crazy; they’re almost outdoing the men. “You see the same people coming back,
but also new people who say they’ve heard good things and want to give it a try,” Tim says. The busy burger joint was formerly a noodle canteen which took three months to renovate. “We totally gutted it; we built it from the ground up.” Tim and Jamie worked with a designer to create the “street vibe” eatery. Neon lights, black and white checkered flooring and “bosses on the walls” all work to create a vibe new to Geelong. The space is just as inviting as the burgers are mouth-watering. “Tommy the Chook sells well,” Tim says, describing the southern fried chicken burger served with cheese, slaw and sriracha mayo. “It’s equally as good as our signature burger - The Boss. “We don’t have a huge range, we stick to the basics and do them really well. “Our burger is just far superior from the sauce, cheese, meat and the bun - it’s all custom made. “No-one else has this stuff. “We have a high turnover, the kitchen is very fast paced - the amount of stuff we go through is constant,” Tim says. But it’s all in a day’s work for Tim. “I work at Breakwater Panels and then go to Boss during my lunch breaks. Then I come back to Breakwater and head back to Boss for the evenings,” he says. Tim also runs the @bossburgerco, @ burgers_of_geelong and @breakwaterpanels Instagram pages. “Jamie and I both have very understanding wives - Elke and Angie both come down to Pako and have a burger. “It’s the best location in Geelong by far - there’s so much foot traffic,” Tim says. With monster waiting lines, it seems only fitting that Boss Burger opens a new store to service more people. And that’s exactly what the team are planning to do. “We can’t let too much out of the bag but we will be opening a new store soon,” Tim reveals. Asked if the new location will be in Geelong, Tim confirms it will be. “And everywhere else in the world we’re going global,” he laughs. Shop makes a house a home minimalistic - it has a bit more warmth and a rustic feel. “I really love natural fibres, timbre, leather, linen, cottons and pure wools. “I encourage people to buy quality - buy the things that last forever,” Rebecca says. Status Anxiety wallets, Maison Blanche candles, organic ceramics, tassel wall hangings, cheese boards, cushions and chunky knit throws are just a few of Frankie’s most popular products. “Large scale photographic prints are also very on trend,” Rebecca says. The store also offers a gift wrapping service and sells stunning watercolour Rachel Kennedy greeting cards. “They’re so popular - they just walk out the door,” Rebecca says. IT OPERATED from a shipping container off Pako for a year and a half. But now Frankie Say Relax has a beautiful heritage building on Shannon Avenue to call home. Business owner and Highton mum Rebecca Feldman always had a dream to have a shop of her own. “I have a love for homewares, furniture and styling - so having a shop brought it all together,” the interior designer says. “It’s lovely being in a heritage building with beautiful leadlight. “I love the purple tiles on the front of the store. I’ve always looked at this building and thought it was gorgeous and would make the perfect shop.” Rebecca personally chooses all of the items that come into store which creates an aesthetic “different to other homeware stores”. “People walk into this shop and say, ‘everything works’ - you can pick up any items in the store and they work together,” Rebecca says. “I have a love for Scandinavian design, but my style is not as

Still part of the chain gang BIKE man Greg Allerton has kept Geelong pedaling for 35 years. And although The Bicycle Factory owner has semi-retired, Greg doesn’t plan to stop. “I’m closing the shopfront, but will be doing repairs at home by appointment,� Greg says. The Bicycle Factory commenced business on Latrobe Terrace before moving to Shannon Avenue nine years ago. “I’ve been dealing with customers for over 35 years,� Greg says. “I want to thank all of my loyal customers over the years.� Greg’s love for bikes is so intense that he has never felt the need to buy a car. “I ride everywhere,� Greg says. “When you ride a bike and it’s your only form of transport, you have to learn how to keep it going.� Greg will be repairing bikes from home by appointment at 31 Loch Street, East Geelong, phone 5222 1363.

Belly of indulgence BY ALLIRA POTTER HELLO again fellow foodies, I hope we have all been keeping warm in this cold Victorian weather. I have been living off soups, curries and lots of warming foods. This month we indulged, like we really indulged - I am talking degustation indulged. My belly is still kinda maybe a little bit full thinking about all the food we ate. A few weeks ago we were invited to Tulip bar and restaurant - Tulip is situated down the west end of Pako. A hidden gem of Geelong serving locally produced food and wine. On this occasion we indulged in the four waves chef specials which to me felt like 12 waves. SO MUCH FOOD ... I had to ask the waitress to slow down with the food as our bellies were bursting, which I guess isn’t a bad thing. Tulip happily catered for me (pescetarian) and will cater
for your needs if you let them know your dietaries in advance. We got to indulge in oysters, sous vide salmon which is food poached in plastic at a low temp, foraged pine mushrooms - oh, my list goes on. The food came out in small waves, we truly never felt hungry. My favourite was the ending

- the decadent dessert which was like a chocolate parfait with chocolate upon chocolate. Tulip has an extensive list of locally produced wines/craft beers as well as a long list of cocktails and mocktails. Tulip is on my top list of BEST restaurants in Geelong, the front of house staff were
super attentive and were able to assist me with my annoying questions. A huge hats off to the chefs in the kitchen who are creating amazing and beautiful things. This restaurant is truly one of the best I have been to and I am sure it would be yours too.

“WHEN you are tired of London you are tired of living,” or so goes the famous Samuel Johnson quote, give or take a little poetic licence. However just an hour away from Britain’s capital is Oxford, afavourite place to visit that you will surely never tire of either. There are so many things to see and do while visiting the city of dreaming spires. Best of all it is so easy to access from greater London by train. The marvel of Oxford ais that so many attractions are within an easy stroll of the railway station. For Harry Potter fans a must-see is Christ Church College (the Great Hall is Hogwarts Hall). The Bodleian Library is another favourite for fans to visit (its Divinity School is the Hogwarts Library) as it was used throughout four of the films and also the Hogwarts Infirmary and where Professor McGonnagal teaches the students to dance. Walking down the halls of Hogwarts in the dark cloisters of one of Oxford’s oldest colleges will surely to make you want to channel your inner wizard. Never fear though, Muggles are welcome here too! If you want to get away from the hustle and bustle of the city centre, venture out to Port Meadow. The river runs through it and it’s a scenic walk along the riverbank, stopping off at the Perch pub for a cooling drink. It’s said that Lewis Carroll was rowing a boat through Port Meadow with three young girls in 1862 when they asked him to tell

DIABETES There are two main types of diabetes, type 1 which you are generally born with and type 2 which develops over a person’s lifetime. 1.7 million Australians have diabetes and 85-90% of that number have Type 2 diabetesi. To put diabetes very simply, insulin is a hormone in our body that takes sugar out of our blood, if the insulin is continually exposed to too much sugary blood it becomes less effective and over time the pancreas cells (that produce insulin) wear themselves out and die. There is a strong genetic link to diabetes, so if someone in your family has it you are more likely to get it. However there are things you can alter to help prevent the onset of diabetes such as the foods you eat and the physical activity you do. Stop smoking if you are a smoker. Smoking not only increases your chance of getting diabetes but also of having a heart attack, stroke or getting cancer or lung disease. Here are a few tips on how to prevent or treat diabetes. • Physical activity & maintaining a healthy weight - are key to keeping your blood sugars normal as exercise actually makes your insulin work better. It also helps decrease your chance of heart disease, lowers your blood pressure and reduces stress. A great product to help you maintain or lose weight is the Diabetic Isowhey protein formula. This contains higher levels of the nutrients that diabetics can generally be low in and can be used as a meal replacement or as a healthy snack. • Cinnamon- This works by increasing your body’s response to insulin. In clinical trials significantly reduced blood sugar levels appear after 2 weeks of treatment. iiThe dose required is 1-6g daily; and is available in tablet form as well. • Gymnema Sylvestre – called the “sugar destroyer”, this traditional medicine demonstrates the ability to suppress sweet taste recognitioniii, thus making that piece of cake or cookie look a lot less appealing. It is commonly used in combination with other supplements to help diabetics. Evidence also suggests that this herb reduces sugar absorption and transportation around the body and also stimulates glucose secretion. • Alpha Lipoic acid - this is made in our body cells and we can get it from food. It is currently used as a medicine in Europe to help treat Diabetic Neuropathies and lots of research has been completed looking at using it to treat diabetes. For diabetes 1200mg a day should be taken at least half an hour before food.iv Our North Geelong Community Care Chemist specialises in Diabetes. Although the aim of the fund-raiser was to raise funds for private one-on-one tutoring, Paola also wanted to “bring diversity on the catwalk”. “I wanted to make sure the refugee girls saw that Geelong caters for everyone. “Some 120 people attended the event and we raised $2,500,” Paola says. Asked if Paola will be the driving force against future fund-raisers, she says “never say never”. “I landed in Australia on my own without knowing anyone - this country has given me so many opportunities. “I’m so grateful to BWP Geelong and the President, Belinda Lyle for trusting me with this project.”

Carolyn attended the event to help dress the models and watched them strut down the catwalk to French music used on catwalks in Paris. “We did the dressy element which was suitable for special occasions,” Carolyn says. “We chose pieces by Mela Purdie - the label goes across different age brackets and is very suitable for travelling. “They’re great wardrobe building pieces and very trans-seasonal.” Carolyn says the models were “perfect” and “showed off the clothes well”. “It was a really polished night,” she adds. “Three of the refugee girls spoke - it was their first public speaking event.” “It was opportunity for them to stand up and tell

“So I suggested the fundraiser to the board to raise funds for private tutoring. “The board approved of the idea but needed someone to drive the organisation of the event, so I put my hands up and said ‘I’ll make it happen!’ ” Paola created an “Ageless Beauty and Make-up” theme to boost women’s confidence and chose Pakington Street boutiques to showcase the latest fashions on the catwalk. “I previously ran a business in Little Collins precinct in Melbourne where I was surrounded by fabulous fashion and shoe shops, so Pakington Street boutiques were a natural pick for me,” Paola says. Benning Boutique owner Carolyn Long gave Paola “carte blanche in choosing 12 outfits for the catwalk”. “I felt like a kid in a lolly

FASHION on Pako hit the catwalk last month to support a mentoring program for young refugee girls in Geelong. The Business and Professional Women (BPW) Geelong fund-raiser was organised by Flawless Beauty Concept business owner Paola De Grace-Begg. Asked what inspired her to create the event, the director of BPW Geelong Mentoring said it was her “mentees”. “The girls are refugees from Burma and attend North Geelong Secondary College,” Paola says. After attending monthly catch-ups with the young refugee women, Paola learned that “they were struggling in some key subjects at school”. “I believe that education is your passport to a better life,” Paola says.

The cafe that comes to you HOW many cafes on Pako are kind enough to embrace the winter weather and personally deliver local workers a hot cup of coffee? Tucked away in a lane opposite The Barking Dog is a cafe that does just that. Cozy Corner Cafe has become renowned for servicing those working on Pako street. Business owner Veronica Magennis, who took over the business four years ago, says local shop-keepers “appreciate the service Cozy Corner offers”. “A lot of shops around us are singlemanned, so they can’t leave the shop,” Veronica says. “So we run up their lunch and take them in a coffee - I’ve even run up a piece of vanilla slice.” Regular customers as far away as Bendigo visit Cozy Corner for fresh, house-made meals. “We make the lasagne, quiche, frittata, curry pie, soup and slices all ourselves,” Veronica says. “We also have vegan, vegetarian and gluten-free options available.” Veronica’s husband, Ashley, is “mad on making scones and makes them fresh every day”.
“Sometimes people are so disappointed that we’ve sold out of scones that Ash will whip up another batch and tell the customers to go shopping for 25 minutes,”Veronica laughs.
The cafe prides itself on its friendly atmosphere and good value. “People can come in and get lunch for just $6,”Veronica says. “We also make cheese and chive
damper fresh every day to go along with our house-made soup for $8.” With just Veronica, Ash and staff member Sarah working at the cafe, 80 per cent of Cozy’s customers are known by name. “I can just about tell you every person that will walk through that door on any given day,”Veronica says. “We know who is getting married, who is having surgery, who is pregnant - everyone has a story and we are happy to listen. “There’s no boof boof music in here - 80 per cent of my customers wouldn’t even know what Facebook is,”Veronica laughs. “We are wheelchair friendly and have a great kids’ corner. “We also make Ashby Primary School’s lunches twice a week.” The cafe showcases local photographic artwork by Tim Pescott, along with his book, which are available for purchase. Post-Party Detox BY DR CHRIS BEER PARTY season seems to last all year these days, with endless social functions and other commitments. There is a way to navigate these events so that your health doesn’t suffer as a result of the overindulgence in food and drink. The key is to effectively ‘detox’ your system following one of these occasions so that these outings do not start to affect your health and waistline! Follow these simple tips for at least 48 hours following a party to help your body and liver recover and get back on track. Step One - Reduce Toxic Fats
The trans fats found in processed and packaged foods, as well as an excessive intake of saturated fats found in animal products (such as fatty cuts of meat), can overwhelm the liver’s normal functioning. These can contribute to fatty liver disease as described previously.
If your liver is already overwhelmed by party food containing these fats, then for the next 48 hours avoid these processed and packaged foods (which is really a good habit for life anyway). Stick to good fats such as avocado, nuts and seeds, oily fish such as salmon and eggs. Avoid frying food in fats that can be converted to toxic fats as previously explained - choose instead macadamia oil, rice bran, grapeseed or a small amount of coconut oil. Step Two - Hydrate Well
Provide your liver with the fluid it needs to eliminate and detoxify. Avoid further dehydrating your body by reducing tea and coffee intake to no more than 2-3 cups per day. Aim for 2-3 litres of filtered water per day for the next two days. Step Three - Avoid Alcohol
Ideally we consume alcohol in moderation, even at parties.
In reality though, on occasion, alcohol consumption will be in excess. It is important to avoid all alcohol in the days following a big drinking session to give our liver a break from having to process this toxin. Step Four - Cut Back On Sugar Fructose, found in table sugar as well as fruit, can overwhelm the liver if eaten in excess. The result is fatty liver disease as well as insulin resistance. Since the body uses alcohol as a source of fuel in preference to other food sources while alcohol is still floating around in the system, it will store anything else you eat during this time as body fat. This effect can last for several days following a drinking session. So to reduce alcohol-related weight gain and the danger of contributing to fatty liver disease, keep your intake of sugar to a minimum following a drinking session. This means limiting
processed foods, desserts and treats, which often contain large amounts of hidden sugars. Step Five - Avoid Paracetamol
This medication is also processed by the liver. It is often taken for various conditions such as body aches and pains as well as headaches, including hangover headaches. If you have had a large drinking session and overindulged in party foods, my suggestion would be to avoid taking paracetamol for the next 48 hours following this as you may exacerbate liver overload. Step Six - Stay Regular
A healthy liver requires a healthy digestive system as the two are intrinsically linked. Staying regular helps to aid the liver in its detoxification process and to help the bowel expel this waste. Keep your fibre intake high in the days following a party by including plenty of fresh fruits

and vegetables, wholegrains, nuts and seeds. Adding psyllium husks to your breakfast may help to increase the fibre content of your meals without adding bulk. Following the above tips will help to offset some of the effects of party overindulgence. The key of course is not to overindulge too often! Still attend parties but keep in mind an important principle of good health, which is moderation.
