An inspired exchange By Emily Robinson Pako business kings Robbie Lecchino and Josiah Munday have shared their business tips to a mix of small business owners looking for inspiration. Robbie, the face behind King of the Castle Cafe, and Josiah, who owns The Resident Barber, operate at the same location and have become well-known in the community for their collaborative spirit. Presented by Geelong Women in Business and CANpr, A Great Geelong Story also showcased experiences from Bearded Bro’s Nik Pfarrer. Founder of Geelong Women in Business Samantha Krajina said the event aimed to get the community inspired. “Geelong Women in Business runs a monthly event and we always have a topic of interest to our members. “To close the year, we thought it would be great to do an inspiration style workshop. “Robbie and Josiah both see themselves as the underdogs – it was such an inspirational night. “The advice they all gave was to just keep chipping away – find something that you love and just don’t give up.” Asked why she thought Robbie and Josiah have been so successful, Samantha said the two business owners are “quite real”. “They also have a connection to each

other’s business – they collaborate and complement each other. “You could see their dynamic on stage, it’s very much a ‘bros dynamic’,” she laughed. But being located on Pakington Street also plays a helping hand. “Pakington Street is its own community in Geelong, you’ve got the culture, the people and the liveliness. “With the expansion of river end, it’s definitely thriving,” Samantha said. The free event also held a huge raffle of prizes donated from a wide range of local businesses, raising $600 which was donated directly to the Give Where You Live Foundation’s Feed Geelong Appeal. Grill’d business owner Stuart Menzies also got behind the event. “Everyone who signed up for a ticket was able to go into Grill’d and receive a free chips. “Shortlist Shop donated a $150 voucher and Move and Be Barre Studio donated a three-session class voucher,” Samantha said. “We’ve had some really positive feedback and it seemed like everyone was able to take something away from the event. “We wanted to encourage people to bring along their picnic rugs and some nibbles and just enjoy a relaxing, inspiring Friday night with their friends and family.”

A range of specials is available at the sushi bar along with a takeaway service – and all at very affordable prices. Not only are the various dishes freshly cooked, they’re served by friendly and knowledgeable staff. After four years in busy Shannon Ave, Sakuratei has developed a loyal band of regular customers, Flora says. Sakuratei also has a customer car park for eat-in patrons. The restaurant is open 10am to 10pm Monday to Saturday and 5pm to 10pm Sundays. Sakuratei is at 161 Shannon Ave, Manifold Heights, phone 5222 6668.

If the reviews on social media are anything to go by, Sakuratei Japanese Cuisine in Manifold Heights is a gem. The addition to Geelong West’s culinary culture has been reviewed as one of the best Japanese restaurants outside Japan. And that’s from well-travelled tourists as well as locals who have discovered the authentic delicacies served with a minimum of fuss. The real strength of Sakuratei is the extensive menu, with everything from soups and entrees, main courses of ramen, udon, bento boxes and curries to desserts. The fresh end of the street It’s taken decades but finally Pako’s river-end has its very own grocery store – Minerva Grocer. “We’ve met so many people down this way who are excited to have a grocer down this end of Pako,” store manager Morgan Hampstead said. “Some say they’ve been waiting 20 years for this to happen.” It’s been a big month for newlymarried Morgan, who’s thoroughly enjoyed putting the new store together. “It’s been a hectic but quick few weeks, that’s for sure,” she said during the store’s opening on 13 December. “But it’s been so much fun because we’re really passionate about the products we’re stocking here.” The Pako local was thrilled to work close to home. “We’re happy to be on this side of town again that’s for sure – so we can walk to work,” she said. “Everything is so accessible in Pako. I barely take my car anywhere because there’s just so much variety.” Morgan ran a pharmacy in Newcomb for Minvera Grocer’s owners, and has embraced her new learning curve. “It’s a totally different world,” she said. “Everyone is just so passionate about their produce.” Even before the store opened, curious Pako residents – young and old – were poking their head in for a look. “It’s the early morning walkers,” Morgan said. The best part about working at the boutique grocer, Morgan said, is trying the products. “I’m keen to road test some of the new stock,” she said. “That’s what we’re

excited about - everything starts to arrive this week.” “We’ve eaten a lot of the products before and that’s why we’re selling them.” The store sells local items from Wes Eggs and Otway Pasta, to the new juice in town made by Geelong Citrus packers, “Squished”. Other gourmet goods include Yarra Valley relishes and fresh bread daily from La Madre Bakery in Bell Post Hill. “When we were at the Fine Food Fair we were discussing the store with suppliers there and they all just jumped on board.”

“A lot of them are very exclusive and they’re excited to finally be in Geelong.” The store sells fresh fruit and veg from all over Victoria and has a range of cookbooks to help customers get the most out of it. “We’ve got products which we think Pakington Street will love,” she said. “And we’re happy to special order things for people where we can.” By co-incidence they’re also the local stockists of Melbourne’s “addictive” Brazen Brownies. “George from Brazen saw us as he as he was driving to Torquay,” Morgan said. “He just walked in the door and said

‘I sell Brazen Brownies, would you like to be stockist?’ and we said yes.” One of Pako’s newer newlywed couples Morgan and her husband met 10 years ago in Warrnambool. She moved with him to Geelong six years later. “I’ve been here for four and half years but I call Geelong home now,” Morgan said. While getting married they met Lyndal from The Flower Dispensary. “Lyndal has been kind enough to style our window for the store and has supplied us with some gorgeous flowers to sell in-store from The Flower Dispensary.”

“We have vegetarian, gluten free and vegan options too – we can also change and swap things, we’re really flexible. “We’re family and kids friendly too.” Those wanting dessert can chose from a wide range of cakes sourced from Carlton cafe Brunetti. 9 Grams will soon transform into a fully licensed tapas and wine bar three nights a week. “We will be open Friday, Saturday and Sunday evenings – the area needs something like this around here.” Ihab says although the business is new, 9 Grams has been “busier than expected”. “That’s what makes me think it’s time to expand.” Construction works are currently underway at Mt Duneed’s Villawood Estate, where Ihab will shortly open his new coffee shop at Club Armstrong. “I live in Mt Duneed and there’s not much there – if you want to get a coffee you have to drive all the way into Waurn Ponds.” Asked why he chose to expand after just four months of trading, Ihab’s logic is simple. “Do it while it’s good, you never know how long the honeymoon period will last,” he laughs. But that’s not the only expansion Ihab has in mind. “There’s also very exciting things coming in the Geelong CBD soon.” 9 Grams is open from 7am to 4pm seven days a week at 1/343 Pakington Street, Newtown, phone 5222 2716.

BY EMILY ROBINSON He’s been in the coffee industry for over 12 years. That’s why 9 Grams business owner Ihab Housaiki expects nothing less than “high quality coffee”. But it’s not just the Bella Veneziano blend on offer at 9 Grams, Ihab also offers his customers a full service gourmet breakfast and lunch. The industrial styled cafe features white-washed wood panelling, greenery hanging from the ceiling and native floral arrangements on the tables. Emblazoned with a rustic and trendy ambiance, Ihab has worked hard to make his vision become a reality. “I chose everything myself. But the J.B.S building team helped me create the atmosphere,” Ihab explains. “The name comes from a shot of coffee – each shot is 9 grams.” Ihab is no stranger to business, previously operating a Groove Train franchise in Geelong for four and a half years. But Ihab says he has “always loved Pako Street”. “I used to live just off Pako in Newtown. “I like the vibe on the Newtown side. I love the people and the atmosphere – in a few years’ time you can see the area is going to be bustling.” Asked what is popular for breakfast at 9 Grams, Ihab says the best sellers are “the protein omelette, French toast, corn fritters and pork benedict”. “For lunch people love the Mediterranean lamb wrap with couscous salad and the grilled salmon.”

CONTEMPORARY CHURCH on pako

There for the big questions Geelong Vineyard Church is challenging people’s preconceptions of church. With young families, coffee breaks and interactive discussion groups, pastor of Geelong Vineyard Dr Peter Downes describes the church as “contemporary and quite informal”. “There’s flexibility in how we do things and an accessibility in the way we do church,” he says. Formerly known as St Phillip’s Church, a name the Vineyard continues to use to refer to the building in order to honour its history, the bluestone building was restored to its past glory just last year. The congregation’s name, Geelong Vineyard Church, was inspired by the bible. “God’s people are often called his vineyard.” Peter has also incorporated programs for pre-school and primary school-aged children in its 10am Sunday service for all ages. But the Pastor did not have a religious upbringing himself. “I actually grew up in country pubs, no-nonsense beer drinking institutions, and am grateful for it. Despite studying for many years the best training I ever had was growing up in hotels. It’s amazing the similarity between pubs and churches

and the dynamics they operate in.” Although the church has welcomed many new members, Peter says it has “more of a reputation as a market rather than a church”. “The Pako Maker’s Markets have let people know we’re here

– we get a lot interest from the market. “We often hear people say things like ’I’ve walked past this place for 30 years and never been inside’. “Churches, especially old bluestone ones, often present as a bit of a closed shop in many respects – we are

keen to change that.” Renovations at the church included replacing traditional church pews with tables, chairs and couches. “There are even a few beanbags for people to sit on.” Peter says the 10am service begins with “three or four

songs” before moving into “family time” that includes some notices, dialogue and a coffee break. After family time, the service stops for a “coffee break”. During the service, the pastor encourages members to develop their own thinking. “I would never tell people what they have to believe and what they should do – I would tell them what I think, and then they can take responsibility for their own journey. We are here to help moving them along that path. “We’re a compassionate church; we have a heart for those in need and also for social justice. Although we are new to the community we have developed some relationships that enable us to help people in our local community and with some one or two refugee families.” Peter says “the whole God question is the most important question of all”. “We would like to bring a blend of both faith and experience to people’s understanding of God, in a way that is not weird, but to challenge and encourage people.” Geelong Vineyard Church is open for its Sunday service at 10am, at 178 Pakington Street.

The right time to get rolling Grub Guide’s Allira Potter shares one of her favourite summer recipes with Voice on Pako. Hello foodies, How was everyone’s Christmas break? I didn’t get much of a break but I’ve done lots of eating, cooking and photographing food of course. We have also been creating and making lots of fresh summer dishes. Lots of fresh salads, smoothies and other yummy things. The one thing we have been loving at the moment is rice paper rolls. The best thing about rice paper rolls is that you can put anything in them and they are a quick easy lunch or dinner. We fill ours with so many vegetables and we often put fresh prawns in ours, but you could put things like tofu, beef, pork or chicken in yours. I thought I would share my easy go to recipe for a summer’s night, you could even be a little naughty and fill them with banana and deep fry them ... YUM! Happy rolling!

Rice paper rolls What you will need:

·· 1 bowl of warm water ·· Clean bench top ·· Plate with a wet cloth (to place your rolled rice paper rolls on) ·· 1x packet of rice paper sheets (available from any supermarket within the Asian food section) ·· 1 packet of rice noodles

Rice paper rolls are a quick and healthy meal option for summer.

(soak these in boiling water prior until nice and soft) ·· 2 cups of sliced up vegetables of your choice, eg: half a red capsicum, grated carrot, sliced cucumber ·· 1 handful of chopped coriander ·· Protein of your choice if you wish Step one – grab your rice paper and carefully place it in your bowl of warm water to soak for a little bit, the trick with this is to not let it go completely see through. Step two – place your rice paper on your clean bench and grab a small amount of noodles and place them closest to you on your rice paper, allow a little bit of room so you can fold these, follow this by adding a small amount of vegetables, herbs, and your protein. Step three – once you have all the ingredients on your rice paper you can start rolling. Grab the end closest to you and fold away then grab the left side of the rice paper and fold it towards the middle and do the same for the right side. Then roll again, repeat this until your rice paper is tucked in and ready to be eaten. For sauces, we like to make a staple Asian sauce which is made up of a mixture of sweet soy sauce, chillies and lime juice, but you could have tamari if you can’t have gluten. 12333666-PB52-16

Diversitat’s year to cheer By Emily Robinson Diversitat’s 40th birthday celebrations lasted all 2016, according to CEO Michael Martinez. Geelong’s peak multicultural services provider had an official party on 10 December but also celebrated at 40 other events during the year, he said. “It’s been a big milestone for us.” Norlane’s Northern Community Hub hosted over 200 staff and Geelong Ethnic Community Council representatives and their families at last month’s party. Local Indonesian, Greek, Filipino and Maori communities provided guests with a “yummy lunch”, Mr Martinez said. Other highlights included games, jumping castles, henna painting and a birthday cake. “It was kind of like a mini festival,” Mr Martinez said. Diversitat had become “a big part of Geelong” over the 40 years, he said. “Although it appears to be Caucasian, Geelong is very European. “In the last 20 years it’s changed. There are more Indonesian, Indian, Chinese, Filipino and Thai people.

“I think this is reflected in the great community halls around Geelong but also in everybody’s communities.” Diversitat first operated under the name Geelong Migrant Planning Committee before rebranding as Geelong Migrant Resource Centre in 1996. The resource centre became Diversitat in 2005. “Branding is difficult when you have so many programs, so we brought it all

under the one name, Diversitat,” Mr Martinez explained. “It means diversity, so even back in 2005 we were ahead of the pack. The word wasn’t used then. “These days ‘diversity’ is often talking about the broad spectrum of our community.” Mr Martinez said he had worked at Diversitat for 22 years. “I started in ’94. One of our

employees, Grazia Shrimpton, has hit 30 years of employment here. “We have a lot of staff who’ve been here more than a decade.” The organisation has called Pakington Street home since day one. “Many of us can remember this street in the early ’80s - it’s the best strip in Geelong,” Mr Martinez said. “There’s a lot more cafes and styles, it’s a lot hipper,” he laughed. Martinez said the team would like to “see more development at the Norlane hub” over the next 10 years. “As our programs develop and expand we’ll also be growing more programs. “I don’t think we’ll be going backward, put it that way. “But it’s not just about growth, as an organisation we haven’t lost our soul. “We haven’t just become an instrument of government policy, our role is to challenge them and we’re still doing this.” Mr Martinez said he wanted to thank all the volunteers and community members who had supported Diversitat throughout the years.

old location, we have still managed to hang some amazing pieces of art that are also for sale.

Where did Quirk all begin? Back in 2012 we opened down the road, opposite the French Bakery – we really wanted to be able to showcase items that were hard to find, handmade, or independently designed. Our space also housed a photographic gallery space and my business partner back then ran photography classes and fine art printing - it was a great combo. Then earlier this year the space in Pakington Village popped up and I decided to move the retail section of the business down there. How would you describe Quirk? Everything in store has a story, we are really passionate about supporting little makers, but without being kitschy and overly ‘crafty’. There are so many talented makers out there and we love being able to be in a space with such beautiful things. We have something for everyone, from socks that donate part of their profit to helping to eradicate AIDS, to amazing sterling silver and solid gold handmade jewellery crafted here in Geelong. Although our space is a lot cosier than our

Do you sell products from local Geelong makers? A lot of our items are made here in Geelong – Ernest and Joe is a local jewellery brand that is super popular, Butcher and Baker candles, Lauren Barton resin art, Moppysgirl crocheted bunnies, Anak Anak kids harem pants, Frankie and Ray and Harp Handmade clothing – the list is endless. What are the most popular products? The pieces that are flying out the door at the moment are the one off, totally amazing Tiff Manuell handpainted clutches, Sydney designers The Horse watches and wallets, Oktoberdee’s new range of leather bags and of course, Melbourne designed Elk accessories and clothing. How about your ‘quirkiest’ product? Shuh Lee’s felt art is pretty special, or we also have these amazing Code Love bracelets that have morse code messages threaded into the beadwork. What do you love about being on Pako? Strip shopping is so much more enjoyable that being in a

mall like environment - there is so much going on on Pako, amazing coffee and I love our neighbours in Pakington Village, every day is fun. What do you love about art and design, and are you creative yourself? Art is such a special form of communication and is often really therapeutic for both maker and appreciator. I’m definitely more of an appreciator these days – I used to screenprint and make my own handbags, but I haven’t touched a sewing machine in way too long. If you’re not at the shop, what are you usually doing? We have a very active, cheeky little boy at home, so if I’m not here I’m trying to keep up with him. What is a great gift idea for January? You can’t go past one of the new D Series watches that The Horse have just released – a little bit luxe at $269, but totally worth it. Finally, what makes Quirk different to other shops on Pako? The nature of our space means that we work hard to ensure that our items and a bit special and you know that you’ll be supporting little makers when you shop.
