For Nathan there is a deep satisfaction in cooking “simple” delicious food. “We are cooking the food we love to cook,” he said. Sometimes, it seems like Melbourne’s culture takes a few years to drift down to Geelong. But these food trucks are like a bit inner-city culture tucked away on Pako. “We just thought there was a need for a location where people could come have a meal outside and not pay ridiculous prices,” Nathan said. The pair is on the road for up to 90 hours a week, hitting up as many music
festivals and events they can find. “We are heading to Falls this year,” Nathan said. For Nathan there’s a sense of camaraderie among the food truck owners and he’s happy to coach those newer to the game. “Technically we are all competing for the dollar, but there is still a real community vibe,” he said. Before I leave, Nathan hands me a burrito with a Korean twist. I get home and dig into my succulent street food. Suddenly, the hangover isn’t so bad.

As I nursed a particularly nasty hangover last Sunday, I drove to Pako in search of Geelong’s tastiest street-food. It’s fast becoming a weekly tradition for me. Each Sunday night colourful food trucks line the Barking Dog car park, selling everything from Cuban sandwiches to gelato and Dutch poffertjes. The trucks have been parking in Pako for a few months now and longtime Geelong chef Nathan Zammit has been there since the beginning. Each Sunday he creates a unique blend of LA street-food fused with Korean flavours. “We keep our main menu simple all the rest is just little specials we want to do on the night,” he told me Sunday. Nathan worked his way up to executive chef, doing stints on the Surf Coast and overseas - and even in the Swiss Alps. He and fellow chef Dillon Jones have worked together for 15 years. They began selling from their truck this year after starting a pop-up cafe in Little Malop Street in March. “We are just two really good mates and chefs, and this is what we want to do with our lives.”

Running free MORE than 11,500 runners, walkers and wheelers took on distances of between one and 12km for the Run Geelong. Their magnificent show of community support delivered a whopping $334,865 for Barwon Health and redevelopment of Geelong Hospital’s maternity day assessment unit. The cast list of famous participants included Cats legends Joel Selwood and Cameron Ling, Tour de France winner Cadel Evans, Paralympian Richard Colman and netballer Madi Robinson. But it was the kids, families, friends and running groups that made up the sea of red shirts that started and finished at an Eastern Gardens running village that caught the eye. Cats great Billy Brownless helped get everyone off at the start line while a huge crowd flocked to watch and literally sing and dance with Jessica Mauboy. All the entry funds raised by the Cotton On Run Geelong event went to the Geelong Hospital maternity day assessment campaign.

Duo after cake ‘domination’ Another issue flies by and I’m stumped on which cafe or restaurant to eat at. So this month I decided to sit down with the mother-daughter powerhouse team taking on Geelong’s cake scene. Zee and Elise are whipping up beautiful cakes - including handcrafted raw vegan cakes - that are hitting Geelong’s cafes in record numbers. Both have been in and around the hospitality industry for years, working in Sydney, and now they’re based in Geelong. Wedding cake maker Zee jumped in the deep end of baking, starting her business Zee Murray Cakes. It’s now called The Sweetest Thing in Geelong and Zee is making smaller cakes and catering her beauties to cafes. She hopes she can start doing wedding cakes again and is always up for the challenge of a custom-made cake. The cakes range from red velvet cupcakes and orange flourless cakes - which are gluten free - to snickers cupcakes and many other amazing cakes. She’s now joined by her daughter Elise, who, with a love of health and wellness, is the brains behind their raw

handmade vegan cakes. The raw cakes are nut based and contain ingredients like coconut oil, dates, cashews, raw maple and other non-processed whole foods. The cakes are set in a fridge, hence the word raw, and are gluten and dairy free. They are works of art and are rather time consuming.
The raw cakes range from blueberry raw cheesecakes to white chocolate and raspberry as well as a new addition of “Matcha” flavour. Zee and Elise seem to be the perfect team, bouncing ideas of each other and motivating each other when one is hesitant. They tell me their future is “cake

CHOLESTEROL OUR FRIEND? Saturated Fats, Unsaturated Fats, Monounsaturated Fats, Omega 3, 6, 9, LDL, HDL, VLDL & TC. I’m a pharmacist and thinking about this good fat/bad fat stuff is making my head spin. LDL, HDL and VLDL are all Lipoproteins (different types of cholesterol in our body), add them all together and you get your TC (total cholesterol). Historically, for patients with increased cardiovascular risk, we wanted to see the Total Cholesterol below 4mmol/L, LDL(Bad Cholesterol) below 2mmol/L and HDL(Good Cholesterol) above 1mmol/L. However new evidence is now emerging to suggest that ‘cholesterol particle number’ is a stronger predictor of heart disease risk than measuring LDL, HDL or TC. So what can you do to help yourself? 1. A Mediterranean diet - this includes high levels of olive oil, legumes, unrefined cereals, fruits, veg and fish and low consumption of meats. This diet is proven to decrease mortality associated with cardiovascular disease 2. Omega 3 Fatty Acids - best sourced from fish oil. You need to take 4g a day in a combination of the two main active parts EPA & DHA. This helps decrease fatty plaques in the arteries and can decrease triglyceride levels by 50%. Make sure you use sustainably sourced, low toxin and high strength fish oil. If you are a vegetarian, Algal omega 3 is a good source. 3. Fiber/betaglucan - adding this into your daily diet reduces TC, LDL and Triglycerides. Fiber can be in the form of psyllium, oat bran, pectin, rye, glucomannan or betaglucan. Betaglucan forms a gel that binds to the bile acid in your small intestine. By having porridge for breakfast you are ingesting small amounts of betaglucan, but it can be found in higher concentrations in cereals such as Betaglucare. 4. Garlic - A well founded study of aged garlic (KYOLIC) supplementation showed significant decrease in the levels of TC and LDL and an increase in HDL over a 2 month period. Kyolic garlic has also shown effectiveness is lowering blood pressure and stabilizing blood sugar levels. For love of the reno Pako Real Estate Agent Jodie Bliss says it was her love of renovations that got her into the property business. “I love the hard work involved in renovations and the reward is you get to see the finished product,” she said. THE City of Greater Geelong has opened the doors to one of the most significant buildings in Geelong’s history - the $45.5 million Geelong Library and Heritage Centre. This ambitious project was funded by the City of Greater Geelong ($20.5 million, including the collection and off-site car parking), the Victorian Government ($15 million) and the Federal Government ($10 million). Doors opened for the first time at the end of November, opening with children’s entertainment, guest speakers, guided tours, a diverse new collection, heritage treasures and cutting-edge technology. Inspired by the domed-shape reading rooms of libraries around the world, this magnificent fivestorey building was created for the whole community to enjoy and embrace.
City of Greater Geelong mayor Darryn Lyons said the Geelong Library and Heritage Centre was a smart 21st century building that had transformed Geelong’s cultural precinct and the CBD. “The Geelong Library and Heritage Centre is a phenomenal piece of modern architecture that stands proudly in Geelong’s CBD,” Cr Lyons said. “The Geelong Library and Heritage Centre is a world-class building, similar to structures found in the most beautiful cities all over Europe. “Not only does the library have thousands of limited edition collection items, there is high-end digital technology including a 3D printer, Oculus Rift virtual reality, digital way-finding kiosks, smart tables, gaming machines and a green screen. “This building is Geelong’s first
five-star-energy rated building, of which I am very proud. “The Geelong Library and Heritage Centre will ignite people’s passion for literature and learning. I’m confident it will become the city’s biggest community hub and attract national and international visitors. “Once you step foot inside this impressive building, you won’t want to leave,” Cr Lyons said. Geelong Regional Library Corporation chairman Andy Richards described the new centre as a triumph on many levels. “Inside, the digitally-advanced spaces provide the perfect platform for the delivery of world-leading library and information service and for the community to enjoy reading, meeting, learning, discovery and fun,” Cr Richards said.
The Geelong library and heritage centre features:

Big move goes by the book This month’s Voice on Pako takes a look at the life and business of Pakington Street bookseller Anna Tweed. I am a passionate Bookworm from New Zealand, new to the Surf Coast where I live with my partner in Anglesea. I kicked off my career as a bookseller back home before moving to Melbourne, where I continued to hone my skills for five years. I felt there was a real need for a book store with a twist in Geelong West and after a lot of planning and patience, The Book Bird has finally landed on Pakington Street. What is The Book Bird? The Book Bird specialises in handpicked remainders. We have an eclectic range of titles at great prices, with customer service being a top priority. I am always keen to have a chat, make personal recommendations and track down book requests.
Why did you open a bookstore? Browsing in a bookstore, reading a real book and engaging with people through books are my three passions. The Book Bird allows me to share these things and do my part to keep books and bookstores alive. Do you have kids books? Sure do! And I have a toy box to keep the wee ones amused. We also stock a great range of fiction, cookbooks, art and design, history, including military, and science. The list goes on. What else do you sell? Gift vouchers, cards and gorgeous wrapping paper that makes great posters. QandA: If you could choose three people, dead or alive to come to a dinner party, who would they be? Roald Dahl, Muddy Waters and Frida Kahlo.
What was your life changing moment? Opening my own bookstore. Would you ever consider politics? Absolutely not. If you could dress up as anyone for a fancy dress party, who would you choose? A 1950s domestic housewife. If you were on a desert island and could bring three things, what would you bring? My pocketknife, my partner and a book. If you were 80 years old, what would you tell your children? Always look up. If you could be a superhero, what would your super power be? The ability to read two books at once. One eye on one book and one eye on the other.

I employ one full-time and five part-time staff. What did you do before? Before we started the business I worked at Pilkington ACI in North Geelong. How long in Newtown/Geelong West? 40 years. Why a business in Newtown/ Geelong West? The opportunity arose and we lived nearby.
Do you do most of your business with Newtown/Geelong West people? A lot of our customers are from Geelong and surrounds but our Ugg boots and moccasins have gone to many countries. What other plans do you have? To expand our range of sheepskin products and souvenirs. Are you/would you like to be involved in helping/sponsoring the community? In what way? Sailing the Baltic Sea I’D always wanted to visit Scandinavia, and the opportunity to “tick off ” the magnificent cities of Oslo, Stockholm, Helsinki and Copenhagen in August was irresistible. But I knew little about the Baltic region and nothing prepared me for the beauty of timeless cities such as Riga, Tallinn and Klaipeda. The name “Baltic” was historically named for the earliest inhabitants of the area. It has carried flotillas of marauding seamen since the earliest Crusades, and witnessed the rise and fall of political regimes over hundreds of years. For decades Lithuania, Latvia and Estonia were hidden behind the veil of the USSR, and only achieved independence in 1988. Remnants of the Communist era still exist with square concrete apartment blocks. But these are overshadowed by vibrant and bustling lanes, beautifully restored mediaeval buildings and cobblestoned streets. There is a special pleasure eating sumptuous food and drinking lovely wine

while sailing the blue waters of the Baltic Sea. We were already in a euphoric state after spending two days in Oslo, Norway. The city was filled with music and drama festivals, and tourists flocking to
the maritime museums, particularly the Viking Ship and the Kon-Tiki Exhibition. Our itinerary took us to the worldfamous Kronborg Castle in Helsingborg, Sweden, and to Helsingor, Denmark,

whose castle is the setting for Shakespeare’s drama Hamlet. Another day, another port, this time Gdansk in Poland, most memorable for me was Solidarity Square.

we walked up to Dome Hill where we looked out over the beautiful city below. A trip to the Baltics would not be complete without a stopover in St Petersburg, home to the finest architectural opulence one could imagine. As a finale, we watched in rapt silence during a performance of “Swan Lake” by the Hermitage Ballet Company.
Our voyage took us to Helsinki, Finland, and Stockholm, Sweden, before sailing to the Island of Gotland with its rich Viking history. Our last night aboard our small ship took us into Copenhagen and we gained our land legs in this lively and cosmopolitan city.

Who of my generation could forget the shipbuilders’ strike of the Seventies led by the charismatic Lech Walesa? Onward to Klaipeda, Lithuania, and a visit to the Plokstine nuclear missile launch site and the Cold War Museum. Klaipeda is the centre for the production of Baltic Amber, the curious petrified timber that washes up on the local beaches after storms. The locals carve beautiful amber jewellery, some containing petrified insects and other plant debris, entombed for eternity in the resinous liquid. Latvia’s capital, Riga, is a delightful Hanseatic city dating from 1201 and is one of the best preserved in the Baltic region. Narrow cobbled streets line the historic centre and at every corner is an architectural gem. This city was definitely not made for motor vehicles, and I admired the residents’ graceful agility and polite acceptance of marauding tourists in little cars. Tallinn is the enchanting capital of Estonia, and its Old Town has World Heritage status. The market square and the narrow mediaeval streets thrummed with life as
