Grilled Red Potato Skewers

Recipe courtesy of the Wisconsin Potato & Vegetable Growers Association Prep time: 10 minutes Cook time: 20 minutes Servings: 4 2 medium russet or Yukon gold Wisconsin potatoes or 6 red Wisconsin potatoes 2 medium zucchini 1/2 smoked sausage rope 4 skewers (12 inches each) 1/2 cup Italian dressing Preheat grill to medium heat. Cut potatoes in half. Cut zucchini and sausage same width as

potatoes. Skewer potatoes, zucchini and sausage. Repeat for each skewer. Place skewers in dish and cover with Italian dressing. Marinate 5 minutes. Place skewers on grill and cook 5 minutes on each side, or until potatoes are done. Remove from grill and serve. BY DONNA ERICKSON This hearty egg-and-cheese casserole has all the goodness of fluffy omelets, and it’s easy to prep the night before and simply pop it in the oven in the morning. This tasty dish will fuel the family (you might invite and honor grandparents, uncles, and aunts, too, since it serves 12) for a day outdoors filled with biking, hiking, fishing, or playing a few innings of softball at a community park. Your kitchen will be awhirl when your schoolage kids prepare the casserole with your supervision and assistance. Read the recipe together, then divvy up responsibilities once ingredients are gathered. “Who wants to crack and whip up the eggs? Or grate cheese? There’s French bread to be sliced and lined up in even rows,” you might ask, to get them excited and on task. While supervising the sous chef team in their prep work, you can be completing the adult task of frying or baking the bacon. When assembled, cover and put in the refrigerator overnight, then bake just before serving it. HEARTY EGG-AND-CHEESE CASSEROLE Serves 12 1/2 loaf French bread, cut in 3/4-inch slices 8 eggs, beaten 1 1/2 cups milk 3/4 cup sour cream 1 teaspoon Dijon mustard 1/2 teaspoon salt 1/4 teaspoon white or black pepper Pinch of cayenne pepper (optional) 10 slices cooked bacon, crumbled 1 cup Swiss cheese, shredded 1 cup Monterey Jack cheese, shredded 2 medium scallions, thinly sliced 1/2 red bell pepper, cored and chopped 1/2 cup Parmesan cheese, grated

Brown Sugar Meringues Prep time: 20 minutes Cook time: 1 hour, plus 1 hour rest time Yield: 3 dozen meringues Water 6 large egg whites, at room temperature 1 cup Domino Light Brown Sugar 3/4 cup Domino Granulated Sugar Easy Baking Tub 1/8 teaspoon salt 2 tablespoons Domino Turbinado Sugar (optional) Preheat oven to 225 F. Line three baking sheets with parchment paper. Set aside. Pour 1 inch of water into medium saucepan and heat it until simmering. In heat-proof bowl, mix egg whites, brown sugar, granulated sugar and salt. Put bowl on top of saucepan and warm mixture until it reaches 125 F. Stir continuously and make sure mixture does not touch water. Carefully remove from heat. Using electric mixer, beat mixture at high speed 8-10 minutes. Transfer meringue into piping bag fitted with star tip. Pipe 12 meringues per baking sheet. Sprinkle turbinado sugar on top of meringues, if desired. Bake 1 hour. Turn off oven and allow meringues to rest inside oven 1 hour. Remove from oven and enjoy.

To put it together the night before, butter a 9-by-13-inch baking pan or spray with cooking spray. Cover the bottom with bread slices. Whisk together beaten eggs, milk, sour cream, mustard, salt and ground peppers. Set aside. Sprinkle bacon, shredded cheeses, scallions and red bell pepper over the bread, making sure that the ingredients are evenly distributed. Pour the egg mixture over it all. Cover tightly with foil and refrigerator overnight. In the morning, remove from the refrigerator and let stand for 30 minutes, covered. Preheat oven to 325 F and bake covered for 45 minutes, or until a knife inserted near the center comes out clean. Remove foil and sprinkle Parmesan evenly on top. Return to oven for 5-10 minutes.
