Agronomy
Hello SPCC Members,
April and May have been a bit challenging with our irrigation project continuing and little rain to help. The firm and fast conditions were fun for a while, but it’s great to finally have some rain and get the tees in the ground! Labar Irrigation finished the main install on May 16th and is just wrapping up some final details. We're now up and running and dialing in the sprinklers to maximize system efficiency. After running for a couple of weeks, the new system is already improving water distribution, helping save both electricity and water.
Looking ahead to June, the course is waking up! The patchiness in the fairways and tees is filling in as the bermudagrass loves the warmer weather. We’re also adding seed to some weaker spots, taking advantage of the consistent water from the new irrigation system Additionally, we’re addressing fairway holes to prevent water buildup after storms.
As you’re out on the course, you’ll notice the new “fescue/no mow” areas. These zones help support wildlife and save time and fuel by reducing mowing in out-of-play areas. While they may look a bit unkempt initially, they’ll mature into wispy, defined areas by summer.
Tater has been doing a great job chasing off the geese and has moved them to the pond by the entrance. Hopefully, once the goslings are big enough to fly, we won’t have to deal with any more goose messes!
Thanks for your support, and we’ll see you on the course!

Greetings SPCC Members,
The pool is Open, families are returning in full force, and the outdoor dining spaces are about to come alive with the sounds of laughter, clinking glasses, and the aroma of sizzling summer favorites.
From casual bites poolside to refined seasonal fare in the main dining room, the kitchen is firing on all cylinders to meet the moment
Hang Tight, one of these Wednesdays, Pizza Night will make an appearance. It’s unfortunate we have had to cancel multiple weeks due to the weather, but we have high hopes the sun and warm weather will return very soon, for wonderful outside dining and patio-side pizza.
Culinary Team
Recipe of the Month
Grilled 14 oz. Ribeye with Fresh Chimichurri Sauce
This recipe is all about showcasing the rich, marbled flavor of a 14 oz. ribeye steak, elevated with a punchy, herbaceous chimichurri sauce. Perfect for a summer grill night.
Ingredients for the Ribeye:
1 (14 oz.) bone-in or boneless ribeye steak, about 1.25–1.5 inches thick
Kosher salt, to taste
Freshly ground black pepper, to taste
1 tbsp olive oil (optional) Optional:
Garlic cloves and rosemary sprigs for basting
Ingredients for the Chimichurri Sauce:
1 cup fresh flat-leaf parsley (finely chopped)
¼ cup fresh cilantro (finely chopped) (optional, for a twist)
4 cloves garlic (minced)
2 tbsp fresh oregano leaves (or 2 tsp dried)
½ cup extra virgin olive oil
2 tbsp red wine vinegar
1 tbsp fresh lemon juice
½ tsp red pepper flakes (adjust to taste)
Salt and black pepper, to taste

Chimichurri Prep:
Mix parsley, cilantro (optional), oregano, garlic, red pep per flakes, olive oil, red wine vinegar, lemon juice, salt, and pepper. Let sit for 30 minutes or refrigerate for up to 24 hours. Bring to room temp before serving.
Ribeye Prep:
Let steak come to room temp for 30-45 minutes. Pat dry and season with salt, pepper, and olive oil if desired
Grill:
Preheat grill to 450-500°F. Sear steak 4-5 minutes per side for medium-rare (internal temp 130-135°F), adding garlic and rosemary for aroma. Check temps with a thermometer:
Rare: 120-125°F | Medium-rare: 130-135°F
Medium: 140-145°F
Rest & Serve:
Rest steak 5-10 minutes, then slice against the grain. Top with chimichurri and serve extra on the side.
