Running one fine restaurant is work in and of itself, but operating a historic eatery and a country club with a golf course, restaurant, major event venue and catering company would seem to be overwhelming. But it’s all in a day’s work for Chad Cantwell. In January 2018, Cantwell and his partner, Ali Marchel, purchased the Stage Stop restaurant in Wilmot, which they reopened about one month later. Meanwhile, Cantwell continues as general manager and golf pro at Twin Lakes Country Club.
The Cantwell family has owned the latter for 37 years. Currently, Cantwell and two of his brothers, Cian and Kyle, continue to provide a wonderful experience for golfers and diners while hosting weddings and other large gatherings.

Cantwell and Marchel are proud to continue the legacy that has been part of Wilmot since the same year that Wisconsin was granted statehood. “We are honored to be chosen by Nancy and Ron Hackett, the previous owners and last generation of the Hackett family to run the restaurant, to carry on the traditions of the Wilmot Stage Stop,” Cantwell said. “We plan to continue the menu enjoyed by generations of visitors to the Wilmot Stage Stop,” Marchel said. “High-quality steaks often paired with a lobster tail and, of course, a baked potato with that extra gigantic serving of butter.” Steaks are cooked on the dining room grill so everyone waiting for their dinner gets the aroma permeating the room. When the cream of lobster soup was introduced in 2006, no one knew how it would be accepted. Surprisingly, it became a menu favorite. Quality meats, perfectly charcoal-grilled and served with a house salad and the famous butter-dressed baked potato, lead the

The Stage Stop is a stately building constructed of white oak. It was built in 1848 as the Wilmot Hotel. It easily could have been mistaken for a Southern colonial mansion because it consisted of three floors, a large front porch and six white pillars, each of which stood 10 feet tall. Built by Ephraim Wilson, the first of five generations of the same family to own the business, it was a popular stop for travelers as they rode the stage line between Kenosha and Galena, Illinois. It also was a popular stop for farmers taking crops to Kenosha, where they then would be shipped to other markets. Kenosha, then known as Southport, was the largest port in the area. Imagine lodging on the third floor in one of the small sleeping rooms, three meals and stabling for your horse for $1.75. In hard times a room could be used for only 10 cents. The hotel remained in business until 1930 when Louis Hegeman closed the third floor sleeping rooms after his wife Beatrice’s death. Roland and Marian Winn are credited with
transforming the hotel into the Wilmot Stage Stop as it is today. They served a menu of nine steak choices, shrimp, lobster, lamb and pork. The large baked potato with a stick of butter overwhelms anyone who has ever eaten at the Stage Stop. The menu has not changed much over the years.

menu. For the non-steak lovers, there are also lamb chops, pork chops and chicken breast choices. Who doesn’t love lobster? Patrons can order two or three broiled lobster tails. Not sure which you prefer, steak or lobster? Add a lobster tail to your steak dinner for $10.95 and enjoy the best of both worlds.
A supper club
Wilmot Stage Stop is typical of the Wisconsin supper clubs that were popular in the mid-1900s, complete with its massive original bar. They serve a variety of cocktails and specialty drinks that reflect those special treats of yesteryear. Try a Hegman’s Cosmo, a Midnight Express or a Charley Tucker. Perhaps you aren’t even aware what is in these drinks. One way to find out is to try one. “We also serve the famous ice cream drinks that are enjoyed by many,” Cantwell said. “Try the minty grasshopper, the sweet and creamy brandy Alexander, the Green Frog or the Pink Squirrel.” It’s hard not to enjoy these rich, creamy selections — if one has room after a filling meal. Desserts also are available for those ready to take on some rich, tasty items that include homemade pineapple cheesecake or Grasshopper pie. The owners also mentioned that they offer a selection of children’s favorites. When visiting the Wilmot Stage Stop, take time to see the second floor where the many antiques collected by the Hackett family are displayed.

Cantwell enjoys the many changes that the family has made to the Twin Lakes Country Club. “While we have memberships, nonmembers also are welcome to enjoy a round of golf here,” he said. “We are a community organization and our goal is to exceed the expectations of every guest, whether they are here to golf, enjoy a meal in the Red Barn restaurant or hold a wedding or other catered gathering. “The golf course is one of the oldest in the area, having been located here since 1912,” Cantwell added. “As such, we feel we are truly part of the community and provide many events to welcome the community.” They provide a variety of golf activities

for men, women, couples and children. A favorite is the Junior Golf Academy, which provides a fun learning environment for young golfers. “Over the years, students have grown and become adult members of the Twin Lakes Country Club and continue their love of golf as adults,” said Cantwell, who along with Mike Jones will be the directors of this year’s academy. “Including youth in golf is a great way to encourage family activities.” The property’s Red Barn was converted to a clubhouse, restaurant and lounge and is a favorite place to gather before or after a round of golf. But it isn’t limited to only golfers. The restaurant, which seats up to 140 inside and 80-100 on the picturesque patio that overlooks the eighth green, brings in groups for showers, family reunions, fundraisers, company meetings and those simply stopping in for lunch or dinner.

The Red Barn’s menu is large and varied, so everyone is sure to find what his or her taste buds are looking for. There are several items on the menu that deserve special mention. The Friday fish fry is one such item. Chad’s father began the “Beat the Clock” fish fry as a change from the traditional offering found in most supper clubs and restaurants. It includes a choice of all-you-can-eat crispy, breaded fish or broiled cod and is accompanied by their special homemade

It also goes for $14.99 as a carryout dinner. Saturday is steak night, and choices feature 12-ounce prime rib or 8-ounce filet mignon dinners. The Fairway Pavilion
“In 2006, the beautiful outdoor Fairway Pavilion was opened,” Ali said. “This large open space overlooking the golf course is the perfect spot to hold your wedding. While the pavilion is open, allowing the fresh air in, there also are retractable walls that can be closed during inclement weather.” Nearby is the Fairway Pavilion Waterfall, a beautiful area filled with a variety of blooming flowers and featuring a clear pond. Exchanging wedding vows in this spot is the perfect beginning to the perfect wedding. “A wedding at the Fairway Pavilion will be perfect,” Chad said. “We offer a complete wedding package, including a wedding planner to guide you in your decisions.” The pavilion holds at least 280 guests. For smaller events, the Red Barn offers a variety of venue spaces, from the dining room and lounge that can hold up to 140 guests, or the outdoor Palmer Patio, which can accommodate up to 100 persons. Area water ski teams thrill local audiences NEW SKI SEASON BEGINS THIS MONTH
You don’t have to travel to the Wisconsin Dells to enjoy worldclass water skiing performances. The Geneva Lakes area is home to many nationally ranked teams: Browns Lake Aquaducks The Browns Lake Aquaducks perform in Fischer Park, located off of Durand Avenue in Browns Lake. The nationally ranked teams perform free every Thursday. The main show begins at 6:30 p.m. and Junior Show begins at 5 p.m. Saturday, July 6, is Venetian Night and the team will perform at 6 p.m. with the juniors performing at 4:30 p.m. Note the teams will not be performing locally as they will be at state competition on Thursday, July 18. The regular schedule resumes July 25. The Brown’s Lake Aquaducks will perform every Thursday through Labor Day weekend. Note: after Aug. 15 shows may begin a few minutes early so that performances can be completed before sundown. For more information log on to www.aquaducks.org. Southern Wakes United Water Ski Show Team Walworth County’s only ski show team, SWU was formed by the merger of the Lauderdale Aqua Skiers and the Minneiska Ski Show Team of the Whitewater Lake Sports Club. The team is slated to perform beginning May 25 with shows alternating between Scenic Ridge Campground on Whitewater Lake and Lauderdale Landing in Elkhorn. The first show is Saturday, May 25, at 7 p.m at Scenic Ridge Campground, W7991 R and W Townline Rd, Whitewater. Both the Lauderdale Aqua Skiers and Minneiska Team bring long histories and a track record of award-winning shows to the new venture. Twin Lakes Aquanuts This is the 41st year the award-winning Aquanuts have performed for local audiences. The nationally ranked Twin Lakes Aquanuts perform every Saturday and Wednesday night at 6 p.m. at Lance Park, 55 Lance Drive, Twin Lakes. There is no admission and there are concessions on sight. Shows last about an hour with a short intermission. Last year the Aquanuts raised the bar with a 30 girl ballet line that scored 481 points, the second highest scoring act ever in national competition. Also during the 2012 event Jarad Meyer was named the Wisconsin’s Best Trick Skier for the second time. Ariana Koehler was named the Jennifer Dibble/Michelle Cook Most Valuable Female Skier. Kendal Krieger (No. 2) Kaila Coffey (No. 4) and Olivia Shulda (No. 5) finished in the top five of Wisconsin Swivel Ladies. Aquanut fans can enjoy the ski shows from the newly constructed amphitheater and stage.
Muskego Waterbugs The Muskego Waterbugs perform free shows every Wednesday at 6:30 p.m. For more than 50 years the Water Bugs have performed for audiences all around the world. For the past 25 years we have had the pleasure of calling Little Muskego Lake home. Pack up the family and come to Idle Isle Park on Little Muskego Lake any Wednesday night at 6:30 p.m. between Memorial Day and Labor Day. The show is free. If you like popcorn or other snacks while you watch the show, there’s no need to worry, the concession stand will be open. Tournament dates are June 22-23; July 18-21 and Aug. 9-11. There will be no shows on those days. Fourth of July show: Muskego’s Fourth of July will be held on July 3. The annual lakefront celebration at Idle Isle Park goes on July 3 even with the holiday falling in the middle of a work week; dry conditions will not affect fireworks set off on the lake. Idle Isle parking will be available in the regular lot as well as on part of the lawn for this event. It will be supplemented by parking at Park Arthur, which is at the corner of Martin Drive and Hardtke Drive. Free shuttles return this year also to take people to and from the celebration from the parking area at Peace Lutheran Church at Small Road and College Avenue. The shuttles will run from about 5 to 10:30 p.m.

A cyclist’s paradise
From road to mountain biking, the Geneva Lakes Area has it all Perhaps the best way to leave our long brutal winter in the rearview mirror is to hop upon a bike and pedal until those frigid days and stubborn piles of snow are a distant memory. With some of the best bike trails in the state and plenty of littletraveled rustic and rural roads dotting our countryside, the Southern Lakes area provides the perfect landscape for our pedaling pleasure. May is National Biking Month, and this year – more that ever – that’s cause to celebrate from the saddle of your favorite road, trail or hybrid bicycle. Cycling is not only healthy, it is liberating in every sense of the word. The open air, with the sights and sounds of nature combine to bring a relaxing, revujenating experience that is simply second-tonone! For today’s cyclists, the cycling industry has evolved to a point where there’s virtually a bike for everyone. We simply need to decide what style of biking best fits our desires and go from there. A word of caution though: A proper fit (bike size) is essential and you should rely on a professional to guide you in this basic decision.
Trails abound here
Wisconsin is likely one of the most rider-friendly states in the union. Recognized as the nation’s leader in “rails-to-trails” conversions, more miles of former railroad beds have been transformed for use by bicyclists in Wisconsin than any other state. Ask anyone whose ridden along these Wisconsin conversion trails and you’ll learn that they’re scenic, feature minimal grades with motorized traffic prohibited, provide a smooth ride and a safe, uncongested alternative for families, novices and experts looking to bike off the road. Locally, one the most well known trails is the White River State Trail. A 12-mile crushed limestone trail, it follows a former railroad bed and connects the City of Elkhorn to Burlington, also passing through the historic villages of Lyons and Springfield in the process. The trail requires an affordable daily or annual state trail pass, for those 16 and over, which can be purchased in any of several points along the path, including the communities it touches. Maps of the trail are also readily available at these points as well as online. Scenic views of farmland, wetlands, waterways and the natural countryside are part of it’s charm and it’s many access points give riders a wide choice of options in how far and where they want to ride along the trail. These access points also provide convenient places to park.

There is a great access point located just off Highway 120 in Springfield. The Pedal & Cup, a bike rental shop and cafe is in Springfield’s historic railroad depot, 1722 N. Seven Waters Trail
Another trail of this kind, the Seven Waters Trail, took several shorter trails and consolidated them under one name once they formed a continuous route. This trail runs from Riverside Park in Burlington up through Waterford, the Town of Norway, into Wind Lake and further on into Muskego. Heading east in our area, another section of trail runs between Burlington and Kansasville. That trail is best accessed from Bushnell Park on Highway 142 in Burlington or from the Burlington High School/Gateway campus. Just across the Wisconsin/Illinois border in Richmond, Ill, you will find the McHenry County Prairie Trail that stretches 26 miles from the Wisconsin State Line to Algonquin, Ill. The Prairie Trail follows the former Chicago and Northwestern rail line that ran from Kane County into Wisconsin. From this trail, users have access to over 100 miles of trail network including the Hebron Trail, the Fox River Trail, the Great Western Trail and the Illinois Prairie Path. There are several points of interest along the Prairie Trail including the crown jewel of the district, Glacial Park, a 3,200-acre site and home to the Lost Valley Visitor Center. The natural area contains prairie, savanna, marshes, a bog, Nippersink Creek and a variety of geologic wonders, including kames. There are also other parks and rest stops along the way.

Treat mom to brunch on her special day
It is a time to show our love and thankfulness to our Mothers for all they have done to make us who we are. On the second Sunday in May, this year May 12, the sounds of giggles and whispers can be heard in many households as the young members of the family scurry around preparing their Mother’s Day treats for their moms. With the help of dad or another responsible adult, gifts for mom appear from the homemade hand prints and hand drawn pictures carefully colored (although not always within the lines), to flowers or purchased gifts of candy, perfume, or jewelry. For many mothers, however, the best gifts are the ones that mean she won’t have spend her day engaged in her usual household chores. For many families that means taking mom out for a brunch. Many delicious options exist in the
Geneva Lakes area for a Mother’s Day brunch, but before we get to that, here’s a look back on the origins of the holiday. A bit of history Mother’s Day as we know it today has been celebrated in the United States since the early 1900s, but it may have had some roots even earlier. Contrary to what many think, that it is just a holiday created by the greeting card companies, it is actually a holiday that was founded by Anna Jarvis as a personal day for mothers and their families. The roots of Mother’s Day began in the pre-Civil War Days in the south when Anna Reeves Jarvis of West Virginia, mother of Anna Jarvis, started clubs which became known as Mother’s Day Work Clubs to teach women, especially those living in rural areas, how to properly care for their children. After the Civil War, the focus of Anna Reeves Jarvis’ work was to develop Mothers’ Friendship Days where mothers met with former Confederate and Union soldiers to try and encourage reconciliation between the North and the South. It was after the death of Anna Reeves Jarvis in 1905, that her daughter Anna Jarvis promoted the idea of Mother’s Day as a time of honoring the many sacrifices mothers make for their children. With financial backing from a Philadelphia SPIRIT of GENEVA LAKES
department store owner, John Wanamaker, Jarvis organized her first official Mother’s Day in 1908. She organized the celebration at a Methodist Church in Grafton, W. Va., while thousands of other people attended a Mother’s Day celebration at one of Wanamaker’s department stores. A national holiday Pleased with the success of this first Mother’s Day, Jarvis resolved to see this day added to the national calendar of holidays. She began a massive letter writing campaign to newspapers and politicians urging the recognition of a special day honoring mothers. She campaigned that most holidays honored male achievements and it was only fitting that women’s achievements especially this most important one, the raising of children, be honored. The movement grew and by 1912 many churches, states and towns had recognized a day of honor for mothers. With the formation of the Mother’s Day International Association, which Jarvis founded to promote the cause, the movement continued to grow. In 1914 President Woodrow Wilson signed the measure that officially established the second Sunday in May as Mother’s Day, a day that we continue to celebrate today. A tradition that has endured over the years is relieving mom of the daily chores

KILL WEEDS
One of the first steps is to apply a preemergent weed killer to get a head start knocking out weeds that can plague the lawn during the growing season. Killing weeds at the roots early on can mean far fewer hassles in spring and summer, and may prevent new generations of weeds from cropping up each year.

While it may be tempting to take a prematurely warm day as a sign that
spring is in full force and purchase a bunch of annuals, it’s better to know the last of the possible frost dates (check “The Farmer’s Almanac”); otherwise, you may waste time and money planting flowers or vegetables only to have them zapped by another frosty day.

Amend the soil so that it is the right consistency – just crumbling when lifting it. Soil that is too muddy after spring thaw can harden, making it difficult for plants to flourish later on. Applying herbicides when the ground temperature is below 60 F might render the products ineffective. Gauging soil temperature can be tricky, but Lowes advises monitoring shrubs and trees on the property. Once shrubs begin to bloom and trees bud, herbicide can be applied. • Do not thatch or aerate after applying a herbicide. The annual summer concert series on the campus in Williams Bay presents world-class entertainment for music lovers of all ages. Festival history According to the ChocolateFest website, the event began in 1985 when Bill Branen, Jack Berry and Dave Wright, of the Burlington Standard Press, along with Henry Spreaha and Henk Hasert of Nestle, Mayor Marty Itzin and the Burlington Area Chamber of Commerce, created the festival to draw tourists to Burlington and to celebrate Nestle’s 20th anniversary in the community. runs, featuring area artists creating masterpieces out of large blocks of chocolate. Other activities in the tent include the Chocolate River, Kids’ Sundae Challenge, Giant Cupcake Eating Contest, Giant Chocolate Jenga, kids cookie decorating and, of course, the chocolate-eating contests. “One of the new things is the Chocolate River Duck Game for kids to win prizes,” said Arlene Runkel, one of the Chocolate Tent organizers. The chef demonstrations have been a favorite of festivalgoers for years and will run all four days of the festival. Local chefs will demonstrate chocolate-themed appetizers, entrees and desserts and have samples available to the crowd. “We have an expanded list of chef demonstrations, which means a lot more samples,” Runkel said. The Chocolate Experience Taster tickets are $7 and entitle the visitor to 12 chocolate samples inside the tent.

Al’s Arboretum gears up for annual event

One never knows what unique place or business they will discover while riding through the countryside of Southern Wisconsin One such place is Al’s Auto Body and Arboretum at W6866 N. Walworth Road in Walworth. This surprising combination is the work of Al Ritchey, who has repaired automobiles at this location for 38 years and began developing the arboretum 28 years Hosta blossoms ago. People have visited on Memorial Day weekend and the first weekend in June for the past 18 years to view Ritchey’s beautiful hosta gardens at the 3-acre arboretum. Hosta Fest is, as the event is known, an exciting time for Ritchey. “Each year the arboretum grew and more and more visitors came to see the many varieties of hostas and were so impressed with the varieties available that they would purchase them to add new varieties and colors to their gardens,” Ritchey said.

But for Ritchey, the two work well together and complement each other. “Working in a body shop and indoors makes one want to go outdoors and take in the beauty of nature, and of course, contribute to that beauty,” he said. “I originally began working with the hostas to add some landscaping around the body shop. It just kept growing.” He began with a few beds of plants, and then added some pathways as his hostas expanded. “The topography of the area was perfect for the hostas to thrive,” he said. Being at the end of the Kettle Moraine, the land has softly rolling hills. And standing at the entry provides beautiful vistas. “I started with the topography and designed around it. Mother Nature dictated the way the arboretum would be laid out.” Hostas thrive in the Southern Lakes area. The perennials are hardy and grow well in partial shade. After going dormant in the winter, the leaves again pop up in spring. Hostas were originally found in Asia, especially China, Japan and Korea. “They made their way to the United States, it is believed, from Japan,” Ritchey said. “They are a plant that grows well in somewhat shaded areas, and they make a great focal point in the garden. They are often used as edging around gardens.” While the plants like a lot of water, they are durable.
“When there is dry weather, they slow their growth.” There are many species of Hostas, ranging from those with single-colored leaves to multicolored varieties. Some have small or slim leaves while others produce gigantic “elephant ears.”
450 VARIETIES OF HOSTAS
Ritchey has more than 450 varieties, and growers are developing new ones all of the time. Some varieties have interesting names. Several years ago a four-color plant called Strip Tease was named Hosta of the Year. Following in the same theme, its sister plant was named Hanky Panky while another was named Gypsy Rose. Another one will be called Burlesque. “It puts on a better show than the rest of the group. It is described as a plant with dark green outer leaves, white stripes with a chartreuse center. A blue green center stripe completes this impressive plant.” Depending on the types one chooses, they can give a colorful display to a decorative garden, or the plain green leaves produce a classic look for edgings. The plants last for the entire growing season and produce a flower in late summer. The flowers can be soft white on a tall stem or smaller colored flowers. Meanwhile, Ritchey is busy getting ready

for Hosta Fest. “I am always working to improve the soil. Drainage is important to keep the plants healthy.” Weeding also is important to prevent the plants from being choked out. One of the biggest problems is keeping garlic mustard out of the beds. “I would get the garlic mustard plants out, then two weeks later they would be back. I don’t want to use pesticides on the plants, so there is a lot of physical work removing the weeds.”

Ritchey has even more plans to make the arboretum better. While there is a soft path, he wants to put in a brick walkway through at least part of the garden, especially in the lower areas, to benefit walking tours. “Several years ago, Yerkes Observatory took down some smaller domes. The curved steel arches that made up the dome were being sent to the junkyard. I was able to obtain some of these pieces.” He plans to build a small dome in the arboretum to keep this memory of Yerkes alive. Taking on these massive projects requires a lot of time and physical work, which Ritchey somehow seems to fit into his busy days. His goal is to continue making this place a peaceful and relaxing place for all to enjoy.

“We are the only arboretum outside of a municipality in Walworth County. The area of our arboretum is equal to about 3 percent of the open park space in the entire county. We are proud to offer this space for the people of the area to enjoy.” Each year new species make their appearance. Some are created by culture cultivation in the greenhouses, with many of the new plants being developed by Dutch growers. Both Dutch and U.S. growers hybridize new species. Japan also produces a large number of new species. “Most of these are from natural mutation of the plants. This has occurred in Japan since the dropping of the bomb in World War II,” Ritchey said. The Compadre hosta is a plant that has mutated from the popular Emerald Tiara family. “It occurred over 20 years ago here at our arboretum, following an application of a herbicide. Sometimes these changes occur, but they don’t continue; they are only temporary. So we just watched it in our gardens for many years, and I can truly say it never failed. This beautiful plant with chartreuse leaves and a dark green edge continued to grow. We registered it under the name Compadre because the hosta is a friendship plant.” The plant grows to a height of 10 to 16 inches. At its maturity it will grow up to 20 inches wide. It has been a popular item with consumers at Hosta Fest, which is scheduled from 9 a.m. to 5 p.m. May 25-27 and June 1-2. It will include tours of the arboretum. Food is available on-site and raffles are planned. Admission is free. Throughout the summer visitors are welcome to visit the arboretum from dawn to dusk.
