How about a relaxing drive?
Area’s rustic roads showcase natural beauty As society cautiously emerges from restrictions due to the coronavirus pandemic, the list of acceptable activities is growing. Throughout the two-month Safer-at-Home shutdown people were encouraged to get outside, exercise and enjoy nature. While that’s great for many people, others continue to seek activities that are perhaps a little less taxing. Toward that end, may we suggest a relaxing drive on one of the many Rustic Roads in the Geneva Lakes Area? How many of us have traveled or even know where Snake Road, South Road, Cranberry Road or Back Road are located and where they lead? These lesser-known roads are a part of the Rustic Road System, which was created by the Wisconsin State Legislature in 1973 as a way to preserve some of the scenic, smaller, and less-traveled roads that represent the spirit of Wisconsin’s countryside. The first Rustic Road, designated in 1975, was appropriately called Rustic Road 1, and is just north of Medford in the northwest quadrant of the state. Rustic Road 1 crosses through hills and valleys that were created by the last Wisconsin glacier nearly 12,000 years ago. Since that first designation, the number of Rustic Roads has increased to more than 100. The roads cover a total of 720 miles and are found in 59 of the state’s 72 counties. They tend to be short from two miles to a maximum of 37 miles, but most in our area are approximately 6 to 10 miles in length. The roads are marked by brown and
yellow signs with an outline of the state and the words Rustic Road. The route itself is designated by a number with an R in front to prevent it being confused with regular state highways. The distance the route covers is also listed. In order to qualify as a Rustic Road, there are criteria that must be met. It must have outstanding natural features along its borders such as rugged terrain, native vegetation, or wildlife. It must be a lightly traveled local access road. It cannot be scheduled for any major improvements, which would change its character. Rustic Roads may be dirt, gravel, or paved and are open to automobiles, motorcycles, bicyclists, and hikers looking for a scenic country ride or walk. Maximum speed limits are 45 miles per hour but local jurisdictions may lower them. Many are posted at 30 mph. The Wisconsin Department of Transportation oversees the rustic roads program but the roads themselves remain under local jurisdiction. It is a partnership between the state and local authorities that focuses on preservation and promotion of these country roads. There are four Rustic Roads in the immediate Geneva Lake area and each is an interesting route, with a rural flavor even though they are just a few miles away from the businesses and busyness of Lake Geneva. At this time of year, we begin to see them, red luscious strawberries appearing at farm stands and grocery stores in the area. Growing in the fields, spots of red berries can be seen peeking out from the green foliage of strawberry plants...

Strawberries, so full of flavor, are only ripe for a few weeks in this area – usually beginning around the second week of June and continuing for approximately three weeks. While strawberries may be found in grocery stores yearround they are not the same as the sun-ripened berries grown in Wisconsin soil then picked fresh from the plant on its way to your table. Berries picked at the peak of ripeness have a very different taste from those picked green and stored in a warehouse or transported across the United States or imported from out of the country. While Steve and Judy Jacobson, owners of the Apple Barn near Elkhorn, have long been known for their many varieties of apples, the apples are not the only crop grown on the Jacobson farm. They are a full working farm and along with their apples, grow a large variety of crops including strawberries. “We began growing strawberries in the late ’80s or early ’90s,” Judy Jacobson said. “We took a little break from the strawberry fields when the kids were little, then began to grow the strawberries again. Today we have about six acres of strawberries.”
Seeing red
With plenty of strawberries for everyone, the Jacobson’s encourage visitors to come out to the Apple Barn and experience the strawberry season for themselves. Each weekend during the season, families may head to the fields to pick their own strawberries or purchase strawberries that have already been harvested. Harvesting strawberries teaches children more about the food source, the farm, and not the grocery store. They also experience both the hard work and joy that bringing food to table involves. “We offer customers a choice of picking their own or purchasing berries that have been picked by us. There is

From salads to dessert, it’s the versatile fruit If you are looking for some new ways to serve strawberries try one of these recipes from the Wisconsin Berry Growers Association. Start with a light and healthy salad that includes the taste of strawberries.
Strawberry Spring Salad - 1 (10 oz) bag of fresh spinach - 3 cups of fresh strawberries, washed and hulled - 1 (11 oz) can of mandarin oranges drained - 3/4 cup of walnut pieces - 1 head of Bibb lettuce or 1/2 head of Boston lettuce - 1 medium sweet onion sliced thin Wash spinach and lettuce, pat dry. Tear into bite sized pieces and place in salad bowl. Reserve 6-8 whole strawberries for garnish and cut remaining berries in half and add to bowl. Add drained oranges and sliced onion. Toss gently, cover with plastic wrap, and refrigerate until serving time. Add salad dressing of choice. Poppy seed dressing is recommended. Garnish with whole berries and walnuts. After this healthy and light lunch it is time for a decadent dessert. Here are two:
Chocolate-dipped Strawberries - 1 quart fresh strawberries - 4 oz semi-sweet chocolate Choose berries with fresh green stems. Rinse in cold water and pat dry with paper towel. Melt chocolate in double boiler over very hot water. Working quickly, pick up a berry by the stem and dip in chocolate covering it about 2/3 of the way. Remove excess chocolate. Place on wax paper and chill until chocolate is set. Serve at room temperature.

Picking strawberries is always a fun way to spend a weekend day with parents and children working together but it is hard work. Perhaps it is harder for the adults than for the children. The children, like the plants, are closer to the ground. After a day of stooping to pick the strawberries many adults feel the aches in their muscles from all that bending. Before heading out into the fields remember to apply sunscreen if it is a sunny day. Bug spray is also a good idea.
Some tips for picking
The Wisconsin Berry Growers Association offers some tips for picking your own strawberries. They suggest that the best time for picking is early in the morning when the berries are still cool, before the sun’s heat has softened them. - 1 pkg of devil’s food cake mix - 1 can (14 oz) sweetened condensed milk - 1 cup of cold water - 1 pkg (3.4 oz) instant vanilla pudding - 2 cups whipping cream, whipped - 2 Tbs orange juice - 4 cups fresh strawberries chopped Prepare cake mix according to package directions. Pour into greased 15x10x1” baking pan. Bake at 350 degrees for 20 minutes. Cool completely on wire rack. Crumble enough cake to make 8 cups. Set aside. In a mixing bowl combine milk and water until smooth. Add pudding mix and beat on low speed for 2 minutes until slightly thickened. Fold in whipped cream. To assemble spread 2-1/2 cups of pudding mix in a glass bowl. Top with 1/2 of crumbled cake and sprinkle with 1 Tbs of orange juice. Arrange half of berries over cake. Repeat pudding and cake layers and sprinkle with remaining orange juice. Top with remaining pudding and spoon rest of berries around edge of bowl. Cover and refrigerate until serving. Makes 12 to 16 servings.

Picking strawberries is easy but there is a technique that needs to be used to be certain that when the berry is picked the stem and the hull remain attached. Use two hands to pick; one hand needs to hold the branch, which supports several berries. Separate the strawberry that is going to be picked, and with your other hand, pinch the stem with the thumb and forefinger. This will allow the berry to be picked while keeping stem and hull attached. Make sure that the berry you are picking is fully ripe with no green or white tips. Keep the stems in place until ready to eat. Without the stem or hull in place the strawberries will start to lose their vitamin content, become waterlogged and may become vulnerable to mold-causing bacteria. Strawberries are very perishable so the Wisconsin Berry Growers Association recommends that you eat them or preserve them as soon as possible. Fresh strawberries should be refrigerated. Sort the berries, removing any that are overripe, then place them in a sealed plastic bag. They can be refrigerated for a few days. For a special treat add a liqueur to the berries and refrigerate. They do not recommend washing them until ready to eat. The washing process is simple. Rinse with cool, fresh water. Never soak them in water or they will become soggy. And

never, according to the Wisconsin Berry Growers Association, use a “produce wash” on them. Once washed, remove the stem and hull and they are ready to be served. If there are strawberries left, they can be preserved in the refrigerator by adding a little sugar or some orange or lemon juice to them. Or consider adding some liqueur to the berries such as Grand Marnier or Cointreau and a little whipped cream and you have a tasty dessert, for the adults. Strawberries may be frozen whole, halved, sliced, chopped or pureed. Freeze firm and well-shaped berries whole. Mash or puree the softer fruit and freeze for making jams or sauces. Sweetener can be added or lemon juice to preserve the appearance of the strawberries. Without sugar, frozen berries should be used within 3-6 months. With sugar added they can be safely frozen up to one year.
More than just berries
While some come to the Apple Barn to pick strawberries, others come to shop in their Country Store, Bakery and Winery. Here they can purchase the fresh strawberries that have been picked by the Jacobson family and their staff. They also can shop the store for interesting items made with the fresh strawberries. “Our strawberry donuts are a favorite and are made using fresh crushed strawberries giving them a true strawberry

flavor,” Jacobson said. “The freshly baked strawberry pies also are customer favorites and sell out quickly. If you have your heart set on one, it is a good idea to order it ahead of time. That way it will be waiting for you when you come in.” In addition to pies and donuts there are also a variety of other strawberry items, such as strawberry syrup, strawberry rhubarb jams and even strawberry wine. In 2004 the Jacobsons added wine to the products they produce. Wine making began as a hobby for Steve Jacobson in the 1990s when his mother gave him a home wine making kit as a gift. As he experimented with the wine making he began to use other fruits, many grown on the farm, instead of grapes. After receiving approval from the State of Wisconsin he, along with winemaker Jake Drefs began to produce various wines for sale at the Apple Barn. Wine making went from a hobby to an addition to the Apple Barn’s business and his wines began to win awards in competition. There are two different wines that use strawberries. The strawberry Jewel wine is a semi-sweet wine that was the winner of the best fruit wine in the 2014 Mid-American Wine Competition. A second wine that incorporates strawberries is The Blush, which is made from a combination of apples, pears and strawberries and has a unique flavor. It’s perfect for the strawberry lover.
Picking in the new normal
In past years, strawberry time was a happy time for families as they came out to the Apple Barn to spend time together picking strawberries. There would be different festivals and specials on weekends. Father’s Day was one of the occasions that would bring visitors out. This year the coronavirus pandemic has changed all that as everyone has spent time at home in an attempt to slow the spread of this virus. The Jacobsons were formalizing their procedures for picking as this story went to press. “At this time we aren’t sure how we are going to handle both the berry picking and even the sales of berries that have been picked,” Judy Jacobson said. “With social distancing required we will have to wait and see what instructions come from Gov. (Tony) Evers about how to enjoy our summer activities without endangering others.” They had not scheduled any activities for the strawberry picking season but will post them on the Apple Barn Facebook page and on their website when the information becomes available. Recommendations from the owner The Apple Barn’s Judy Jacobsen offers the following recipe for you to try at home with your freshly picked strawberries. This unique pie can be prepared quickly and does not require any baking. It is one that you will enjoy serving to guests and family.
MILLION DOLLAR STRAWBERRY PIE - 1 cup Eagle Brand Condensed Milk - 1/2 cup of lemon juice - 1 large tub of Cool Whip - 1/2 cup walnuts, chopped fine - 2 cups sliced fresh strawberries - 2 graham cracker crusts Mix milk and lemon juice with an electric mixer for 2 minutes. Fold in Cool Whip, then add walnuts and sliced strawberries. Divide the mixture evenly between the two pie crusts. Let set in refrigerator for one hour.
Picking strawberries often requires looking under the leaves to find the ripe berries. With so much foliage they can be difficult to spot.
Another Jacobson family favorite is strawberry salsa. Made with the fresh strawberries instead of the traditional tomatoes, this salsa will disappear quickly.
FRESH STRAWBERRY SALSA - 2-1/2 cups of finely chopped strawberries - 1 cup chopped green pepper - 2 tablespoons chopped green pepper - 2 tablespoons chopped green onions - 2 tablespoons minced fresh parsley - 1/3 cup of Catalina salad dressing - Dash hot pepper sauce - Pepper to taste - Tortilla chips In a bowl combine strawberries, green pepper, onions, and parsley. Stir in the salad dressing, hot pepper sauce, and pepper. Cover and refrigerate for two hours. Serve with the tortilla chips for a tasty appetizer.

Being on the water is just my favorite thing.” Veith has also ventured out on Eagle Lake in Racine County along with many lakes in Kenosha County, including Silver and Paddock lakes. Additionally, when visiting his in-laws in Illinois, he typically jumps aboard a boat on the Chain O’Lakes. “I don’t really discriminate, I will fish up in Eagle Lake in Racine County once in awhile, I will fish in Twin Lakes,” he said.

Veith encourages newcomers to ask for help because he and others are always willing to offer suggestions. “You just have to start asking people around what the basics are. Don’t be afraid to ask for a little help,” he said. “When somebody is just getting into the sport, it is a great thing for all us to try to help someone catch a fish and see them enjoy the excitement. A lot of times for me, it is better seeing other people catch a fish than me catching a fish myself.” Veith, 35, a commercial insurance broker, recently decided to share his passion for fishing through a relatively new program called “Fun Fishing Guide Service.” The fishing guide service, he said, primarily looks to serve veterans and donate fishing trips to help charities with fundraising. “It is just a part-time thing for me. It is not something I am trying to make a ton of money on. It is just something I am doing to give back to veterans,” he said. “I donate some trips
to charities to help them raise money.” While the service is not listed as a non-profit organization, at least not yet, Veith said it has worked to support many other charities. The charities, according to its website, include the Bryon Riesch Paralysis Foundation, Northern Illinois Police K-9 Memorial as well as Walleyes Unlimited USA. “Anything I can do to help,” said Veith, indicating he has seen veterans experience joy during his trips. “They had such a great time, so that is one of my main focuses, taking veterans out,” he said. “My goal is just to get vets out and donate some trips for charity.” People can visit his website for more information at www. funfishin.org. THE STEPS INVOLVED IN SECURING WEDDING VENUES, LICENSES Getting married is an exciting time in a couple’s life together. Wedding planning is the next logical step after the engagement announcement, and while couples often get swept up in planning their dream parties, it’s important to note that ultimately the ceremony is the star of the day. Before booking a wedding reception venue or getting one’s heart set on a particular date, couples need to secure their ceremony sites as well as apply for a marriage license. In some instances, ceremonies are held at the same site as the wedding reception, while some couples choose to tie the knot in their church or synagogue. Each of these types of ceremonies will be governed by the schedule of the house of worship or civil site.
FINDING A VENUE
GETTING A MARRIAGE LICENSE
Once couples choose a wedding date, it is a good idea for them to visit their ceremony site of choice to check the calendar. It helps to have some flexibility in the wedding date in case the first choice is unavailable. Although summer weddings used to be the most popular, today’s couples are tying the knot more often in September and October than other times of year. Even though a couple’s wedding is special and unique to them, ceremony locations handle hundreds of weddings. Couples must recognize that competition for certain venues may be steep, so it helps to keep more than one venue in mind when planning a wedding.
While laws may vary from state to state within the United States, getting a marriage license generally involves filling out the application and paying a fee at the county clerk’s office. Both applicants are typically required to bring identification, such as a driver’s license, passport or birth certificate. There may be a waiting period between submitting the application and the license being issued. Couples can pick up the license or have it mailed to them. A marriage license is not the same thing as a marriage certificate. The marriage certificate typically becomes available after the ceremony has taken place and the witnesses and officiant have signed off on the proceedings. Getting married is a multistep process that begins with determining where the ceremony will take place and acquiring a marriage license. EVERGREEN GOLF CLUB Evergreen Golf Club, just north of Elkhorn on Highway 12, has the amenities for the perfect wedding. Entering the reception area of the building, the view into the main banquet room reveals a spacious room with 15-foot ceilings and beautiful chandeliers. If an outdoor venue for the ceremony is your choice, the wedding ceremony will be held out on the stone patio against a background of lush landscaping and a gently flowing waterfall. An indoor ceremony can be held right in front of the windows, taking advantage of the landscaping in the background. When a wedding is held the entire building is off limits to anyone but those associated with the wedding. The reception room can hold up to 290, but not more than 250 is recommended if there is to be a sit down dinner – 220 for a buffet. Evergreen offers both plated and buffet dining options. The plated meals include a salad, fresh rolls and butter, two side dishes and coffee. The choice of the entrée determines the cost. There is a wide variety of entrees which include, chicken, fish, beef and pork and vegetarian choices. The buffet can be set up in one of two ways. The traditional long buffet or the Action Station arrangement. With the Action Stations smaller serving stations are set up in various parts of the room, each with a specific portion of the meal. This encourages guests to intermingle. Appetizers can be ordered to be butler-passed or to have stationary platters. Many of the butler-passed items are hot appetizers while the stationary platters include cheeses, vegetables, dips and bruschetta.

Lake area real estate market remains active

Or are you ready to purchase the perfect waterfront vacation home? Whatever the reason for a new home, there are a variety of home styles and locations in the southeast Wisconsin area that will meet your new housing needs. In addition to looking
for a new permanent home, searching for a vacation home brings buyers into the southeast Wisconsin area because of its many lakes. Those who have not searched for a home in many years – whether it is a full-time home or that vacation getaway – will find that the process has changed. Before the internet, the search for the perfect home began with a call or visit to your favorite realtor, according to Jerry Kroupa, who has been a realtor for Keefe Realty in the Lauderdale Lakes area, for over 30 years. “In the days before internet was found in almost every home, we would begin the search for the perfect home by checking the MLS (Multiple Listing Service) book that

Today when customers call their Realtor they have already viewed many homes on the internet that have included individual photos of the rooms giving the prospective buyer looks at the inside of the homes. When they finally contact the realtor after weeks of looking online, many of the homes they were considering may have been sold so they may need to begin their search again. “The pandemic has changed how buyers shop. They definitely use more virtual tours but the live tours have not been completely eliminated,” said Kroupa. “When they are serious about a home, they do want to make a live visit.” Live visits are stressful for both the buyer and seller in this time when all are avoiding contact with others. Sellers worry about someone ill coming into their home, while buyers worry about picking up illness in the home. “To protect the sellers, we screen the prospective buyers with a five-question screening tool to determine if they are ill or have been exposed to anyone with a serious contagious illness such as coronavirus. If they don’t pass the screening we do not schedule a tour for them at that time,” Kroupa said. “When we do arrange to schedule a tour, we advise them not to touch anything in the house.” They also require wearing masks and gloves while in the house both for the
homeowner’s protection and their own. Only the couple who are interested in purchasing the home may make a visit. Children and other family members or friends may not join in the tour.
Open houses fade
There was a time when holding open houses where anyone could come in and look at the property was one way of finding a larger audience of prospective buyers. With the presence of many listings online and the ease of locating potential properties, open houses have been reduced over the past few years, according to Kroupa. In some areas open houses are done for local real estate agents so they become more familiar with the property and are more likely to suggest it to their clients. Today with the pandemic, open houses have been eliminated for now while most people avoid contact with others to protect their health. Timing for listing a home for sale is important. Some homeowners are reluctant to put their home on the market because of the fear of people coming into their homes. They also worry that because of the pandemic homes are not selling at this time. According to Kroupa this is not true. “This is a very good time to consider putting your house on the market,” he said. “There is a shortage of homes available for purchase here in the Lauderdale Lakes area that are in the $200,000- $300,000 price range. For those looking to purchase a home in that range there is often little to show
them, not because there are not homes in that price range but because they are not up for sale. Often there are only three or four properties that may fit the buyers’ needs.” Houses in this price range do not remain on the market for long. Usually there are offers within a week, according to Kroupa. So he advises prospective buyers to put in an offer as soon as possible if they are serious about purchasing a home they have seen. If they wait too long it most likely will not be available.
Vacation homes
At this time of year, vacation homes are among the most sought after pieces of real estate. Families look forward to finding a property on or near the water so they can spend some or all of the summer away from the hustle and bustle of their everyday lives. They look for a place where they can relax and enjoy summer activities such as swimming, boating, waterskiing, and bike riding. Or they may be looking for a place to enjoy some quiet time, relaxing on the deck with lunch and enjoying the view of the water. Lakefront or lakeview properties are available throughout the Geneva Lakes area. Each of the communities that have lakes offers a different vibe. From the very busy and active Lake Geneva, Fontana, and Williams Bay on Geneva Lake, to the more northern and less hectic Lauderdale Lakes, there is a lake that has the right vibe for

your vacation home. “In the Lauderdale Lakes area the median price for homes is $765,000. Some of the higher end lakefront properties sell for over $1 million. Our highest sale here was $1,450,000 for a high end property,” Kroupa said. “The majority of the sales in the Lauderdale Lakes area are single-family homes because that is what we have available,” he continued. “There is only one condo complex in the area so that limits the number of condos we sell.”
The appeal of condos
While Lauderdale Lakes is more oriented to single-family homes, other lake communities in the Southern Lakes area have a high number of condominium complexes. Fontana, Lake Geneva, and Williams Bay on Geneva Lake and Geneva National on Lake Como offer a large number of condominiums perfect for vacation use. The purchase of a condominium rather than a single-family home, especially for a vacation getaway, provides more time to enjoy your vacation without the burden of lawn care and other homeowner’s chores. The condo may also have additional amenities, such as an exercise room and a pool, but you pay for them through the monthly homeowners association fees. These fees pay for the amenities and outdoor maintenance that they provide. The cost of the HOA fees needs to
be considered as part of the monthly cost of the condo. When purchasing a summer vacation home consider the distance from your permanent residence to the vacation home. Is it a reasonable distance of an hour or two from your home so that you can come up for weekends or a few days at a time? If it is a greater distance, your use may be more limited. How often will you make the trip each summer?

If you’re ready to start the search for that new home there are things you need to do before you contact your real estate agent. Give some thought to the type of home that you are seeking. Privacy fences are usually more dense, with pickets closer together so that no one can see in or out. These are often used in back yards. The privacy fence can be built so it is attractive regardless of which side of the fence you are on. The split rail fence reminds many of the open fields of horse farms.
