The Best Classic Zucchini Bread FROM AMANDA FINKS 1 1/2 cups grated zucchini, lightly packed, do not drain liquid 1 cup granulated sugar 1/4 cup packed light brown sugar 1/2 cup unsweetened applesauce 1/3 cup vegetable oil (or preferred cooking oil)

Preheat oven to 350 degrees F. Spray 9-by-5-inch loaf pan with cooking spray. In a large bowl, add grated zucchini, sugar, brown sugar, applesauce, oil, eggs and vanilla. Whisk until well combined. Add flour, baking powder, baking soda, salt and cinnamon. Stir until no dry flour remains, trying not to over mix. Pour batter into loaf pan. Bake for 50 to 54 minutes. A toothpick inserted into the center of the bread should come out with moist crumbs on it. Cool in the pan for 10 minutes. Remove from pan and transfer to wire cooking rack to cool completely. Store in refrigerator. Bread is best served after it has been refrigerated for at least 12 hours.

Cream Cheese Red Velvet Cookies 1 cup unsalted butter 1/2 cup sugar 1 large egg yolk, room temperature 1 teaspoon Vanilla 1/2 teaspoon red paste food coloring 2 cups flour 2 Tablespoons baking cocoa
Filling 4 ounces cream cheese, softened 1/4 cup sugar 1 large egg white, room temperature 1/2 teaspoon vanilla 1/4 teaspoon salt
Preheat oven to 300 degrees. In a large bowl, cream the butter and sugar until light and fluffy. Beat in egg yolk, vanilla and food coloring. In another bowl mix flour and cocoa, gradually beat into creamed mixture. Roll into 1-inch balls. Place 2 inches apart on parchment paper. Press indentation in center of each. Bake 10 minutes. For filling beat cream cheese, sugar, egg white, vanilla and salt, until blended. Fill each cookie with 1 teaspoon of filling. Bake until filling sets, about 10 to 12 minutes longer.

Stir in marshmallows, cook and stir over low heat until melted. Remove from heat and stir in cereal and pecans. Let cool, just enough to handle. Shape into Christmas trees. Roll in sugar, add sprinkles.

1 box Devil’s Food cake mix 1/2 cup shortening 2 eggs 1 Tablespoon water Confectioners’ sugar 40 chocolate-covered Thin Mints
Place broccoli into steamer basket, place in a large sauce pan over 1 inch of water. Bring to a boil, cover and steam for 6 to 8 minutes or until crisp-tender. Meanwhile in a small bowl, combine the remaining ingredients. Immediately place broccoli in ice water. Drain and pat dry. Place in a large bowl. Pour oil mixture over broccoli toss to coat. Refrigerate until serving.

Upside Down Orange French Toast 1/2 cup butter, melted 1/2 cup sugar 1/4 cup chopped pecans 2 Tablespoons grated orange peel 2 teaspoon ground cinnamon 12 slices French bread 4 ounces cream cheese, cubed 8 eggs 1 cup orange juice Place butter in a 13x9 baking dish. Combine the sugar, pecans, orange peel and cinnamon; sprinkle over butter. Arrange bread in dish and dot with cream cheese. In a large bowl, whisk the eggs, orange juice. Cover and refrigerate overnight. Remove from refrigerator, 30 minutes before baking. Bake uncovered at 325 degrees for 25 to 30 minutes, until knife inserted near the center, comes out clean.
Spiral Ham with Cranberry Glaze 1 bone-in fully cooked spiral sliced ham (8 pounds) 1 can 24 oz. whole berry cranberry sauce 1 package (12 ounces) fresh or frozen cranberries 1 jar (12 ounces) red currant jelly 1 cup light corn syrup 1/2 teaspoon ground ginger Place ham on rack in a shallow roasting pan, cover and bake at 325 for 2 1/2 hours. For glaze combine the remaining ingredients in a saucepan. Bring to a boil. Reduce heat, simmer uncovered, until cranberries pop. Uncover ham and bake for 30 minutes, basting twice with 1 1/2 cup glaze. Serve remaining glaze with ham.

Bake uncovered at 350 degrees for 40 to 45 minutes. Let stand for 5 minutes before cutting. Meanwhile in a small sauce pan bring the sugar, water and lemon juice to a boil. Reduce heat to medium, cook until sugar is dissolved and mixture turns a golden amber color. Stir in butter until melted. Add cream. Remove from heat. Serve with bread pudding.

In a mixing bowl, beat sugar and eggs for 2 minutes. Beat in vanilla and chocolate mixture. Combine flour, cocoa, baking powder and salt; beat in chocolate mixture, stirring in remaining chocolate chips. Cover and chill for at least 3 hours. Remove about 1 cup of dough. With floured hands, roll into 1-inch balls. Place on ungreased baking sheet. Bake at 350 degrees 10 to 12 minutes. Repeat with remaining dough. Dust with confectioners’ sugar.
