While nature is powerful and beautiful, nature is not always strong enough to fight back against the irreversible damage that the human inhabitants on this planet are creating, whether on purpose or purely by accident. No matter how many times people tell themselves, “Well, it’s just one little thing,” it never holds any reassurance, especially when there are seven billion others saying the same thing. The Ocean Cleanup is an international non-profit project developing and scaling technologies to rid the oceans of plastic. To achieve this goal, they employ a dual strategy: intercepting in rivers to tackle the sources of ocean plastic pollution, and cleaning up what has already accumulated in the ocean and will not go away by itself. From ocean trash capture systems to innovative river barges, The Ocean Cleanup Project is dedicated to cleaning waterways of pollution. In recent years, the organization has focused on scaling up its solutions to address massive areas of pollution, like the Great Pacific Garbage Patch. Their newest design, called System 002, has recently returned from the 10

Patch, and the team is hailing the system as a massive success. System 002 launched in August and uses active propulsion to tow the littercapturing system through the ocean. The horseshoe-shaped mechanism is towed through the water by two boats, funneling plastic waste into a collection system. The system, nicknamed Jenny, is 800 meters long, significantly boosting collection capabilities compared to previous systems. The Ocean Cleanup team is in the process of conducting 70 separate tests to determine the efficacy of Jenny. The last test, which took six weeks, captured a record amount of plastic waste. Ocean Cleanup team member tweeted: “It all worked!"

Go ahead … let that song about the mulberry bush we all grew up singing play out in your head. We can wait. With that out of the way, let’s talk mulberries. Due to their very short shelf life, mulberries aren’t a common sight on grocery shelves. That’s a shame because, as with most fruit, mulberries are a healthy addition to any diet. The “Eat Your Colors” mantra certainly applies, and they’re purportedly a good source of iron and vitamin C. Some studies have also shown them to lower cholesterol and blood sugar levels, and decrease cancer risk.
because they are so delicate, most baking options might overpower their subtle flavors. Curiously, mulberries aren’t technically berries in a botanical sense. Nor are blackberries or strawberries, for that matter. All of them are a collection of fruit clusters, as compared to true fruits such as cranberries and blueberries. Also, mulberries aren’t even related to berries at all, but are part of the fig family. Oh, and by the way … remember that song about the mulberry bush? Well, turns out that mulberries don’t grow on bushes, but instead on rather huge trees! No word yet on whether monkeys actually chase weasels.
If and when you can find mulberries at farmers’ markets, you’ll encounter two varieties: Pakistani and Persian. The former is a long fruit, with a remarkably subtle flavor that tastes like nothing except a Pakistani mulberry. The Persians look more like blackberries, with a sweet/tart taste akin to blackberry, but lighter. Culinary uses for mulberries are much like those for any fruit. what is Osteopathy? by Dr. Kathryn A. Perry, DO I am frequently asked, “What exactly do you do?” I am a DO, Doctor of Osteopathy. In the US, there are two paths to become a physician. The most known path produces physicians known as MD’s, Medical Doctors. The other includes exactly the same scientific training that MD’s get but it also includes how the musculoskeletal system interacts with all the specific medical conditions. DO’s and MD’s both complete a medical school, board examinations and residency training. In today’s medicine, most are indistinguishable. Some still utilize the traditional hands-on manipulative medicine. We acknowledge the dynamic choice that the body makes every single moment as it works toward its’ own self-healing or homeostatic process. We are trained to look at a patient’s medical condition from this

comprehensive, more holistic, viewpoint. My practice utilizes very fine motion that has body-wide expression known as Osteopathy in the Cranial Field. This work is very helpful for patient’s living with chronic conditions who have trouble with more aggressive manipulation. It works with gentle precise techniques to assist the realigning of the whole body with itself. This allows, not only for freer and less painful movement, but also increased nutritional support into the tissues, waste elimination out of the tissues, better nervous system communication with the whole body including organs, muscles and bones. This work assists the homeostatic process to be more effective and efficient. Healing is best left up to the body itself. It does, however, occasionally need assistance with antibiotics, surgery, or casting for a fracture on the way to healing. Sometimes, the assistance it really needs is support for its own healing mechanism. Traditional Osteopathy provides that assistance.

Here's a glimmer of hope. Our cities, traditionally dominated by concrete and steel, are undergoing a transformation. Visionaries are now experimenting with sustainable building materials like hempcrete and rammed earth, fusing modern design with ecological sensibilities. Alongside these materials, technologies like smart thermostats and energy-efficient LED lighting are becoming standard, not just add-ons. The architectural marvels of the near future will do more than provide shelter; they will serve as living, breathing entities that interact with and support the surrounding environment.
What is Hempcreate and Rammed Earth? Hempcrete was first used in construction to build non-weight bearing infill walls in France during the early 1990s. Hempcrete is made from mixing the hemp hurd with lime and water and weighs only about an eighth of regular concrete weight. The lightweight nature of hempcrete can also reduce the embodied energy of a building by reducing the emissions associated with transporting heavy materials. Less Laundry While we can’t really avoid washing our clothes, there are a few ways we can significantly reduce the amount of dirty laundry we produce on a weekly basis. With that in mind, here are some ideas to stop the laundry from piling up: Natural Fabrics: When buying clothing, try to avoid those made of synthetic fibers. These are not only responsible for plastic pollution, but also hold on to odor much more than natural fibers.
Less Dryer Use: Try avoiding the dryer as much as possible. If outdoor drying is not possible, hanging clothes on an indoor drying rack placed in the sunniest or breeziest room does the job perfectly. Spot-wash: Many spots that our clothes fall victim to can be quickly wiped away with a wet cloth, thus avoiding throwing the whole thing in the laundry basket. Fewer Clothes: When you have only a handful of items in the closet that you really like wearing, you’re more inclined to stretch the time between washes. These strategies may not work for everyone, nor are they a replacement for laundering when it’s actually needed. Nonetheless, they are meant to be a reminder that doing the laundry is not always the first solution.

Winter Treat no sugar crock pot applesauce
Recipe: 10 apples, cored and sliced (without peels) / 1 tbsp cinnamon / ¾ cup apple juice / ½ tsp sea salt (organic ingredients recommended). Pour apples and apple juice into the base of a slow cooker. Sprinkle brown sugar, cinnamon, and salt over apples. Stir. Set slow cooker on high, and cook for about four-five hours. Stir occasionally. Mashing may be required and can be done with a fork or potato masher.

Recipe: 2 cups cooked pumpkin which has been drained (or canned) / 1 cup almond milk / ½ cup brown sugar (or other sweetener) / ¼ cup cornstarch / 1 tbs blackstrap molasses / 1 tsp ground cinnamon / 1 tsp vanilla / ½ tsp ground ginger, nutmeg and sea salt / ¼ tsp ground allspice. Blend all ingredients in a blender. Pour into a vegan crust and bake at 350°F for 60 min. Cool on a rack, then refrigerate overnight before serving. Top with non-dairy whipped cream (optional).

Recipe: 3 cups all-purpose flour (glutenfree optional) / 5 tbsp dark chocolate cocoa powder / 2 tsp baking powder / 2 tsp baking soda / ½ tsp kosher salt / ¼ cup olive oil / 1 ripe avocado, mashed until smooth / 2 cups of water / 2 tbsp white vinegar / 2 tsp vanilla extract / 2 cups raw sugar. Frosting: 2 ripe avocados, mashed until smooth / 1 cup raw sugar / 5 tbsp dark chocolate cocoa powder. Preheat oven to 350°F. Grease and flour two 9” round cake pans. Whisk first five ingredients. In another bowl, whisk olive oil and next four ingredients, then add sugar. Pour wet avocado mixture into flour mixture and mix well. Bake cakes in two 9” round cake pans, checking for doneness after 30 min. To frost, allow cakes to cool.

Reduce, Recycle and Reuse... I know. You've heard it before. The three R’s are a very common eco-friendly tip, and most people are familiar with them. This advice is repeated again and again because of its importance to the environment. However, it is often ignored. While plastic is cheap and convenient, in the long run it is very damaging to the planet. It never breaks down. Glass, metal, plastic (including bags and bottles) and paper can all be recycled. The glass jar that once held the jam purchased from the grocery store can be used as a vase for flowers or a pencil holder on a desk. Consumption of single-use products like straws when you buy a
beverage, can be eliminated by purchasing metal straws that can be used over and over again. Starbucks gives a 10 cent discount to those who bring a reusable cup. To some, that might not seem very motivating, but like the small good deeds of people, overtime it can make a huge difference for their wallet and more importantly, the earth. 24

Known as the “composting law,” which went into effect on January 1, 2022, California residents should now be separating their food waste and placing it in their green organic waste containers for processing. “Scientists have found that organic waste dumped into traditional landfills decomposes and creates methane, a super-pollutant with as much as 80 times the Earth-warming potency of carbon dioxide,” reported the Los Angeles Times in a December 26, 2021 article on the new law. Waste Connections’ district manager Jeffrey Clarin recommends that residents use paper bags or newspapers to wrap their food scraps in to keep the odor down until they can be put into the green waste bin. Clarin, who manages the garbage companies for the majority of San Luis Obispo County, noted that all new green organic waste bins under his jurisdiction have a decal inside the lid that explains SB 1383 requirements and how to dispose of household food waste. His company has a goal of
replacing all organic waste containers by 2035. He noted that residents with damaged cans should contact their garbage provider to request an updated replacement bin. Residents can also request a decal for their current bins if they don’t have one. Per SB 1383, all residents are required to participate in their local organic curbside pick up service. Residents who live in multifamily housing such as apartments and condominiums are bound by the law as well. Any residential buildings of 5 or more units should be subscribed to the local garbage company’s organic waste pick up service or provide containers that the facility owner selfhauls to a specified composting facility. Separating food waste from standard garbage can also lead to reduced garbage costs as consumers may find they can downsize to a smaller garbage bin after implementing organic recycling. Recipe: 1 lb. black beans, dried/1 cup onions, shredded/1 cup carrots, shredded/1 cup celery, shredded/1 cup potatoes, shredded/3 garlic cloves, finely chopped/1/2 small lemon, thinly sliced/1 bay Leaf, large/1 tsp. oregano, dried/1/4 tsp. cayennepepper, powder/3 tbsp. lemon Juice/6 cups purified water. Rinse the dried black beans in a strainer and remove any stones. Place in a covered electric crock pot (slow cooker). Add 2 cups of boiling water, cover, and set crock pot on "High". Add the bay leaf and oregano. After the beans begin to swell add an additional 2 cups of boiling water. When the beans become tender (5-6 hours), add the shredded vegetables, cayenne pepper, and 1 additional cup of boiling water. Cook for another hour and taste the soup for flavor and texture. Continue cooking if necessary. Turn off heat, allow to cool and serve. Sea salt and freshly ground pepper to taste. Garnish with cilantro.

Recipe: 4 carrots/1 cup fresh ripe pineapple 1 teaspoon fresh chopped ginger/1 cup coconut milk/3 eggs (or egg substitute)/1 ripe banana/1 teaspoon vanilla/1/4 cup shredded coconut / 1 cup almond flour/1/4 cup chopped walnuts/2 teaspoons bicarbonate of soda/pinch of sea salt/3/4 teaspoon cinnamon/3/4 teaspoon all spice/3/4 teaspoon cloves/1/2 teaspoon nutmeg.
Frosting: 1pkt. creamed coconut/ 1/2 cup raw cashew nuts. Preheat oven at 350 degrees. Blend carrots and pineapple in the food processor until
pulp is formed. Add remaining liquid ingredients in the food processor and blend. Add dry ingredients except walnuts and blend. Add chopped walnuts and give a last mix with the food processor. Divide the batter between two round cake tins and bake for 1 hour and 20 minutes. Test if cake is done by inserting a toothpick in the middle. If it comes out clean then the cake is done. Put the cakes on a cooling rack and allow to cool before storing in refrigerator. Best if you refrigerate overnight before covering with frosting. For the frosting: Roast the cashews for 9 minutes (make sure not to burn) and mix in a bowl containing the creamed coconut. Blend the two together with a hand blender until no chunky cashew nuts remain. Place one cake at the bottom of a plate and cover with a thin layer of frosting. Place the other cake on top and cover the surface with frosting spreading it also on the sides. Refrigerate for at least one hour before serving.

The loss of a loved one is something that each of us must face at some point in our lives, and the holiday season can be especially challenging for those who are missing someone special. We are fortunate, here on the Central Coast, to have available the services of Hospice SLO County, a non-medical volunteer support and community grief center. They offer several types of support groups and individual counseling sessions for those who are grieving, as well as those who are anticipating a loss. It's really difficult to believe that one person can make an impact. Most of us lead busy lives and it takes time and mental energy to focus on sustainability. It
helps a lot to surround ourselves with others who are also trying to live more sustainably. Sometimes it can be hard to see the difference we're making because the scale of the problem is so big. For every mile we don’t drive, for every one thing we don’t buy new, for every bottle or can we recycle, it really does make a difference. Here are 3 simple suggestions: 1) Make your next purchase secondhand. 2) Buy something plastic free 3) Grow just one thing. It’s not about a few of us doing things perfectly, it’s about a lot of us doing what we can. When others see us doing small things, they will also be inspired to do more. Vegetarian Spinach Quiche Recipe: 2 tbsp olive oil / ½ onion, finely chopped / 1 clove garlic, minced / 1 10-oz. package frozen chopped spinach, thawed and squeezed / 1½ cups grated Gruyère (or dairy free cheese) / 1 9-inch unbaked pie shell / 3 large eggs, lightly beaten (or egg substitute) / 1 medium onion, chopped / 2 cloves garlic, minced / 1½ cups milk (or dairy free)/ 3 Roma tomatoes, thinly sliced / sea salt and black pepper to taste. Preheat oven to 375ºF. In a small skillet over medium heat olive oil . Add onion and sauté until translucent, about 5 minutes. Add garlic and cook for 1 minute longer, stirring. Transfer to a small bowl and let cool. Sprinkle onion mixture, spinach and Gruyère over bottom of pie shell. Beat eggs and milk together, and season with salt and pepper. Gently pour into crust. Top with sliced Roma tomatoes. Bake quiche for 40 to 45 minutes, until set and nicely browned. Remove from oven and allow to set for 10 minutes before serving.

Emissions since world war II
In 2020 the U.S. greenhouse gas emissions fell 10.3 percent, the largest drop in emissions since World War II, according to a report from the rhodium Group. The massive drop was because of declines in the transportation and power industries following the spread of COVID-19. While emissions rose again when the pandemic restrictions eased, we can think of these effects as experiments in ways we can create changes that last.
