Small Stuff... Here we are at a turning point in history. Many of us ask: "How can we live our lives to the fullest without harming the planet? Where and how do we start on the path to a "greener" lifestyle?" Today, it matters very much what we think and feel and do. For the majority of us, being "green" doesn't have to be extreme. But, the simple everyday things like utilizing your recycling can, composting, opting for biodegradable, non-toxic cleaners, carrying a reusable shopping bag, choosing glass over plastic when appropriate and requesting environmentally friendly building materials when building or remodeling can make a BIG impact collectively. We CAN make a SMALL shift in thinking. Don't let the idea of being environmentally responsible become a daunting task. With a few SMALL changes to everyday decisions, we're on our way to making a long term difference. Together we CAN make a difference...

Salt... what's the difference? 1) Iodized Salt: Many people keep this on their table as common table salt. Iodized salt has iodine added, which is an essential nutrient to the body that is naturally found in seafood. When seafood was less accessible, it was very important for people in landlocked areas to get their iodine in other forms (namely iodized salt). 2) Kosher Salt: Kosher salt has a very fine texture. Use it when you need salt to dissolve evenly and quickly, like for homemade salad dressings, meat rubs and in sauces. 3) Sea Salt: Sea salt adds more than just saltiness to foods. Depending
on where it is from, it can add a hint of flavor, from bitter to sweet (in addition to salty). Ounce for ounce it has virtually the same sodium content as any other salt, but because it is so flavorful, many people find they use less. When you want to add flavor to foods just before serving them, reach for a little sea salt. 4) Flavored Salts: These are usually salts combined with spices or herbs. They add both saltiness and a distinctive flavor to food, so they are great to use to flavor popcorn, roasted potatoes or corn on the cob. Plus, if you use colorful spices like curry powder or paprika, they are a fun colorful garnish for your plate. You can make your own flavored salt by combining one part of your favorite dried herbs or spices with one and a half parts of salt. Remember, whatever type of salt you use, a little goes a long way!

Each year thousands of seals migrate to their birthing, breeding, and resting ground at the Piedras Blancas rookery near San Simeon off of Highway 1. Thanks to the Friends of the Elephant Seal and their fantastic docent program, visitors can catch a glimpse of these interesting creatures and have their questions answered by knowledgeable volunteers. Here are some fun facts about the elephant seal: Adult elephant seals spend about 90% of their lives in the sea. • They normally dive to

1,000 or 2,000 feet, but can reach depths up to 5,000 feet. • Seals molt their entire outer layer of skin once a year on the beach instead of in the water to minimize the loss of body heat. • While on land, elephant seals will often stop their breathing and dramatically lower their heart rate to conserve energy, which can often make them appear to be dead. • While on shore, elephant seals flip sand onto their bodies to keep cool and protect their skin from over-exposure to the sun.

Styrofoam...

Styrofoam is a brand name and is a trademark of the Dow Chemical Company. It is also known as expanded polystyrene (EPS) and takes 500 years to biodegrade. The technology to recycle EPS exists, but most communities do not accept Styrofoam in their curbside recycling programs. As a result, most styrofoam ends up in landfills where, along with other plastics, it can take between 25 and 30 percent of the space. There is also a health concern connected with its use. The
primary chemical component of polystyrene is styrene. Studies have shown that over time, small amounts of styrene can leak into your food and beverage, particularly hot food and beverage. The good news is that there are many perfectly good biodegradable alternatives to Styrofoam packing peanuts and food containers. Many municipalities have banned the use of Styrofoam food containers. For many reasons it is best not to be used in the first place.

Recipe: 2 cups fresh basil leaves, packed / ½ cup freshly grated Parmesan-Reggiano / ½ cup extra virgin olive oil / ⅓ cup pine nuts / 3 garlic cloves, minced / sea salt & freshly ground black pepper to taste. Combine basil with pine nuts; pulse a few times in a food processor. Add the garlic; pulse a few times more. Slowly add the olive oil in a constant stream while the food processor is on. In our day-to-day life, there are ways that we can reduce, reuse, recycle, and conserve the goods of Mother Earth. One such way is to reduce and conserve the usage of gasoline. The Alliance to Save Energy reported that, in 2012, the average household in the United States will spend approximately $3,324 on its vehicles. The following are ways to save or reduce gas usage in one’s vehicle: Maintain your car and keep it tuned up. Poorly running vehicles use more gas. Regular car maintenance will lengthen the life of your vehicle and will minimize emissions and enhance fuel economy. Use the air conditioner sparingly because it lowers your gas mileage by up to 20 percent. On local roads, keep cool by opening the windows, but at speeds 40 miles per hour or faster, roll them up to prevent extra wind resistance, which also uses more gas. Check the air pressure of your tires regularly. Over and under inflated tires can dramatically reduce your fuel efficiency, so always maintain the proper air pressure, according to the guidelines listed on your car manual. In addition, maintain the alignment of the tires. Carpool or vanpool with others to share the cost of commuting if you can. Another suggestion, if you are able, is to bike, walk or take the bus. Using the cruise control on the highway helps you maintain a constant speed and in most cases will save gas. However, speeding, rapid acceleration, and rapid braking can decrease your mileage potential. Avoid having heavy items in your cargo or storage areas. An extra 100 pounds in your vehicle could reduce your MPH by up to 2%. Therefore, the more weight the less gas efficiency for the auto. Someone once said, “Take care of the earth and it will take care of you.” May we continue to work at taking care of the earth by reducing, reusing, recycling, and conserving the goods of our sister, Mother Earth.

Salmon...
wild or farmed?
Environmental groups such as Seafood Watch and the Environmental Defense Fund, have put nearly all farmed salmon on their “red” or “avoid” list. The reason: many farms use crowded pens where salmon are easily infected with lice, may be treated with antibiotics and can spread disease to wild fish (one reason Alaska has banned salmon farms). In addition, it can take as much as three pounds of wild fish (and fishmeal) to raise one pound of salmon. However, there’s some good news. Salmon farmers are currently in talks with environmental groups to improve practices. There is a proposal before Congress to set standards for aquaculture.

Gifts of food are always a hit, especially if they’re from two of the major food groups – chocolate and coffee! However, often these goodies come burdened with a history that’s not very festive. Most of the cocoa beans (the fundamental ingredient in chocolate) used the world over are harvested using child slave labor. When it comes to coffee, Fair Trade certification provides similar social protections. Many coffee farmers can easily end up the victims of unscrupulous middle men who take advantage of growers, essentially holding them hostage to low prices and unfair purchasing agreements. Fair Trade organizations not only guarantee minimum prices for farmers, but also put them in direct contact with purchasers. Such an approach also often benefits the coffee growers’ community at large since more money stays within it. Falcon... a rare sight! by Sean Murphy

Raptors are beautiful creatures and many species are easily spotted in the wild. For example, the beautiful red tailed hawk can often be seen on a trip out of town from the comfort of your car. The once endangered peregrine falcon however is not so easy to spot. They are small and drab compared to the red tail hawk, but they can dive at over 200 miles per hour, making them the fastest animal on earth! They are usually found near the coast where they feed on small birds and nest on high cliffs. Although sightings are rare, the coastal regions near Morro Bay offer a great place to start. Morro Rock is actually a sanctuary for many birds, the peregrine falcon being one of them. A coastal hike would provide a great opportunity for a sighting. Look for a small raptor, about the size of a crow. If seen up close or with binoculars, an adult can be identified by the black and white zebra pattern on the torso and underside of the wings.

1) Plan a local, organic menu. Buying from local vendors at places such as farmers’ markets cuts back on carbon emissions because fewer miles traveled from farm to table means fewer emissions produced from the vehicle transporting the food. 2) Use cloth napkins instead of paper. 3) Save decorations and favors for the next party. 4) Use edible and compostable centerpieces for the table as well as home decor. 5) Use only reusable glass and table ware as well as compostable products made of corn, potato or other eco-friendly substances. 6) Compost all food scraps and send leftovers home with guests to enjoy in sustainable or reusable containers. 7) Serve local wine, and if choosing beer, be sure that it is brewed locally. Recycle the glass and compost cork stopper. 8) Give consumables, live green plants, tickets to events, or donations to a cause as gifts. 9) Buy live plants to decorate rather than cut flowers. 10) Use e-invitations rather than printed and mailed ones (which creates more waste). 11) Don't dread the cleanup. You can most likely find nontoxic alternatives to clean up. Use clean towels and sponges. This creates less waste and saves you money on supplies. 48

Wood Pulp in your cereal?

Paint? According to the EPA, homeowners in the US throw out 64 million gallons of paint per year. Oil-based paints are considered Hazardous Household Waste (HHW) & must be disposed of properly. Many states have special HHW collection days or disposal facilities that accept these types of wastes. You can search for a facility in San Luis Obispo County at www.iwma.com and in Santa Barbara County at www.countyofsb.org. Latex paints are not hazardous waste and may be able to be recycled. The Product Stewardship Initiative has been working with some states to develop legislation that would require paint manufacturers to collect leftover paint for post-consumer use. Ask your local paint retailer to help you repurpose your paint. Turn your latex paint into solid waste by opening the can and letting it sit outside to dry up before throwing it away, if all else fails.

Pumpkin soup Recipe: 2 tablespoons butter / 2 carrots (8 oz. total), peeled and coarsely chopped / 1 stalk celery (4 oz.), rinsed and coarsely chopped / ¾ cup chopped onion / 1 clove garlic peeled and minced / 2 quarts vegetable broth / 4 cups mashed pumpkin / ½ cup apple cider / 1 green apple (8 oz.), peeled, cored, and chopped / 2 teaspoons chopped fresh ginger / 1½ teaspoons dried sage / ½ teaspoon ground cinnamon / ⅛ teaspoon ground allspice / sea salt & freshly ground black pepper to taste / 1 teaspoon grated lemon peel. In a 5 to 6 quart pot (over high heat) melt butter. Add carrots, celery, onion, and garlic; stir often until onion is tender, about 8 minutes. Add broth, mashed pumpkin, apple cider, apple, ginger, sage, cinnamon, and allspice; cover and bring to a boil. Reduce heat and simmer, stirring occasionally, for about 10 minutes.
