Anyway... From economists to politicians, from consumers to scientists, many people agree that the current approach of various big businesses is not sustainable. Often, when it comes to discussing this with the key people responsible for making decisions, it becomes difficult. If business leaders can't answer the question, “How are we promoting a flourishing society within a healthy biosphere?” – they are probably not yet developing a sustainable company. Some current business practices, such as prioritizing financial returns over social and environmental value, are very harmful to people and the planet. It might be awkward to say these things, and to propose that conducting business can be an expression of higher human potential, rather than an exploitation of natural resources. Say it anyway. It's the truth. Express your concern. Make calls. Write letters. Profit at the expense of values is not okay. Together, we CAN make a sustainable difference, and from the news headlines lately...we are!

Cucumbers
cool summer treat...
Cucumbers are related to watermelons, zucchini and pumpkins and grow on vines that sprawl along the ground. Because cucumbers, like watermelons, are 95% water, they keep the body hydrated and help regulate the body’s inner temperature. They are a good source of dietary fiber. If you do like your cucumbers peeled, the skin can be used to relieve sunburn and mild skin irritations, similar to aloe vera. Herbalists recommend cucumber juice to reduce puffiness around the eyes and to calm down acne. Chilled Summer Cucumber Soup Recipe: 5 large cucumbers, peeled, seeded and cut into chunks / ½ cup fresh mint, (or cilantro) chopped / ¼ cup green onions or chives, chopped / ¼ cup fresh squeezed lemon juice / 2 tsp freshly grated lemon zest / 2 cups crushed ice / sea salt and fresh ground black pepper, to taste. Combine the cucumbers, mint, scallions, lemon juice, and zest in a blender; blend until smooth. Add the ice and blend again. Season with sea salt and pepper, garnish with mint, and serve immediately in chilled bowls.

Food = Water don't waste it
It takes water to grow food, right? Ergo, wasting food is wasting water! Here are some simple steps you can take in your kitchen to reduce your food waste: 1) Compost. If you don’t already have a compost heap, start one! It’s easy-peasy, gives your garden a boost, and saves you from having to buy soil builder. If a compost pile won’t work for you, check with your neighbors. They might even have chickens that would love to peck up your food scraps, and maybe you can set up a trade for some fresh eggs. 2) Use what’s in your fridge. This sounds absurdly obvious, but in this day and age of wanting what we want when we want it, it’s all too easy to make a trip to the grocery store instead of planning meals around what’s already in front of you. Think of it as your own home version of “Chopped” … without the time clock.

3) Freeze veggie scraps for soup and fruit scraps for smoothies. Throw the veggie scraps (also veggies that are a bit beyond the pale and even chicken and beef bones) into a ziplock plastic bag in the freezer and just keep adding to it until you have enough for making stock. Homemade stock is simple, and you can control the ingredients, especially the salt content. Have another bag dedicated to fruit. Bananas that are a bit overripe and peaches that are a little bruised are fine in smoothies. Plus, this gives you an easy way to take advantage of fruit in season and less expensive – just cut it up, lay the pieces on a sheet pan in the freezer (that will keep them from freezing together into one big chunk) and plop them into your bag!

Ice Cream!
There are a lot of great ways to make non dairy ice cream, but the simplest by far is to freeze a few bananas. Even the frozen bananas by themselves are a delicious treat. In a blender with your favorite nut milk, add mint leaves, cocoa powder, or other frozen fruit and flavors of your choice. You can freeze bananas in their peels to avoid having to use extra plastic. The process is a lot faster if you peel them before freezing in grocery bags, or reusable ziplocs or containers. If you keep a stock of frozen bananas, then this treat only takes minutes. You can also cut the bananas in half and dip them in melted chocolate before freezing for an impromptu popsicle.

Forest
bathing? Anyone who has walked in a forest knows by common sense the beauty of it. It’s why some people choose to live in forests, or next to them, and why other people travel thousands of miles to stand in Redwood forests, or the rain forests of Costa Rica or Ecuador. But researchers in Japan, where the tradition called “shinrin-yoku,” or “forest bathing” is still strong, have discovered some biochemical reasons why. Researchers found that forest bathing optimizes natural immunity, which is important to prevent cancer as well as other chronic illnesses. How does that happen? When they sampled people before and after a two hour forest walk, they found all but one forest walker had a 50% higher killer T-cell count. They also had lower blood pressure, and felt calm and clear headed. Researchers explained the phenomenon: the forest trees and plants infused the environment with “antimicrobial allelochemic volatile organic plant-derived compounds called phytoncides that exterminate fungi and bacteria.” Translation? Fungi and bacteria can spell trouble for our immune system. Forest trees are often hundreds, if not thousands, of years old. The trees, and other plants, have evolved a protection, a compound they can produce, that kills fungi and bacteria. When you walk in the forest, you breathe and are infused with these compounds. The effect lasts for about 2 months. When you walk in a forest, you bathe in the forest’s natural immunity and you're immersed in the forest’s phytochemical immune system. This study appeared in the European Journal of Applied Physiology.

Fragrance is everywhere. And it’s not only where you think it is, like perfume, body cream, and candles. It’s in diapers, toothpaste, even baby dolls and orange juice! Fragrance is just a word. It functions as a placeholder for up to 5,000 different ingredients. The actual mix of those ingredients is a trade secret. Many fragrance chemicals have been linked to everything from hormone disruption to cancer to asthma to skin irritation. Here is how the FDA puts it: “If a cosmetic is marketed on a retail basis to consumers, such as in stores, on the Internet, or person-to-person, it must have a list of ingredients. Under U.S. regulations, fragrance and flavor ingredients can be listed simply as “fragrance” or “flavor.” To avoid hidden chemicals, parents can

shop for fragrance-free products. Unfortunately, even unscented items can contain hidden chemical masking agents to suppress any scent. Read labels and avoid anything with the words “fragrance” or “parfum.” Choosing natural products from companies that voluntarily disclose all ingredients is good, especially if the items are 3rd party certified natural. Products containing natural essential oils can still be irritating, but they won't also contain a whole host of synthetics you might want to avoid (benzene? acetone?). Purchasing fragrance-free certified natural products is a way to vote with your dollars, and to send a message to manufacturers that you're not interested in products containing secret ingredients. It's worth it!
New or Used? Are you thinking of upgrading your vehicle but you're not sure about used versus new, and its impact on the environment? Actually, there is no clear cut answer. It depends on your individual circumstances. A general guideline is that if you will be getting far better gas mileage, then a new car is perhaps a good move. However, it must have considerably better mileage to offset the energy used in producing and shipping your new vehicle. An alternative may be to buy a newer second hand vehicle which has better fuel economy than your present car. You won't have the energy payback of a new vehicle. Look into a motorbike or scooter; these vehicles are far more fuel efficient.

Pest Control... naturally!
Ninety-nine percent of the insects in our yards are benign or even beneficial. A single ladybug, probably the most illustrious beneficial predatory insect, can consume up to 5,000 aphids during its lifetime There are thousands of other insect species that are capable of doing the same thing. To keep these predatory insects around, however, you have to offer a diverse and pesticide-free garden with plenty of plant-based foods. Most species of beneficial insects need a balance of carbohydrates (found in nectar) and protein (found in their prey) in order to survive. Where do you find beneficial insects? Aside from luring wild singles into your yard with the necessary food, water and shelter, you can simply buy several hundred for release from containers at garden centers or on the Internet. Look at the types of pests you have in the garden. If whiteflies are problematic on your tomatoes, then larval lacewings may be your answer. If aphids are plaguing your lettuce crop, ladybugs may be a better choice.

Garlic Roasted Tomatoes Recipe: 5 large tomatoes, halved / 4 garlic cloves, chopped / 1 tbsp chopped fresh (or dried) thyme / 3 tbsp balsamic vinegar / ½ tsp fresh (or dried) oregano / 3 tbsp extra virgin olive oil. Heat oven to 350°F. Place tomatoes on baking sheet with garlic, oregano and thyme; drizzle on balsamic vinegar and olive oil. Roast for 1 hour. Set aside to cool.

Drought...
Water is a critical part of California’s way of life. Our economy, our environment and our day-to-day lifestyle need water to flourish. But our water is limited, especially during this historic drought. The lack of rain and snow this winter means we have to stretch the water that we do have. Here are some tips: Kitchen: Don't use running water to thaw food. Defrost food in the refrigerator. Keep a pitcher of drinking water in the refrigerator instead of running the tap. Collect the water you use while rinsing fruit and vegetables. Use it to water house plants. When washing dishes by hand, don't let the water run. Fill one basin with wash water and the other with rinse water. Wash your fruits and vegetables in a pan of water instead of running water from the tap. Soak pots and pans instead of letting the water run while you scrape them clean. Cook food in as little water as possible. This also helps it retain more nutrients. If you accidentally drop ice cubes, don't throw them in the sink. Drop them in a house plant instead. Install aerators on the kitchen faucet to reduce flows to less than 1 gallon per minute. Run 32

the dishwasher only when full to save water and energy. Install a water and energy efficient dishwasher. Save: 3–8 Gallons/ Load. Dishwashers typically use less water than washing dishes by hand. If your dishwasher is new, cut back on rinsing. Newer models clean more thoroughly than older ones. Bath and Laundry: Plug the sink instead of running the water to rinse your razor. Save: Up to 300 gallons a month. Install a high-efficiency toilet. Save: 19 Gallons Per Person/Day. Be sure to test your toilet for leaks at least once a year. Put food coloring in your toilet tank. If it seeps into the bowl without flushing, there’s a leak. Fix it and start saving gallons. Consider buying a dual-flush toilet. It has two flush options: a half-flush for liquid waste and a full-flush for solid waste. When washing your hands, turn the water off while you lather. Don't use the toilet as a wastebasket. Turn water off when brushing teeth or shaving. Save: Approximately 10 Gallons/Day. Take five-minute showers (or less) instead of 10 minute showers. Freeze your summer Berries Frozen organic berries like blueberries, blackberries and strawberries, can be expensive during the fall and winter months when they aren't fresh and abundant. During the summer months when berries are at their peak and affordable, stock up and freeze them yourself. Simply remove stems and leaves and rinse the organic berries; let them air dry on a towel and place them on a parchment lined cookie sheet. Freeze them until frozen solid and transfer the berries to airtight plastic containers. 1. Organic gardens don't need expensive fertilizers: Synthetic fertilizers may give you instant gratification, but they are expensive to buy and are bad for the natural balance of the soil. Natural materials, like compost, are free, or very inexpensive to buy. Plus, they feed the soil, and that rich, organic soil feeds your plants. That means plants will thrive in a fertile organic garden. 2. Organic gardens don't need expensive pesticides: A potential infestation of destructive bugs is a major concern for the would-be organic gardener. At the first sign of bugs, some gardeners will go running for expensive and destructive pesticides. But those pesticides will kill the beneficial bugs right along with the bad bugs, and do more damage to your garden in the long run. There are tons of natural predators in your garden that will do the job of pest control for you, if you let them. Because of this, a healthy

Thirsty trees by Madeline Palaszewski
There’s nothing quite like the soothing beauty of a tree. During times of drought, trees often show effects of the dry weather. In order to save precious water, many of us cut back or cut out regular landscape watering. This can be extremely tough on trees. The best thing to do is try to water trees every couple of weeks in the evening or early morning. Thoroughly water the ground area beneath the branches. Also, applying organic mulch around trees will reduce moisture loss. It is hard to know if a tree has died or is stressed due to the drought. Checking on tree twigs is one way to determine if a tree is dead. Break the twig and if it bends and doesn’t snap and break, the tree could still be alive. A certified arborist can help determine the health of your trees and set up a plan to keep them standing tall throughout the drought.

Wine? Similarly to coffee, there's no watchdog reporting on pesticides found in wine, but grapes are among the crops that are typically heavily doused with pesticides to ward off fungus and bugs. Fortunately, there are more and more fine organic wines on the market. Many will be labeled "made with organic grapes," rather than "organic wine" because, winemakers add sulfites as a preservative to allow for long-distance shipping.

keep your Travel green! There are all sorts of clever ways to make a trip more sustainable, but the easiest one takes place before you leave. Remember to unplug all unused appliances, especially computers, cell phone chargers, and televisions. Also, you could plan ahead by eating all the perishables in your fridge, then changing it to its lowest setting. And finally, don’t forget to turn your water heater down as low as possible. This is a rather simple thing to do, but it will end up saving some energy. Keep your travel green! If you are planning a vacation this year, do some research about sustainable businesses you can support during your trip. Or just choosing an eco-friendly hotel could make a huge difference. For example, a green hotel might have more efficient lights, use less water, have more sustainable furnishings, serve some local organic food, or use green cleaning products. Consider taking those everyday things that are thrown out and putting them to work. Tooth brushes make great cleaning tools in the home, car, garage and can be used in crafting. Brushes of all types can be repurposed by cleaning and trimming. Empty spray bottles are perfect for gardening, in the garage, crafting, etc. (always clean thoroughly to prevent contamination). Newspapers, magazines and weekly flyers make perfect covering and masking for areas when painting, gluing or anything messy. It simplifies cleanup. Use your imagination before throwing out items that have other uses and can make your life easier. Help reduce landfill volume!

Kids and Vegan diets? A volunteer-based study out of a clinic in Cleveland, Ohio recently revealed its findings, published in the Journal of Pediatrics, around a group of children and their families who were split into two groups. One group was tasked with eating a plant-based diet and the other with eating the American Heart Association's diet (which permits dairy and seafood). The kids eating the vegan diet showed significant improvements in systolic blood pressure, body mass index, total cholesterol, total low density lipoprotein (LDL), C-reactive protein (another marker of inflammation), and insulin levels to their baseline. An article on Cleveland.com talked about how dietary choices (or changes) are more often talked about and studied with adults, and how shifting the focus to children will ultimately help them grow to be healthy adults for themselves and their future families as well.

We've heard the word sustainability a lot lately. Sustainability is everywhere! Climate change scientists warn countries and companies of the dangers of current levels of carbon emissions. We can debate many technicalities about our current level of development and its impact on the planet and society, but a few trends have become reasonably clear over the last few years: 1) At the current rate of population and economic growth, we are using the resources of 1.6 planets. A further

acceleration will mean using even more resources we don't have, or may not have for very long. 2) Public patience with corporate self-interest has been severely tested over the last few years and has been decreasing to all-time low levels. In an era of growing transparency where corporate transgressions are likely to be identified and spread very quickly, profit at the expense of the environment or society is becoming an increasingly costly and unsustainable proposition for top management teams. 3) All over the world consumers are becoming increasingly mindful of the environmental and social implications of the products they consume. While the majority of consumers haven't yet demonstrated that they are willing to pay more for sustainable products, they are still increasingly taking these considerations into account when making purchase decisions between comparable products and their prices.

The hepatitis C virus, or HCV, is a virus that lives in liver cells and causes the liver to swell, sometimes resulting in cirrhosis or even liver cancer. When the liver is inflamed, it has difficulty doing the many important jobs it has keeping us healthy. Of the 600,000 Californians currently living with HCV, only about 75% know it. Those of us born 1945–1965, Baby Boomers, are particularly at risk for Hep C, regardless of any other risk factors. In fact, the CDC wants all Baby Boomers to get tested for HCV at least once, as soon as possible. This could save over 100,000 lives. New HCV treatments even have an over 95% cure rate. Greener... Here are some handy tips to make it Earth friendly: 1) Avoid paper invitations. Send an online invitation. 2) Plan a local, organic menu. Buying from local vendors at places such as farmers’ markets cuts back on carbon emissions because fewer miles traveled from farm to table means fewer emissions produced from the vehicle transporting the food. 3) Use energy-efficient lighting. A great way to avoid added costs to your electric bill is to utilize the outdoors, perfect lighting, temperature and truly inherent green setting. Host your barbecue at midday when the light is bright. 4) Find decorations in your yard. Beautiful decor can be found right outside your door. Cut tall grasses and place in a vase. Fill a glass jar with rocks and top it off with a candle. Also, consider potted plants. 5) Ask your guests to bring their own plate. An added bonus: Bring leftovers home in your own plate! The same idea is great for glassware. 6) Recycle. One of the easiest ways to go green is to recycle your waste. Be sure to put a clearly marked bin out at your party. 7) Send home the leftovers. Instead of throwing away the leftovers, send guests home with them (or better yet, have them bring a few reusable to-go containers in anticipation of take-home treats!). Compost what you can. 8) Don't dread the cleanup. You can most likely find nontoxic alternatives to clean up. Use clean towels and sponges. This creates less waste and saves you money on supplies. 50

Dig in this summer! According to a study published in the journal of Health Psychology, 30 minutes of gardening reduces stress levels more effectively than 30 minutes of reading quietly in a room. The research says that it's the result of physical activity. But perhaps the secret lies in the dirt itself. A few studies have shown a link between a common bacterium (M. vaccae) found in garden soil and increased serotonin levels, meaning less anxiety and better concentration. Gardeners may inhale this bacterium while digging in the soil.
