The Central Coast Guide to Green and Healthy Living!

In the present circumstances, no one can afford to assume that someone else will solve their problems. Each one of us has a responsibility to help guide our global family in the right direction. Good wishes are not sufficient; we must become actively engaged. ~ Dalai Lama

let's take a look at our

Past...

What people don't talk about as much anymore is the sustainable past. Looking to practices and methodologies that have proven to be sustainable seems like a no-brainer. Our ancestors lived sustainably for a long time. Not just surviving, but thriving and multiplying. Nobody really questions that history. Since it worked so well back then, why not take a clue from it now? They clearly had the right idea. We are talking about natural resources, the responsible use of which has been the concern of humanity for a very long time. We have the same need for clean water, breathable air and functioning ecosystems as those before us. Our food is still made up of plants and animals that need to grow by natural processes. Focus on managing natural resources responsibly is even more crucial now, as resources dwindle and populations continue to grow. How it would actually be applied, is a question that people globally have decided is now imperative to address. Maybe looking at the past will help. It may be important in advising the government on the traditional knowledge that enabled so many cultures to live sustainably for so long. Margaret Hennessy Founder/Publisher

“our enemies are our

Greatest teachers.” ~ Buddha

By Diane Parnell

I startled myself recently as vitriolic words spewed from my own mouth. I wanted to throttle the newscaster, scream at the misogynist, and tear the face off the racist. I knew the political climate had brought out the worst in people; I just thought it was other people. You know, Those People. Not me or my kind. I thought I was above the anger and resentment polluting those around me. Hearing these ugly words echoing in my ears disturbed me. This is not who I thought I was. Buddha’s wisdom from 2500 years ago holds true today. We have much to learn from those we disagree with. But how do we open up a dialogue with people whose opinions offend us? Or reach across the aisle to find common ground without getting into a shouting match? Perhaps we need to relearn how to respect one another. To open, rather than close our hearts. To soften with compassion rather than harden against those who are different. To embrace rather than reject the beautiful diversity of our brothers and sisters. I am not naïve enough to think this will be a simple task but I am committed to doing my part. Won’t you join me?

Blueberry crumble

Cake recipe: 4 tbsp unsalted butter, softened, plus more for pan / 1 1/2 cups all-purpose flour (spooned and leveled), plus more for pan and 1 tsp for blueberries / 1 1/2 tsp baking powder / 1/2 tsp baking soda / 1/4 tsp sea salt / 1/4 tsp allspice / 3/4 cup sugar / 1 large egg (optional egg substitute)/ 2/3 cup buttermilk / 1 1/2 cups blueberries. Streusel Topping: 1 cup all-purpose flour / 1/2 cup packed light brown sugar / 1/4 teaspoon sea salt / 1/2 cup cold unsalted butter (1 stick) cut into tablespoon pieces (non-dairy option, use coconut oil) Preheat oven to 350 degrees. Make streusel topping: In a medium bowl, stir together flour, brown sugar, and salt. Cut in the butter using your hands or a pastry blender until large, moist crumbs form. Chill. Butter and flour a 9-inch square baking pan. In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, salt, and allspice. In a large bowl, beat the butter and granulated sugar with an electric mixer until fluffy. Add egg; beat well. Add flour mixture and buttermilk alternately until just combined. (Batter will be very stiff.) In a large bowl, toss the blueberries with remaining teaspoon of the flour. Fold blueberries into the batter; spoon into prepared pan. Sprinkle cake evenly with streusel topping. Bake until golden brown and a tester comes out clean, 45 to 50 minutes. Let cool completely.

how to

Sprout Seeds in glass jars... Sprouting with this simple system involves soaking seeds overnight and covering the jar with a mesh screen and rubber band. Sprouting allows for better digestion and increases the amount of enzymes for better absorption. In the morning, drain the water and rinse the seeds twice daily, placing them on a rack to drain during the day. Harvest them within three to seven days. Some of the easiest sprouts to grow are alfalfa, fenugreek, radish, broccoli, onion, cabbage, mustard, garbanzo beans, mung beans, quinoa, lentils and wheat. For most sprouts, continue to sprout them until they have developed a long tail or their first leaves have begun to go green. In the case of garbanzo beans, quinoa, pea sprouts, and lentils, they are ready to eat as soon as their tails begin to unfurl or emerge from the seed. Great added to salads or sandwiches. 16

protein...

Pound for pound, it takes up to one hundred times more water to produce animal protein than grain protein. Two acres of rain forest are cleared each minute to raise cattle or crops to feed them. 35,000 miles of American rivers are polluted with animal waste. In the mad race to the dinner plate, the scarce resources needed to produce meat, eggs, fish and dairy simply can't keep pace with the demand for these foods. Protein however, is an essential part of the human diet, and many people get their daily dose from meat products. Although meat is a great source of protein, most commercial products are unsustainable. The nutrient density of leafy greens and green vegetables is off the charts. Followed by non starchy colored vegetables, beans, legumes, fruits, raw nuts and seeds, starchy vegetables and whole grains. There is protein in every plant food in varying amounts! To mix it up, try some of these tasty protein sources: quinoa, tempeh, almonds, brown rice, hemp seeds, flax seeds or chia seeds.

Cal Poly plants a solar farm By Madeline Palaszewski This summer, Cal Poly will break ground on a solar farm that will generate up to 25 percent of the university’s electricity and save it millions of dollars. The 18.5 acre facility will be built adjacent to Highway 1 on the western side of the campus. It will be “designed, financed, constructed and maintained by REC Solar,” according to a university statement. REC Solar is based in San Luis Obispo and was founded by Cal Poly graduates in 1997. The solar farm, set to be completed in winter 2017, will include more than 16,000 individual solar panels with a capacity of 4.5 megawatts (AC) and will generate about 25 percent of Cal Poly’s total needs.

The solar farm will also provide big savings to the university totaling about $17 million over 20 years. “This is the first major energy project Cal Poly has undertaken since we committed to achieving climate neutrality,” said Dennis Elliot, Cal Poly’s director of energy, utilities and sustainability. In keeping with its “Learn by Doing” philosophy, the solar farm will incorporate a solar engineering laboratory for students to conduct experiments with solar technology. In addition, Cal Poly’s Animal Science program will use the site to research vegetation management practices for solar farms while grazing the site with its sheep herd.

By Madeline Palaszewski If it’s time to remodel your home make sure it’s as green as possible. More homes are being built greener because they are more efficient, conserve natural resources, improve indoor air quality, reduce waste and increase the value of the home. Green building looks at a home as an entire system, with each part working together to produce a sustainable living environment. There are a variety of elements you can use to make your home greener:

· Non-toxic paints and sealants · Programmable thermostats · Energy efficient appliances · Natural flooring · Local building materials · Natural fiber rugs and fabrics · Recycled material roof shingles and tiles · Energy efficient lighting · Insulated hot water pipes · Greywater Systems

And don’t forget the outside of your home! You can make your yard sustainable by planting items that are in balance with the local climate and require a minimum amount of resources, like precious water!

red, white & blue is the

NEW Green

While organic is still one of the mostpreferred food labels, a survey finds that ‘‘Grown in the USA” is becoming increasingly popular. There is growing support for family farms and local sourcing, a trend that's gone mainstream in the last several years. Green buying behavior seems to be crossing all socioeconomic barriers. Consumers now have a better understanding of how green choices in personal care, food and household products directly affect the well being of their families as well as the planet. Americans are increasingly worried about food contamination from imported products. They are concerned about water treatment and crop fertilization 20

in other countries. Buying ‘‘Grown in the USA” is also a way to help fellow Americans. GMO foods are also a huge concern. There is a growing trend toward transparency. Now, more than 20,000 products carry the Non-GMO Project Verified seal. The organization continues to receive about 70 new calls every week. GMO ballot measures and retailer-initiated requirements to growing demand by the consumer for disclosure of potentially dangerous additives, the movement to healthier nutrition is on the rise. Sales of non GMO products are following a similar upward trajectory, according to research from Nutrition Business Journal. Yes red white and blue is indeed becoming the new ‘‘green!”

reduce

Cancer Risk...

add these foods to your diet!

The veg edge. To cut your cancer risk, try upping veggie intake. Vegetarians were 12 percent less likely to get cancer compared with meat eaters, a study in the British Journal of Cancer finds. A comprehensive review of thousands of studies on diet, physical activity, and weight conducted for the World Cancer Research Fund and the American Institute for Cancer Research pointed to the benefits of eating mostly foods of plant origin. Foods such as broccoli, berries, and garlic showed some of the strongest links to cancer prevention. They're low in calories and fat and power-packed with phytochemicals and antioxidants that may help reduce your cancer risk. Garlic is the powerhouse of the allium family, but onions, leeks, chives, and scallions might also protect against stomach cancer, some research suggests. Broccoli and its cousins are most protective against cancers of the mouth, esophagus,

and stomach, according to a review of hundreds of clinical studies conducted for the World Cancer Research Fund and the American Institute for Cancer Research. Strawberries are rich in antioxidants such as vitamin C and ellagic acid. In laboratory tests, ellagic acid seems to have anti-cancer properties that rev up enzymes, which destroy cancer-causing substances and slow the growth of tumors. They also contain flavonoids, which suppress an enzyme that damages DNA and has been linked to lung cancer. Other types of berries, all rich in flavonoids, deserve a spot on your plate, too: raspberries, blackberries, blueberries, and cranberries. Blueberries are packed with anthocyanins, which reduce inflammation and are one of the most powerful antioxidants. Berries and cruciferous vegetables are considered to be some of the most powerful protective foods.

Cost of higher education... By Ila Zargham The costs of higher education today makes it difficult to afford college. The University of California system has offered a plan to make higher education attainable for those with an annual income below $80,000. The Blue + Gold opportunity plan covers the UC's system-wide tuition and fees, which is what in-state residents pay, (this varies slightly between UCs but costs $15,000 on average). Under the plan, one’s system wide fees will be fully covered by scholarship or grant money for the first four years at UC (two for transfer students). Who is eligible? California students whose annual family income is under $80,000, UC’s system-wide tuition and fees will be fully covered during one’s first four years at UC (or two years if you are a transfer student) up to one’s

22

financial need. Blue+Gold students with sufficient financial need can qualify for even more aid to help reduce the cost of attending a UC. How can one apply? There’s no special paperwork. Just apply for financial aid on time: File the Free Application for Federal Student Aid (FAFSA) or California Dream Act Application. Check with your school to make sure your Cal Grant GPA verification was submitted all by March 2 (of the year you plan to attend UC). Keep in mind that the rest of the expenses are up to the student, and none of the UCs promise to meet one’s need without loans, but the Blue & Gold plans can help families tremendously. Co-op

what is a and why should I care? By Jeff Wade We all have childhood memories of parents, teachers and others encouraging us to work together. A co-op is what "working together" looks like all grown up. From the outside, many co-ops look like any other business. It's what goes on behind the scenes that makes it different. A cooperative exists to serve its members, and at co-ops, members are also the owners. So, in addition to getting the products and services you need and want, you also have a say in the business decisions your cooperative makes, and co-ops return surplus revenue to members. However, most folks don’t

realize that you do not have to be a member to shop at retail co-ops. Why co-ops matter: Cooperation is defined as working together towards the same end, and joining forces to accomplish a task that one can't achieve alone. And, through strong bonds between the people who use products and the people who supply them, coops offer a way to transform the way business is done, strengthening the community, including environmental and social responsibility. Also, local ownership means your shopping dollars stay local! Did you know? Co-ops are all around you. Some places you may not even know as co-ops, such as Farm Supply Company and SESLOC. For a co-op marketplace, check out SLO Natural Foods Co-op at 2494 Victoria Avenue, at the East end of Caudill off Broad Street serving SLO County for more than 30 years. Eat Organic...

it's important!

By Hepsharat Amadi, MD

I have evolved quite a bit in my understanding of why eating organic is really important. A long time ago, when I was younger, I thought that eating organic just meant paying more for what was essentially the same food. Boy, was I wrong! I learned that not only did organic produce taste better, but it was much better for my body! Pesticides and herbicides that are used in conventional agriculture are not only toxic, but they cause disruption of hormonal balance. These chemicals are all perceived by the body as being foreign estrogens. An overabundance of estrogens (especially ones that are foreign to the body) can cause all kinds of problems. I believe that this is probably one of the main reasons why breast cancer rates have been on the

$ SLONATURALFOODS.COOP Mon-Sat 8:30am -7:30pm•Sun 10am-5pm

2494 Victoria Ave. SLO

rise in the U.S. for decades. Also, one of the main components of GMO foods are glyphosate, a chemical that has been shown to cause cancer in lab animals. For the first time, colon cancer rates are going up in young people, who often do not eat organic. Not only is eating organic better for our bodies directly, but growing our food organically does not poison the earth, which is best for us indirectly, too! Studies have also shown that produce grown organically contains more nutrients and minerals than produce grown conventionally. They may look the same, but there is a big difference in their effects on our health and the health of the planet on which we depend!

the truth about

Skincare

by Arlan Hall

If you assume that any moisturizer, cleanser, or makeup product you buy at the drugstore or supermarket is safe to use, you’re assuming too much. According to the FDA Federal Food, Drug, and Cosmetic Act, it’s the “responsibility of the manufacturer” to test the safety of its products. Additionally, cosmetic products and their ingredients don’t need to be approved before they hit the market. To help people find out more about the ingredients in their skin-care products, the Environmental Working Group (EWG) created the Skin Deep database. This database contains more than 60,000 products and ranks them for their toxicity levels. While the European Union has banned more than 1400 ingredients from use in skin care and cosmetics products, the US has only banned 30 ingredients. And since your skin is your body’s largest organ, it’s important to know what it’s absorbing and allowing into your body. EWG reports that “biomonitoring studies have found that cosmetics ingredients, such as phthalate plasticizers, paraben preservatives, the pesticide triclosan, synthetic musks and sunscreen ingredients are common pollutants in the bodies of men, women and children.” And if you think products labeled “hypoallergenic” or “natural,” are better than other products, think again: There are currently “no federal standards or definitions” for either label.

Avocados

are anything but the pits! These iconic California fruits have gained super status as a superfood.

By Katy Budge The California Avocado Commission’s website lists numerous nutritional benefits of avocados. Here’s a “Cliff’s Notes” version: cholesterol-free, sodiumand sugar-free, provides healthy monounsaturated fat, acts as a nutrient booster to help increase absorption of certain vitamins, and contains some 15 essential nutrients. Among those are potassium, dietary fiber, and Vitamin K. But what to do with avocados besides the go-to guacamole or slicing them up for salads and sandwiches? Just think of ways to use their fat content. Mash up some avocado and whisk with some rice wine vinegar for a creamy vinaigrette to use in green salads or a chicken salad recipe. Combine with

hummus for a sandwich spread that will make you forget about mayonnaise. And go for avocado instead of, or in addition to, mayo in deviled eggs. In addition, avocados can be used as a fat substitute in a wide variety of baking recipes, a technique that helps make the resulting dishes heart-healthy (and often vegan). Use avocados in muffins, quick breads, and cupcakes, even frostings, mousse, and ice cream. Avocados are often a one-to-one swap-out with butter, but tried-and-true recipes abound that will give you the correct proportions for the specific dish. Of course -- especially with the highquality fruit grown right here on the Central Coast – sometimes simple is best. There’s a reason that straightforwardly delicious “avocado toast” is showing up on so many menus!

Lemons... try freezing them!

All kinds of people are saying that the entire lemon should be used with nothing wasted. Not only for the obvious health benefits but also for the amazing taste. How? Simple, take an ORGANIC lemon, wash it, and then put it in the freezer. Once it is frozen you get whatever is necessary to grate or shred the whole lemon without even peeling it first. Then sprinkle it on your salad, ice cream, soup, cereals, noodles, spaghetti sauce, or whatever. No holds barred. What you will experience is that whatever you sprinkle it on will take on a taste you may never have experienced before. The lemon peel contains 5 to 10 times more vitamins than the lemon juice itself and the peel is the part that is usually wasted. Not only that, but the peel helps to get rid of toxins in the body. Lemons may even be effective in killing cancer cells.

combating

Climate Change with permaculture By Blaze Elation

Permaculture provides several key strategies in combating climate change. Here are a few: Diversity! Plant many different crops that will feed a diversity of soil microbes and insects. Through photosynthesis, plants pull carbon dioxide out of the atmosphere and convert it into sugars that feed soil microbes and oxygen for us to breathe. A diversity of plants creates an ecosystem above and below ground that adapts to change and bounces back after stress. Mulching! Cover the soil with plants, woodchips, or any other organic material. Ground cover reduces soil oxidation, a process that releases carbon into the atmosphere. Also, mulch reduces

erosion ensuring growing capacity for future seasons and future generations. Greening! Plants have the ability to convert unhealthy, dead soils into diverse, thriving ecosystems. Through the process of succession, plants have converted deserts into lush jungles. Utilize this amazing ecosystem function by enlisting plants in our global effort to slow climate change! Feed the soil! Not with chemical fertilizers, pesticides, or fungicides that kill soil microbes and create dead soils, but with compost, crop rotation, green mulches, and worm tea!! It starts in your backyard. With the help of plants and organic matter we can begin to heal our environment!

How and why to make your own Toothpaste By David Georgi I have been trying to have as light a footprint on our environment as I can. I grow my own veggies and herbs using a drip system for water and compost and worm casting for fertilizer, eliminating most kitchen scraps and green waste. It bothered me to squeeze toothpaste out of a tube that, when added to the landfill, would take thousands of years to recycle. Add to that the ingredients in most commercial toothpastes contain

unpronounceable chemicals. I finally found a simple recipe that I absolutely love. Take a small, glass jar with a wide lid. Put one-part baking soda and onepart coconut oil. Microwave for a few seconds until they are easy to mix with a fork. And then the best part: add a few drops of any essential oil to your taste. The result is a lightly abrasive, good tasting paste that can be customized as desired.

have you heard of these Money Saving tips? We are all looking for ways to save a little. Here are some ways that can make a difference in getting the most of what you have, some of which may be totally new:

1) Shake out excess water off your disposable razor and dip it in rubbing alcohol before storing it in a dry place. This will add weeks of shaving life. 2) Seal lettuce in a ziplock bag with a moistened paper towel. It will stay fresher longer. 3) Scoop out the remaining bit of lipstick from the tube with a lipstick brush. You will get a dozen or more applications. 4) Separate your bananas. They produce ethylene gas, which causes them to ripen. Separating them will keep them yellow longer. 5) Use half the amount of toothpaste, soap, shampoo and laundry detergent. You probably won't notice the difference. 6) Use a clothesline when you can. Clothes are slowly being disintegrated by your dryer. That's where the lint comes from. Open zippers can also ruin clothes in a dryer. Zip them up. 7) Flip your mattress every 3 months. It will extend its life span. Rotate cushions on sofas too. 8) Rotate bars of soap. Allow each to harden before using it again They will last longer. 9) Leather shoes are susceptible to moisture and will last longer if you switch and give them a day off.

should you

Buy Beer in cans or bottles?

Question: Is it more environmentally friendly to buy your beer in aluminum cans or glass bottles? Virgin glass is made by combining sand, soda ash and limestone in a blast furnace at temperatures of over 1500ºC. Bottles can also be made with up to 100 percent recycled glass. In practice, about 40% recycled glass. Aluminum is the third most abundant element (after oxygen and silicon) and is refined from the ore bauxite through a very energy intensive refining and smelting process that also creates a number of greenhouse gasses including the extremely potent perfluorocarbons (PFCs). Aluminum is by far the most energy demanding material. The figures for each are improved when recycling is taken into account. All are highly recyclable and energy savings of 93% are possible for recycled aluminum and 57% for glass over virgin product. Despite the savings through recycling, aluminum production is still the least energy efficient although a can is much lighter than a bottle therefore reducing transportation costs. So in summary a close call, glass wins by a narrow margin. M-Sat. 10-6 Sun. 11-5

a day without

Water

By Jeanne Blackwell

Imagine...A day without water. No coffee first thing in the morning immediately comes to mind. Then brushing teeth, shower, flushing the toilet is not happening. No water gets really personal when it comes to personal needs and life is as personal as it gets. Perhaps getting out of the house a little worse for wear and do my business at work. No flushing toilets or running water there either. Restaurants are closed so lunch is off the table. Dinner without water to cook and clean up is going to be dry and boring. Feeling thirsty now because no water is all I can think about. One day without water is an inconvenience but a week and no clean clothes, or a shower that turns into a month becomes impossibly difficult for lack of something we take for granted every day: Clean water. Think about it. Love it.

question: do liberals live

Longer?

This is rather amazing, but in a study by the Harvard School of Public Health, a researcher determined that conservatives and moderates were six percent more likely to die earlier than liberals. The study examined over 32,000 adults who identified themselves as either liberal, moderate, or conservative. This new information came as a surprise to some researchers because previous studies indicated that professed Republicans seem to have better health. However, those studies were based on self reports, and as most of us know, sometimes individuals aren't big on sticking to the facts. This particular study utilized public death records, leaving no room for doubt. Researchers still aren't sure about the cause. They suggest that there are

simply too many variables. A political satirist however offered one explanation: "Conservatives like guns, tobacco, fossil fuels, and deep-fried endangered caribou.” Liberals, he says, “like yoga, weed, clean air, free-range kale, and giving everyone free health care.” Maybe a little over the top in both cases. It’s not easy being a liberal. They are full of empathy, and as a result they constantly feel the suffering of others. They spend hours and hours trying to teach people how economics work and it never seems to stick. They get called weak because they care about others. They even lost the last elections after winning the popular vote. While it’s hard work being a liberal, it may have one perk....according to this Harvard study, they do seem to live longer!

3 Eco-Friendly fabrics

The cotton used in most fabrics requires tons of pesticides and water for growth. There are several fabric alternatives to cotton that are more eco-friendly. Here are three popular ones: 1) Hemp – Probably the most well known alternative fabric, hemp grows quickly, doesn't require much water, and is very pest-resistant. It also grows densely, which eliminates weeds and the need for harmful pesticides. Hemp has historically been used for rope making because it is extremely long lasting and durable. 2) Bamboo – This versatile plant can be spun into an extremely soft, durable, antimicrobial material. It’s also moisture and odor resistant. Check out bamboo clothing, diapers, sheets, and more! 3) Organic Cotton – Grown using far fewer pesticides and water, organic cotton is much better for the environment, if you want to stick to the old standard. Just make sure you're buying certified organic, fair trade organic cotton treated with eco-friendly or natural dyes. Like most products claiming to be “eco-friendly,” it’s important to research your fabric and clothing companies before making a purchase. Make sure no harsh chemicals are used in the growing or manufacturing process.

EFT consists of fingertip tapping on meridian points. EFT alleviates negative emotions and experiences. Research suggests EFT is effective because it helps to balance the activity of the parasympathetic and sympathetic regions of the brain, making it a powerful healing tool. 41

Wine and Chocolate... Good for Your Brain?

Two studies have shown that polyphenols in both wine and chocolate increase the blood flow and oxygen to the brain that in turn could boost its power, especially in the elderly. The researchers also believe that taking them together could be even more effective. The team at Northumbria University, in the UK first tested the effects of wine. They tested 75 volunteers with a series of math problems, before giving them a pill of the polyphenol resveratrol found in wine or a placebo tablet. A scan to the brain showed that they had "significantly higher" blood flow to the brain after they had the resveratrol pill. Early tests showed some improvement in cognitive ability although this was not always conclusive. A further study gave 24 volunteers tests after giving them a pill of polyphenols from cocoa plant, the main ingredient from chocolate. Again they showed increased blood flow and this time they have increased accuracy and speed at carrying out the math tests. There is a natural reduction in blood supply around the brain as people get older so anything that increases it should have a positive effect. They are now carrying out studies on older volunteers. At the moment the doses of polyphenols are very high - equivalent to crates of wine or hundreds of chocolate bars - but the researchers are looking at the effects of ever smaller quantities. The research was presented at the British Psychological Society's annual conference in Glasgow.

you can make Compost indoors! Yes, you can make compost indoors. A kitchen composter will make small quantities of compost for your household plants by using kitchen scraps. Start with a milk carton or other waterproof container. Close off pour spout, turn the container on its’ side, and cut a flap large enough so you can reach inside with a spoon. Cut up all your organic material before putting it in the carton. Drain off any excess moisture. Spread it over the bottom of container and cover with a fine sprinkle of unsterilized soil. Next day, stir the first layer, add a new layer of organic material and sprinkle more soil over the top. Keep adding organic material until it comes to within an inch of the container opening, stirring once a day. Set aside and don't forget to stir. At the end of three weeks, it should contain crumbly brown soil for potting soil or for sprinkling around plants as a nutritious pick-me-up. Do not include meats, fish, dairy, oils or fats. Also, do not use manure from animals that are fed any meat products.

sugar body scrub for dry skin

Sweet!

By Alicia Hawkins

Everyone can benefit from a skin softening body scrub. Regular granulated sugar offers great exfoliation without having to spend big bucks on a salon scrub. For a great at home body treatment, try this: Choose an oil. Extra virgin coconut, safflower, almond, vegetable, or olive oil work great! Mix two parts sugar to one part oil. You can use anywhere from a few tablespoons to a cup of sugar. Mix in exactly half that amount of oil. If you want, you can add a few drops of essential oils for a scrub that'll smell spectacular. Step into a tub and apply the mixture to dry skin, rubbing in a circular motion. You can use bath mitts instead of your hands if you like. Once your entire body is scrubbed, rinse, pat dry and enjoy your soft skin!

Traveling greener this summer...

As we have all noticed, the act of traveling isn't exactly eco-friendly. While visiting new places is exciting to experience, it creates a lot of unnecessary waste in the process. For example, you need fuel to power your mode of transportation. Paper and plastic are used in travel documents, hotel keys, etc. Plastic, paper, and foam products are used to package your meals and munchies as you eat on the go. Not to mention those plastic travel-sized product containers collected. The list of waste goes on and on. Here are some travel tips to make your journey greener: Reduce Energy Consumption: We can't decrease the amount of fuel a plane, boat, bus, or train consumes, but we can control some things. When in a city or small town, choose biking or walking instead of taking a vehicle. The bonus? You'll burn calories, giving you a little more room to indulge in culinary delights. Try EcoFriendly Lodging: When planning where to stay, search and select eco-friendly,

hotels, campsites, and resorts. Some brands have water and energy saving programs. Find places that engage in environmentally friendly practices, or you can simply google eco-lodging in your destination area. Pack the Right Apparel: Pack things that travel well, and are functional in many weather scenarios, and do not need to be washed often. Simply cutting back on washing clothes will decrease water usage. Try investing in apparel that is water resistant, stain resistant, breathable, and will stay clean and fresh longer than other materials. Bring your own: The number of plastic bottles and bags you use when you are away from home can quickly add up. Practice sustainability everywhere you go by bringing your own. For example: One insulated bottle for hot beverages. A reusable bottle for water or cold beverages. Bottles for body and beauty products. Convenient travel-size and free trial-size create unnecessary waste, so buy reusable, empty travel sized bottles and refill them for each trip.

Coffee According to the American Association for Cancer Research, “The antioxidants in coffee have been shown to reduce inflammation and inhibit cellular tumor growth. Foods high in antioxidants help protect the cells against oxidative damage caused by free radicals that can elicit cells to grow in a way that promotes cancer.” Coffee boosts energy and also helps a woman produce more seratonin, according to the studies. It may help women manage depression by as much as 20%. Who knew?

why you should be

“Tree Free” By Carla Swift

We’re talking about “tree free” billing. The average American uses about one 100-foot tall Douglas fir tree in paper each year. Paper statements and bills alone generate almost two million tons of carbon dioxide, according to the National Geographic Society. And then there’s water. The U.S. pulp and paper industry is the single largest industrial consumer of water. Turning off paper bills and statements is a small change with a big environmental impact. If all U.S. households switched to electronic bills, statements, and payments, these are the estimated annual impacts:

access to your money. Receiving and paying bills online each month reduces this chore from hours to minutes. Security is still important. Keep your computer virus software up-to-date. Send payments instead of allowing payee to withdraw funds from your account. Don’t allow your computer to automatically save passwords. And never log on to your account on a public wireless connection. Your efforts can preserve up to 24 square feet of forest land each year. When faced with the choice between a tree-free planet and tree-free documents, the choice seems simple.

1. 16.5 million trees saved 2.1.6 billion pound of solid waste eliminated 3. 3.9 billion pounds of toxic air pollutants eliminated 4. 63 gallons of waste water per person eliminated The personal benefits are immediate. You significantly reduce the risk of identity fraud by turning off paper documents. The FTC reports that most fraud comes from stolen paper documents and is not Internet based. You’ll save time. Direct deposit of paychecks gives you fast

Baking Soda and Baking Powder... what's the difference?

The similar appearance of baking soda and baking powder make them difficult to differentiate. There are often added to the same recipe, but they are chemically different. Here is the difference: Baking soda is also known as bicarbonate of soda or sodium bicarbonate, and it is a base mineral which creates carbon dioxide when mixed with acidic ingredients. Hence, when added to recipes, you will also need something acidic, like yogurt, buttermilk, lemon juice, brown sugar, molasses, or cream of tartar. It is much stronger than baking powder and too much gives a metallic taste. This is a good rule of thumb: add 1/4 teaspoon of baking soda per 1 cup of flour in a recipe. Baking powder is a combination of various acids, including baking soda, cornstarch, and

50

cream of tartar. While cooking, the first leavening occurs when baking powder gets wet, and the next one when the baking powder is heated. The following rule is a great rule of thumb: add a teaspoon of baking powder per 1 cup of flour in a recipe. Some recipes involve the use of both, baking powder and baking soda. The reason for this is the maintenance of balance, as the carbon dioxide created from baking soda and certain acid does not leaven the volume. They both have expiration dates, so you should use them fresh, and change them at least every three months. If you want to test baking soda, pour 3 tablespoons of white distilled vinegar into a small bowl, add half a teaspoon of baking soda, and stir. The baking soda is fresh if the mixture quickly bubbles.

Business... not as usual

Businesses have finally noticed that public demand for more sustainable and healthy products is growing. A Nielsen survey at the end of 2015 found that 66 percent of people asked would pay more for a product or service if the company was committed to positive social and environmental change. That is up from 50 percent in the same survey from two years before. The increase in awareness began with the realization of the negative impact consumer lifestyles were having on the environment. Many scientific studies have illustrated the relationship between the consumption of fossil fuels and climate change. Did you know commercial building owners and tenants could save $17 billion annually by making simple lighting upgrades (NSBA)? Energy efficiency, environmental awareness and green manufacturing may sound like something for the hippies in Berkeley, but small businesses are saving significant amounts of money by “greening-up" their business. It created awareness that fossil fuel used in products, not only in their cars, but also in the transportation that brought products to the market. The increase in consumer sensitivity to sustainability issues is likely to continue and grow, and in order to be successful, businesses are addressing these concerns. 51
