Good News...

I need to stop listening to the news. What do I mean by “the news?” Traditional news from traditional media, reporting on stories which are predominantly disheartening or shocking; job losses, natural disasters, crime, celebrity scandals, etc. Why? Our brains become magnetized with the dominating thoughts which we hold in our minds, and, these “magnets” attract to us the forces, the people, the circumstances of life which harmonize with the nature of our dominating thoughts. In other words, our predominant thoughts become our reality. Henry Ford knew this well. During World War I, he sued a Chicago newspaper for libel after they referred to him as “an ignorant pacifist.” The newspaper’s attorneys set out to prove that Ford was ignorant by putting him on the stand and asking him general knowledge questions. Ford admitted that he couldn't answer most of them, but noted that he had the means to, summon people who could supply any knowledge he desired. What then, would be the use of him cluttering up his mind with such information? Luckily for us, there’s this thing called the Internet (Google?) that levels the playing field. Most of the issues reported on TV and other media are beyond our circle of influence. So, I am taking action to reduce my "news" intake. It's giving me more peace of mind and extra time for the things I like to do!

Here on the Central Coast the temperatures are beginning to cool and soon leaves will begin to fall. This time of year is perfect for eco-friendly activities as well. Here are some ideas: 1) If you have a ceiling fan, reverse the direction. The fan should be run in a clockwise direction (stand under the fan and if you feel a breeze, reverse the direction so that air is being drawn upwards). 2) Bring in any houseplants that have spent the summer outdoors. They'll help clean the air. 3) Before packing away those summer clothes, go through them and determine which items to keep, which items to repurpose into something else (cleaning rags, craft projects, etc.) and which to donate. 4) As the autumn leaves begin to fall, consider raking them up

rather than using a "blower". Once raked up, use them as mulch to protect plants throughout the winter or add them to a compost pile. 5) Right now, the local farmers' markets are overflowing with delicious, local, and in-season fruits and veggies. Take advantage of this. 6) Cleaning and adjusting your furnace annually will ensure its operating efficiently, cut back on fuel use, and save you money this winter. 7) And, don't forget to take some time to appreciate nature and the changing fall colors with a bike ride or walk in the crisp outdoors.

Marinara... Recipe: 3 lbs. fresh tomatoes / ¼ cup extra virgin olive oil / 1 large onion finely chopped / 3 cloves garlic finely chopped / ⅓ cup basil thinly sliced. Bring large pot of water to boil. Core stem ends of tomatoes, then lightly cut "x" on opposite ends. Cook tomatoes in boiling water until skins begin to pull away (about 1 minute). Drain and run under cold water; peel and discard skins. Return pot to stove, add olive oil, onion and garlic. Cook until softened (about 5 minutes). Add tomatoes and crush with masher. Cook over low heat for 20 minutes. Remove from heat and add basil. Makes about 4 cups. Serve over your favorite pasta!

Cabbage is one of the healthiest foods around, and one of the most versatile. It’s also one of the easiest to work into refreshing seasonal grill menus, especially with some simple international rifts on coleslaw. As a member of the cruciferous family of veggies, cabbage offers all the benefits of this “super group” of foods (which also includes kale, broccoli, and Brussels sprouts). Studies have indicted that these foods may lower the risk of cancer and prevent cardiovascular disease, plus they offer a wallop of vitamins in a low-calorie package.

When thinking about coleslaw, rethink the creamy dressing approach – not such a good choice for serving in hot temperatures anyway. Instead, go for fast, from-scratch vinaigrettes that match up flavor-wise with your main courses. Just put a couple tablespoons of both oil and vinegar in a serving bowl with some seasonings and whisk them together, then toss in your chopped cabbage and other ingredients. Put the mixture in the refrigerator for an hour or two so the flavors can marry, but not too much longer or the cabbage will get wilty. Add color to your coleslaw with carrots, cilantro, yellow bell peppers, green onion, sprouts, and even some red cabbage. If you’re serving Mexican-inspired fish tacos, toss the coleslaw in a vinaigrette of mild olive oil, unseasoned rice vinegar, cumin, cayenne, and garlic. If Asian teriyaki skewers are on the menu, toss with sesame oil, seasoned rice vinegar, ginger, garlic, soy sauce and/or a bit of Sriracha sauce. You get the idea – have fun with your palette and your palate!


Eco Food Choices for kids! Many students might be unaware of how the food industry effects the environment. Here are some things to think about: 1) Local vs. international ingredients and green house gas emissions 2) Farming methods: Does the farming cause deforestation for example? 3) Organic vs. chemical fertilizer and pesticide usage 4) Genetically modified vs. non-GM crops 5) How is the food packaged? Is it wasteful? 6) Disposing of food waste correctly: compost heaps, disposal of fats and oils, etc. Be sure to address these issues with your kids.

St. Francis of Assisi had a passion for all creation and would call everyone and everything his brother and sister, including trees! Trees clear our air of pollutants and give off oxygen; trees intercept rainfall thereby reducing runoff and perform like retentive/ diversion basins. Trees can also reduce major noises such as those from freeways, airports, or cars. Furthermore, they provide vital habitat for birds, animals and other wildlife. Byer Nelson further reminds us “People who will not sustain trees will soon live in a world that will not sustain people.” In the United States, allergies and asthma are on the rise because we are not surrounded by pure and healthy air, but rather a polluted

environment. Tom Ogren, an environmentalist of the area, has written and published numerous books and articles regarding allergy free landscaping. Recipe: 6 large yellow onions, sliced thin / 3 cloves garlic, minced / Âź cup teriyaki sauce / 2 tbsp sesame oil / 8 cups vegetable stock / toasted french bread slices / 2 cups swiss or gruyere cheese, grated (or dairy free cheese). Plastic Bags...

October 1st is the one year anniversary of the plastic bag ban in San Luis Obispo County. I served on the Integrated Waste Management Authority Board (IWMA) several years ago when this discussion began. An astounding 10 million bags a month have been eliminated from our environment and no longer contribute to the pollution stream. Some believe the bags can be recycled. It cost our garbage company over $1,000/ton, about 130,000 bags, to collect them from the waste stream. Not cost effective, as they could only sell them for $200/ton. There are no reported instances of illness caused by washable, reusable bags. Only the singleuse bags were banned, and plastic bags provided for meat, produce and bulk items to prevent cross-contamination are still readily available.

According to John Spencer, longtime local grocer, there have been some unintended consequences. In the beginning, some folks only bought what they could fit in the bags they brought, and sales dropped, though are now recovering. Plastic bag bans are expanding in California. The Los Angeles City Council gave final approval in June to an ordinance that makes L.A., the most populous city in the nation, to ban single-use plastic bags. Mood changers... It might be time to break out the power of scent to overcome any encroaching winter blues. Try diffusing or dabbing on a few drops of essential oils known to have an emotionally uplifting effect around your home. A few drops of these oils can also be used in your bath or mixed with carrier oil such as almond oil and used for a massage or as a skin moisturizer. Here’s a list of fragrances you might want to try: 1) Citruses: The essential oils of lemon, grapefruit, tangerine, and oil are familiar scents that bring sunshine to the heart. In addition to using the essential oils extracted from these fruits in the ways mentioned above, peeling (and consuming) these fruits,

can provide a similar, immediate mood enhancing surge. Other citrus-derived oils include bergamot and neroli. 2) Happy herbs and spices: Rosemary, sweet basil, and cinnamon oils are also familiar scents that, for many, induce a sense a well-being. 3) Mints: The scents of peppermint and spearmint are both familiar and refreshing to many people. 4) Florals: Lavender and geranium oils are recommended for emotional uplift. While the scent of lavender is familiar to many, geranium oil is frequently used in massage oil blends and in many aromatherapy therapeutic treatments. Of course, the fun is in discovering what works for you. A few friendly warnings: these oils are powerful, so a few drops go a long way. Also, to avoid skin irritation, do not apply oils directly to skin. Always mix them in a massage-grade carrier oil.

How was it caught? Who was the producer? When trying to source high quality fresh product, the more you know about the story behind the fish, the more confidence you can have in the seafood they are providing.

Cut Energy Use!

2. Plug Air Leaks: Replacing windows is often the least cost-effective step you can take to save energy, so seal air leaks around doors and windows instead with caulk and weather stripping. Also, consider putting up insulating curtains, pasting low-e film to the window glass, and installing storm windows or plastic window films to further cut down on heat loss in winter.

3. Use a Programmable Thermostat: Nearly half of US homes already have a programmable thermostat. Dig out that owner’s manual and learn how to use yours to maximize the efficiency of your heating and cooling systems. Program your thermostat to turn itself down or off when you’re sleeping or are at work or school. 4. Air Dry Dishes: Using your dishwasher instead of washing dishes by hand can save water, but if you let the drying cycle run, you’re wasting energy and money. Skip the drying cycle and let your dishes air dry. Newer, more effective and efficient dishwashers allow you to skip the step of pre-rinsing your dishes before you load them in the dishwasher. Run your dishwasher (and your clothes washer) at night, during off-peak hours.

Environmentalists cite meat production as one of the biggest contributors to global warming, and the USDA’s new food pyramid suggests the healthiest choice is making vegetables and fruit the biggest part of every meal by reducing consumption of animal proteins. Kale is far more nutritious than other leafy greens, but these seven reasons why it is such an important future food may just surprise you: 1. Anti-inflammatory: Kale is an incredibly effective anti-inflammatory food, potentially preventing and even reversing these illnesses. 2. Iron: Despite the myth that vegetarians are anemic, the number of nonvegetarians with iron-deficiencies is on the rise. Per calorie, kale has more iron than beef. 3. Calcium: Kale contains more calcium per calorie than milk (90 grams per serving) and is also better absorbed by the body than dairy. 4. Fiber: Protein-rich foods, like meat, contain little to no fiber. One serving of kale not only contains 5 percent of the recommended daily intake of fiber, but it also provides 2 grams of protein. 5. Omega fatty acids: Essential Omega fats play an important role in our health, unlike the saturated fats in meat. A serving of kale contains 121 mg of omega-3 fatty acids and 92.4 mg of omega-6 fatty acids. 6. Immunity: Superbugs and bacteria are a serious risk to our health. Many of these come as a result of factory farm meat, eggs and dairy products. Kale is an incredibly rich source of immune-boosting carotenoid and flavanoid antioxidants including vitamins A and C. 7. Sustainable: Kale grows to maturity in 55 to 60 days versus a cow raised for beef for an average of 18-24 months. To raise one pound of beef requires 16 pounds of grain, 11 times as much fossil fuel and more than 2,400 gallons of water.

The Natural History Museum in Santa Maria unviels new California Grizzly Bear Exhibit on September 19th! It has been called “the biggest little natural history museum in California.” The Natural History Museum in Santa Maria is packed with regional habitat centered and multi sensory exhibits. Virginia Sousa and her mother, Rena Perry founded the museum in 1996, in memory of Sam Perry, a Santa Maria native and well known local businessman. They called the non-profit a “museum” because that was the future vision. The current regional collection is impressive with collaborations from the Royal B.C. Museum in Canada, Los Angeles Museum of Natural History, Santa Barbara, Morro Bay Museum of Natural History and Monterey Aquarium. The Natural History Museum in Santa Maria operates with 100% volunteers and 100% of your donation goes directly into the exhibits and programs. The current museum board of directors is very excited to present a new Grizzly Bear exhibit which will debut for members and others at a Solstice Green Mixer, Thursday evening, September 19th from 5–7:30PM. There will be live music, wine, and food! This specimen is from Canada but is virtually identical to the once dominant California species. Recipe: 3 cups whole wheat pastry flour / ½ tsp. sea salt / 1 lb. almond butter (unsalted, smooth) / ⅔ cup coconut oil / ¾ cup maple syrup / 1 tsp. vanilla. Preheat oven to 350˚F. Line cookie sheets with parchment paper. Sift flour into mixing bowl, then add sea salt. Cream almond butter, oil, maple syrup, and vanilla together in a separate, larger bowl, using a whisk. Cream until smooth. Add flour to almond butter mixture and stir to fully combine. Form dough into walnut-sized balls and press down. If dough does not form easily when rolled, add a bit more flour. Bake for 10-15 minutes or until golden brown on undersides of cookies. Allow to cool on baking sheets for 10 minutes, then transfer to cooling rack until cooled. Serving: 30 cookies.

Recipe: 20 lasagna noodles / 3 tablespoons extra virgin olive oil / 1 cup chopped fresh mushrooms / 1 cup chopped onion / 3 tablespoon minced garlic / 2 cups fresh spinach / 3 cups ricotta cheese / 1 teaspoon sea salt / 1 teaspoon dried oregano / 1 teaspoon dried basil leaves / ½ teaspoon ground black pepper / 1 egg / 3 cups shredded mozzarella cheese / 3 cups marinara pasta sauce / 1 cup grated Parmesan cheese. Preheat oven to 350°F. Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain. In a skillet over medium-high heat, cook mushrooms, onions, and garlic in

olive oil until onions are tender. Drain excess liquid and cool. Boil spinach for 5 minutes. Drain and squeeze out excess liquid. Chop spinach. Combine ricotta cheese, spinach, salt, oregano, basil, pepper, and egg in a bowl. Add cooled mushroom mixture. Beat with an electric mixer on low speed for 1 minute. Lay 5 lasagna noodles in bottom of a 9x13 inch baking dish. Spread one third of the cheese/ spinach mixture over noodles. Sprinkle 1 cup mozzarella cheese and ⅓ cup Parmesan cheese on top. Spread 1 cup pasta sauce over cheese. Repeat layering 2 times. Cover dish with aluminum foil and bake in a preheated oven for 1 hour. Cool 15 minutes before serving. Enjoy! Molto Bene!

Tomatoes... in your closet?

I never thought I could grow tomatoes since we live on the chilly coastal side of Cambria. But a garden tour one year enticed me to buy tomato seedlings. I soon had healthy, thriving plants that I nurtured through spring and summer. But as October rolled by and the nights got colder, dozens of green tomatoes seemed to confirm my fear – you can't grow tomatoes in Cambria. It appeared they'd freeze before they ever ripened. Help came when my friend came to my rescue with a terrific tip. She said, "My mom used to cut off the

tomatoes at the base and hang them in the dark garage to ripen." No kidding! It's worth a try, I thought. I had an empty closet that would be perfect. I found a few strong clothes hangers (this seemed more portable), and set about harvesting and hanging my green tomatoes. To my delight, my tomatoes ripened nicely, producing fresh home-grown fruit into the winter months. And they provided a few laughs, too, each time I asked my husband, "Honey, could you pick some tomatoes from the bedroom closet, please?"

A Little Brew! Here are some great ways to use beer that you may not have thought of...

Tenderize a T-Bone: If you find yourself with a tough cut of meat for a barbecue, marinate it for an hour or so in some beer. The beer will infuse the meat with flavor and tenderize it while it sits, so it will cook up nice and juicy.

Banish Slugs: If slugs have infiltrated your garden and are munching away at your greenery, bury an empty tuna fish can next to your plants so that just the lip is sticking out. Fill the can with beer and check it in the morning; you should have caught some of those slimy suckers! All you have to do is empty the can each day. This little trick also works with earwigs.

why Solstice? We have been asked many times why we chose the name Solstice for our Green Directory. Twice each year, the Earth is at a point in its orbit, where one hemisphere is most inclined away from the Sun. This causes the Sun to appear at its farthest below the celestial equator when viewed from the far hemisphere. It creates the longest day (summer) or longest night (winter). The Sun appears to “stand still,” which is the literal Latin translation of the word solstice. It can go no further before returning to balance. It then begins its journey back to the point of equinox (equal day and night). We are now at the point of “solstice” for our species and all living things on Earth. We too must begin our journey back to balance on this beautiful shimmering blue planet we call home, if we are to survive.
