Chicken Flautas
Makes 12 2 skinless, boneless chicken breasts 1 onion 2 garlic cloves 1 tablespoon vegetable oil 31⁄2 ounces feta cheese, crumbled 12 corn tortillas, freshly made or a few days old Oil for frying Salt and ground pepper For the salsa: 3 tomatoes, peeled, seeded and chopped Juice of 1⁄2 lime Small bunch of cilantro, chopped 1⁄2 small onion, finely chopped 3 fresh fresno chiles or similar fresh green chiles, seeded and chopped 1. Start by making the salsa. Mix the tomatoes, lime juice, cilantro, onion, and chiles in a bowl. Season with salt to taste and set aside. 2. Put the chicken breasts in a large pan, add water to cover, and bring to a boil. Lower the heat and simmer for 15 to 20 minutes or until the chicken is
cooked. Remove the chicken from the pan and let it cool a little. Using two forks, shred the chicken into small pieces. Set it aside. 3. Chop the onion finely and crush the garlic. Heat the oil in a frying pan, add the onion and
garlic and fry over a low heat for about 5 minutes, or until the onion has softened but not colored. Add the shredded chicken, with salt and pepper to taste. Mix well, remove from the heat, and stir in the feta. 4. Before they can be rolled,

Secure with a toothpick, immediately cover the roll with plastic wrap to prevent the tortilla fry drying out and splitting. Fill and roll the remaining tortillas in the same way. 6. Pour oil into a frying pan to a depth of 1 inch. Heat it until
a small cube of bread, added to the oil, rises to the surface and bubbles at the edges before turning golden. Remove the toothpicks, then add the flautas to the pan, a few at a time. 7. Fry the flautas for 2 to 3 minutes until golden, turning frequently. Drain on paper towels and serve at once, with the salsa.

Here’s a look at some that helped to shape the world in June 1925. • Twenty-one-year-old New York Yankee Lou Gehrig is inserted as a pinch hitter for Pee-Wee Wanninger in a game versus the Washington Senators on June 1. Gehrig’s appearance begins what would become a streak of 2,130 consecutive games played. • An Independence Tribunal orders the closure of Turkey’s Progressive Republican Party on June 3. The order is issued on the grounds that the party had supported the protection of Islamic religious customs
that had spurred the Sheikh Said rebellion. • The Rentenmark becomes obsolete in Germany on June 5. The currency had initially been issued in 1923 to combat hyperinflation in the Weimar Republic. The Reichsmark replaced the Rentenmark. • Walter P. Chrysler incorporates the Chrysler Corporation on June 6 after acquiring the assets of the defunct Maxwell Motor Company. • Norway sends out two planes to search for Roald Amundsen and his crew on June 6. The explorers had been on the North Pole seaplane expedition but were missing for two weeks before the planes were sent. Amundsen and his crew
would land safely in Norway on June 16. • On June 7, the BeaumontHamel Newfoundland Memorial is unveiled on the grounds where the Battle of the Somme had taken place in France in July 1916. • Seventeen people are killed as a result of a coal mine explosion in Sturgis, Kentucky, on June 8. • Eddie Gaedel is born in Chicago on June 8. Despite his career lasting just a single plate appearance, the 3-foot-7 Gaedel is remembered as the shortest player in Major League Baseball History. • Various churches merge to form the United Church of Canada on June 10. The merger takes place during
a meeting of church leaders and representatives at the Mutual Street Arena in Toronto, and the Church of Canada immediately becomes the largest Protestant denomination in the country. • On June 11, the Republic of China agrees to assist the Empire of Japan and Japanese soldiers with the removal of Korean immigrants from China’s northeastern provinces, where Korean independence agitators had established a foothold. • The Southern Branch of the University of California, now known as the University of California, Los Angeles, awards its first Bachelor of Arts degrees on June 12. This French pastry is sweet and satisfying
An éclair is a delicious French dessert comprised of an eggy but airy pastry traditionally filled with custard and topped with a chocolate glaze. Éclairs Makes 9 Choux pastry 1 cup water 1⁄2 cup butter 1 cup all-purpose flour 1⁄4 teaspoon salt 4 large eggs Filling 21⁄2 cups cold milk 1 5-ounce package instant vanilla pudding mix 1 cup heavy cream 1⁄4 cup confectioners’ sugar 1 teaspoon vanilla extract Icing 2 1-ounce squares semisweet chocolate 2 tablespoons butter 1 cup confectioners’ sugar 1 teaspoon vanilla extract 3tablespoons hot water Preheat the oven to 450 F. Grease a cookie sheet; set aside. Make choux pastry: Combine water and butter in a medium pot. Bring to a boil, stirring until butter melts completely. Reduce heat to low; add flour and salt. Stir
vigorously until mixture leaves the sides of the pan and begins to form a stiff ball. Remove from heat and let cool 10 minutes. Add eggs, one at a time, beating well after each addition until incorporated. Using a spoon or pastry bag fitted with a No. 10 or larger tip, spoon or pipe dough onto the prepared cookie sheet in
11⁄2 x 4-inch strips. Bake in the preheated oven for 15 minutes. Reduce heat to 325 F and continue baking until the bottoms sound hollow when lightly tapped, about 20 more minutes. Poke a small hole in each éclair to release steam. Cool completely on a wire rack. Make filling; combine milk and
pudding mix in a medium bowl according to package directions. Beat heavy cream with an electric mixer in a separate medium bowl until soft peaks form. Beat in confectioners’ sugar and vanilla. Fold whipped cream into pudding. Cut tops off of cooled pastry shells with a sharp knife. Fill shells with pudding mixture and replace tops. Make icing: Melt chocolate and butter in a medium saucepan over low heat. Stir in confectioners’ sugar and vanilla. Stir in hot water, 1 tablespoon at a time, until icing is smooth and has reached desired consistency. Remove from heat and cool slightly. Drizzle chocolate icing over filled éclairs. Store in the refrigerator until serving.
