The origins of Christmas caroling
The festive nature of the holiday season makes it an ideal time to sing, especially in groups. Perhaps it’s no surprise then that caroling, a tradition that dates back many centuries, ultimately collided with
Christmas. Caroling and Christmas caroling are two different things. According to History.org, the origins of modern Christmas caroling can be traced to wassailing, a term that
has evolved for more than a millenium. What started as a simple greeting gradually became part of a toast made during ritualized drinking. Time magazine notes that the word “wassail,” which
appeared in English literature as early as the eighth century, eventually came to mean the wishing of good fortune on one’s neighbors, though no one can say for certain when this particular development occurred. During medieval times, farmers in certain parts of Britain would
drink a beverage to toast the health of their crops and encourage the fertility of their animals. By 1600, farmers in some parts of Britain were still engaging in this ritual, and some were by now taking a wassail bowl filled with a toasting beverage around the streets. These wassailers would stop by neighboring homes and offer a warm drink, all the while wishing good fortune on their neighbors. During this period, wassailing had nothing to do with Christmas, but that began to change in Victorian England, when Christmas became
more commercialized and popular. It was during this time when publishers began circulating carols, forever linking the tradition of wassailing with Christmas. Christmas caroling as Victorian Englanders knew it might have fallen by the wayside. But while carolers may no longer go doorto-door singing Christmas songs and wishing their neighbors good fortune, those intent on seeing the modern manifestation of this tradition that dates back more than a millenium may be able to find some carolers at their local mall or church.

14 facts about the winter solstice
The winter solstice occurs each year during the month of December in the northern hemisphere. In 2023, the winter solstice will take place on December 21. Solstices are significant events that occur twice per year. One occurs in the winter and one in the summer. The winter solstice also is known as the first day of winter and occurs when the Earth’s pole reaches its maximum tilt away from the sun. During the winter solstice, people will experience the shortest period of daylight and the longest period of nighttime of the year. Here are 14 fascinating facts about the winter solstice. 1. Depending on the hemisphere, the north or south pole will experience continuous darkness or twilight around its winter solstice. 2. The winter solstice sometimes is referred to by the term midwinter. 3. Even though the solstice is marked by a whole day on the calendar, it actually is just the brief moment of time when the sun is exactly over the Tropic of Capricorn. 4. The word “solstice” can be translated from Latin and means “sun stand still.” 5. The Tropic of Capricorn is located at 23.5 degrees south of the equator. 6. Tourists flock to Stonehenge to track the movement of the sun. The stones will frame the sunset on the winter solstice and the sunrise on the summer solstice. 7. Ancient cultures viewed the winter solstice as a time of death and rebirth. 8. Important events in history have taken place on winter solstices. The Apollo 8 spacecraft launched on the solstice in 1968. Pilgrims also arrived at Plymouth on the winter solstice in 1620. 9. Each planet in the Earth’s solar system has its own solstices and equinoxes. 10. The southern hemisphere experiences the winter solstice in June each year. 11. A full moon on a solstice is even more rare than a blue moon. The last full moon to occur on the winter solstice was in 2010 and the next one won’t happen until 2094. 12. Earth is closer to the sun around the winter solstice in December. However, the northern hemisphere receives less sunlight and has cooler temperatures because it is tilted away from the sun during winter. 13. Even though the winter solstice features the shortest amount of daylight of any day during the year, it does not have the earliest sunset. That takes place roughly two weeks prior. In 2021 in New York, the winter solstice took place on December 21, but the earliest sunset occurred on December 7 at 4:28 p.m. 14. Meteorological winter begins on December 1 rather than December 21. The origins of “The 12 Days of Christmas”
Christmas carols can be heard far and wide from Thanksgiving weekend through Christmas Day. “The 12 Days of Christmas” is one of the most recognizable carols, and for good reason, as the popular song can trace its history back several centuries. Researchers have traced the earliest printed version of the poem on which the song is based all the way back to 1780. That’s three years before the signing of the Treaty of Paris, which officially ended the American Revolutionary War. The song has long been suspected to have been a way for Catholics in Britain to teach their children the catechism, as the 1700s was a controversial period for Catholicism in the country. However, no documentary evidence exists in support of that theory, and many historians feel it is inaccurate. Others indicate that, while 1780 is likely the first time the poem was printed, the poem is likely much older than that, with origins potentially in France or Scotland. What is known is that the version many people recognize today, namely in song form, can be traced to the early twentieth century, when English singer and composer Frederic Austin first popularized the melody for the song. Austin performed that version of the song beginning in 1905, and it was first published in 1909.

Feed a crowd this holiday season
Is there anything better than friends and family gathering around the table to partake in a holiday meal? Even though gifts may get the most fanfare, it’s often around the holiday dinner table where the most lasting memories are made and shared. Come the holiday season, chances are you’ll need to plan meals that can accommodate a few extra people who will be seated at the dinner table. Certain meals are tailor-made to feed a crowd, and utilizing recipes that can be prepared in a slow cooker allows cooks to free up time to handle other tasks while waiting for guests to arrive. Enjoy this recipe for “Stuffed Chicken Breasts” from “Crock*Pot 365 Year-Round Recipes” (Publications International, Ltd) by the Crock*Pot Kitchens. Multiply the recipe as needed for the number of guests. Stuffed Chicken Breasts Serves 6 6 boneless, skinless chicken breasts 8 ounces feta cheese, crumbled 3 cups chopped fresh spinach leaves 1⁄3 cup oil-packed sun-dried tomatoes, drained and chopped 1 teaspoon minced lemon peel 1 teaspoon dried basil, oregano or mint 1⁄2 teaspoon garlic powder Freshly ground black pepper, to taste 1 can (15 ounces) diced tomatoes, undrained 1⁄2 cup all-cured olives (If using pitted olives, add to the slow cooker in the final hour of cooking.) 1. Place chicken breast between 2 pieces of plastic wrap. Using tenderizer mallet or back of skillet, pound breast until about 1⁄4-inch thick. Repeat with remaining chicken. 2. Combine feta, spinach, sundried tomatoes, lemon peel, basil, garlic powder, and pepper in a medium bowl. 3. Lay pounded chicken, smooth side down, on work surface. Place about 2 tablespoons feta mixture on wide end of breast. Roll tightly. Repeat with remaining chicken. 4. Place rolled chicken, seam side down, in slow cooker. Top with diced tomatoes with juice and olives. Cover; cook on low 51⁄2 to 6 hours or on high 4 hours. Serve with polenta.
