Delicious desserts certainly are the cornerstones
of the holiday season. This is a time of year to indulge a little more, with cookies in break rooms at places of employment and cakes on the tables at family gatherings. Decadent and mouthwatering, cheesecake is a dessert table staple. Everyone has a favorite cheesecake variety, and bakeries fill their display cases with plain or fruittopped cheesecake offerings. Although making a cheesecake is a labor of love, the results often are well worth the effort.
This recipe for “Amaretti Cheesecake” from “Cooking Light: Dinner’s Ready” (Oxmoor House) by The Cooking Light Editors utilizes a slow cooker to help make this cheesecake perfection. Amaretti Cheesecake Serves 10 Crust: 2⁄3 cup amaretti cookie crumbs (about 16 cookies) 2 tablespoons butter, melted 1 tablespoon sugar Cooking spray Filling: 2 (8-ounce) blocks fat-free cream cheese, softened and divided 1 (8-ounce) block 1⁄3-lessfat cream cheese, softened 2⁄3 cup sugar 1 tablespoon all-purpose flour 2 large eggs 3⁄4 teaspoon almond extract Raspberries, optional 1. To prepare crust, combine the first three ingredients, tossing with a fork until moist and crumbly. Gently press mixture into the bottom of a 7-inch springform pan coating with cooking spray.

Preheat the oven to 450 F. Pat the chicken dry and fill with the pierced whole lemon, thyme and rosemary. Tie the legs up. Dress the bulbs of garlic with EVOO; season with salt and pepper. Arrange the garlic in the baking
dish around the chicken. Rub the skin of the chicken with butter and season with pepper. Pour the wine into the bottom of the dish. Roast the chicken for 1 hour or until an instantread thermometer inserted into the thickest part of the dark meat reads 165 F. Let the chicken stand for a few minutes on a carving board until just cool enough to handle. Carve the chicken, dividing the white and dark parts and slicing the breast meat on the bias. Arrange the
chicken on plates or a platter and top with drippings, juices and the juice from the remaining halved lemon. The garlic may get dark but it won’t be charred. Serve in the skins or squeeze the paste from the skins with your knife and pass with a spoon to eat with the chicken or to slather on the warm chunks of bread.

What the nutrients found in many fruits and vegetables do for your body A nutritious diet can serve as a strong foundation for a long, healthy life. Studies also have linked fiber-rich foods with heart-friendly outcomes like reduced inflammation and lower cholesterol. • Magnesium: The Mayo Clinic reports that magnesium supports muscle and nerve function and energy production. Individuals with chronically low levels of magnesium could be at increased risk for high blood pressure, heart disease, type 2 diabetes, and osteoporosis. The NIH notes that magnesium is widely distributed in plants. That means it can be found in a wide variety of fruits and vegetables, including spinach, edamame, black beans, bananas, and broccoli. Magnesium levels vary significantly in these foods, so anyone concerned about magnesium deficiency can speak with their physicians about the best and healthiest ways to include more in their diets. • Vitamin A: According to the Harvard T.H. Chan School of Public Health, vitamin A stimulates the production and activity of white blood cells, helps maintain healthy cells that line the body’s interior surfaces and regulates cell growth and division necessary for reproduction. Green, leafy vegetables are good sources of vitamin A, as are orange and yellow vegetables like carrots and squash. Vitamin A also can be found in cantaloupe, apricots and mangos. • Potassium: The Dietary Guidelines for Americans established by the United States Department of Agriculture list beat greens, lima beans, swiss chard, baked potatoes (with skin), and yams as great sources of potassium. Kiwi, melon, cantaloupe, and bananas are additional sources of potassium. The T.H. Chan School of Public Health reports that the main role of potassium in the body is to help maintain normal levels of fluid inside the cells. Potassium also supports a normal blood pressure. 34 million poinsettia plants are sold in a given season. Indigenous to Central America, the plant was introduced to North America in the 1820s when Joel Roberts Poinsett, the first United States Minister to Mexico, brought the redand-green plant back with him from a trip abroad. While millions of poinsettias will be purchased for the holiday season, many mistakenly think their utility ends once New Year’s Day has come and gone. But with proper care poinsettia plants can continue to thrive and bring warmth and beauty to a home long after the holiday decorations have been tucked away. • Choose a hearty plant. Experts with the University of Vermont Extension Department of Plant and Soil Science say that many people mistake the plant’s leaves for its flowers. The red, white or pink bracts are actually modified leaves. The flowers of the plant are the yellow clustered buds in the center called “cyathia.” Choose poinsettia plants that have buds which are, ideally, not yet open. • Keep the temperature consistent. Poinsettias prefer a room temperature between 60 and 68 F during the day and 10
degrees cooler at night. Humidity levels between 20 and 50 percent are ideal. Group plants on water-filled trays full of pebbles to help increase humidity levels. • Place near sunlight. The United Kingdom-based Perrywood floral company advises placing poinsettia plants near a bright windowsill but not in direct sunlight. Do not let a poinsettia touch cold window panes. • Avoid drafts. The plants are sensitive to drafts and changes in temperature. So it’s best to keep poinsettias away from drafty doors, windows, radiators, or fireplaces. • Don’t drown the roots. Wait until the surface of the compost dries out before watering the plant anew. Also, the decorative foil wrapper that covers pots can trap water and lead to root rot. Remove it or poke holes in the bottom to allow for drainage. • Cut back plants. Come mid-March, cut back the plant by half to encourage new shoots, suggests the University of Illinois Extension. The plants also can be placed outside in the spring after the risk of frost has passed. Bring poinsettias back in around mid-September to early October to force them to bloom again.
