Cranberry sauce is a common accompaniment to turkey and other foods during the holiday season. It adds a refreshingly tart, yet sweet flavor to foods, and there’s no shortage of ways to utilize cranberry sauce. Individuals may be quick to grab a can of prepared cranberry sauce for their meals, but it’s easy to whip up a batch of this beloved side with very little effort.
The result is a cranberry sauce that is fresh and flavorful and does not feature the gelatinous consistency of some canned varieties. Ocean Spray, one of the leading providers of cranberry products, offers its “Fresh Cranberry Sauce” recipe. Fresh Cranberry Sauce Yields 21⁄4 cups 1 cup sugar 1 cup water 1 12-ounce package Ocean Spray® Fresh or Frozen Cranberries Combine sugar and water
in a medium saucepan. Bring to boil; add cranberries, return to boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Cover and cool completely at room temperature. Opportunities to entertain or visit with family and friends abound during the holiday season. Dessert is always a big hit during festive occasions, and the following recipe for “Pear and Chocolate Frangipane Tart” melds many popular flavors. Frangipane is an almond-flavored cream. In this recipe from “Chocolate: Deliciously Indulgent Recipes for Chocolate Lovers” (Ryland, Peters & Small) by Maxine Clark, it is paired with decadent chocolate and sweet pears.
4 medium, firm pears, unpeeled 2⁄3 cup seedless raspberry jam 2 tablespoons Ruby Port Toasted shredded or silvered almonds, to scatter (optional) Pastry 2cups all-purpose flour 1teaspoon salt 1stick (8 tablespoons) unsalted butter, softened 1large egg yolk 21⁄2to 3 tablespoons chilled water Chocolate Frangipane Filling 61⁄2 tablespoons unsalted butter, softened
1⁄2 cup granulated sugar 2 eggs, beaten 1 to 2 tablespoons chocolate liqueur 2⁄3 cup ground almonds 2tablespoons unsweetened cocoa To make the pastry, sift the flour and salt onto a sheet of waxed paper. Put the butter and egg yolk in a food processor and blend until smooth. Add the chilled water and blend again. Pour in the dry ingredients and blend until just combined. Turn out onto a lightly floured work surface and knead gently until smooth. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes. Bring to room temperature before rolling out. To make the chocolate frangipane filling, put the butter in a large bowl and beat with an electric mixer until creamy. Gradually add the sugar and beat until pale and fluffy. Gradually beat in the eggs and the chocolate liqueur, then stir in the ground almonds and the cocoa. Cover and set aside. Roll out the pastry on a lightly floured work surface and use to line the tart pan. Prick the pastry all over with a fork and refrigerate until firm. Preheat the oven to 400 F, and put a heavy baking sheet on the middle shelf. Spread the chocolate frangipane evenly over the chilled pastry crust. Halve the pears and scoop out the cores. Cut each half into thirds and arrange them randomly over the chocolate frangipane. Transfer the tart to the preheated baking sheet and bake for 10-15 minutes, or until the pastry starts to brown. Reduce the oven temperature to 350 F and bake for a further 15-20 minutes or until the pears are tender and the frangipane is set. Remove from the oven and transfer to a wire rack to cool. About 20 minutes before serving, melt the jam with the port in a small pan and boil for 1 minute to make a glaze. Remove the tart from the pan, brush with the glaze, scatter with the almonds, if using, and serve at room temperature — never chilled — with cream, if using.

El niño winter: What does it mean?
Meteorologists are saying with some confidence that people should prepare for an El Niño winter in 2023-2024. Late summer water temperatures indicated a strengthening El Niño event. Many have heard of El Niño, but may not entirely understand what it signifies. According to the National Ocean Service, El Niño and La Niña are climate patterns in the Pacific Ocean that can affect weather worldwide. Typically, these weather patterns last nine to 12 months, but sometimes can last for years. The weather events occur every two to seven years, but not on a regular schedule. El Niño is more common than La Niña. The National Oceanic and Atmospheric Administration (NOAA) notes that, during normal Pacific ocean conditions, trade winds blow west along the equator, moving warm water from South America toward Asia. Cold water rises from the depths to replace that warm water. During El Niño, trade winds weaken and warm water is pushed east toward the west coast of the Americas. South American fishermen are credited with discovering El Niño in the 1600s. They named it “El Niño de Navidad” because it typically peaks around December. During an El Niño, weather is affected, says the NOAA. Areas in the northern United States and Canada are dryer and warmer than usual, but the Gulf Coast and Southeast experience wetter conditions with more flooding. La Niña has the opposite effect, with stronger trade winds that push more warm water towards Asia, and the cold waters in the Pacific push the jet stream northward. This causes drought in the southern U.S. and heavy rains and flooding in the Pacific Northwest and Canada. During a La Niña year, winter temperatures are warmer than normal in the South and cooler than normal in the North. However, all of these factors also are affected by the patterns’ degree of severity. Fox Weather says strong El Niños produce warm signals across much of the Lower 48, while more moderate events can lead to warmth or extreme cold. Weaker El Niños tend to produce the coldest winters out of the three stages. There hasn’t been an El Niño since the 2018-19 season, which was controlled by a weak El Niño pattern. Change is coming, though the extent of that change remains difficult to predict.

Thanksgiving is a time to gather with family and friends and reflect on one’s blessings. In 2022, Canadian Thanksgiving takes place on October 10, while Americans celebrate on November 24. In anticipation of these holidays, here are some interesting facts about the Thanksgiving celebration. 1. American Thanksgiving is largely modeled on a 17th century harvest feast shared by the English settlers and the Wampanoag tribe. 2. Canadians celebrate Thanksgiving on the second Monday of October. It is based on European harvest festivals. 3. The National Turkey Federation says around 45 million turkeys will be eaten on Thanksgiving, which equates to about 720 million pounds of turkey being consumed (with the average turkey size being 16 pounds). 4. The Butterball hotline answers roughly 100,000 calls every year on its turkey question hotline. 5. In 1953, the Swanson company overestimated the number of frozen turkeys it
would sell for the holiday season by 26 tons. Rather than waste the meat, Swanson sliced it up, repackaged it and created the first frozen TV dinners. 6. Thanksgiving in America may be older than many recognize. While Thanksgiving is largely tied to the 17th century settlers, the National Parks Service says in 1565 Spanish settlers in St. Augustine (now Florida) celebrated by having a meal to which they invited the native Seloy tribe. The Spanish served pork stew, sea biscuits, red wine, and garbanzo beans. Some say the Seloy contributed turkey, venison and maize. 7. Thanksgiving didn’t become a civic holiday until Abraham Lincoln made it one after the Civil War tragedy. Thanksgiving was declared a national holiday on October 20, 1864. 8. The Pilgrims did not refer to themselves as “pilgrims.” They used the word “separatists” as they were separating themselves from a larger belief system. 9. In addition to Canada and the United States, Grenada, Liberia, the Philippines, Saint Lucia, and the Netherlands celebrate their own versions of Thanksgiving. 10. Each year, the American president “pardons” a turkey from slaughter on Thanksgiving. This tradition dates back to when Abraham Lincoln’s son was upset that his family’s turkey that was going to be killed for Thanksgiving dinner. 11. According to the U.S. Calorie Control Council (CCC), an average American may consume 4,500 calories and 229 grams of fat on Thanksgiving Day. 12. The Macy’s Thanksgiving Day Parade is an annual tradition. People line the parade route in New York City or tune in to watch the parade on television. It originated in 1924 and the famed balloons were added in 1927. 13. Apple pie is the pie of choice for Thanksgiving, even though pumpkin pie is prevalent this time of year.
