Did you know? Dining Out Friday and Saturday night might be the day people most identify as the best night to dine out at a restaurant, but a recent survey found that Sunday reigns supreme among diners. According
to a 2022 survey from Real Research, just under 30 percent of diners said they eat out on Sunday, which makes the first day of the week more preferable than Friday (18.9 percent) and Saturday (15.4 percent). Perhaps more surprisingly, a greater number of respondents indicated they
prefer to dine out on Monday (23 percent) than Friday or Saturday. Despite these preferences, experienced diners know that it’s still wise to book a reservation when dining out on Friday, Saturday and Sunday. Diners might be more likely to find a table without a reservation on Monday.

100 Years Ago This Month: Historical events from November 1923 The month of November has been home to many historical events over the years. Here’s a look at some that helped to shape the world in November 1923. • Industrialist Gustav Krupp von Bohlen und Halbach signs an agreement with the French government while imprisoned on November 1. The agreement establishes conditions under which miners working for Krupp would resume work. Despite the agreement, Krupp remains imprisoned for two more weeks. • Silent film actress Margaret Gibson is arrested on federal blackmail and extortion charges on November 2. The charges are later dropped, though Gibson’s ties to blackmail did not end there. Walton is convicted of corruption and abuse of power charges on November 19. Walton is the first Governor in Oklahoma history to be removed from office. • African American inventor Garrett Morgan is granted a patent for his three-position traffic light on November 20. O’Sullivan’s death comes one day after fellow hunger striker Denny Barry died at a separate prison. • The Army-Navy football game, played before 66,000 fans at the Polo Grounds in New York City on November 24, ends in a 0-0 tie. • The first and thus far only National Football League game in which a team finishes with exactly four points is played on November 25. The Racine Legion of Racine, Wisconsin, overcome a 2-0 halftime deficit to defeat the Chicago Cardinals 10-4. • The German film “The Little Napoleon” is released on November 29, marking the film debut of Marlene Dietrich.

These turkey-cooking tips can calm anyone’s nerves and result in a mouth-watering main course. • Allow ample time for thawing. Some people may not be able to buy a fresh turkey, and millions of individuals purchase frozen turkeys each year. The Food Network says it can take 24 hours per every five pounds to thaw a turkey. Therefore, if you have a 15-pounder, allow for three days for thawing. Always thaw a turkey in a refrigerator. • Get the right size bird. The general rule of thumb is 1 pound (uncooked) to 11⁄2 pounds of turkey per person if you’re buying a whole turkey. Rather than purchasing the largest turkey you can find for a large crowd, consider two smaller turkeys or one turkey and one breast to make cooking more even. Smaller birds are more tender as well. • Adjust the temperature. to 70 percent chocolate, if dipping squares Tempered 61 to 70 percent chocolate for dipping squares, or unsweetened natural cocoa powder for rolling truffles Stir the cream and invert sugar together in a medium saucepan. Scrape the vanilla seeds from the bean into the pan and then add the bean. Bring to a boil over medium heat, remove from the heat, and cover the top of the pan with plastic wrap. When the cream has cooled to room temperature, transfer it to a bowl, cover and refrigerate overnight. Line the bottom and sides of an 8-inch square baking pan with plastic wrap. Put the chocolate in a medium stainless steel bowl and set the bowl over a pot of simmering water. Heat, stirring occasionally, until the chocolate melts and registers 115 F on an instant-read thermometer. Lift the bowl from the pot. When the chocolate is almost at 115 F, remove the cream from the refrigerator. Strain it through a fine-mesh sieve into a small saucepan and heat it to 115 F, stirring occasionally. Pour the chocolate and cream into a 1-quart clear vessel. Blend with an immersion blender using a stirring motion, making sure you reach the bottom of the vessel. The ganache will thicken, becoming slightly less shiny, and develop a pudding-like consistency. Add the butter and incorporate it with the immersion blender. Pour the ganache into the lined pan. Spread it as evenly as possible with a small offset spatula. Allow the ganache to cool at room temperature until it has set, 2 to 4 hours. Cover the pan with plastic wrap and refrigerate until you are ready to dip squares or roll truffles. Lift the square of ganache from the pan, turn it over onto a work surface, and remove the plastic wrap. If you are dipping squares, apply a thin coat of melted untempered chocolate to one side of the ganache square with a small offset spatula. (If you are making truffles, don’t apply the chocolate coating.) Let the chocolate harden. Turn the ganache square over and trim the edges. Cut the ganache into 1-inch squares with a knife dipped in hot water and wiped dry before each cut and wiped clean after each cut. If you are dipping squares, temper the chocolate and then dip the squares. Store the dipped chocolates in a cool, dry place, not in the refrigerator. If you are making truffles, dust your palms with cocoa powder, roll the ganache squares into balls, and then coat with cocoa powder. Place the truffles in a bowl or plastic bag that contains enough cocoa powder to keep them from sticking together. Store in the refrigerator, but remove them 30 minutes before serving.
