Transform salads for fall dining
Who says salads are just for summertime? Now that hot and humid days have given way to the crisp eve-
nings of fall, it’s time to tweak lunch and dinner menus accordingly. Even though soups and stews are the norm this time of year, salads can have their menu moments as well. What better way to usher in fall than with a seasonal staple like apples? Juicy and tart apples add crunch to this spinach-based salad. The
addition of nuts and cheese also enhance the sweet-salty appeal of “Double-Apple Spinach Salad,” while also offering up plenty of fiber, vitamins, minerals and antioxidants. Try this easy recipe, courtesy of “The Mediterranean Diet Cookbook” (Rockridge Press) from the editors of Rockridge University Press.
Double-Apple Spinach Salad Serves 4
1 tablespoon red wine vinegar or apple cider vinegar
8 cups baby spinach 1 medium Granny Smith apple, diced 1 medium red apple, diced 1⁄2 cup toasted walnuts 2 ounces low-fat, sharp white cheddar cheese, cubed 3 tablespoons olive oil
Toss the spinach, apples, walnuts, and cubed cheese together. Lightly drizzle olive oil and vinegar over the top and serve.

Entertaining for the holidays frequently involves welcoming overnight guests. Make-ahead foods, such as scones, can be ideal because they are delicious at room temperature. This recipe for “Lemon-Ginger Scones” from “Simply Scratch” (Avery) by Laurie McNamara produces refreshing flavor in a buttery scone. Serve with tea or coffee and guests will be in heaven.
Lemon-Ginger Scones Makes 8 scones
1⁄2 cup cold heavy cream 2 large eggs 1 teaspoon organic lemon extract 1⁄2 teaspoon pure vanilla extract 21⁄4 cups unbleached all-purpose flour, plus more for dusting 3 tablespoons granulated sugar 1 tablespoon baking powder 1⁄4 teaspoon kosher salt 3⁄4 cup (11⁄2 sticks) ice-cold un-
salted butter, cut into cubes 1⁄4 cup finely diced candied ginger 2 tablespoons grated lemon zest 1⁄4 cup powdered sugar Preheat the oven to 400 F. Line a rimmed baking sheet with a silicone baking mat or parchment paper. In a 2-cup liquid measuring cup, use a fork to beat together the heavy cream, eggs, lemon extract, and vanilla until combined. Chill until ready to use. In a large bowl, combine the flour, sugar, baking powder, and salt. Drop in the ice-cold butter and use a pastry cutter to cut the butter into the flour mixture until it resembles coarse wet sand. Pour in the chilled cream mixture, ginger and lemon zest and use a rubber spatula to stir until just combined. Turn the dough onto a lightly floured work surface and knead it a few times before forming it into a ball. With floured fingers, flatten it out into a 11⁄2-inch-thick round. Cut the round into 8 equal-sized wedges and transfer them to the prepared baking sheet. Bake for 15 to 18 minutes, rotating the baking sheet halfway through baking. Transfer the baked scones to a wire rack to cool. Once the scones have cooled, dust generously with powdered sugar before serving. Country Bounty, October 31, 2023, page 11

Put a twist on the traditional cupcake Cupcakes are diminutive, hand-held treats that come in a variety of flavors and styles. Each December, the humble cupcake gets its own day of celebration (December 15), but people know well that cupcakes are enjoyed throughout the year, particularly during birthdays and other special occasions. It may seem like there is no way to reinvent the cupcake, but “Sticky Cinnamon-Walnut Spirals” marry the best of cinnamon rolls with the convenience of a muffin/cupcake tin preparation to form a flavor-packed product that can either be breakfast, brunch or dessert. Try this recipe, courtesy of “Small Sweet Treats” (Gibbs Smith) by Marguerite Marceau Henderson, to elevate your cupcake game. Sticky Cinnamon-Walnut Spirals Serves 6 1⁄2 cup dried currants 1 cup hot water 1 sheet frozen puff pastry (from 17.3-ounce package), room temperature 1 tablespoon butter, melted 1 teaspoon finely grated orange zest 1⁄2 cup finely chopped walnuts 1⁄2 cup packed dark brown sugar 1 teaspoon ground cinnamon 1 tablespoon butter, melted 1 tablespoon sugar Place currants in a bowl and pour hot water over top to cover. Steep for 15 minutes and then drain off excess water. Cool currants to room temperature. Roll out the pastry on a work surface. Brush the pastry with the melted butter. Combine the orange zest, walnuts, brown sugar, cinnamon, and reserved currants in a bowl. Spread the mixture evenly over the pastry. Roll up jelly-roll style, loosely. Place seam side down and cut into six slices, each about 2-inches wide. Brush the interior of the muffin tin with the remaining tablespoon of melted butter and sprinkle with sugar. Place the cut slices of pastry into each muffin cup. Bake on the middle rack of a preheated 400 F oven for 22 to 25 minutes until golden brown and puffed. Allow to cool for a minute or two before removing from muffin pan. Note: This recipe easily can be doubled. Just use two sheets of pastry, double the filling, and use a 12-cup muffin tin. Indian cuisine offers tasty vegetarian fare
People are embracing vegetarian and vegan lifestyles in large numbers. Individuals have various reasons for skipping meat and animal products, and fortunately there are plenty of recipes that underscore how flavorful such diets can be. Vegetarian cooking long has been a staple in parts of India. “Yogurt Curry with Fried Dumplings” is one of the most famous curries from the state of Uttar Pradesh. It is typically served with rice and hot mango relish. Enjoy this recipe, courtesy of “India’s Vegetarian Cooking” (Kyle Books) by Monisha Bharadwaj. Yogurt Curry With Fried Dumplings (Pakodewali kadhi) Serves 4
1 cup chickpea flour (besan) 1 fresh small green chile, finely chopped 1⁄2 teaspoon turmeric 2 teaspoons sugar Salt, to taste 2 tablespoons, sunflower oil 1 teaspoon cumin seeds 10 black peppercorns 6 cloves 2 tablespoons ghee (optional) 1⁄2 teaspoon chili powder For the dumplings: 1 cup chickpea flour (besan) 1 medium onion, finely chopped Pinch of cumin seeds Sunflower oil for deepfrying 1. Whisk the yogurt with the chickpea flour, green chile, turmeric, sugar, salt, and 11⁄4 cups of cold water. 2. Heat the oil in a heavy pan and add the cumin

seeds, peppercorns, and cloves. 3. Give the yogurt mixture a good blend, ensuring that there are no lumps left, and pour into the pan. Bring to a boil. Reduce the heat and cook, stirring frequently, until the consistency resembles that of a thick gravy and the raw flour aroma has gone. Remove from the heat. 4. For the dumplings, make a thick batter with the chickpea flour, onion, and cumin seeds, and add water as necessary. 5. Heat the oil in a heavy
pan. When it starts smoking, lower the heat and drop in 2 to 3 separate teaspoonfuls of batter at a time. Fry until golden, drain, and dip them into a bowl of water to soften a bit. Remove immediately, squeeze out the water, and add them to the yogurt curry. Make all the dumplings in this manner. 6. Heat the ghee (if using) in a small pan (you could use the hot sunflower oil instead) and add the chili powder. Pour this mixture over the curry at once and serve without stirring.

Spaghetti is a versatile component in many meals
Spaghetti has been enjoyed around the world for centuries. While spaghetti is most often associated with Italy, pasta has deep ties to other Mediterranean nations like Greece, and several territories of the Middle East and Arabian Peninsula. In fact, centuries ago dry durable pasta was one of the main sources of nutrition for Arab traders, including those who landed in Sicily. The flavor profile of spaghetti can change significantly depending on which ingredients are added. Cooks needn’t feel beholden to the standard “spaghetti and meatballs” recipe. “Spaghetti with Shrimp, Feta and Dill,” for example, may take its inspiration from Greek cooking. and Dill Serves 4 12 ounces spaghetti (3⁄4 box) 1⁄4 cup plus 1 tablespoon olive oil 1 pound peeled and deveined large shrimp Kosher salt and black pepper 2 tablespoons fresh lemon juice 1 teaspoon grated lemon zest 3 ounces feta, crumbled (3⁄4 cup) 2 tablespoons coarsely chopped fresh dill Cook the pasta according to the package directions, drain and return it to the pot. Meanwhile, heat 1 tablespoon of the oil in a large skillet over medium-high heat. Season the shrimp with 1⁄2 teaspoon salt and 1⁄4 teaspoon pepper and cook, tossing occasionally, until opaque throughout, 3 to 4 minutes. Stir in the lemon juice and zest. Add the shrimp mixture to the pasta, along with the feta, dill, the remaining 1⁄4 cup of oil, and 1⁄4 teaspoon each salt and pepper. Toss to combine.
