Creating products and experiences from our land makes Shelburne Farms a unique and powerful place for learning. Our working farm is a classroom for curiosity, experimentation, and exploring a more sustainable future together.

Our handcrafted cheddar and pure maple syrup are touchstones of this landscape for learning. They reflect the pastures, Brown Swiss cows, and sugarbush of our Vermont farm.

Shelburne Farms Cheddar

Farmstead cheddar handmade from the raw milk of our Brown Swiss cows.

MONTH OLD

SIX-MONTH

Our youngest, most versatile cheddar has a supple texture and delicate flavor — like fresh cream and buttered toast. Perfect for breakfast with jam, or melted in your favorite dish.

ONE-YEAR | Best in Class at ACS 2025

After aging a year, our cheddar develops a subtle sharpness. Tastes of lush pasture and freshly cut hay give way to a delightful finish. Pair with apples and honey or cured meats.

TWO-YEAR

This extra sharp cheddar will melt in your mouth. Its flavor is classically Vermont — savory with a rich, creamy texture. Great with cider, beer, or with chocolate for dessert.

THREE-YEAR RESERVE

Only a small percentage of our cheddar can meet the taste and texture criteria demanded for three-year. The result is a crumbly, savory cheddar with herbaceous, slightly fruity flavors Enjoy with roasted nuts or full-bodied red wine.

SMOKED

Our award-winning young cheddar is hickory wood-smoked for six hours to give it a subtly sweet, bacon-like flavor. Delicious with cured meats and dried fruit.

CLOTHBOUND

Cheddar wheels bound in cheesecloth, sealed with lard, and cave-aged at the Cellars at Jasper Hill to yield a flaky texture and earthy flavor. Pair with ales, pickles, and mustard.

TRACTOR

A strong-flavored cheddar, never the same twice. Enjoy it any way you like for any occasion.

BEER

Our cheddar curds are marinated in the flagship IPA of local brewery, Fiddlehead, to produce a cheese with flavors akin to sourdough bread topped with cheddar. Pair with IPAs, dry cured salami, and whole grain mustards.

MARSHALL’S RESERVE | NEW

A cave-aged block cheddar aged for a year at the Farm, then 4-5 months at the Cellars at Jasper Hill, for a pliant texture and both savory and citrus flavors. Pair with red Zinfandels, salami, and sourdough.

“ I love the smiles on people’s faces, the curiosity,” says Isaac, who often hosts Meet a Cheesemaker. “I like to ask kids, ‘What do you see in the cheese make room that reminds you of home?’ One kid wondered if the paddled agitator was like a whisk! Our cheese is unique to this farm,” Isaac points out. “The relationship between the land and the cows and the dairy staff is what makes it special. ”

“ I hope people come away with a sense of what a community is,” Sandi (right) says about giving “Sun-toCheese” tours with co-guide Judy. They call themselves “The Cowgirls,” two of a team of four volunteers who have championed these daily tours of dairy farming and cheesemaking. “For me, it’s the care that goes into this operation,” says Judy, “the animals, the pastures, everything. And when I meet up with Sandi at the dairy,” she laughs, “it’s just going to be a good time.”

Our one-year cheddar earned a blue ribbon from the American Cheese Society in 2025, honoring our cheese and dairy teams’ commitment to excellence.

Students at Burlington City & Lake Semester

“ Today was one of the best days!” writes high school student Byron. “We got to learn how to tap a tree and did it with cool tools. This place is magical in the way it turns sap into syrup. It brings out your inner child.” Says another student, Hayden: “This place made learning engaging. I don’t think I could learn about sugaring without the experience I got at Shelburne Farms. Here, I learned from stories.”

“ People are drawn to the sugarhouse, but I like to highlight the special things that happen in the forest year-round. The early sap nourishes new leaves, trees grow and withstand storms and injury, and new seedlings emerge. I love to cross paths with walkers while I’m out there because I get to show them what’s going on in the forest. They’re amazed at this whole separate set of tasks connected to sugaring.”
