Folks looking to play some golf, followed by a big plate of Chicken George, can now do some one-stop shopping. The Candlelight Inn, which has restaurants in Sterling, Rock Falls, and Clinton, Iowa, has opened a site at the Lake Carroll Clubhouse: Candlelight at Lake Carroll. Candlelight Inn owner Matt Prescott, accepted the deal on May 12, and it was formally approved by the Lake Carroll Board of Directors 2 days later. “They came to us and it was a great opportunity,” Prescott said. “They reached out and they were looking for someone to operate the facility. We all say things are turn-key, but there’s nothing that’s turn-key. It just doesn’t work that way, but the infrastructure is there. They’ve done an amazing job with a great facility.”

Candlelight Inn restaurants are known for Chicken George, a recipe developed by a cook at the restaurant in the early 1970s: fresh chicken tenders, hand-battered and deep fried, and served with Jan’s Sauce, a homemade dipping sauce named after Matt’s late mom, who ran the restaurant with her husband, Bob, for nearly 50 years. According to its website, more than 6,000 pounds of the chicken are sold each week to hungry customers. The restaurants also serve steaks, seafood, salads, burgers and pastas. While the Lake Carroll location doesn’t have as big of a menu as the other three Candlelights, the restaurant still offers the best of what the longtime Sauk Valley dining favorite has to offer: appetizers such as onion rings, cheese and meats, pork dippers and more; sandwiches; entrees such as ribeye, fish, pork, pasta, and more; and for those who prefer lighter far, a selection of salads. And, of course, Chicken George will continue to be a staple of the menu.

A Sauk Valley favorite is coming to Lake Carroll, by George! Candelight Inn’s signature dish, Chicken George, is on the menu at the new Candlelight at Lake Carroll, along with sandwiches and other entrees.

“It will be a smaller menu because of the kitchen capabilities,” Prescott said. “With the kitchen being a little smaller in the way it’s set up, we couldn’t run a menu like we run at a Candlelight.” Pizzas will continue to be made at the clubhouse – a menu offering Prescott is learning about on the fly. “That’s the new market for me that I’ve got to figure out,” Prescott said, “but I have an amazing team that will guide me through that and show me how to do that.” There are 15 tables in the restaurant, some others around the bar, as well as outdoor seating. Prescott is hoping to attract not only golfers looking to eat after a round, but Lake Carroll residents in general. “In order to go eat out, you’ve got to go to Shannon, Lanark or some other town,” Prescott said. “Now they can come right on their site.”

Part of its menu became available in early June, with its current lineup of dishes and entrées becoming more wellrounded as the weeks go by. Matt’s parents, Bob and Jan Prescott, opened the first Candlelight Inn in 1967 in downtown Sterling, which has since moved north of town. The Rock Falls location opened in 2004; and the Clinton restaurant, located on the banks of the Mississippi River near the downtown, opened in 2010. Prescott, who also manages bars and banquet facilities in Sterling, Dixon, Rock Falls and Polo, is excited to add new employees to his team. “At the end of the day, taking care of our team is what comes first,” Prescott said. “If we don’t take care of them, it all falls apart.”

The original Candlelight Inn opened in June 1967 in downtown Sterling, under the ownership of Chuck Sisson, Lyman Prescott and Bob Prescott. Before long, Chuck and Lyman left the business, leaving it in the hands of Bob and his wife, Jan. In 1989, the Sterling restaurant moved to its current location on North Locust Street. A key part of the restaurant’s transformation from local diner to a restaurant staple in Sterling and beyond was its signature dish, Chicken George — strips of fresh chicken, made from the tenderest part of the breast, battered and fried. It gained notoriety before chicken tenders became the now ubiquitous menu item of restaurants and bars everywhere. Like many fortunate “inventions,” it was created on a whim. A cook at Candlelight, George, had been making strips for himself in the early 1970s, but when a customer, Roger Young, was looking for something different to eat, something not on the menu, Bob had George make some of his strips. It didn’t take long for the dish to catch on and the rest is history.

George’s partner on the plate, Jan’s Sauce, came a short time later. Jan first whipped it up in 1971 to complement the regionally renowned Chicken George. In 2004, Bob and Jan’s son, Matt, took a step to expand Candlelight Inn’s footprint by opening a Rock Falls location, followed by one in Clinton, Iowa. All three Sauk Valley sites provide banquet facilities and space for parties and formal occasions. They also cater events. Jan passed away in 2016, and Bob in 2019, but not before they established a work ethic and a commitment to community that still lives on today. Through the Candlelight Gives Back program, the Prescotts have raised money for many local causes, including schools, food pantries, homeless shelters, United Way, CGH Health Foundation, Happy Tails Animal Shelter and Hospice of the Rock River Valley. In 2019, the sports field at Sterling High School’s Roscoe Eades Stadium was renamed the Prescott Memorial Field, in honor of the family long associated with the local restaurant chain and several local businesses that bear the Prescott name. Bob and Jan spent many years serving dinners, drinks and offering a gathering place at their family restaurant to Sterling Golden Warrior and Newman Comet football fans after Friday night games; and the late Dick and Juanita Prescott, owners of Prescott Construction, built homes and businesses for many of those fans. Jim Prescott, the last of the brothers, is an appliance dealer and owner of Jim Prescott’s Barbecue Shop in Sterling. Richard and Juanita started Prescott Construction in 1961. They sponsored the Prescott Dental Clinic, which opened in 1997 and is operated by the Whiteside County Health Department. They also established the Parkway Plaza retirement community in 1986. Richard died in 2017; Juanita preceded him in 2005. “Our original intent was to use the name Candlelight Inn Field,” Matt, said. “When my father passed away, I knew right away we needed to honor him and the Prescott family in some way. Our entire family agreed. Sterling is in our blood,” said the 1992 SHS grad. “It just seemed appropriate.”

ometimes here at Lake Lifestyle, we like to wine and dine our readers. In May’s issue, we covered the dining part with a list of shops where you could sample a slice of or grab a chunk of cheese (inset at left). This month, we’re focusing on the wine part as we present you with the perfect pairing for a list of cheese shops: a list of wine shops. If you’re looking to please your palate with some flavor notes that’ll have your taste buds singing a happy tune, there are a number of wineries in the area where vintners turn the fruits of their labor into fine wines. According the Illinois Grape Growers and Vintners Alliance, the state is home to 165 wineries and tasting rooms. The following list features just a few of them that are about an hour’s drive from Lake Carroll — and there are plenty more throughout the state. The closest winery to Lake Carroll had been Silver Moon Winery, which lies just outside of the community on Zier Road. However, it closed a couple of years ago and is looking for a new owner (Interested? Details can be found in its real estate listing on page 37). So although the drive to a winery may be a little longer, be sure to add in some more fun along the way with visits to other attractions the area has to offer. Another regional winery, Famous Fossil in rural Cedarville, closed this past spring. Future plans for the property are expected to be announced later this summer, according to the Famous Fossil Facebook page. So, if you fancy yourself an oenophile, or you just enjoy a glass of wine from time to time, check out the shops on the following pages. Many of them also distribute their products to area stores.

Here are some tips, courtesy of WineFolly.com, a website devoted to wine knowledge and appreciation Pair wines and cheeses with equal intensity. This tip is the most important takeaway for creating your own pairings. The delicate flavors of Gruyère would be overwhelmed by a big, bold Cabernet Sauvignon, but are perfectly balanced when paired alongside a Pinot Noir. As a general rule: Wines over 14.5% ABV (alcohol by volume) are more intense and taste better with more intensely flavored cheeses. Wines under 12% ABV are less intense and match nicely with more delicately flavored cheeses.

Bold red wines pair best with aged cheeses. As cheese ages and loses water-content, it becomes richer in flavor with its increased fat content. These two attributes are ideal for matching bold red wines because the fat content in the cheese counteracts the high-tannins in the wine. For the best results, select cheeses aged at least a year, including Cheddar, Gruyère, Manchego, Gouda, Provolone, or Parmesan-style varieties like Parmigiano-Reggiano and Grana Padano.

Match super funky cheeses with sweeter wines. Sweeter wines such as Moscato, Gewürztraminer, Late Harvest dessert wines, and Port match wonderfully with stinky, washed-rind, and blue-veined cheeses. Why? The sweetness in the wine helps balance the “funk” in the cheese and makes it taste creamier. Also, the “stink” of

the cheese will help balance the sweet taste of the wine. Two classic pairings you must try if you like funky cheeses are Port with Stilton and Sauternes with Roquefort. Delicious!

Sparkling wines are incredible with soft, creamy cheeses. Sparkling wines have high acidity and carbonation, which offer a palatecleansing effect to creamy, sticky cheeses such as Brie, Muenster, Camembert, Cremont, or Époisses de Bourgogne.

Wines and cheeses from the same place pair well together. More often than not, you’ll do well to trust the local traditions and match wines and cheeses from the same region together. A few great examples of this include Sauvignon Blanc with Goat Cheese (Loire Valley, France), Chardonnay with Époisses de Bourgogne (Burgundy, France), and Garnacha with Manchego (Spain).

When in doubt, get a firm, nutty cheese. When serving several wines, and you’re not sure which cheese to pair, one of the safest bets and most popular choices with all styles of wines is a firm, nutty cheese. The cheese will have enough fat to counterbalance tannin in red wine, but enough delicacy to compliment delicate whites. A few examples include Swiss, Gruyère, Abbaye de Belloc, Comté Extra, Emmental, and Gouda.

Welch knows how valuable people’s time can be, so she helps them get the most out of their day by getting the most out of their meals – without having to prepare them themselves. She comes up with a menu for a work week’s worth of meals – breakfast and lunch, five each – and preps the meals for pick-up. The prepared meals come frozen, unless it is a salad. Each container has a label on it with the food’s name, ingredients and important nutritional information, including macros – proteins, carbohydrates and fats, which are considered the more important components of nutritional value that “bodies need every day,” Welch said. “A lot of people aren’t sure what macros are, and it doesn’t matter if you’re looking to lose weight or you just want that convenience,” she added. “The meals will satisfy both of those needs, but for those who are looking to lose weight, each meal has the amount of proteins, carbs and fats on there.” Each week consists of five different breakfast options and five different lunch options. One week in June featured lunch offerings of orange chicken, pulled pork potatoes, chicken Alfredo, “cheesy broc” Hamburger Helper and smothered chicken. Welch likes to mix things up, offering a wide variety of meals that rotate in and out each week, and she knows what dishes are the most popular. She’ll sometimes work into the night putting together menu ideas. The top breakfasts are power cakes, which are pancake sandwiches with a sausage and egg, and a blueberry or strawberry protein waffle; instead of using syrup, it’s made with a fruit puree that doesn’t contain a lot of sugar. The unrolled chicken Verde enchilada and lasagna are two popular lunch items. “You’re not getting all of those carbs because I use something different than a noodle to do my layers,” Welch said. Meals generally come in single-portion sizes, but there are larger sizes for those who need a bigger serving — family-size portions for example. Each bowl is portion controlled, which is key to the program’s success. Without that control, it can be easy to overeat, especially if one doesn’t understand how a macro-friendly diet works.

ore than 4,300 miles separate Lake Carroll from Luxembourg, but you don’t need a plane ticket to experience what life is like in the little landlocked European nation. You just need a tank of gas. St. Donatus, Iowa, (pronounced ‘Doe-nay-tus’) is like a little slice of Europe just across the Mississippi River in eastern Iowa, about an hour’s drive from Lake Carroll. In fact, it’s actually known as a Luxembourg village, and for good reason: It’s got a lot in common with the country whose heritage calls it home, and is populated mostly by descendants of immigrants from Luxembourg.

While the country of Luxembourg is surrounded by France, Belgium and Germany, the city of St. Donatus is surrounded by miles of countryside in The Hawkeye State. But the similarities between the village and the Luxembourg far outweigh the differences. Both are small. At just under 1,000 square miles, Luxembourg is one of the smallest sovereign states in Europe. In St. Donatus, only about 120 people call it home, but they manage to pack a lot of Luxembourg into their tiny town. Coming into St. Donatus from the south, travelers will know they’re getting close to the community when they see a set of twin church spires on the left side of the road (see photo on page 28); those are from St. John’s Lutheran Church, which was established in 1919 on a hill overlooking the community. That’s not the only church looming over St. Donatus – the place of worship boasting the same name of the community is on the opposite end of town.

From the front doors of both St. John’s Lutheran and St. Donatus Catholic churches, one can see the other, separated by about 4,500 feet with a clear view of the community and the surrounding countryside. The Catholic church predates the Lutheran church by about 75 years, and is where much of the community’s history is rooted.

History St. Donatus is the patron catacomb saint of safety from lightning strikes, a designation established toward the end of his life in the 2nd century. The former Donatus of Muenstereifel rose through the ranks of the military of the Roman Empire and eventually became a bodyguard to Emperor Marcus Aurelius in the 170s. In 173, Donatus led a unit to fight Germanic tribes along the Danube River. The commonly told tale is that the Romans were surrounded and cut off from water and supplies for days. Donatus’ pagan Romans pleaded with their gods for relief, but nothing happened.

Then he finally got all of his Christian soldiers together and prayed; a storm blew in and the Romans captured all the water they needed. Then lightning struck the German camp, and the Donatus’ men chased the tribes back across the river. There was one big issue with that, however: the Roman Empire was persecuting Christians during this time and being exposed as one ultimately led to Donatus’ execution. St. Donatus’ story was told for generations in central European Christianity lore, and it is history and heritage that John Noel and his two brothers brought with them to America from Luxembourg. The Noels made a home in an area that looked similar to their home country. Eastern Iowa’s hills and bluffs, which, along with Illinois’ on the opposite side of the Mississippi River, formed as a result of ice age glaciers. Other Luxembourgers soon followed, and in 1846, Peter Gehlen arrived and founded the village of St. Donatus.

Sites Early settlers built log cabins until they had collected enough limestone to build more permanent structures. Gehlen built a large limestone house and barn in the late 1840s that served as his private residence, as well as a post office, store, hotel and saloon. The building remains as the Gehlen House Inn, and rooms continue to be available for overnight stays. The inn site is also home to what is claimed to be Iowa’s oldest barn. The limestone structure recently had an interior makeover and is both a banquet facility and a bar. The barn also hosts performances from local musicians. Across the street is another longtime business, owned by the Kalmes family for more than 160 years. Peter Kalmes started a bar in the early 1850s, and gas pumps were added in 1933. A general store was added in 1942, and dining rooms in 1982 and again in 1995. The bar, restaurant, and store remain, and people can still fill up their tanks. The restaurant serves typical American fare, but also has a few popular Luxembourg dishes. The tender Luxembourg ground steak is topped with cream of mushroom, stuffed with onion strings, and served with a roll, trip to the salad bar (when open) and choice of noodles or potato. ner calories than a climb up some stairs to the front door of St. Donatus Catholic Church? The church was established in 1848 and the current framework of the church was built in 1860. A fire in 1908 took down most of the church, but it was rebuilt and reinforced with concrete. The Way of the Cross trail is near the cemetery behind the church. Each of the 14 brick stations along the inclined trail contain an original lithographic print of Jesus Christ. The Pieta Chapel, the final point on the trail, contains a statue of the pietà, portraying Mary cradling her son on her lap after the crucifixion. A couple of days to keep in mind if you make the trip: National Luxembourg Day is a popular event in St. Donatus when the city celebrates its heritage every June 23, or a day close to it if the 23rd falls on a weekend. There’s also Sorghum Fest the last Saturday in September, featuring demonstrations on making syrup from sorghum. While it may be small, St. Donatus is big on charm, with its historic architecture surrounded by beautiful countryside. That, and the scenery you’ll see on the drive there along winding country roads — crossing the Mississippi River and being greeted by lush, rolling hills — make it worth a day trip to the “old country” in Iowa, where the quaint village lives up to the national motto of Luxembourg: Mir wëlle bleiwe wat mir sinn — “We want to remain what we are.”

Lake Carroll residents are used to looking around and seeing a menagerie of Mother Nature’s children from afar — deer roaming, squirrels skittering, raccoons waddling, birds soaring – it’s just one of the benefits of living in the lakeside community in the heart of the country. But they don’t really get to know their natural neighbors, not up close anyway – and you can bet they don’t see any alpacas or llamas wandering around the grounds. They did last month, though, when a petting zoo came to visit. The pet project was put on by P&C Little Rascals, a Chadwick-based petting zoo, and the Carroll County Farm Bureau at Plumtree Lodge on June 12, bringing a slice of the farm to folks on the lake. There were chickens and sheep and goats, oh my! And that wasn’t all. Guests got to see a pint-size cow, an alpaca, a llama,

bunnies, and more — and they had some of them eating right out of their hands. This was P&C’s first time setting up at the lake. “We’ve been to a few places where people didn’t know what a llama was, or what an alpaca was,” said Chris McCauley who owns the business with Paula Adams. “They say there’s no difference between a llama and an alpaca, but there’s a big difference, so we’ll explain it to them.” The llamas were a big hit with the crowds. “Llamas seem to be the thing that’s attracting kids right now,” Adams said. The Farm Bureau brought an angus calf and a mock moo-er to show people what it’s like to milk a cow. P&C travels throughout northern Illinois to educate people of all ages about their animals.
