How does that work? Well, the two words go hand in hand — just like the couples who call the lake their home. Some of them have fallen in love here, while others were struck by cupid’s arrow before they came to the lake. They’ve laughed here, dreamed here, made friends here, and made memories here. And they’ve all loved being at the lake. Gregory Godek is a best-selling author of books on love and relationships, among them: “1,001 Ways To Be Romantic,” and “10,000 Ways To Say I Love You.” But he might want to add one more item to his long lists: Move to Lake Carroll. The lake has been the backdrop to a lot of love stories, some whose first chapter was written here. So, what better time to celebrate love at the lake than February, when Valentine’s Day reminds us that all we need is love? We recently asked lake residents to share their stories of love and life on the lake. We hope you enjoy them — and if they get you in the mood for love, don’t forget that Saturday, Feb. 19, is the Sweetheart Dance at Plumtree Lodge, organized by Lake Carroll’s Women’s Club (More information was still to come as of press time. Kari Wolfe, activities and events coordinator, said residents should “keep an eye out in our E-Blasts for more information”). The event is part of the yearlong celebration of Lake Carroll’s 50th anniversary. Who knows, the dance might just end up being the first chapter of a whole new love story.

In the meadow we can build a snowman, then pretend that he is Parson Brown. He’ll say: are you married? We’ll say: no, man ... But John and Kathy Olson (at left in the mid 1980s) would bein in 1992. “We both have great memories of growing up going to the lake,” Kathy said. he year was 1984. My parents had finally built their dream home at Lake Carroll in Section 4, right next door to the Olson family, which consisted of five boys and one girl. Albeit, our house was done over the summer, it wasn’t until that Labor Day that I finally met the Olson boys. Jerrold, who did construction work, was over talking to my dad about some

work. He offered to take me over to meet his brothers, which I took him up on. The youngest brother was John, who was a year older than me. They were all going to the Shannon Homecoming Fair that evening and invited me to go along, which I did.

The majority of our dating happened at the lake. I was 18 and John was 19 when we first met that September of 1984. We enjoyed bonfires, boating, snow and water skiing, snowmobiling or just hanging out in the swimming cove with our family and friends — there wasn’t a season that we weren’t there. Through our conversation, we discovered that we both were going to Northern Illinois University. Ironically, our dorm rooms were in the same hall, same room, three floors apart. Needless to say, we started dating and will celebrate our 30th wedding anniversary in May. Additionally, the Olson family purchased their lots in October 1972 and were some of the first owners at the lake. My family purchased their first lot in January 1973. We are pretty sure our paths crossed in the campground that was located across from where Trailside is now. We both have great memories of grow-

ing up going to the lake on weekends. We both saw the lake fill with water as young kids. Both our families had a lot of shenanigans out there during the years. The Olsons participated in a lot of the hey day of lodge, while my family kept more to our camper SUBMIT TED PH and property. OTOS My older sister so loved the area, that she and her husband ultimately purchased 5 acres surrounding the Shannon Cemetery, where they now have since retired many years ago. Our memories run deep and wide from our part-time life at the lake. Our families no longer have their homes in Section 4; however, John and I now have our lot, and are full circle back in the campground, continuing to create new, fun Lake Carroll memories with John’s family, who continues to also enjoy Lake Carroll, and our three kids — all who have loved being third-generation Lake Carrollers and have grown up out here part-timers as well. — Cathy (Bremer) Olson

ittle things really do mean a lot, like packing a lunch for your husband or doing the dishes for your wife. Just ask Cheryl and Duane Torkelson. They’ve shared more than 40 years — 46 come this October — of little things together. A smile, a laugh, puttering in the garden, putting on the course, catching a fish, catching up with friends — they’re the simple things in life but they mean a lot to the couple who’ve built a business, a life, and a family together. The couple started Torkelson Cheese Co., north of Lena, in 1985 and ran it for 39 years, when they sold it to the next generation of the family. Now, they’re enjoying spending more time at the lake, close to their longtime home. “We wanted to stay close to Lena, but wanted more time for us,” Cheryl said. Today, they spend that time with friends and family, enjoying their time together and looking back on a lifetime of memories — like those first days of young love. “When you meet that special someone, you just know,” Cheryl said. And when you find that special place to share those memories? Well, you just know. “Lake Carroll was exactly what we were looking for.” How has Lake Carroll helped make your marriage and relationship a strong one? There is so much to do here and so many fun people. We have met our best friends here. When you have good friends who love their spouses, it makes everyone’s marriage stronger. What are your favorite activities to do together at Lake Carroll? We love to golf and fish. We just like being around each other.

Besides, who else is going to take my fish off the line? What are some of your favorite Lake Carroll stories and moments as a couple? We love to go out with our friends that we have made here. It doesn’t matter what we do — golfing, boating, dining — we always have a great time. Some of our best moments definitely involve our kids and grandkids. They love the lake! Our grandkids are pretty little yet, so watching them catch a fish or jump in the lake always makes us smile.

What else do the two of you like and enjoy about living at Lake Carroll? I have a wonderful little garden. We have it fenced in to keep the deer out. We can green beans, relish, tomatoes and more. We really like picking elderberries. We turn them into jelly. It is the best! We really enjoy doing this together. What are some secrets to a successful marriage? I would say trust, communication, doing things together and being considerate of each other. Why? Many years ago, my coworkers would make fun of me because I packed my husband’s lunch every day. I told them it was one of the small things I could do for him because he didn’t like to. It is something he truly appreciated. I do nice things for him and he does nice things for me, like doing the dishes. We met a year prior to getting married. I think when you meet that special someone, you just know.

lot of people chase their dreams. Kurt and Kerri Forrest caught up to theirs. The couple, who’ve been together for 30 years, has lived at the lake for 5 years, where they’ve spent time enjoying the peace and perks that Lake Carroll offers — and they’ve been able to do it together. After years of dreaming about it, they’ve finally been able to enjoy some R&R, retirement and relaxation, and they’ve been able to do it together. After all, like Kerri said, some things simply aren’t as much fun by yourself, like dreaming — and it’s even more fun when you make that dream come true together.

How has Lake Carroll helped make your marriage and relationship a strong one? Lake Carroll has helped us relax from the everyday grind. We take daily walks with our dogs and work out together. What are the keys, in your opinions, to a successful marriage? Open communication is the most important! We talk daily on our walks about everything from our kids to what we want to do in the future. What are your favorite activities to do together at Lake Carroll? What makes them more special together? Our favorite activities are boating in our new pontoon together with our family and dogs, and our daily walks. Boating is amazing because of the beautiful backdrop. We relax, listen to music and swim! We do our talking during our walks. Boating and walking are boring by yourself! We love to dream together. We have been talking about retiring for 10 years and my husband was able to do it this year! Since June, when Kurt retired, we have been able to spend every day together and work on projects!

What’s your biggest catch on the lake, and what’s the interesting story behind it? Or maybe there are some memorable moments from the monthly fishing tournaments you’d like to share? (Deadline: Feb. 7) In April, things will start to pick up at the golf course as the weather slowly but surely warms up. Got any great golf memories? Stories of holes-in-one? How about any tales from leagues, events, or championships? (Deadline: March 14) With May being the month that we celebrate Lake Carroll’s opening day, a story in that month’s magazine will feature historical items, interesting statistics and more.

What are some of your favorite stories and moments at Lake Carroll? Our favorite times are the 4th of July, Labor Day and New Year’s! We have many family and friends up to celebrate! We love to hang on our Maui Mat in the Lake, play outdoor sports, such as volleyball, on our 2.5 acres and go tubing on New Years! Lake Carroll is equipped to do so many activities that there is something for everyone! We hope to golf more this year and purchase ATV’s to do the trails! What else do the two of you like and enjoy about living at Lake Carroll? SUBMIT TED PHOTO We enjoy going to The Clubhouse for dinner, biking around the area to see all the beautiful homes and visit the equestrian center and feed the mini horses carrots. What else keeps the two of you going strong together? It’s important to listen, be honest and respect each other, even if you have differences. When it comes to your children, be on the same page. I’ve seen families torn apart when parents aren’t. Talk about your dreams and make a plan so they come true. Anything can happen within 5 years. We are proof of it. We did it twice by dreaming about a lakehouse and then planning for a pontoon boat.

ome people see winter as a glass half empty. It’s cold. We’re stuck inside. There’s not as much to do. But if you’re a fan of local brews, the glass is half full. That’s because winter is a good time to get out of the house and see what local beer brewers have to offer — after all, what better way to cool off that cabin fever than with a frosty mug? According to the Brewers Association, a national trade group for small and independent craft brewers, America’s beer market is big — just under $95 billion in 2020, with $22 billion of that coming from the craft beer market. The number of craft breweries more than quadrupled between 2010 and 2020, jumping from 1,813 to 8,884. Illinois, according the group, ranks 13th in the number of craft brewers, with nearly 300 breweries rolling out 394,000 barrels of beer. That’s a lot of bottles of beer on the wall — and a lot of different types. Lagers and lambics, pilsners and porters, bitters and bocks … you name it and brewers are making it.

While the Midwest is home to several well-known alcoholic beverage companies with plants in its largest cities, there are many smaller breweries not far from Lake Carroll. While it’s easy to find the classics in any convenience store or grocer — St. Louis’ Anheuser-Busch, Milwaukee’s Miller, Chicago’s Old Style — a day trip to search out suds from craft brewers opens up a whole new possibility for your palate. Sweet, sour, citrus, stout … the possibilities are practically endless, and brewers pride themselves on crafting unique tastes that’ll tempt your tastebuds. Brewing once was a dominant industry in northern Illinois and along the Iowa and Wisconsin state lines. Freeport was home to several breweries, including the Fritz Brewing Company, which survived Prohibition long enough to see its brew served in cans up until the mid-1930s. In fact, locals found that the taste of pretzels went so well with beer that they started making the salty treats in town, and even inspired its nickname as the Pretzel City. So, if you want to find out what’s brewing in the region, the following pages feature some area breweries that’ll be happy to pour you a cold one. So grab a designated driver, hop(s) in the car and tell ‘em you’ll have one more for the road …

More than 20 different beers are brewed onsite, and a full menu of appetizers, salad, burgers, wings and pizza — whose dough includes a hint of Hairy Cow Beer to mix with the yeast for a unique texture — are available. The Hairy Cow also hosts local musical talent. As far as what’s on tap, some of the moo’s brews include the Turtle Tree with a blend of Midwestern corn, Prairie Grass that’s a light grainy pilsner malt flavor, Dos Dookies that’s a milk stout with waves of real chocolate, Rusted Beard with a light citrus and pine flavor with a floral aroma, Kyloe Coconut Porter made of real toasted coconut, vanilla, and cacao, and Ogle Oats with a hint of chocolate and coffee. Why the name Hairy Cow? Owner Todd McLester’s other business involves raising Scottish Highland cattle, which just happen to be hairy cows. Brewery tours run hourly from 1 to 5 p.m. every Saturday.

Housed in a vintage-1875 Presbyterian Church, Highway 20 Brewing Company has both indoor and outdoor seating where patrons can enjoy its blends. Befitting of the building’s origins, several of the brews have a religious angle to their names, such as the Midnight Mass porter with chocolate and caramel flavoring with hints of coconut; as well as the Brothers Divine Intervention porter that is aged in a bourbon barrel and finished with Tahitian vanilla to make it smooth. There’s also the Kellerbier malty German cellar beer with a bread and biscuit flavor, and the Beach Blonde of a light citrus with a light body and low-hop bitterness.

Generations offers five unique artisan ales and lagers all year and four seasonal flavors, all which can be enjoyed from its bar. The Hella Good is a light beer with a sweet graham cracker aroma, Pretzel City Amber has plenty of melanoidin and caramel malts blended with a pretzel taste (paying tribute to Freeport’s history of pretzel-making). There’s also a Danish-style Rye Pilsner, and the Life Free Porte, in which, according to the brewery’s website, “the silky malt body dances between deeply kilned barley and flaked oats for an insanely smooth finish.” Then there’s one more throughout the year: Generations also experiments with various different pale ales over time, whether they work is up to the customer. Located at the edge of a historic and vibrant downtown, Galena Brewing Company has 13 different ales on tap at a full bar with indoor and outdoor dining. Brewery tours are available Friday afternoons and Saturday mornings. Lena Brewing Company, housed in a barn-style structure off of U.S. 20 east of town, has 14 different brews. Some of them include the 38-degree Hefeweizen, heavy on wheat and unfiltered yeast with a banana and clover flavor; Drunkelberry with dark wheat and a black raspberry punch; the Mailbrew Coconut porter with chocolate and coconut; a Chocolate Covered Strawberry; as well as caramel pecan coffee and thrashed oats stouts. Food can be ordered from The Rafters restaurant next door and delivered to the bar to enjoy along with the brew. Cocktails, wines, root beer and ginger beer also are available. The bar also has a Mug Club, and trivia on the first Thursday of the month. Brewery tours are “coming soon,” according to its website. The brewery also will be a part of Lake Carroll’s 50th Anniversary celebration. It is coming up with a blend specific for the occasion, and plans for it to be available in time for Lake Carroll Fest on July 29-31.

Variety is what keeps customers coming back to Wishful Acres, a few miles northwest of Freeport. The tap stock rotates a lot, and it’s best to check out its Facebook page for updates on what’s available. During most of January, some of what was on tap included blends such as its newest of a donut and coffee imperial stout mix, and the Cozy Blanket stout that is brewed with chocolate malts and molasses. At any given time, there are 12 handcrafted beers during the week out of the more than 150 different varieties that the family-run craft brewery has brewed since it opened in 2016. Ingredients for many of its beers are grown on their nearby farm, such as hops, pumpkins, hot peppers, apples, basil, peaches and herbs.

Opened in 2021, this brewery on the corner of state Routes 64 and 2 is the new kid on the block in downtown Oregon, but it’s already building quite a reputation. The brewer is housed in the former National Clothing building and serves up light beers, stouts, brown ales, maple brown ale, IPAs and more. Some of the brews are exclusive to the pub and the owners try to locally source as many of the ingredients as they can, including hops from Amboy. Appetizers, sandwiches, flats and other menu items are available, and like some of its beers, the owners want to offer food that’s unique to the Oregon brewery.

Brewed in nearby Gratiot, Wisconsin, the Pecatonica Beer Company offers a small count of blends, striving for quality over quantity at its taphouse across the state line in Warren. Muskelager is the brewery’s newest beer: It’s a golden lager with locally grown cascade hops. The Pecatonica India Pale Ale (IPA) is made of citra, chinook, centennial and cascade hops. Quinn’s Amber Lager has a direct connection with the Pecatonica River — its centennial hops are grown within the river’s watershed. Seasonal Oktoberfest brew has a taste of slightly sweet biscuit malt flavor with a lightly golden copper color. Its Nightfall lager has a blend of cascade, centennial and hallertau hops, with traditional malts and pure Wisconsin water; made of dark chocolate, a caramel center and a finish of coffee. It can be enjoyed with steak or barbecue.

If you’re looking for a brewery north of the border, one of the largest small breweries near the state line is in southwest Wisconsin. The Potosi Brewing Company is in its second incarnation after being closed for nearly 40 years. The original brewery has been renovated and partially restored to make several more blends than it originally did for more than a century. There’s also a new restaurant on site. King Gambrinus once drank for three days and three nights at a banquet, and everyone was so impressed, they crowned him king. He lived to be 100 years

old and it was said that he was buried in a beer barrel instead of a coffin. King Gambrinus will always be remembered as an icon of beer, brewing and joviality.

Fellas Pizza owner, cook and jack-of-all trades Jose Nava is familiar with each of them. He’s even picked up a few pointers from them. But there other cooks, not so famous, who’ve helped him find his recipe for success at his Lanark pizzeria.

Though the restaurant is carry-out and delivery, you can sit down and enjoy food from Fellas at Nava’s next-door neighbor, Dave’s Place, a bar with a window connecting it to Fellas where orders can be passed through for folks to enjoy at Dave’s. Pizza and beer: the perfect combo.

During his time in kitchens at various pizza places, he’s picked up a dash here, a pinch there, a hint of this, and a little of that, and brought them all together at his own place: Fellas Pizza in Lanark. Chances are, if you can think of a mom-andpop pizza place in the area, Nava, 34, has probably been in their kitchen at one time or another, and learning how to make the many different styles of pizza has helped him bring together the best of all worlds into one of his own. “I’ve always liked pizzas,” Nava said. “I’ve worked so many places. Every time I worked somewhere, I always thought that I’d like to have something different about it, extra crispness, things like that.” Nava started out as a teenager working at Cannova’s Italian Cuisine in Freeport and became something of a pizza nomad throughout the region for more than 15 years, working at various pizza places before opportunity knocked — and the door was a familiar one. When the owner of Bella’s Pizza, where Nava worked briefly in 2007, put his business up for sale, Nava decided it was time for a bigger slice of the pizza pie — as owner — and made the plunge in May 2019.

Now it was up to him to see his pizza dough fortunes rise or fall — but he did have some help. His mother, Yolanda, had been an inspiration in helping Nava perfect his cooking, and it had long been a dream of his to run a business with her. “When I finally got it, it was like I was on top of the world. It felt great to achieve a dream,” Nava said. But, sadly, that dream team didn’t last long. Yolanda helped when she could, but just 4 months after Fellas opened, she passed away from cancer. “My mom wanted to get her sanitation license, and it kind of pushed me to want to do better,” Nava said. “My mom could do it, going through this life change. Then I saw this for rent, and I was like, ‘I got to make it happen,’ and I did. It felt great. She was proud of me.” A picture of Yolanda hangs near Fellas’ cash register, not only to remind Nava how far he’s come, but also to help tell his family’s story and his own journey. Above the photo it reads: “Forever in our hearts and in our recipes.” “My mom was a great cook. Her and I, it was our dream to have a restaurant, and I made it happen.” Today, he’s still making it happen.

Pizza comes in five sizes, from 12 to 24 inches and square cut, which is more common in the Midwest, Nava said. He said he keeps the toppings simple, so that they don’t overpower the pizza. He sticks to the basics: Italian sausage, pepperoni, mushrooms, black or green olive, green pepper, spinach, onion, Canadian bacon, anchovies, pineapple, tomato, chicken, banana peppers or jalapeños. Thicker and stuffed crust is available in 12- to 16-inch sizes. Cauliflower

crusts and gluten-free options also are available. If you want, you can start off with an appetizer: fries, onion rings, fried ravioli, fried pickles and cheddar broccoli bites. hen nature created the driftless region along the northern part of the Mississippi River, it carved out steep hills, forested ridges, deep river valleys, tower bluffs, spring-fed waterfalls, and winding streams. Nestled among nature’s handiwork, at the highest point in Illinois, lies Scales Mound, a village of about 400 people among northern Illinois’ rolling hills, about 2 miles south of the Wisconsin border. Though it’s only a downshift away for today’s horsepower to get you there from the state’s flatlands, the uphill trek wasn’t always so easy when the community was founded nearly 175 years ago. It took more effort for yesterday’s horsepower to move stagecoaches and wagons through the meandering terrain. This made Scales Mound more of a remote community. Today, visiting the village is a bit like taking a trip back in time. Even after modern roads were built to reach it, the community managed to stand apart from cities around it, maintaining its small-town charm. The trip to Scales Mound — less than an hour northwest of Lake Carroll — still takes you along winding curves and rolling hills, whether you’re traveling west along the historic Stagecoach Trail, or north on the Cleland Hickman Highway from U.S. Route 20 in Elizabeth. Part of the village’s name comes from the nearby Charles Mound, a couple miles north (the other half comes from Samuel Scales, the owner of the land on which the mound is situated). Thanks to the Ice Age missing it thousands of years ago, Charles Mound is the highest natural point in Illinois, at 1,235 feet above sea level. That’s more than 1 1/2 times higher than Lake Carroll’s elevation of 738 feet. From Charles Mound’s vantage point, three states can be seen: Illinois, Iowa and Wisconsin.

Charles Mound lies on land that’s private property, owned by Wayne and Jean Wuebbels, who are only the third owners of it since it was made a land grant in 1848. Elijah Charles, the hill’s namesake, once established a residence at the bottom of it. The Wuebbels allow public access on the first full weekend from June through September. If you want to take a trip to the light fantastic, the area north of Scales Mound can also be a good spot to see one of nature’s most spectacular sites: the Aurora Borealis. The area’s elevation lends itself to seeing the Northern Lights when they make their appearance. Catching the light waves as they dance across the night sky can be hit or miss, but online sites provide forecasts for the light show, including NOAA’s Space Weather Prediction Center, at swpc.noaa.gov/products/aurora-30-minute-forecast. These sky lights turn on as a result of the interaction between Earth’s magnetic field and energized particles from the sun that slam into the planet’s upper atmosphere at high speeds.

Time and nature also teamed up to create a hill west of town, along the Stagecoach Trail, that’s home a site that’s made Jesus a rock star to people passing by. The “Jesus Saves” rock at Maupin Mound has been a unique roadside attraction for nearly 100 years. Its used to have an advertisement for Potosi beer (read about that brewery on page 20) painted on it until about 70 years ago when a local Presbyterian Church got permission from the land owner to paint over it with the word “Jesus Saves” emblazoned across the boulder. Lights have even been installed so you can see the rock at night. The land isn’t the only place where you’ll find Scales Mound’s history. Franklin Street Uniques and Antiques opened there just over a year ago, and among items found inside are pieces with local ties to the past. Carrie and Keith Stier own the shop and their treasure hunts have taken them to local auctions and sales, where they find their antiques and uniques. They also carry handcrafted items, such as pressed glass bottles made by family members. The store’s two rooms can be browsed through every Friday through Sunday afternoon, or by appointment. By the 1850s, the railroad finally pushed through the tough terrain and into Scales Mound when the Illinois Central built a line from Freeport to Dubuque via the lead mines of Galena. The line divided the village into north and south sections, with the middle serving as a business hub. The village’’s website lists more than 50 area businesses, and notes that more than 90% of Scales Mound is listed on the National Historic Register.

The local grocery store, Country House Grocery, has served the community since 1864 in the same building. Matt and Melissa Dittmar are the 12th owners of the store, having taken over from longtime owners Pat and Sheila Ohms in August. Like other grocery stores its size, Pat’s stocks foods from private labels along with some namebrand items, as well as locally made food fare. And unlike its big box counterparts, you won’t get lost in this store. Its four aisles are neatly arranged, and the wood floor — which has been around for almost 100 years — still has the charming creaks and pops that shoppers probably heard 100 years ago. Pat’s also serves fresh meats and cheeses, and carries milk in glass jugs from Lamer’s Dairy in Appleton, Wisconsin. If you need to fill your tank, there’s a Sinclair gas station in town, too — and while that in itself isn’t unusual, the way it does business is. A full-service gas station hasn’t gone the way of the dinosaur yet. Built in 1932, and originally a Shell station, you can still tell the attendant to “Fill ‘er up!” here — another way Scales Mound retains its small-town flavor. You’ll also find some flavors at the bar-and-grills in town. There’s The Old School Saloon, which was an actual school from 1892 to 1971. The Southside Hornet Pub & Grille is named after the local school mascot, and north of the tracks there’s Spud’s Northside Bar and Grill. Scales Mound is also home to a Hornets nest of activity: the

high school’s sports teams. School sports is a popular form of entertainment in town, and Scales Mound High School basketball teams are creating quite the buzz. The school’s enrollment is only about 76 students, but nearly a quarter of them head for the hoops each winter. The boys program is comprised entirely of students from Scales Mound, while the girls basketball players are part of a cooperative with River Ridge High School in Elizabeth. This year’s varsity hoopsters recently achieved a collective feat not seen by any other Illinois high school in 2021: Both teams ended the year undefeated, the boys at 9-0 and girls at 13-0. The Hornet boys earned a No. 5 ranking in the first Associated Press Class 1A poll in January, while the Wildcats girls also clocked in at No. 5 in their 1A poll. The school spirit is strong in Scales Mound. Both restaurants will sometimes stream local basketball games via the NFHS Sports Network, and during the 2010-11 school year, several businesses closed for two separate weekends when the Hornets’ volleyball team played at the state tournament, and when the Wildcats girls hoops team played at state. While nature put Scales Mound on top of Illinois, the people who call it home have kept it there for more than 150 years — people who always rise to occasion when it comes to living up to their reputation as “the friendliest village in Illinois.”
