“Every time you needed a bag of ice or something, you needed to go in town and look for it here or there,” Bill said. Not anymore. You just need to look for it at Trailside. “We have groceries, we have boating, we have camping, we have toys, just a little of everything so that people don’t have to leave the community to go get something,” Charla added. If it’s a gift for a special occassion, the Spathies likely have that, too. For 20 years, the husband-and-wife team have given back to their community, and they wouldn’t have spent their days any other way.

I never wake up in the morning saying that I don’t want to go to work today,” Charla said. “I know I’m not going to have a perfect scenario, but I’m going to see somebody that I want to talk to, and have a laugh with.” The Spathies made their claim for a weekend retreat at Lake Carroll 23 years ago when they lived in the Chicago suburbs. cold drink, a starry night and a gentle breeze drifting off the lake make for a perfect summer evening outdoors. But all it takes is a few little pests to suck all the fun out of the night. That’s where pest pros can help. Depending on the service, the treatment can last days or weeks. Tom and Marcia Wells purchased a Mosquito Squad franchise in 2017 and were drawn to the Virginia-based business’ customer service. The couple first learned about the company after they wanted to find a way to enjoy their backyard without having to swat away unwanted mosquitoes. “You can definitely tell when we’ve used the product,” Wells said. “It makes a huge difference.” Wells said that before Mosquito Squad treatments it was hard to enjoy his backyard in the country. “During the summer we couldn’t be outside without being attacked by bugs,” Wells said. The insects are more than just a nuisance. Some can present health concerns, from mosquitoes that carry West Nile virus to ticks that carry Lyme disease. Mosquito Squad offers two treatments that create a barrier

around a property: a synthetic product as well as an all-natural option. The products can reduce the number of mosquitoes for 2 or 3 weeks at a time, depending on applications. While the treatments are safe to use, there are of course precautions, including asking residents to keep children and pets off the lawn for about an hour to let the product dry. Wells said technicians are careful not to spray near gardens. Wells said the all-natural product is an alternative for sensitive areas of your property or for customers that want to be pesticide free on their property. The family-owned Sauk Valley Pest Control Inc. also offers treatments to reduce mosquitoes as well as other pests, including ants, spiders and even mice. he philosophical debate which has raged on throughout the ages is going still: charcoal or propane? Whether you opt for the traditional small metal sphere powered by small black briquettes, or the tall grill with a fivegallon tank of propane, everyone who has fired up a grill and tucked into a burger or a brat on a summer evening has a side. Grillers on either side of the debate can gear up at Jim Prescott’s BBQ Shop in Sterling. “The charcoal, I think that just gives you a whole different flavor, which I’m a fan of,” Deanna Prescott said. “But, the gas grill has its place. Some people want to fire it up and move on with whatever their time restriction might be. I prefer the charcoal, and I think a lot of people do. I think back to when I was young and we cooked on charcoal and used all the lighter fluid.”

The charcoal briquette is actually not much older than gas. While Chicago Combustion Corporation started selling gas grills for home use in the 1950s, based on an earlier design used for restaurants, the charcoal briquette dates back only to the 1920s, when Henry Ford, his cousin Edward Kingsford, and Thomas Edison worked together to turn scrap wood leftover from making the wood trim of a Model T into charcoal at a plant in Michigan’s Upper Peninsula. Even for adherents to charcoal grilling, there is the new pure lump charcoal, carbonized wood which, when used with a starter brick, can eliminate the need for dousing the coals with a charcoal lighter fluid. “There are better ways to get that charcoal lit without using any of those chemicals,” Prescott said. “With the Green Egg, we use pure lump charcoal. That does not take any lighter fluid. It burns clean. That’s actually my favorite charcoal cooking is on the Big Green Egg.

One of the newer options is a pellet grill, using wood pellets loaded into a hopper which can then be dropped into the fire pit underneath whatever you are cooking. The newer models have digital electronic controls that automatically gauge how many wood pellets to drop in, and fans to stoke the fire and create convection heat to evenly cook your food. “A lot of people like the fact that they don’t have to babysit the grill all the time,” Prescott said. “They heat up fairly quickly, so busy families, they want to come home and cook something and it pretty much does the work for you.” For backyard gourmets who want to go low and slow, there are smokers, offering up a chance at a brisket that melts in your mouth or some ribs that fall off the bone in your own backyard. It may take a big longer than a burger or a chicken breast over the coals, but for some, it is well worth the wait. “Weber makes one that’s actually a charcoal version,” Prescott said. “The pellet grill, you can smoke with that since it uses wood pellets. We also have a couple different types of cabinet smokers. They’re also pelletfueled. They’re true smokers, they only get to 350 [degrees]. Smoking is meant for lower temperatures.” Picking out what type of wood pellets can come down to individual taste, since different pellets create different flavor. Apple might give your food some smokey and sweet flavor, mesquite is more tangy and spicy, while hickory can result in a rich taste that hints at bacon. But of course, when it comes to flavor, a lot comes down to picking the right seasoning.

Which came first: The chicken or the Big Green Egg? Who cares when you can have them both. Whether you’re barbecuing chicken or searing a steak, the kamado-style grill does the trick. (And if you’re still wondering which came first, it was the chicken; the Egg’s only been around since the 1970s, but it’s built up quite a following since then).

“Some people like to have something that’s kind of bold that really can stand up to the meat, other people like seasoning that really lets the meat shine through but gives it a little extra,” Prescott said. Potential backyard grillmasters can also load up with grill accessories to complete the grilling experience. “We just always make sure they have some good grilling tools; a good pair of tongs, a good spatula, that kind of thing,” Prescott said. And make sure you know when the meat is done. The Partnership for Food Safety Education’s fightbac.org suggests cooking roasts and steals to a minimum internal temperature of 145F, poultry to 165F, ground meat to 160F, and fish to 145F. A high enough internal temperature gets rid of harmful bacteria that can cause foodborne illness.

“An instant-read [thermometer] is a necessity for any kind of cooking,” Prescott said. “You’re always wondering if that chicken’s done, and that’s a necessity. We also carry the stickand-stay, so if you wanted to monitor, maybe you’re doing a longer cook, you want to monitor the progress of it, you put the probe in and they all have displays so you can see how the temperature is growing and just keep an eye on it that way.” Another key ingredient for a backyard grill is a way to clean it. The National Fire Protection Association says that removing the grease and fat built up in the trays below the grill can go a long way in preventing disaster. “We sell different brands, and they usually have their own cleaner as far as cleaning your grates,” Prescott said. “Some have an exterior cleaner, a scrub brush. That’s typically what they put in there, maybe some type of polish to keep it looking nice on the outside.”

pring has sprung and summer’s just around the corner, and that’s got folks on the largest private lake in Illinois eager to float their boats. But just because boat owners are ready for some fun under the sun doesn’t mean their boats are. Sure, you can rouse your vessel from a long winter’s nap, but before you pull back the cover and pull your vessel out of storage, it’s a good idea to schedule an appointment with a boating professionals to make sure your boat’s ready to go. If you don’t dewinterize your boat, it can cost time and money, with your boat spending time in the shop instead of the lake. Fortunately, there are boat docs in the area who can give your vessel a check-up – and they’ll even make house calls, with mobile services available. Perdue Marine and Millers Sport Center, both in Lanark, offer sales, service and storage for boat owners. When you want to dewinterize your boat and get it to spring back to life, they’ve got you covered. Batteries and belts, clamps and hoses, props and pontoons, cleaning and detailing – the shops can take care of boats inside and out, top to bottom, stem to stern.

While boat owners can do some basic inspections of their own – giving the boat’s exterior a once-over, checking oil and fluid levels, testing the battery, inspecting belts – a trained service tech can make sure nothing gets overlooked, and they’ll give boat owners a thorough report, and peace of mind, before their vessel’s maiden voyage of the season. Hank Perdue, owner of Perdue Marine, said pontoons remain a top choice for families who want to enjoy some leisure time on the water. With the capacity to carry more than a dozen passengers, pontoons are a great way to enjoy a casual, party-like atmosphere on the lake. Perdue started his business with a gas station and some boats for sale in Freeport back in 1971. He later moved the full-service business to Lanark, where he sells new and used boats and water crafts, providing maintenance for boats, service for docks, as well as off-season storage. Perdue Marine services many residents of Lake Carroll as well as avid boaters from throughout the Chicago suburbs, Perdue says. “We do all the work, you have all the fun,” Perdue says. According the business data platform Statista, more than 87 million adults in the U.S. take part in some sort of recreational boating activity, be it fishing, water skiing, or just enjoying a leisurely cruise – and Lake Carroll is an ideal spot for all those activities, and more. Members of the Lake Carroll Surf Club have even hopped on the bandwagon – and their wakeboards – to enjoy a fast-growing water sport: wakesurfing, in which riders catch a wave in a boat’s wake, similar to surfing, riding the wake without being pulled by the boat. For those who are looking for something a little more relaxing, Perdue said Maui Mats are popular – they’re a floating foam pad that can be used as a staging area on the water or to create a floating island. They vary in size from 6 feet wide to as much as 22 feet long. Perdue said these are an accessory sure to add some fun to the summer on the water.

Check the rollers and pads, lubricate the wheel bearings and trailer jack, test the lights and electrical connections, check the tire pressure, check your brake fluid level, tongue lock and safety chains. And if you like a little music with your wine there’s live entertainment from time to time at the piano bar. “You can walk in, have a glass of wine, and walk and shop,” Servatius said. “That’s fun.” The store and bar wasn’t always something Servatius had in mind. She moved to Lena from Freeport after her youngest child went off to college and then came up with a plan to start a boutique business. That became a reality a couple of years ago when she opened a store south of the railroad tracks downtown. Then the thought of wines intrigued her. She didn’t know a whole lot about them, but after she moved across the tracks, she began building up a collection and began learning like a sommelier. “You don’t know until you try what you can do, and it’s been wonderful,” she said. “This has been a whole new world for me to try something new. “There’s nothing around here like it.”
