“Most years I will plant 500 seedlings. About 40 percent get big enough to sell,” Lundquist said. Lundquist’s vision for a tree farm started in 1987 when a 36-acre parcel of land just outside of Mt. Carroll went up for sale. Lundquist convinced his wife, Bev, he needed the land and open space. They decided to set aside five acres to dabble in growing Scotch and White Pines, Frasier Firs and even Canaan Firs and Balsam Firs. Despite what the old adage says, money does grow on trees – but it takes time, and these days, it can take even longer. On average, it takes seven years for a seedling to grow into a five-foot tree. While that used to be the ideal size, Janie Dollinger, of Dollinger Tree Farm near Lake Carroll, said these days people want their trees even bigger. “People’s homes have changed and so many have these cathedral ceilings and they don’t want a 5-foot tree. We have people asking for 7-foot trees, even 12-foot tall trees,” Dollinger said. “It takes at least 12 years and probably more to grow a 12-foot-tall tree, depending on droughts, setbacks.” Tree farmers are no different than other farmers, tending to their crops throughout the year and helping nurture nature along. They perform yearly shearings to help trees grow evenly and devise ways to protect them from pests such as mice, insects and deer.

“When the deer rub their antlers they can kill the tree trunks,” Lundquist said. “They love doing it, especially to the Frasier fir, which have a great aroma.” Dollinger said they erect solar-powered electric fences around their young trees to help protect them from deer. “It takes way more work in June than in December,” Blask said. She and her husband used to manage the farm and their full-time jobs before retiring a few years back and focusing solely on the farm. The Blasks started their tree farm with the first plants in 1983 and sold their first batch of trees in 1989. Each year she greets familiar faces as they drive out to purchase their favorites, from the Balsam and Frasier firs to the Scotch and White Pine and the Blue Spruce too. Blask said she loves the soft needles of the White Pine.

hen it comes to holiday lighting Pat Riley likes to go to the extreme, and he hopes his customers do, too. Riley owns Extreme Lighting based in Amboy, which specializes in holiday lighting as well as light displays for weddings, parties, and other events. But there’s one part of his business he really takes a shine to: Christmas displays. Months before St. Nick shimmies down the chimney, when the leaves begin to change, his calendar is already filling up with appointments to decorate homes for the holidays. He started the company three years ago, but said he’s been hooked on hanging lights since he was a child.

You think you’ve got it rough, having to untangle a couple sets of Christmas lights? Try working with a wad of wattage that would make Clark Griswold jealous. But Extreme Lighting owner Pat Riley doesn’t mind, because when all is said and done, and lights are hung by the chimney with care, his holiday handiwork will brighten people’s lives. ALEX T. Riley said business has picked up this year. “This is absolutely the busiest year we’ve seen,” he said. “I think people are looking for something to do and they get in the car and drive around and look at the holiday lights.”

“I’ve been hanging Christmas lights since I was 8 years old for my grandpa and grandma and it just stuck with me,” Riley said. Thanks to his entrepreneurial spirit and some great mentors, he’s watched his business take off. This past year he expanded to include party rentals to provide everything from tents and patio heaters to inflatable bounce houses and slides. “This is absolutely the busiest year we’ve seen,” Riley said. “I think people are looking for something to do and they get in the car and drive around and look at the holiday lights.” Riley recalls that one of his inspirations was a house he saw as a child when his family was coming home from a Chicago Bears home game. He said he remembers the house located along U.S. Route 30 in Sugar Grove was all decked out with lights, including animated displays.

When a light bulb went off in the head of the world’s most famous inventor, it sparked an idea that would lead to a beloved, and bright, holiday tradition: Christmas tree lights. For most families, a Christmas tree isn’t complete without lights. There’s a veritable alphabet of bulbs out there – LEDs, C5s, C7s, C9s, G40s, and more – but they all spell one thing: Delight. But who flipped the switch on this holiday tradition? Well, it all started with the one of the world’s most famous inventors, and from there, the future of Christmas just kept getting brighter and brighter. Below is a look at the history of Christmas lights, courtesy of the Library of Congress and the National Electrical Contractors Association ...

Stranded in the past: The history of holiday lights ... Whose bright idea was it to string strands of lights around the Christmas tree? You can thank the world’s most famous inventor and his friend.

Thomas Edison, the inventor of the first successful practical light bulb, created the first strand of electric lights. During the Christmas season of 1880, these strands were strung around the outside of his Menlo Park Laboratory. Railroad passengers traveling by the laboratory got their first look at an electrical light display. But it would take almost 40 years for electric Christmas lights to become the tradition that we all know and love. Before electric Christmas lights, families would use candles to light up their Christmas trees, a practice that led to many house fires. Edward H. Johnson put the first string of electric Christmas tree lights together in 1882. Johnson, Edison’s friend and partner in the Edison’s Illumination Company, hand-wired 80 red, white and blue light bulbs and wound them around his Christmas tree, which was also set up to revolve. A reporter from the Detroit Press and Tribune visited the display to write a story on the this bright new idea ... “Last evening I walked over beyond Fifth Avenue and called at the residence of Edward H. Johnson, vice-president of Edison´s electric company. There, at the rear of the beautiful parlors, was a large Christmas tree presenting a most picturesque and uncanny aspect. It was brilliantly lighted with many colored globes about as large as an English walnut and was turning some six times a minute on a little pine box. There were eighty lights in all encased in these dainty glass eggs, and about equally divided between white, red and blue. As the tree turned, the colors alternated, all the lamps going out and being relit at every revolution. The result was a continuous twinkling of dancing colors, red, white, blue, white, red, blue -- all evening. I need not tell you that the scintillating evergreen was a pretty sight -- one can hardly imagine anything prettier. The ceiling was crossed obliquely with two wires on which hung 28 more of the tiny lights; and all the lights and the fantastic tree itself with its starry fruit were kept going by the slight electric current brought from the main office on a filmy wire. The tree was kept revolving by a little hidden crank below the floor which was turned by electricity. It was a superb exhibition.” However, the world wasn’t quite ready for electrical illumination. There was a great mistrust of electricity and it would take many more years for electric Christmas tree lights to become a part of our holiday tradition. Some credit President Grover Cleveland with spurring the acceptance of indoor electric Christmas lights when, in 1895, he requested that the White House family Christmas tree be illuminated by hundreds of multi-colored electric light bulbs. On Christmas Eve 1923, President Calvin Coolidge began the country’s celebration of Christmas by lighting the National Christmas Tree with 3,000 electric lights on the Ellipse located south of the White House. At first, stringed lights were reserved for the wealthy and electrically savvy. The wiring of electric lights was expensive and required hiring a wireman, our modern-day electrician. According to some estimates, to light an average Christmas tree with electric lights before 1903 would have cost $2,000 in today’s dollars. Electric tree lighting on the consumer level was not truly practical until General Electric introduced a pre-assembled lighting outfit in 1903. Still expensive at $12 (the total weekly wage for an average worker then, and the equivalent of about $80 today), many department stores in the larger cities would rent outfits for the season for $1.50. Called a “festoon,” the outfit consisted of eight green pre-wired porcelain sockets, eight Edison miniature colored glass lamps, and a screw-in plug for easy attachment to a wall or ceiling light socket. However, GE was unable to patent their string, and the market opened up to anyone who wanted to manufacture the strings. That’s when people like Albert Sadacca came along. Sadacca, a teen at the time, saw a bright future for Christmas tree lights and convinced his family, who owned a novelty lighting company, to sell brightly colored strands of Christmas lights to the public in 1917. By the 1920s Albert and his brothers organized the National Outfit Manufacturers Association (NOMA), a trade association. NOMA soon became NOMA Electric Co., with its members cornering the Christmas light market until the 1960s.

“That’s what really got me hooked. I’ve always wanted to recreate that scene for other kids to enjoy and create the memories like I have,” Riley said. Today, Riley and his team create holiday displays, from blanketing a home and trees with lights to animated displays set to music. This year he is decorating a home to look like the Griswold house in the movie “Christmas Vacation.” Hiring a professional to decorate a home with lights offers convenience, but for Riley it’s really an opportunity to unleash his creativity. He said his dream would be to compete on the “Great American Light Fight” TV show, in which families compete to have the most incredible holiday displays. “I truly love all-out wild displays,” he said. While there are traditional lights, Riley said some of his favorite displays include using Pixel Lights, with individually changing lights that allow for some creative displays. “One Pixel Light can be thousands of colors,” he said. And it’s not just holiday light displays for Riley. His customers are going all out for Halloween, too, with displays and haunted houses in their yards. Whether it’s 100 lights or 10,000 lights, Riley can create displays that will earn “ooh’s” and “aah’s” from people passing by, and can even set up computer-controlled displays. From helping hang lights as a kid to turning his holiday spirit into a business, the life of Riley has been a good one, and it’s been a fun trip making people’s Christmases merry and bright – and as long as he can brighten people’s days, he’ll keep taking a trip through the lights fantastic.

as the doom and gloom of 2020 been so bad that you’ve considered taking mom up on her offer to slap you into next year? The thought just might have crossed your mind if you cruised past the Kaus family’s business, not far from Lake Carroll. That’s because the family is helping people battle the blahs and blues of a bad year with a box of plastic letters and a seemingly endless supply of whimsy. They’re using some real estate on their business’ marquee sign to pass along a simple message: smile. That message comes courtesy of drive-by jokes and words of wit displayed on the sign. The family actually began posting funny messages on the sign last year, before the virus made people sick of 2020, as a way to draw attention to their businesses, but in recent months the sign has become a bright spot in a year that’s been anything but bright – a year punctuated by a pandemic and partisanship.

Sarah Kaus and her husband, Tim, operate several businesses at 17217 state Route 73, about 4 miles southwest of Lake Carroll, which includes M&W Feed Service South, KTK Rentals, which owns storage units in Lake Carroll and Lanark; and Full Circle Agronomy, which deals with lawn fertilizing and soil sampling. “I wanted to put the sign up so that people knew what we did here, because a lot of people just thought we sold farmer seed,” Sarah said. “Then I kind of said, ‘Maybe we should put jokes on it to catch people’s eyes first before we tell them what we sell.’” But the pandemic modified the marquee’s mission, just like it’s changed everything else. People started to take more notice of the sign, and the Kauses started to take notice of people’s reactions.

“People will say, ‘Oh, that was so funny,’ or ‘I went straight to work and told my co-workers,” she said. That’s when she knew the business’ marquee attraction was making a difference. “It was then even more important to keep it light,” Sarah said. And that’s just what she did. Take, for example, this timely message from September: “Gonna ask my mom if that offer to slap me into next year is still on the table.” Or how about this one: “I would take a trailer hitch to the shin for all this to be over.” “There’s a lot of ways to convey a message to people driving by,” Sarah said. When Sarah isn’t deciding on with jokes for the marquee board, she’s sketching up house designs for another family business: The Task Company, run from her home in rural Shannon. She’s worked with homeowners in Lake Carroll along with building owners in downtown Lanark and at Timber Lake Playhouse in Mount Carroll. She plays limited roles with the other Kaus businesses, and is a member of the “support staff” at M&W Feed. However, on M&W’s website, she has the unofficial role as “marquee joke finder.” She’s also come up with messages for display at M&W’s headquarters – its north location – in Elizabeth.

Even though Sarah hasn’t been able to rotate the messages out as often as she’d like, she tries to get a different message posted every week when she can. Sometimes she gets some help. Some of the jokes have been suggested by the couple’s kids: Keara, 10; Trevor, 8; and Kensley, 6. They include: “What does the papa ghost say to his family when driving? Fasten your sheet belts.” “What do you call a cheesy Halloween dance? A Muenster mash.” Another joke that Keara especially enjoyed: “What do you call a sleeping bull? A bull dozer.” The children also help put the messages up. Sarah involved her children in the project to help them learn spelling, vocabulary and how to measure out space on a row for the lettering. “Quarantine,” “maintenance” and “appropriate” were big words used in jokes, and it didn’t take Keara too long to grasp their understanding. Now it’s become one of her favorite activities. “I look in a joke book, I get to pick them most of the time and put them up,” she said. Another recent message, appropriate for football season, read: “We are officially in the 4th quarter of 2020. Man I hope we are playing the Bucs!”

At the turn of the fiscal quarter, Tampa Bay Buccaneers quarterback Tom Brady – best known for winning six Super Bowls with the New England Patriots – played in a game against the Chicago Bears where he made an error in judgment as the game wound down and cost his team a potential win. Brady is known in the game as player who has led plenty of comebacks in important situations, which included Super Bowl 51 in 2017 against the Atlanta Falcons. The Kauses are fans of Brady, and they even named their 5-month-old golden retriever after him. When the message was originally planned, they had another well-known quarterback in mind, but after Brady’s gaffe against the Bears where he forgot which down it was in the game’s final seconds, the other quarterback’s misdeeds weren’t as crucial. Plus, as it turned out, the space that had the original quarterback’s name was wide enough to only have five letters: B-R-A-D-Y. “I was trying to think of another quarterback, but I only had enough for certain letters, so Brady took the fall because it’s only five letters,” Sarah said. “I felt like a traitor. I really did.” Even if Sarah has to swallow some team pride, what’s more important is making people smile, she said. “There’s enough bad news in this world, and everyone looks forward to some good news.”

There’s a new face behind the grill at The Clubhouse, and he’s adding something new to the mix: a young chef with fresh ideas who wants to make the restaurant the dining destination in Carroll County and beyond

nly a few short years ago, a young Chris Choquette was putting his own unique spin on Cornish game hens that became a hit with his family. These days he’s cooking for a much larger crowd, concocting creations as the Clubhouse restaurant’s new executive chef. He may look young, but the 24-year-old has a big helping of culinary experience. Hired in June, Choquette brought with him plenty of experience, including cooking a wide range of dishes at one of the most upscale restaurant chains in the nation – and if he has anything to say about it, he’ll give the Clubhouse that same kind of cachet.

One of Choquette’s goals is to make the restaurant the finest in all of Carroll County, and perhaps all of northwestern Illinois. He’s already revamped the menu to bring in a wide variety of unique tastes and dishes that are more than the typical standard fare. That mix caters to Lake Carroll’s variety of residents, he said. “They’re all different, and that’s why I make it a point on the menu that it can’t just be one concept,” he said. “It has to be four different concepts at once, because some people want that comfort food, some people want the city food but not at the same price, and then you have your seafood and surf-and-turf from down south. “It’s multi-cultural, and shouldn’t be what it was before. It needs to be something different, and we need to have variety and not just 10 sandwiches, five burgers and the same three entrees.” While his job at The Clubhouse brings him one step closer to his ultimate goal – owning his own restaurant someday –for now he’s happy to call this house a home for his culinary talents. “I don’t plan on leaving any time soon,” Choquette said. “I like where I’m at, I like what I do, and I love my job. I’m pretty happy.” His job at Lake Carroll is just the latest step in a journey that began as boy in the family kitchen. Choquette grew up in Chicago and lived with his young moth-

er and grandparents for his first 8 years. Spending time with his grandparents proved to be a big factor in his love of cooking. Together, they would make anything from butterscotch bars and “John’s” spaghetti – both with a family twist, of course. Named after a cousin of Choquette’s grandmother, “John’s” has macaroni noodles with meat and marinara sauce and ground beef. The Cornish game hens were Choquette’s first true specialty: It had a vegetable medley, and, instead of the usual mashed potatoes, it came with parsnip puree. “I saw it on TV and I wondered if I could do that,” he said. It didn’t take too long before The Food Network became appointment television for Choquette, who would sometimes watch it with his grandmother. “She would have Easter, she would have Thanksgiving, she would have Christmas, and she always would ask for me to help her cook,” Choquette said. That penchant for crafting culinary goodness carried into his high school years at Victor J. Andrew High in suburban Tinley Park. He took every culinary class it offered and participated in a statewide SkillsUSA skills contest during his senior year. Competing against other aspiring chefs throughout the state, Choquette placed fourth in the skills competition and found a job as a line cook at the local Giordano’s while still a student.

The Clubhouse’s new executive chef, Chris Choquette, used a spice you won’t find on any spice rack, but one that’s a key ingredient in any restaurant’s success: variety, the spice of life. Since taking over, he’s revamped the menu to offer a wider variety of dishes for the Lake Carroll community. “They’re all different, and that’s why I make it a point on the menu that it can’t just be one concept,” he said. A chance to attend culinary school escaped him, and after a stint at The Cheesecake Factory close to home, he relocated to West Palm Beach. His interests broadened a little bit, and he took classes on business management at the local community college before coming back to Orland Park. After a short time away from whipping up scrumptious delicacies, he donned the familiar hat and apron once more at The Cheesecake Factory in Orland Park, and later for Cooper’s Hawk, a upscale chain also in town. He saved enough money to buy a lot early in 2020 at Lake Carroll, where other members of his family live. He found out about the open chef position and before long he got the job. Clubhouse Manager Dee Kuhlemeier enjoys seeing the menu have a wide variety of dishes, and likes how Choquette has a positive outlook as the pandemic’s grip on life continues to hold firm. “The fresh ideas are what’s nice,” Kuhlmeier said. “The food presentation has been amazing. I can’t wait to be in full bloom when everybody’s here and hearing ooh’s and aah’s.” Despite missing out on a professional culinary education, his time spent at both The Cheesecake Factory and Cooper’s Hawk gave Choquette plenty of lessons that he’s carried with him – chief among them, quality over quantity. “I’ve learned that you can make 10 items in 5 minutes, or you can make two items in 10 minutes,” he said. “You’re going to get better feedback from the two items that were made longer than the items that were made faster because they’re going to look better and they’re going to taste better.”

“The 10 in 5 minutes is okay for McDonalds, but once you get into full service and casual fine dining, such as a place like the Clubhouse, you want to make sure it doesn’t look like fast food.” Previously, the Clubhouse served up primarily sandwiches, pizza and similar fare, but Choquette has expanded the menu. He’s worked to create entrees, signature dishes and other tantalizing tastes. A couple of his favorites include the three cheese pasta, which has mostaccioli noodles with mozzarella, Parmesan and marcato cheese; and the drunken shrimp, which is wrapped in bacon with tequila lime, butter sauce, pico de gallo and guacamole. Presentation plays an important role in the dish as well: The drunken shrimp is served on a long rectangular plate with a scoop of guacamole, sauce drizzled on each piece of shrimp, and finally hit with some pico. Unfortunately, the plates haven’t been used a whole lot lately. Due to the coronavirus pandemic, the Clubhouse recently was reduced to only carryout service. Choquette admitted that putting the exquisite dishes in a white Styrofoam box sort of alters the visual appeal, but no matter the appearance, the taste will always triumph, he said. Choquette comes into the Clubhouse when times are tough, but he has high hopes that business will start booming again when the restaurant re-opens at full capacity. “It’s been different, but it’s nothing that I don’t think I can handle,” Choquette said. “I’m not going to call it quits just because Covid has ruined our world. “When we open, there’s endless possibilities in what this place will be and what we can do.”

Want to spend a day at the lake and don’t want to bring your grill with you? There are two at the West Marina. This sign welcomes people to Lake Carroll.

Water from the largest manmade lake in the state needs a place to go sometimes, and it’s found a plum spot, thanks to the LeRoy Hinkle Dam, which directs runoff from the lake into the east fork of the Plum River. Nature’s neighbors You’ll find them in flowers or tucked away in the trees, They trot along trails, and float on a breeze, Look up and look down, in the lake and all around, Wherever you look, your neighbors in nature are sure to be found. Lake Carroll is a nature lover’s delight, filled with all sorts of critters and creatures. Whether they have fur, fins, or feathers, they’ve all made a home for themselves in this lakeside community. Lake Carroll resident, and its communication director, Donna Beyer has been snapping photos of these delightful denizens of the great outdoors and was kind enough to share some of her photos with us, including this issue’s cover photo. Donna has lived in Lake Carroll for 29 years, and during that time, she said she’s taken her fair share of wildlife and nature photos. “I never tire of seeing the deer in my back yard and on my way to and from work, and I thoroughly enjoy all the wildlife photos our Donna Beyer members share on Facebook, as well as with me, to share in our various venues,” Donna said, adding that there’s not much she hasn’t seen at the lake. “I have seen most of the wildlife around Lake Carroll: Deer, piebald deer, foxes, raccoons,turkeys, mink, skunks, birds – from hummingbirds to bluebirds to osprey, pelicans, Canada geese, herons and egrets, sand cranes, turkey vultures, and bald eagles – and everything in-between.” There’s still one critter that she hasn’t captured on camera, though: “The bobcats have eluded me,” she says. There are plenty of other members of Mother Nature’s family that haven’t eluded Donna, and we’re happy to bring you some of those family photos this month.
