hether it’s just a basic kitchen facelift or an entire renovation, Lake Carroll residents know they can turn to Mullet Custom Cabinets for quality, custom work that’s built to last. “We take a project from start to finish,” said owner Wayne Mullet,who established the business 5 years ago. “We feel we can offer a unique customer experience from the designs to building the cabinets and installing them ourselves. It allows us to oversee all aspects of the project.” Mullet has more than 25 years experience in the cabinet-making business. He learned the trade working with his wife’s uncle for several years before taking over the shop. When his family joined other families in the move from Ohio to the Lake Carroll/Shannon area to establish a new church, Mullet re-established his cabinet business and found a welcoming community for what has now become a family operation. Wayne meets with clients and oversees the project designs. His oldest son, Daryl, builds the custom cabinets in the on-site workshop and younger son, Brian manages the installations.

Wayne said he’s built his business on three key words: Design, detail and quality. He describes his style as old-world craftsmanship. “We build the cabinets here on site,” Wayne said. “This is not mass production. We focus on quality.” Each project is unique, whether it’s just replacing cabinet doors, or renovating an entire kitchen. An average project might take 3 to 6 months or more, depending on the size, scope and details. The craftsmanship extends beyond the cabinets, as Wayne is able to offer additional products and services, including custom lighting, countertops as well as molding and trims. He said quartz countertops are the most popular product right now, adding that in addition to its attractive appearance it’s a maintenance-free option because it doesn’t required staining or sealing.

Mullet Custom Cabinets is a family operation, and that includes Wayne’s younger son, Brian, who’s coordinated efforts to include outdoor patio furnishings in the shop’s inventory, from Adirondack chairs that come in upwards of 50 different colors to picnic tables, benches and more. While most of his work focuses on kitchens, Wayne said they’ve also done bathroom renovations and are seeing an increasing interest in upgrading laundry rooms and “mud rooms” as families customize cabinets for storage and add bench seating for a convenient and comfy place where people can put their shoes on and take them off. Custom-built craftsmanship means quality, but Wayne works hard to keep prices competitive, too, working with clients’ varying budgets, from smaller projects for a few thousand dollars to upwards of $150,000. “We do our best to maintain Mullet Custom Cabinets excellent customer service,” Wayne 24911 Payne Road, said. “We try to be honest and fair.” Shannon He also likes to focus on the 815-631-5950 basics — quality products and customer service – and not get caught up in a world wide web. The shop doesn’t have a website or social media presence. Wayne said he keeps it simple and relies on wordof-mouth and referrals. It also helps that his wife and daughters are excellent bakers. During the summer months his wife, Maria, and daughters Diana and Juanita, bake delicious fruit pies and pastries for the weekly bake sale in front of the business every Friday from 3 to 5 p.m., or until everything sells out. Wayne said that during the busier weeks the

girls will make and sell as many as 100 fruit pies, all baked fresh starting the night before. “We are really grateful for the opportunity to serve the Lake Carroll community,” Wayne said, adding that the weekly market also gives the family an opportunity to meeet and and greet the neighbors. While Wayne enjoys the challenge of helping homeowners customize their kitchens with features such as built-in broom closets and pull-out shelves for storing mixers and bowls, with help from his sons he’s expanded the business beyond home interiors. Younger son, Brian, has coordinated efforts to include outdoor patio furnishings in the shop’s inventory, from Adirondack chairs that come in upwards of 50 different colors to picnic tables, benches and much more. The patio furniture is built in Ohio by a company that uses materials including recycled plastic milk jugs. The result is durable, weather-proof furniture that can hold its own against the wind and won’t rust in the rain. The custom pieces are then shipped to the Mullets’ workshop for assembly. “You can leave it outside and it will stay nice,” Brian said. “It’s a really great product. It’s very durable and you don’t have to worry about it.” From interior renovations to enhancing an outdoor living space, the Mullet family enjoys crafting designs that bring joy to their customers. Wayne said, “I enjoy working with clients and taking their dream and making it into a reality.”

t all started with a simple idea: Grow some vegetables in a backyard garden and save some money. As she picked tomatoes and cucumbers from that little backyard garden, Penny Peterson said she never imagined the seeds she was planting would someday grow into a 10-acre family farm and business where more than a hundred different varieties of organic vegetables, hops, micro-greens, herbs, fruits, and garden plants are grown. But the farm is only half of the story. In 2016 she and her husband, Nate, followed another dream when Nate’s hobby of brewing beer became the basis for opening an artisan craft micro-brewery, and so it was that a wish came true: Wishful Acres Farm & Brewery in Lena was born.

“When we think back and look at where we came from, through the hard years, it’s hard to believe this is our life,” Penny said. “We’re so grateful, thankful.” Located just outside Freeport, the farm and brewery is gaining attention as locals as well as day trippers stop in on the weekends to taste what Nate’s brewing, often using hops grown on the family farm. Penny said he’s always working on new beers and this summer he’s experimenting with a fruit beer using peaches and mangos. “We probably make two new beers a month,” Penny said. Wishful Acres also feature an on-site tap room, bar, and beer garden. The brewing started out much like the gardening idea. Back in the mid-2000s, Penny gave Nate a beer making kit as a present and gently suggested that if he brewed his own beer, they could save a little money. It did more than just save a little money: now it’s making them some money. Their beer is handcrafted at the farm brewery in small batches and they keep about a dozen on tap each week, including their homemade root beer, and the selection changes frequently. Pretty good for a couple who didn’t even having a farming background. Penny said she grew up in Freeport and each summer her family had a backyard garden, a tradition she carried on when she had her own home. After the arrival of her first son in 2003 she became more driven to build up the garden and sought out fresh fruits and vegetables at local farmers markets. Soon, her trips to markets became a chance to ask farmers questions and she soaked up their lessons on growing and harvesting. She said she’s also an avid reader. “Everything I learned, I taught myself from reading many books,” Penny said. Penny expanded her garden in 2009 when she and Nate rented a half-acre plot of farmland just outside of town. It’s there that the business’ name was born – they wished that they had had their own farm so they called their growing business Wishful Acres Farm. In 2011 she and Nate found an opportunity they couldn’t pass up: the chance to buy a 10-acre farm.
Penny admits it wasn’t a path she had imagined. She had gone to school as a business major and after graduating she worked as a web developer and in marketing. Those experiences are proving valuable, though, as she maintains the farm’s website and does its marketing, as well as tending to the daily farm and helping with the brewery. While there’s some help from their three school-age sons, most of the work of the farm and brewery falls on Nate and Penny. The Petersons grow more than 100 organic vegetables, herbs, and fruits – from A to Z, argula to zucchini – and sell a portion of their harvest to members of a Community Supported Agriculture program. The business doesn’t sell to the general public. The way the program works is that people sign on as a “shareholder” member of the farm for a season – $429 for a whole season half-share or $858 for a whole-season full share. Those people get a share of the crops – at least 3/4 bushel basket of mixed produce each week for a 22-week season – that they pick up at the farm. A share is enough feed a family of 2 to 4 people for a week. Shareholders come on board on a first-come, first-serve basis, and this year’s shares are already sold out. People can get on the farm’s Wait List, but they could be waiting awhile. The farm’s current wait list is a few years long – a testament to the popularity of the Petersons’ products. Mia Rudolph of Freeport has been buying the Petersons’ vegetables and herbs through their CSA for the past 6 years. “I know the value of farming and I love to go to the farm and see how food is made, and have my children make that connection too,” Rudolph said.

I have to be creative.” What started as a connection through the CSA blossomed over the years between the Rudolph and Peterson families. They have children of similar ages and interests. But there’s one thing customers can expect regardless of when they visit. “Freshness,” said owner Ben Johnson. “In terms of the products but also in terms of what we’re offering the community and the ingredients.” The bakery is just one piece of the pie for Johnson and his wife, Molly McDonough, who also own the neighboring Molly’s Kitchen and Bar and The Inn at Molly’s. The Inn is a pair of suites above the restaurant, in the historic, restored 1865 building, that combine rural charm with contemporary amenities and style. Located in the heart of downtown at 108 W. Market St. – about a 15-minute drive from Lake Carroll – the bakery is a dream realized for the couple. They had talked about opening a bakery before they opened the restaurant at 110 W. Market St. in 2014 but opted to put the bakery on the back burner while the restaurant got off the ground. It wasn’t until January 2018 that their dream came true. “You are always surprised by what things turn into. We always dreamed of having a little bakery in a little town somewhere,” Johnson said. With a variety of breads baked fresh daily, salad dressings, spreads, hand pies (smaller, grab-and-go pies), syrups and other baked goodies made in-house, Molly’s Bakery offers a real taste of Mount Carroll. “In the last year or so we kind of moved to producing our own stuff, things like onion jam; and during tomato season we sell a tomato jam. Before we were shut down (due to the coronavirus pandemic) we were trying to offer more retail items that are hard to find in this area: nice pickles, nice olive oil, olives and cheeses from Wisconsin,” Johnson said. The seasonal fruits and veggies that inspire regular dishes at the bakery also find their way into the bakery’s weekly rotating menu, adding to the businesses’ overall exclusivity. “Our head baker (Kadina Atherton) has tried to switch up the baked goods on a weekly basis to keep it seasonal and interesting and fun for our customers, and fun for us to keep things fresh and new,” Johnson said. Their menu is a mix of the healthy and the hearty, the savory and the sweet. You can get a garden sandwich or a pulled pork sandwich; and for dessert try a savory scone or some shortbread cookies. There’s something for all ages and tastes. ”We’re getting a lot more kids in, which is really nice to see – moms bringing their children, dads bringing their children,” McDonough said in an interview a few months after the restaurant first opened. “It’s just nice to see a different clientele during the day than we do in the restaurant. It feels much more like a community atmosphere.” In that same interview, Johnson said the interaction with the community “is really fun for us, and we’ve been just amazed by the support we’ve had. … It’s amazing.” While the country continues to grapple with COVID-19, Molly’s Bakery has reopened but has modified operation to comply with state guidance. Customers can take advantage of the outdoor seating just outside the bakery or elsewhere in the historic downtown area. “We might need to take the order over the phone while we’re looking at you through the front door, but it’s the same bakery, we still offer the same things. The quality and customer service is the same,” Johnson said.

Members of the Lake Carroll Surf Club not only enjoy riding a wave behind a boat, they want to share their passion for the increasingly popular water sport. The club – one of several that caters to Lake Carroll lifestyles – was formed in 2018 with a mission of “uniting and cultivating the community of wake surfers at Lake Carroll [and] expand the local wake sports community by educating members and non-members on the fastest growing water sport, all while promoting a fun and safe environment at Lake Carroll.” The group isn’t so much a formal club – with meetings, minutes, rules and requirements – as it is a group of wakesurfing fans who simply want to enjoy their pastime and share their passion. If you’re wondering whether wakesurfing – not to be confused with wake boarding, but we’ll get to that later – floats your boat, here are a few things that will help you decide whether you want to dip your toe in the water. The sport requires a few things: a boat, a board, a life jacket, a rope, and if you’re a beginner, someone who can help coach you. That’s where the club can come in handy. Club members say the best part of wakesurfing is experiencing the excitement when a first-time rider successfully surfs. When a boat cuts through the water it leaves behind a wake. With rope in hand and board underfoot, wakesurfers trail behind the boat, riding ride the wake’s waves. What could be better than sun and fun? Topping off that perfect pair with some wakesurfing. It’s unknown exactly when wakesurfing first started, but it dates back to at least the 1960s when surfers looking for something to do when the ocean was calm began making their own waves behind boats. A 1964 issue of Popular Boating said wakesurfing was an “exciting new sport that’s soon going to sweep the waterways.” At first, people used surfboards, but as the sport evolved, so did the equipment. Boards were shortened and reshaped, boats were pumped up and redesigned, adding bladders, ballast and computer controls to customize the made-to-order waves, and an industry was born.

Strap yourself in – not Part of that evolution of equipment also gave birth to wakesurfing’s offspring: wakeboarding. Similar to wakesurfing, wakeboarding riders are towed behind the boat on a board, but with their feet secured with bindings, and they don’t let go of the rope. Wakeboarding can kick up larger waves, which makes for bigger and more exciting jumps for riders. But bigger isn’t always better, say wakesurfers, who prefer the more minimalist approach, where the only thing between your bare feet and the water is the board. It also requires only about half the speed as wakeboarding, making the inevitable fall easier on surfers – the landing’s a little softer and the board won’t catch under water and smack your legs.

Grabbing air, pumping and fire hydrants ... Wakesurfing tricks Like other sports, wakesurfing has its own lingo for its fancy footwork, be it a Fire Hydrant, a Lip Slide or a 180 Shove-it. Below are of some of the tricky terms. Pumping – Turning up and down the face of the wake to gain speed. Stalling – Applying pressure to the back foot to slow down or “stall.” Floater – When a rider and board “floats” on top of the wake. Lip slide – Just like a floater, but the board is sideways. Spray – Gouging into the face of the wake to cause a water spray. Fire hydrant – Placing one hand on the board and taking the front foot off. n the heart of Jo Daviess County,about 20 miles northwest of Lake Carroll, the village of Elizabeth effortlessly captures the essence of rural America. Incorporated in 1868, the quaint little burg with a population of just over 700 sits on a hill that’s visible while driving in off state Route 84, and the balance between the past and present is perfectly in tune. The mall reopened June 1 after being on a pandemic hiatus, but owner Michael Maynard wasn’t idle during this period. He remained committed and focused as ever, utilizing the time to expand the retail space and continue his vision of creating a destination for antique shoppers, as well as vendors needing an outlet to sell their pieces from the past. He spent a couple months working on the third floor, which he hopes to have open for consignment space by the end of July, August at the latest. His dedication to creating something special shows, for it’s the atmosphere that puts this antique mall in a class of its own. One can easily imagine studious kids learning their ciphers from the chalkboards that still hang on the walls, or filing in line to walk up the flights of stairs to their classrooms. A room of bookshelves filled to the brim, hallways that once housed lockers, they’re all remnants of history that didn’t fall by the wayside, but were reinvented into something new. The gym now houses aisles of treasures waiting to be discovered, and still more is in store on the adjoining stage. Getting into the antique business wasn’t exactly on Michael’s radar, but it was a calling that was too deep to dismiss. His grandfathers were both inspirations for this business venture – one sold a family farm and invested in an oil company, and the other bought properties in the 1950s to restore, renovate and flip; one of those buildings was a school house and one was a jail house converted into a bed & breakfast – a perfect fit for one of the grandfathers, who was a former sheriff.

Building on that family tradition and drawing on an ethic of hard work and determination, Michael decided to leave his stake in the family HVAC business to carve out his own path and his own a legacy. “Seeing them (his grandfathers) starting their own legacy, I decided to start my own,” he said. “I could have the family business or do something else.” He chose something else, buying the village’s former community school in July 2013. He had been drawn to the building during previous visits with his family. “I looked at a few old buildings in the area, and had a couple business ideas. But I knew it when I looked at this one,” Maynard said. The original building dates back to 1899, and it had grown through the years, with an addition built in the 1930s and two more in the ’50s. For nearly a year after he signed on the dotted line, he traveled from his hometown of Aledo, Illinois – over a 2-hour drive – to his building every day to craft his dreams and bring his vision to life. Many times his four children were in tow, and he’d put them to work on age-appropriate tasks. “I put my head down, worked hard, and we did it,” he said, recalling the passion and motivation he felt to bring a new livelihood into his life. “It was something in me. I was living on literal dreams.” It took a lot of work to make those dreams come true. Village leaders were excited at the prospect of a new life for the old school, and having Maynard bring in a new business, and they agreed to sell the building well below market value, well aware of the extensive renovations needed to get it up to code. Tearing down walls, installing new ceilings and support beams, opening up the space with cleverly cut openings in the walls, and working with original features were all part of the process of transforming a school into a business. “There was water pouring in on the floors, cavedin plaster on the walls. It was in bad shape,” he said. “But it’s an old unique building and I didn’t want to mess with it too much.”

Maynard pushed himself, setting ambitious goals and meeting them. He met his 5-year plan to fill up the first-floor space in the first year. He set up a sleeping room on the third floor, and spent days, weeks and months with teams of renovators, rebuilding and re-crafting the space from the ground up. He also set up a room to store his own picking and junking finds, a hobby that continues to grow as he has the space to accommodate.
