It’s a good thing the folks at the Lake Carroll fish hatchery don’t have to work on a chicken’s biological time clock. If they did, they’d have to wait 68 years for a hen to match a fish’s output, egg for egg. Even the pluckiest of farm fowl – which can pop out one egg a day – can’t hold a candle to one walleye, which can lay nearly 25,000 eggs at once.

It’s fishes’ prolific output, and a dedicated staff of volunteers, that’s helped the hatchery keep Lake Carroll residents reeling through the years. The hatchery is one of few in the state that’s privately owned, and it keeps the community’s pond and lake well stocked. Lake Carroll’s Fishing Club maintains the building and all of the gear that keeps it running, and for 6 weeks out of the year it’s busy with hundreds of fish and millions of eggs vying to see the light of day. “It takes a lot of committed volunteers,” Fishing Club Vice President Mitch Feucht said. “Usually we have a core of people every year of about 20 people that really make

it happen, and of that 20 you got some people that really put in some long hours.” But before residents can reel in their catches, the hatchery has to scoop up theirs. Once the ice thaws out on the lake, by about April 1, the club will put out a few hoop nets to scoop up as many walleye as they can. Walleye are snatched up daily from the nets – they’ll die out if they’re trapped in there for more than a day. If there aren’t enough after a couple of days, the club has a “shocking boat” with electric prongs that zap the water to stun the fish, forcing them to the surface, but the more humane net method is preferred.

“They swim along the shore, they hit that net, and they have to turn, and that net channels them right into those hoops and they get trapped in there,” Feucht said. “It’s hard to lift those into the boat, too.” After the walleye are caught, the process of draining the eggs begins. With a squeeze – like getting toothpaste from a tube –thousands of eggs exit the fish in a goo-like substance and they’re collected in a steel bowl. After fertilization from the male walleye, the goo is mixed with a feather, so as to not add tension to the surface of the many eggs. Bentonite clay and lake water then are added to the bowl to make sure the eggs don’t clump together. The eggs then go into another bin for about 4 hours so that the crust of the eggs hardens, and then into a large tube that measures how many eggs have been collected for the day. There is always a constant water flow from the hatchery’s well; the flow is carefully controlled: Too forceful and the eggs can be damaged; not enough and they’ll suffocate. The eggs grow darker with each day, and after about 10 to 14 days, the hatching starts and small, wiggly fry will come out and try to make their way to the surface. After hatching, the fry (newly hatched fish) will go into another tub for about 4 days, and then collected into 5-gallon containers to put back into the lake, or the pond across the street. The survival rate for the eggs is less than 1 percent, so of about 25,000 eggs laid by one fish, less than 250 make it

through the hatchery process. “You got to consider all of the other fish and the predators. If we can get half of 1 percent of what we put in, it’s a good hatch,” club member Mike Siciliano said. Tiny specks of zoo plankton are given to the fry to eat. As the fry grow, they’re given minnow eggs and eventually full minnows to feast on. After about 6 to 7 months, those fry become walleye that are about as long as the palms of two hands. “We’re producing fish that are being put back into our lake, and that’s pretty neat,” Feucht said. “It’s not an exact science, but we do the best we can dealing with Mother Nature; sometimes stuff works and sometimes stuff doesn’t.”

How do you hatch a fish? It takes time, the right timing, science, dedicated volunteers, some luck – oh, yeah, and you have to know how to squeeze a fish. The Lake Carroll Fish Hatchery, privately owned and operated, helps maintain a healthy population of walleye at the lake. The Lake’s rocky bottom isn’t ideal for walleye to reproduce, so the hatchery lends a hand to the lake’s ecosystem. For 6 weeks each year a group of volunteers work to gather walleye and breed the fish. The process begins when nets are cast and fish are scooped up, usually around April. They’re brought to the hatchery where they’re given a squeeze to expel the eggs, which will eventually be fertilized by a male walleye. The eggs end up in a bin where the crust is allowed to harden, and then into a larger tub where they eventually hatch. Tim Siegner started the Lake Carroll hatchery in the early 1990s from his basement, and it wasn’t too long later when he was given a separate building off of Lake Carroll Boulevard. The hatchery’s operation eventually passed down to the Fishing Club, and today it’s operated by committee during the 6 weeks it’s bustling. “You meet a lot of nice people working here,” Feucht said. “The guys enjoy being together and working for a common cause. It’s satisfying when you get fish and put them in the lake, or anything we do to help fishing at Lake Carroll. arrie Stier loves to go treasure hunting, and she doesn’t even need a boat to do it. Not that she doesn’t have one, mind you. She and her husband own a 126-foot luxury riverboat modeled after a Victorian-era steamboat, three decks tall with dining salons, sundecks and more – a floating palace for sightseers on the Mississippi River.

As for that treasure hunting: She stays high and dry when she finds merchandise for her recently opened shop, about a half-hour drive from Lake Carroll: Franklin Street Uniques and Antiques in her hometown of Scales Mound, where she’s turned the thrill of finding treasure into a business. Carrie and her husband, Keith, also own the riverboat Twilight, a cruise ship based out of LeClaire, Iowa, that offers short river cruises or 2-day trips on the Mississippi. But with the cruise business docked due to the ongoing coronavirus pandemic, the Stiers looked elsewhere for a way to keep income coming in, and the found it in a building they owned. That’s where they set up shop to sell antiques and uniques. from long ago to the not-so-distant past, from old sewing machines to walkie talkies.

A wide variety of antiques, uniques and handmade items can be found at Franklin Street Uniques and Antiques in Scales Mound. “I try to put on the tag what stuff is because some people might not know what it is, and it’s cool to learn a little something about it,” said owner Carrie Stier.

“We had an empty building and a little more time on our hands,” Carrie said. “We said, ‘We love antiques, so why not open up an antique store?’” Before the pandemic brought the gavel down on the auction business, Carrie tried to hit at least one a weekend to add to her a collection, and that collection eventually blossomed into a business. Franklin Street opened Jan. 2, and its two rooms can be browsed through every Friday through Sunday, or by appointment. “We just try to get a mixture of things in here, whatever catches our eye,” Carrie said. “We love going to auctions – of course, there’s no auctions going on right now, but when they start back up again, those places are always our favorite places to go and pick up items.”

Antiques are just one part of Franklin Street’s name; the other part, Uniques, can also be found at the store – and the uniques aren’t just antiques. The Stiers also have some newer items, such as pressed glass milk and vodka bottles, courtesy of Keith, who heats them up in the family kiln and presses them. The collection also includes a few cobalt blue glasses, which are collectible even in their regular state. “You can use them as a spoon rest or a charcuterie tray, or whatever; or just hang them up,” Carrie said. Creativity runs in the Stier family: Carrie also sells homemade wreaths, and her daughter, Emily, has hand-made embroideries for sale. The Stiers recently purchased a local estate that had a wealth of antiques. With nearly every item that she finds, Carrie tries to do a little research onto learn more about them, like the hat pins that were part of the estate sale. ”Back in the ‘20s, ladies wore a lot of hats, and that’s how you kept it on your head, by a hat pin,” Carrie said. “People will pay a lot for those hat pins. They’re very collectible. Who knew?” She also tried to pass along what she’s learned. “I try to put on the tag what stuff is because some people might not know what it is, and it’s cool to learn a little something about whatever it is,” she said.

One of Carrie’s favorite finds is a kids sewing machine, for making doll clothes; it measures about 5 inches tall and 5 inches wide and is cranked by hand. And in the same case: a section of little penny dolls. “It’s fun looking up the different stories behind some of this stuff,” Carrie said. “The penny dolls cost a penny and a kid could afford it back in the day. I thought that was interesting.” There are some items in the shop Carrie doesn’t have to brush up on, like the collection of gentleman’s clothing brushes from the Fuller Brush Company. Seeing them for the first time, with the original black case, brought back memories. “Back when I was a kid, the Fuller brush man came to your door and sold you brooms, mops, clothing brushes and cleaning materials,” Carrie said. “My mom, when the Fuller brush man would come to our door and ring the doorbell, she’d say ‘Hide! Don’t make a noise!’ She didn’t want to answer the door half of the time. I always thought that was funny.” The Stiers also hope their shop will help bring more people to Scales Mound, a village of about 400 residents that bills itself as “The Top of Illinois.” It’s the highest spot above sea level in Illinois, and it’s not too far from the highest natural point in the state, Charles Mound, at 1,235 feet high. Also in the village: a full service Sinclair gas station and the Country House Grocery Store, which still has its original wood flooring. “It’s like walking into a museum sometimes,” Carrie said of the shop – but with one big difference: People can take home pieces they find at this “museum.”

thletics are a big thing at Eastland High School in Lanark, and varsity basketball is part of that prestige. Lake Carroll is home to six student-athletes who are looking to build upon the strong traditions in both the Cougars’ boys and girls hoops programs. Beginning that quest, however, was in serious doubt when the COVID-19 pandemic put their seasons in jeopardy just 2 weeks after their first practices. For a group that enjoys shooting hoops and playing tough defense on the basketball court, being away from the team aspect of the game for a long time was devastating to them. Annika Myre, the lone Lake Carroll resident on the Cougars’ varsity girls team, didn’t know whether she was going

to be playing with her new basketball team. Myre’s family recently moved to Lake Carroll full time, and the junior transferred from Newark High School in Kendall County. “It was definitely heartbreaking.” Annika said of the pandemic’s pause on sports. “Sports are like my entire life. I grew up in a really big sports family and community. I’ve been in sports basically my entire life, so it was hard, but I understood what was going on. I knew we had to put the world first, and sports were not a main priority at the time.” Myre isn’t the only newcomer to shoot hoops at Eastland. Senior twin brothers Kamden and Wyatt Baber transferred from Stockton High School – their family now lives at the Lake full-time – and also looked forward to donning the Cougars’ white and orange jerseys when basketball season was supposed to roll around in November.

MICHAEL KRABBENHOEFT/SHAW MEDIA Being away from the team aspect of sports for a long time took a toll on student athletes’ spirits this past year, including Eastland basketball players (from left) Andy Sturtevant, Kamden Baber, Annika Myre, Wyatt Baber, Shay Schramm and Jaxson Sturtevant – but now they’re glad to have their day on the court again. “I was kind of irritated and upset seeing all of the states playing around us,” Wyatt said. “We’re so close to both Iowa and Wisconsin, and they’re packing gyms and things are going on there like normal almost.” “I was pretty disappointed. Coming down from Stockton to come play here and realizing I might not get the opportunity,” Kamden added. Andy Anderson, Shay Schramm and Jaxson Sturtevant, also from Lake Carroll, hoped to hoop it up come November, but that changed when the Illinois Department of Public Health and the Illinois High School Association indefinitely postponed all school sports due to a rise in coronavirus cases throughout the state. While students continued to receive an education, the absence of extracurriculars was a tough pill to swallow. “I was mostly disappointed because schools in states

around us were playing sports and we couldn’t,” Andy said. “It sucked for us and the seniors here; I’m a junior and I get next year, but I mostly felt sad for the seniors.” The sports hiatus hit athletes hard across the state, and many of them voiced their concerns on social media. Not being able to enjoy the camaraderie that comes with sports was tough, but the Eastland kids held out hope that things would get back to normal again sooner rather than later. “I think all of us handled it pretty well,” Jaxson said. “Obviously we were all disappointed, but we knew that if we kept working in the off season while we weren’t having sports, it eventually comes back around.” It took a little while for some to deal with the season’s indefinite postponement. “We were working for 2 weeks to get into the real season, and then it just got shut down,” Shay said. “We were all irritated after that.”

Mid-November rolled by without the sound of sneakers squeaking on the court, and there were no Thanksgiving tournament games to speak of. The same went for the Christmas tournaments, something that Eastland hosts annually for its boys program. Over 2 1/2 months of anguish, each day presented a different outlook. Hope was had some days, and was lost in others. That roller coaster situation became wilder in January, when it seemed like every day brought either good or bad news about the basketball season’s ultimate fate. Then the long awaited good news finally came. With seconds to go in regulation, ball in hand and down by one point, the fate of the Illinois high school basketball season beat the final buzzer and was green-lit Jan. 22. That’s when the IDPH announced basketball practices could begin when the northwest Illinois region moved to Phase 4 of the state’s coronavirus mitigation procedure. It was welcome news to the students, many of whom had been glued to social media and news outlets, waiting for updates; and some who learned when coaches texted them.

“It was definitely heartbreaking.” Annika Myre said of the pandemic’s pause on sports. “Sports are like my entire life. I grew up in a really big sports family and community ... so it was hard, but I understood what was going on. I knew we had to put the world first, and sports were not a main priority at the time.” “It was all really exciting,” Annika said. “It kind of came back really fast, and we didn’t really get the time for preparation we really hoped for, but it was super exciting that at least we were getting something. I’m really happy for the seniors that get to have one last hurrah and get to make the most of it.” “I was super happy when I heard it,” Shay said. “A week before we were headed downward [in Covid positivity rate] and they weren’t saying they were going to have a season.

All of a sudden a couple of weeks later, we’re going to have a season.” The twins spent a lot of their off-time in the weight rooms at Eastland and Pearl City high schools, who co-op for fall football. They plan to don the helmets and pads after basketball season is over. “I was in shock,” Kamden said. “I couldn’t believe that after waiting November, December and most of January that we get to play again.”

Eastland won the Class 1A state championship last year with a 31-5 record, and was 1A runner-up the year before. The trio of boys make up nearly half of the Cougars’ boys varsity roster. The boys program, along with the girls, consistently has been among

the Northwest Upstate Illini Conference’s top hoops programs for the last 30 years. Anderson, Myre and Sturtevant are only juniors, and they hope the start of the 202122 season will come right when it should: in mid-November. “I was pretty excited that we got a chance to play, going from nothing to going straight into sports,” Jaxson said. “It felt good that we were back to normal. Definitely out of shape, but it felt good.” “I was happy,” Andy said. “I didn’t know what we were going to have to do. I didn’t know if we were going to have fans, I didn’t know how the IHSA was going to do it. I was worried about that, but I was just happy to play.”

ou won’t find a tightrope when Mary VanRaden does her balancing act. Instead, she does her work on the bottom line. She’s the accounts receivable supervisor at Lake Carroll and she makes sure the numbers add up. VanRaden keeps busy making sure the dues and fees get in and get to the right place, keeping the community in the black. VanRaden, 42, recently completed her second January on the job, a busy month when the annual payments start coming in. It’s a tough job, and her co-workers recognize it: She recently was named the Association’s Employee of the Year for 2020 – a year that saw many changes. In this month’s Lake Carroll Employee Spotlight, VanRaden, a Freeport native, mom of three, and unabashed Green Packers fan, talks about her job, her work family, and helping people get on a better road. If her face is familiar, it might be because she used to work at Blarney Stone Popcorn in Shannon for 10 years. WHAT DO YOU LOVE ABOUT YOUR JOB? I love my co-workers. I love interacting with the people. I just love my job all the way around. I got to see the new property owners because I got to deal with them when I worked the front desk here. WHAT DO YOU ENJOY ABOUT THE WORK YOU DO? I just love everything about it. It’s mostly trying to help people, dealing with collections and dealing with people who are behind on their bills. I like to figure out payment plans for them or some way to help them get caught up on their bills any way I can. I just try to help them try to get caught up so they’re current, any way possible. It’s nice to see people get caught up and on a better road out here to where they can use our amenities. WHAT ARE YOUR CHIEF RESPONSIBILITIES? I take care of the front desk and take care of the people up front. If [front desk associate] Cindy [Lemm] needs a day off, I will fill in for her. My job is to get statements out at the end of the year. I take care of the mowing fees that happen in the spring and the fall. I take care of collections, so when new property owners come in, it’s my job to put them into our system when the checks come in for that. We’re all a big team, too, so we all help everyone else here in the office wherever we can. DO THINGS GET STRESSFUL, OR IS IT PRETTY MUCH EASY GOING? The first month, January, is always stressful because that’s when all of the dues come in. Once February 1 hits, it slows down. Otherwise, it’s a pretty laid-back job because we all work together. We’ve got three or four of us working on decals, and we’re just trying to get whatever needs to get done to get those decals out because people are going to be needing them. TAKE US THROUGH A TYPICAL RECENT DAY FROM START

TO FINISH. 8 o’clock is when I usually come in, I’ll check emails, check voicemails, call anybody back that I need to. Lately I’ve been working with Cindy up front to see if she needs anything or has anything for me, and talk about our night before and about our day. Then I come back here and start working right away on whatever projects I have to get done. Usually I check to see if anyone else needs anything; see if any late people need stuff done, like with our monthly dues. HAS ANYTHING BEEN DIFFERENT WITH YOUR JOB WITH THE COVID PANDEMIC, PARTICULARLY WITH RECREATION PERMIT NUMBERS GOING UP? Last year, it was booming. We were selling about 20 to 30 lots and houses a month, which was huge last year. This year, we’ll have to see how that goes. That was because of Covid. Everyone wanted out of the city, and out here. SO IT MADE IT MORE BUSY DEALING WITH A LOT OF NEW OWNERS? Yes. Oh my gosh! I do assessments for all of the properties and send them to title companies, and for a while I was doing four or five a day, which is a lot. Right now I’ll do maybe one every couple of days. Right now we only have five houses for sale out here and about 50 lots, which is very, very low. There’s not much for sale, and there are people that are looking.

I pretty much like anybody, and can get along with everybody, so you have to have that mentality to where you can switch sides to where you can be hardnosed at one time, but the next time you can be really nice to the next person. WHAT DO YOU LIKE AND ENJOY ABOUT THE LAKE CARROLL COMMUNITY IN GENERAL? Everybody’s real nice. I knew a lot of people from when I worked at the Blarney Stone. A lot of residents are very outgoing. They’re willing to help when you need them. It’s an overall very friendly group; if you need them for something, they’re there.

he biggest question about the notoriety of a crossroads tavern east of Freeport on U.S. Route 20 can best be answered by another question. What makes the burgers at Ridott Corners Tavern good enough to be billed as “world famous?”

Maybe it’s the seasoned pro behind the bar: a cast iron grill that’s been around more than 80 years. Pocketed in one end of the L-shaped bar is a 20-by-20 inch grill that the tavern’s manager, Mike Mullarkey, estimates has cooked up more than a million hand-pressed patties since 1978, when his grandparents took over the bar.

You won’t get any fries with that, but who needs ‘em? The half-pound burgers at Ridott Corners should be enough to satisfy anyone’s appetite. The “world-famous” burgers do come with a bag of chips – Mrs. Mike’s, from nearby Freeport, naturally. Patrons can also double up on their patties and get a double burger. Whether it’s a local from Ridott – one mile north of the bar at U.S. Route 20 and Rock City Road – or a regular passerby traveling up and down the fourlane highway, Mullarkey has come across people from all walks of life who come in to find out just what makes his burgers “world famous.” This past summer, a man from France rode his motorcycle on a cross-country trip through America and had to stop at a sign for the tavern that read “World Famous” on it. “I always say it’s kind of like the center of the universe,” Mullarkey said. “You can live in one town, and run into somebody that they totally wouldn’t expect to run into, maybe someone they haven’t seen in forever, just being here. With parts of it in Illinois and Iowa on four-lane stretches, it attracts many passersby who want a trip with plenty to see along the way. Renee LaFleur has tended bar at Ridott Corners for 2 years. She particularly enjoys the melting pot of people who come in from all walks of life and sit down to chat with one another, bite into a fresh burger, and enjoy some drinks.

“They’re from all over the world, and they’re usually pretty entertaining,” LaFleur said. Her take on the burgers? “They’re fabulous,” she said. “Working here 6 or 7 days a week, I never get sick of one.” The half-pound juicy slabs of meat have made a name for themselves, in no small part because of their taste, but also because they’re one of the few items on the menu. Having a small menu is something that doesn’t bother Mullarkey, who prefers to keep things simple. Take your pick between burgers, grilled cheese or pizza – and no fries, but you get a bag of chips as a side. Sometimes the menu will expand for special events. Taco Tuesdays pop up every now and again, and Corned beef and cabbage is served on St. Patrick’s Day. “It’s not a big menu, but whatever is on the menu we try to do our best,” Mullarkey said. Simplicity has become a recipe for success for the Mullarkey family, who’s run the 92-year-old bar since 1978. Mike’s brother, Billy, owns the establishment, and Mike helps run the place. He also has a place of his own. The success of Ridott Corners – and the skill of flipping and pressing patties since he was 10 years old – led him to establish Mullarkey’s Bar and Grill, which opened a couple of years ago at 12 W. Main St. in Mount Morris. Ridott Corners was once just half of its current size, up

until a decade ago when the Mullarkeys added the second leg of the bar counter and an outdoor patio. Customers can watch TV at the bar or at one of the tables, with plenty of Chicago sports on the screen. The bar also hosts its own dart leagues Thursday evenings. Before the four-lane highway was built, Route 20 had just two lanes of traffic from Rockford to Freeport. After crossing Rock City Road – which also takes motorists to Rock City and German Valley – drivers knew they were getting close to Freeport when they scaled up “Hamburger Hill,” the incline just west of the bar which was much steeper in earlier days. “My grandparents bought it in 1978 and just built it off of that,” Mullarkey said. “They really pushed the burgers, and that made it what is today.” The Mullarkeys made the operation of the bar a family function almost right from the get-go. On the other side of “Hamburger Hill,” just before hitting the Freeport city limits, is Goodyear’s Titan Tire plant, then known as Kelly Springfield. When the plant was at its peak, Ridott’s hamburgers were the top choice for workers on their lunch breaks. The grandparents invited the grandchildren to help them press patties and wield the spatula to satisfy the tire workers’ hunger. Deliveries to the plant were a common occurrence, and Mullarkey’s team continues to do that for businesses on a 24-hour notice.

“Back then the Kelly Springfield tire plant was really heavy on all three shifts,” Mullarkey said. “Every Saturday they would order burgers, and me, my brother, my cousin – anyone who was available – would come out and help my grandma in the morning making as many hamburgers as we can so that she could take them down to all of the guys.” The burgers come in single half-pound patties, or you can double up and get two patties between the buns. “The best comments come from the first-timers,” Mullarkey said. “They’ve never had one, and 99 percent of the time they are telling me that it is true: We’ve steered them to the right spot.” In recent years, the bar had a rewards program where first-time customers were given a card for a $1 off on their return trip. “The rewarding part is when we get those cards back; it means something’s working,” Mullarkey said. “The customers is what makes it happen. That’s 100 percent what it’s all about. All we do is to try and provide the best we can.” With a grill that’s only going to keep getting more seasoned, their best is bound to get better, and that’ll keep customers in the Mullarkeys’ corner for a long time to come.
