$3M revamp set for March Dixon Square Apartments getting interior, exterior upgrades

DIXON – A low-income housing project in Dixon is getting a $3 million facelift come March. Dixon Square Apartments, 1540 Freedom Walk, will be overhauling its 72 Section8-designated units. Tenants

will be getting new kitchens and bathrooms, and substantial improvements are expected for the roof and siding, too, said Steve Rappin, president of VeriGreen Development. Chicago-based VeriGreen owns and manages about 30

low-income housing projects throughout Illinois, Indiana, Wisconsin, Tennessee, and North Carolina, including Dixon Square Apartments. Renovations are expected to take a year, and no residents will be displaced, Rappin said. “It will be in-place rehab,” he

said. “We will likely not move people out, and if we did need to, we would pay to move them to some sort of extended-stay hotel.” For example, builders will work on the kitchen during the day, then put it back together at night, he said.

Dixon Square Apartments is one of 14 low-income housing projects statewide that has been awarded tax credits through the Illinois Housing Development Authority, which will fund the rehab project.

Buzz builds at Northland Mall Stores open rapidly in anticipation of Dunham’s success BY PAM EGGEMEIER

STERLING – The word revitalization is heard often in Sterling, usually in reference to the riverfront and downtown. It might be time to add Northland Mall to the conversation. In the last year, the mall has brought in the Midwest’s largest sporting goods chain, and nationally known fashion retailer rue21. Several smaller businesses are now moving in, hoping to cash in on the increased foot traffic that is anticipated. Much of the buzz now surrounds Dunham’s Sports, as the Oct. 31 opening of its massive 50,000-square-foot store gets closer. Dunham’s store manager John Watts, a Sterling native, said he senses the excitement among the mall employees and the customers. “Dunham’s is very happy to be here in Sterling, and be part of the revitalization of the Northland Mall,” Watts said. “This is the greatest

number of stores I can remember being open here. “ “There’s the pet store and some storage space empty right now.” The gates continually opened and closed as workers scurried in and out to put the finishing touches on the space. “The people can’t wait to get in here,” Watts said. “If we don’t shut the gate, people just start walking in and trying to shop.” Watts hopes the variety of inventory at Dunham’s will bring some new faces to the mall. “Field and Stream shoppers, for instance, bring a different demographic,” Watts said. “Hopefully, we see a lot of customers who are not used to coming to the mall.” Nancy Carrell hopes that the same demographic will also stop by her shop, Sports Zone, to pick up items to flaunt support of their favorite sports teams. Carrell and her husband, Ed Meyer, have run the store at the mall for a little more than 5 years. She said business is picking up already, and the timing couldn’t be better. “This is as busy as I’ve seen it since I’ve been here,” Carrell said. “This

is the perfect time for new stores, because everybody depends so much on the holiday season, and the foot traffic is bound to be better this year.” For Accents owner Margaret Zumdahl, the changes at the mall make it even more difficult for her to carry out her plans to sell the store. She has built up a loyal following during her almost 11 years at the mall, but she and her husband are ready to retire. “I’m extremely excited about the different offerings here now; I wish this would have happened 5 years ago,” Zumdahl said with a grin. “I love this store, but I’m still looking for a buyer.” Zumdahl said the mall management has been great to work with, and she believes that all of the recent activity makes her space an even better opportunity for a new tenant. “Someone could certainly make it their own, but it could also be turnkey with the inventory and computers,” Zumdahl said.

Another one of the new stores, Flash Happy Portraits, is targeting Nov. 1 for its opening. Owner and manager Heather Lanell said the store’s five employees will take some appointments, but she wants to reserve most of their time for walk-in portraits. The studio will be open Friday, Saturday and Sunday in November, and will add hours to meet demand later. She is also working with another new mall tenant, The Sticker Shoppe, to produce novelty gift items. “I’m hoping to have a 24- to 48-hour turnaround on all of the products,” Lanell said. ROCK FALLS – Whiteside County officials spent Wednesday morning going over their plan of action, should anyone in the county become infected with Ebola. Whiteside County Sheriff Kelly Wilhelmi, speaking on behalf of the group seated in a circle at the Whiteside County Health Department, stressed that the chance that Ebola could even make it to the area is very, very slim. That’s something that local and national health officials have been saying since the fear of infection gripped America after a Liberian man, Thomas Eric Duncan, tested positive for the disease at a Dallas hospital Sept. 28. He died Oct. 8. The person will be taken to CGH Medical Center’s emergency department, but won’t be taken inside until doctors evaluate the patient and decide whether he or she must be placed in isolation, which CGH is fully prepared to do. The patient wouldn’t stay there for long, though; he or she would be taken to one of the five hospitals in the state that are going to be designated Ebola treatment centers. Which five are expected to be announced this week. “The precautions that all of us are using are no different than any other thing we’ve gone through,” Wilhelmi said. “We’ve done this with anthrax, West Nile, and HIV in the past, so it’s really nothing new.” Lee County officials held a similar meeting earlier this month to talk about their protocols. According to a KSB Hospital release, patients and callers will also be asked a series of Ebola-related questions before being admitted there.

All about grains and losses Kick-start a healthy diet with nutrient-rich ingredient used for centuries BY ROBERT RODRIGUEZ MCT News Service

hey might not be households words yet, but grains like freekeh, farro and quinoa, are becoming more popular, as healthconscious consumers rediscover these ancient foods. Used for centuries by different cultures, many of these grains are finding a new place in the American diet, largely because they are loaded with vitamins, minerals and other nutrients. Some of the grains are also gluten-free and can be ground into flour. The grains blend easily into everyday meals, like salads, side dishes and baked goods. At Sierra Nut House in north Fresno, California, owner JoAnn Sorrenti has long been a believer in the ancient grains. She stocks several types, including quinoa, freekeh and bulgur. â€œI tried selling these 35 years ago, and nobody bought them,â€? Sorrenti says with a laugh. â€œNow, things have really turned around.â€? The shopâ€™s bistro regularly uses grains in its salads and recently, Chef Adrianna Oropeza prepared two grain salads: freekeh with orange and fennel; and quinoa and pumpkin. â€œWhat I like about these grains is that not only are they healthy and good for you,â€? Oropeza says. â€œBut you can also mix them in with seasonal fruits and vegetables.â€? Oropeza says the grains vary in texture and are somewhat chewy and nutty in flavor. And cooking grains is not as difficult as you may think. â€œIn a lot of ways, it is just like cooking rice,â€? she says. â€œYou cook it until the water is absorbed.â€? She likes to cook grains with chicken broth for added flavor. And at home, she adds quinoa in her salads and soups. Nutritionists say the ancient grains have stood the test of time for a reason. Amaranth has long been used in Mexico and contains more than three times the average amount of calcium. It is also high in iron, magnesium and is gluten-free. Cooked amaranth has a slight crunch, but remains soft on the inside. Barley and bulgur are

fiber rich at 17 percent and 20 percent. They are also easy to cook and are high in antioxidants, vitamins and minerals. Quinoa is a complete protein and is loaded with iron, vitamin B2 and manganese. Freekeh is a wheat that has been harvested early and is roasted. Itâ€™s high in fiber and has a low glycemic index, making it attractive to diabetics. It has a similar flavor to bulgur with a firm, chewy texture. Farro is prized for its nutty, cashew-like flavor, and is high in protein and calcium. As chefs and home cooks are catching on to the grain craze, a few California farmers are also trying their hand at growing the crops. Victoria Martinez of Ancient Grains Farm in Temecula, California, has planted amaranth, quinoa and chia. The family run farm was launched last year and is harvesting its first crop this fall. â€œWe see the demand and we understand the health benefits,â€? Martinez says. â€œAnd as more people learn how to use the ancient grains and seeds, we will see even more of a demand.â€? Martinez cooks a large pot of quinoa at the beginning of the week and uses its in stir fry dishes, salads and mixed in with greens. She also eats warm quinoa for breakfast by adding coconut milk, agave syrup and a stick of cinnamon, nuts and fruit. Freekeh, Orange and Fennel Salad 2 cups freekeh 2 cups chicken broth 1 fennel bulb sliced 2 oranges peeled and sliced 1/2 cup dried cranberries

1/2 medium red onion, thinly sliced 1/2 cup flat leaf parsley chopped 1/2 cup almonds, toasted and slivered (Garnish for the top) Vinaigrette Dressing: 1/2 cup olive oil 1/4 cup champagne vinegar 1 tablespoon honey Salt and pepper to taste Bring chicken broth to a boil, add freekeh and simmer until broth is absorbed. Put aside. Heat olive oil in a medium skillet on medium heat. Saute the fennel for approximately 5-8 minutes. Combine all of the remaining ingredients. In a medium bowl whisk the dressing and pour over the salad. Garnish with the almonds. â€“ Adrianna Oropeza, Sierra Nut House Bistro & Wine Bar Quinoa with Pumpkin Salad 2 cups quinoa 3 cups chicken broth 1/2 medium red onion, thinly sliced 3 cups pumpkin, peeled, seeded and cut into 1 cubes 1/2 cup dried cranberries 1 cup chopped celery 1 cup chopped red bell pepper 1/2 cup flat leaf parsley chopped 1/2 cup toasted pumpkin seeds Vinaigrette Dressing: 1/2 cup extra virgin olive oil 1/4 cup red vinegar 1 tablespoon mustard 1/2 teaspoon pepper flakes Salt and pepper to taste Bring chicken broth to a boil, add quinoa and simmer until broth is absorbed. Put aside. Heat olive oil in a medium skillet on medium heat. Saute the pumpkin

for approximately 10-15 minutes. Combine all of the remaining ingredients. In a medium bowl whisk the dressing and pour over the salad. â€“ Adrianna Oropeza, Sierra Nut House Bistro & Wine Bar Banana Bread 2 medium bananas, mashed 2 tablespoons coconut oil, melted 1/2 cup buttermilk 1/2 cup agave syrup 1 tablespoon vanilla extract 3 eggs 1 cup quinoa flour 1/4 cup almond flour 1/4 cup amaranth flour 2 teaspoons baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/4 cup chopped almonds Preheat oven to 350 degrees F. Grease a 5-by7-inch loaf pan. Mix together the bananas, coconut oil, honey, vanilla and eggs until completely combined. Add in all the flours, baking soda, salt and cinnamon and stir until all the ingredients are fully incorporated. Pour the mixture, which should be pretty wet, into the prepared loaf pan. Sprinkle the chopped almonds evenly over the top. Bake for 35-45 minutes or until the bread is golden brown and a knife comes out clean. Let cool for 10 minutes and then invert onto a wire rack to cool completely. Keep tightly wrapped for up to 3 days. â€“ Victoria Martinez, Ancient Grains Farm

Combine quinoa flour, baking soda, baking powder and salt in a large bowl and sift together. Separate egg whites into a medium size bowl and set aside. Add egg yolks, coconut yogurt and vanilla extract to the bowl with the flour, along with the cooled cocoa mixture and mix until well combined. STERLING – Julie Schroeder could not contain her excitement Thursday evening during the 46th annual Self Help Enterprises Awards Banquet. When she was named the winner of the Frances Bragg Award for continued perseverance, concern for others and love for her fellow workers, Schroeder jumped out of her seat and put her hands over her mouth as she burst into tears. She then walked quickly to the stage, grabbed her award from Carla Haubrich, executive director of Self Help Enterprises, then took the microphone. “I want to thank everyone for this award,” she said with excitement. Betty Terry also won a Frances Bragg Award, and was presented hers after Schroeder floated back to her seat. The banquet, which recognizes its consumers and others affiliated with the agency, was chock full of love and excitement Thursday. “Each one of you out there tonight deserves an award,” Haubrich said to the hundreds of people packed into the Latin American Social Club. “You give us your best

every day, and we are so appreciative of that, and we want to thank you.” Self Help provides employment training and residential support for adults with disabilities. Haubrich said the company serves 300 people with disabilities such as alcoholism, bipolar disorder, cerebral palsy, epilepsy and learning disabilities. “The staff of Self Help selects the winners,” Haubrich said. “We also give members of the community special awards that have been supportive of Self Help.” After Schroeder won her award, she wiped tears from her eyes, posed for lots of pictures and she received plenty of hugs from her friends and family. “I did not see this coming,” Schroeder said minutes after winning, still visibly shaken. “I’m just so happy.” Schroeder, who has been with Self Help for 23 years, also was excited to put her arms around her parents – her mother, Shirley, and her father, Arlyn. “My parents always taught me to always do the best you can,” said Schroeder, 44. “They always told me my dreams will come true, and that happened for me tonight.”

Randy Planthaber, who received the John L. Stern Leadership award, was all smiles as he approached the stage to get his plaque. Stern served as executive director of Self Help for 35 years until his death in 2011. “John Stern makes dreams like this come true,” Planthaber said. In addition to that award, Planthaber, 51, also received a pin for 35 years of service to Self Help.
